Oak Chips, Cubes and Barrels for Homebrew

Commonly used in winemaking for a long time, oak is becoming an increasingly popular addition to homebrewed beer. Oak chips, cubes and barrels available at MoreBeer! can give your beer different flavors from vanilla to whiskey, depending on the type of oak used. Oak chips will deliver oak flavor to your beer very quickly. Oak cubes have less surface area than wood chips, so the oak flavor is delivered a little more slowly. Cubes are much easier to separate from your beer than chips.  Oak barrels provide the most surface area and can end up giving the home brewer the most re-use. Add oak directly to your beer, make an oak tea first, or infuse the oak in an alcohol. There are several useful ways to employ oak in your beer-making, and MoreBeer! enables you to get started on the way to trying them all.

  • Oak Cubes - American (Med +) - PLACEHOLDER

American Oak Cubes (Stavin) - Medium Plus Toast

    15 reviews

Premium, Fire-Toasted Oak Cubes from Stavin Medium + Toast American Oak will impart flavors of campfire, vanilla, roasted coffee and butterscotch. These fire-toasted oak cubes are as close as you can come to the full range of flavors you would get from aging your beer in a full sized barrel, unlike convection-toased cubes. The difference is that convection toasted cubes are made by cutting the stave to size, then passing the small cubes through a toasting chamber. Stavin fire-toasts their staves whole, just like they would when making a barrel, and then cuts them down to size. The result is a gradation of toasting from the surface through to the center of the cube, where each different toast level represents a different flavor set that the oak will give your beer. The result is a much more complex and natural profile; by comparison convection toasted cubes taste one dimensional. Oak cubes also release their flavor into your beer more slowly than chips, giving you more control over the final degree of impact in your beer. You should plan on an extended aging period of 1-6 months when using cubes. This longer contact time again promotes flavor complexity by allowing all the flavors of the oak and your beer to marry. Recommended Dosage is 2 oz per 5 gallons for impact equivalent to aging in a brand new oak barrel. Click here for a PDF of the MoreWine Oak Cube Dosages.

French Oak Chips | Medium Toast

    3 reviews

Oak Chips are a fast and economical way to add oak barrel flavor to any beer. Oak Chips are made from seasoned American and French Oak staves which are chipped down and toasted to create flavors similar to what you'd get from a barrel. The available toast levels are Medium, Medium +, and Heavy. It's important to understand that each toasting level creates different flavors in the oak; not a greater intensity of impact in your beer. Don't think of them as weak, normal & strong; they're each a different flavor profile. These staves for these Medium Toast French Oak chips are sourced from a cooper (barrel maker) in Napa, CA. They deliver clove and spice flavors of medium intensity, along with strong flavors of Butterscotch & perceived sweetness. Because of the high surface area, oak chips can extract quickly and care should be taken not to overdo it. Taste your beer frequently after the first week of contact and be ready to rack off the oak chips. Suggested Dosage is 1-2 oz per 5 gallons.

Hungarian Oak Cubes (Stavin) - Medium Plus Toast

    8 reviews

Cubes have a longer contact time than traditional chips do, which make them better for long-term aging of wines and beers. Also, longer contact time means longer extraction of flavors (3-6 months), which leads to a more complex combination of flavors. Chips are usually done giving flavor after a week, there by contributing a harsh, flat oak flavor. Our cubes are fires toasted and cut by Stavin, a leading supplier of high-quality oak alternatives to top commercial wineries.   Click here for a PDF of the MoreWine Oak Cube Dosages.

The slow process of micro oxygenation rounds the wine while various compounds in the wood such hemicellulose, lipids, and lignins are slowly integrated.  As most barrel makers know, the best source of wood for wine barrels is the oak grown in the territory of old-time Hungary, known as Slavonian oak. This oak is characterised by a dense, hard structure combined with extra flavor. Forestry workers look after these forests with considerable expertise, and the forest density ratio in Hungary is 20–24%, with selective logging taking place between November and April. Once the wood is sourced, it is air dried and aged for 24-28 months before cooperage. This rare, high-quality oak can be found in the Zemplén Mountains and in the Tokaj oak woods. The specific type of oak in those territories, and what is used in Balazs barrels, is the Quercus Petrea. Balázs Barrels is establishing a direct cooperation with the forestry workers, ensuring the continuous supply of the best quality oak, allowing them to source and work with the most excellent oak for wine barrel manufacturing from the foremost Hungarian forests. 56 L (14.8 gal) Height - 24" Head Diameter - 14.37" Abdomen Diameter - 18.3" Stave Thickness - 7/8 - 1" Bung Hole - 41 mm Empty Weight - 51 lbs Medium Toast Barrel hoops made from zinc-plated steel for corrosion resistance

  • French Oak Stave Segments (Med. + Toast) - PLACEHOLDER

French Oak Stave Segments | Medium+ Toast

If you are looking for oak that produces flavors which are closer to true barrel quality, then these Stave Segments are just right for you. Less end-grain than traditional oak cube means a slower extraction time and a longer contact time, which will lead to a softer, more rounded mouthfeel. Many professional winemakers who have used these segments have said the flavors produced seemed more like those from regular staves in a barrel. The recommended ratio for 100% new barrel flavor is about .5 lb per 5 gallons of wine. Since the exraction is so slow, the minimum contact time is 16 weeks and they can be left on the wine for up to 18 months. Too large for carboys, please check out oak cubes or chips if using a carboy.

  • Sale -24% Saint-Martin New Oak Barrel (French) - 110L (29gal) - Medium Long toast

    Saint-Martin New Oak Barrel (French) - 110L (29gal) - Medium Long toast

    3 reviews

Do you have a world class wine that deserves a world class barrel? This is the best 30 Gallon French barrel we have used ... let us tell you why! It starts with the oak... these smaller barrels are made from the same premium-quality French Oak used to produce all of the world class Saint Martin barrels. Tight grain and high in phenolic extractives that add body and texture to your wine. The toast... fire toasted to a unique Medium Long toast that is between a medium and medium plus toasting level. If we took a 30 gallon barrel and a 60 gallon barrel and toasted them to identical levels you would find that the 30 gallon barrel had more toast impact on your wine. It many cases the medium plus level in a 30 gallon barrel is too much for most wines. The unique Medium Long toast is a great solution. The toasting fire is kept at a lower intensity but the barrel actually stays on the fire longer than a medium plus toasted barrel would. This results in very rich flavors that will taste very similar to wine aged in a 60 gallon Medium Plus toasted barrel. Your fruit is respected and not stepped on and you impart great structure and rich toast flavors... ideal? Yes! Francois Saint-Martin, third generation cooper, crafts Bordeaux style barrels for winemakers throughout the world. His emphasis has always been a profound respect of the fruit notes in his low-impact and elegant barrels. Francois Saint-Martin personally inspects the wood in the forests of Vosges and Allier. As a traditional Bordeaux cooper, Francois Saint-Martin likes to find the tightest grain possible and blend the forest origins to combine their qualities. The barrel exteriors have been sanded to a smooth finish. Features 24 month air-dried, 20mm thick split oak staves Premium, blended Central France forest origins Medium Long toast for lighter, longer barrel impact Bung size approx. 1-10/16" Includes solid silicone bung Click here for a PDF of the MoreWine Manual on proper care and storage of oak barrels.
