    We think Strata is the next amazing aroma hop. Our hop buyer Marcus was super high on this hop from the first sniff. Then Vito did hop selection in 2019 and came back raving about this hop. Now that we have had it in several commercial beers, everyone at MoreBeer! is loving it. One of the first commercial beers that made us go "wow" was Stratadust from Barebottle brewery in San Francisco. Another was New School Kicks from the Imperiale Beer Project. We've all had a million Citra® and Mosaic® beers the last couple of years and while those hops are amazing, and we'll drink them any day of the week, we are ready for something new and we think Strata will be in the same echelon. At its core Stata is an IPA/Session-IPA/Pale Ale hop with many layers of different fruit flavors, dried and fresh, anchored with a dried chili-cannabis-funk. Yeah, take that in. The grower, Indie Hops, says Strata does not have any diesel, machine oil, or catty ‘baggage’. Since we are not huge on machine oil in our beer, that is a bonus. Late hot side additions bring out layers of rounded-tropical plus bright-fresh fruit flavors; dry hopping yields more grapefruit and cannabis. We think the tropical fruit that we all kind of love, along with other interesting complexities, is what makes this hop shine. We also dig that this amazing hop is coming out of Oregon from a hop company appropriately named Indie Hops. When hops were in short supply some hop growers in Yakima, the old school hop epicenter, shunned us. They would only sell direct to breweries or in their own packaging where they could make full markup. We met Indie Hop Growers 10 years ago and these guys are laid back, super cool, and always supported MoreBeer! Indie started a hop breeding program with Oregon State to develop killer new aroma hops outside of Yakima and Strata is their first home run. So perhaps we could be biased but we think the hops smells for itself. Remove your existing tri-clamp butterfly valve and place this rotating racking arm between the tank and your valve. When it is time to rack off slightly loosen the clamp nearest the tank and use the built-in handle to rotate to just about the lees level. A white rotatable gasket is placed between the welded in tank fitting and this rotating arm. Because the micro finish of the gasket is hard and slippery it allows the rotating arm to rotate in place. A standard black EPDM gasket is placed between the rotating arm and the butterfly valve and is always kept completely tightened. As you can imagine, welding in a coupler costs more than punching a hole and using a gasketed (i.e. weld-less) fitting. Welded fittings offer a permanent connection that to us is worth every penny. The second unique feature that we absolutely love about these brew kettles is the notched lid with silicone plug. This notch allows you so much flexibility; you can use an immersion chiller, one of our Ultimate Sparge Arms for mashing, tie off hop bags, take a temp reading during cooling, or whatever else we all can dream up. Our new T.C. kettles were designed to keep pace with the ever-evolving world of brewing technology. Tri-clamp fittings are standard fare in professional breweries, and they’ve been widely adopted in homebrewing as T.C. fermenters and pumps become more affordable and widely available. Tri-clamp fittings, also known as Tri-clover, allow you to make a sanitary connection that is free of nooks and crannies for contaminants to take hold. They are much easier to break down for cleaning compared to threaded connections, and they don’t require Teflon tape to make a watertight seal. T.C. fittings and accessories also give you the distinct advantage of being able to clean in place (CIP), so you don’t need to break down your entire system after every brew day. Configurations The base boil kettle comes without fittings so you can modify it the specific tri-clamp accessories that best suit your needs. Add one of the optional Brewing Kettle Valve Packs above which include your choice of valve and all the hardware you'll need to connect 1/2" ID transfer tubing, as well as an end cap to seal the top port if a thermometer or other accessory is not in place. The Hot Liquor Tank includes the base kettle plus a kettle maximizer for the bottom port and thermometer with 2" probe for the top port. Beefy 304 Stainless These kettles are made from 304 grade stainless. That means you will have less corrosion issues than with a kettle made from lower grade 201 type stainless. We put these kettles through a corrosive salt water test in the MoreBeer! shop and they passed with flying colors. We also made sure the rivets and riveted handles were also made of stainless steel for a long term, trouble free life. The 10 and 15 gallon size are made from 1.0mm thick stainless steel. The 20, 30 and 50 gallon size are made with 1.2mm stainless - that's pretty thick stuff - and you will know it when you pick one up. Mirror Polish Finish The mirror polish finish isn’t just for making your Instagram feed pop! This extra slick finish is much easier to clean and sanitize than a standard brushed stainless kettle. Hop trub and other organic solids left behind after a brew day will have a hard time clinging to the interior surface and scrub away with ease. Size Ratios and Stuff All the BrewBuilt kettles follow the recent trend to a 1.2:1 ratio where the height is 1.2 times the diameter. This is a proven commercial ratio that has been adopted in homebrewing to achieve a more consistent 10% evaporation rate during the boil. We do like this ratio for boiling. For Mashing we would prefer a little bit shallower but that is a small compromise. Dimensions for a hot-liquor tank, if you are thinking brewing system down the road, are irrelevant as any ratio kettle will do.
