Our Oatmeal Stout is loaded to the brim with malt! A helping of Flaked Oats give this brew a smooth, almost slick, mouthfeel, while three different dark malts—Chocolate, Black Patent, and Roasted Barlery—combine for a very complex roast flavor. A lower bittering rate from a moddest hop addition allows the flavor emphasis to rest squarely on the synergy of maltiness, dark roasted malts, and oat flavor. A unique Belgian Ale with moderate bitterness from early kettle additions of Saaz hops. This beer is spiced with Bitter Orange Peel and Coriander, which lends a surprisingly pleasant flavor and aroma. The grain bill, (grain portion of recipe) includes Oats and Flaked Barley, which, when combined with a very special non-flocculating yeast leaves a cloudy, almost-white appearance. Hence, the name wit (white in Flemish). This is a very refreshing style that has a light, crisp flavor. There are some phenolic flavors as well, as you would find in some Belgian Abbey Ales or even German Hefeweizen. Hoegarden and Celis White are commercial examples that represent this style.

Our Irish Red Ale recipe is hard to nail down as any specific style—similar to a big Amber Ale, but it's so unusual it does not really fit within any category. Malt character utterly dominates this beer's flavor profile, containing dark Crystal malts, including Special B, and a pinch of Roasted Barley for a deep, red color and a very distinctive caramel flavor. You've never had this beer before, and, until very recently, neither had we. Imagine: a sexy, red color, spicy flavor, velvety-smooth body, terrific head, plus an aroma you could eat, all wrapped up with a firm bitterness. How did we do it? The creative shotgun approach! Continually throw enough stuff into the mix and, eventually, you score a win like this one. We started with a basic recipe similar to our famous Irish Red, but added Rye as well. A brash move? You bet! But we didn't stop there. We've added Magnum and Columbus hops everywhere, including into the carboy for dry hopping. If you want to go for a Home Run, add 1oz of the included French Oak chips after the first week of fermentation.

Ale Industries was the second brewery to open in Concord, and just happened to be right next door to us (man, we were lucky)! Morgan and Steve, the brewers and co-owners, opened Ale Industries with one thing in mind - to not brew the same beers that everyone else is brewing. Their first beer, a hybrid Witbier called "Orange Kush" (thereafter called Golden State of Mind) , is more malty and aromatic than most commercial wits are. The second beer, Rye'd Piper, is a malty red ale that has a very hop-forward structure, but not over the top, like some reds can be.
