A few years ago we had a competition in our showrooms for the best Holiday Beer. The winner was an unknown brewer named Kyle Sommers. We actually hired Kyle following the competition to work in our customer service office(see where good homebrew will get you!) In 2010 Kyle graduated from the Siebel Institute to continue his dream of becoming a professional Brewmaster. He is now brewing at Lagunitas.
We loved the big body, rich malt, and the extremely complex spice blend. When we went to make the recipe for sale we thought twice because we had to buy out the spice section of our local grocer.
Based on a Northern English style Brown Ale, it has 6 different spices added at two different times in the brewing and fermentation process, resembling and inspired by a Belgian-style winter beer. This winter warmer will make your kitchen smell like Thanksgiving Day at Grandma's house. With some added Belgian brown sugar to counter-balance the spice and add some alcohol content, this is a great way to top off your Holiday adventures by the fireside. If you are a firm believer in the Reinheitsgebot (no spices, sugar, etc.), this is not the beer for you!

1.9 °L - Briess Briess Malting - Odyssey Whiskey Malt is sweet and bready with notes of honey. This malt is a single varietal base malt that can be used for all beer styles and single malt whiskey. It has a traditional European malt profile, with moderate enzyme activity, high level of fermentability, and high PSY value. It is ideally suited for single malt whiskey, but is also perfect for Pilsners and light lagers.

This fest beer, historically brewed in spring and aged in cold caves over the summer, is a copper colored Lager with an emphasis on that German malt flavor. Our recipe achieves that malt flavor with lots of Munich malt. The use of Caravienne and Caramunich malts contribute the copper color and a unique subdued toffee/malt flavor.

This Oktoberfest beer recipe makes, in our slightly biased opinion, one of the best Oktoberfest beers out there! With a strong emphasis on the German malt flavor, it's sure to please anyone looking for a classic Oktoberfest beer. It is a copper-colored Lager that achieves that malt flavor with lots of Pilsner malt extract. The use of Caravienne and Caramunich malts contribute the copper color and a unique, subdued toffee/malt flavor. First-addition hops are Hallertauer, while finishing-hops are Czech Saaz.

This imperial stout is one of our most complex recipe kits. Not only because of the ingredients invovled (12 pounds of base malt, 5 specialty malts, and 3 different hops!), but because of the mouthfeel, flavors, and aromas it provides. The all grain kit even includes 2 pounds of dry malt extract because the amount of malt simply won't fit in your average size mash tun!
This is also one of those beers that continues to improve the longer it's allowed to age. Our Old Bearded Stout is bold, boasting an incredible roasty, bready flavors, and aromas of chocolate and coffee. Coming in at right around 8.9%, this is a great beer to "just have one" of, but we won't blame you if you go for a second!

Ferment in the low 60's for a clean profile, or ramp it up into the mid 70's to bring out its expressive esters. Great for malty profiles but won't mute the hop character. Great for producing very clear beers, as it flocculates even better than West Coast Ale I (OYL004). OYL-021 is a classic German wheat strain presenting banana and clove
Esters turn up with increased temperatures, wort density and decreased pitch rate

Hefeweizen Ale I is a classic German wheat strain. It's a cloudy, big top cropper with the archetypical banana and clove character you expect in a hefe yeast. Ester notes turn up with increased fermentation temp, wort density and decreased pitch rate. Ferment at the lower end of its range to mute the ester expression and highlight notes of cloves. Over-pitching can lessen the banana, so plan accordingly. If you get a little too much sulfur, let the beer age longer and to condition out. OYL-024 is one of the few highly flocculent Belgian ale strains and makes a great Belgian house strain

Belgian Ale A is thought to originate from a Wallonian brewery whose reputation is much larger than the small village in which its located. This strain possesses a remarkably high flocculence for a Belgian yeast and very popular as a Belgian house strain. It is brewery friendly, crops easily, and has a well-rounded flavor profile with balanced fruitiness and phenolics. Expect a higher ester expression the higher you take the fermentation temp.

One Step is an excellent oxygen based, no-rinse hard surface cleanser designed for brewers and wineries. Contains no chlorine, which can leave a film on glassware and corrode stainless steel. Requires two minutes of contact time, no rinsing required! Environmentally friendly and non-toxic. Use 1 tablespoon per gallon of water.
What is One Step?
One Step is the only environmentally sound, non-toxic, no-rinse cleanser on the market today for brewers and wineries. Unlike other cleansers that require rinsing because of their alkaline nature or that use material that can be harmful to the environment, One Step—the original no-rinse cleanser—uses active oxygen to clean your equipment.
In addition to being designed to minimize residue and while maximizing detergency, One Step uses oxygen entrained within a mineral crystal that dissolves when combined with water. The oxygen is then released to form hydrogen peroxide—a compound long known for its sanitizing and disinfectant abilities. The hydrogen peroxide completes its work and then degrades into oxygen and water, leaving behind only the minerals that are stable, naturally occurring compounds—no different than minerals often found in drinking water.
Because One Step is essentially non-foaming when used at the recommended concentration, it may be used in clean-in-place (CIP) systems as well as in the soak tank. One Step may be used on, essentially, all surfaces and is safe for brass, copper, aluminum and stainless, as well as polycarbonate and vinyl.
Soaking and Manual Washing:
Dissolve 0.5 oz per gallon of water. If heavy soils are present, 1–2 oz will boost detergency but remember to rinse to remove residue as well as soil. If surfaces are visibly clean prior to washing, no rinsing is necessary.
CIP Cleaning:
Use 0.5 oz for daily treatment of minimally soiled vessels and equipment, but for heavily soiled vessels such as fermenters, 3 oz is recommended. Heat the solution to 120–180°F and circulate for 30 minutes. Follow with a clean water rinse.

Ontario Pinot Grigios are characteristically lively with a lingering finish due to ample hours of sunshine throughout the seasons. The Pinot Grigio grape grown in Ontario is typically an early ripening grape (an evolution of the Pinot Noir grape), allowing for the longer development of delicate floral and honey-like characteristics.
Pinot Grigio grapes are often harvested earlier to retain the fresh acidity, giving the wine its fresher and lighter style. Ontario Pinot Grigios are usually described as “vibrant”, pale straw in color and dry. This grape varietal can be best enjoyed in warmer weather as a refreshing beverage.
The Italian Pinot Grigio we currently carry in our Cru International portfolio is a more complex, old-world style of Pinot Grigio, whereas our new Ontario grape offering is a more easy-going, light, and refreshing Pinot Grigio characteristic of a new world style Pinot Grigio.

Opti'Malo Plus is a natural nutrient developed by Lallemand specifically for Malolactic Fermentation. It is a blend of inactive yeasts rich in amino acids, mineral cofactors, vitamins, cell wall polysaccharides and cellulose. The cellulose provides surface area to keep the bacteria in suspension and to help adsorb toxic compounds that may be present at the end of primary fementation.
Opti'Malo Plus serves an analogous function to Fermaid-K for yeast fermentations.
To Use:
Suspend in a small amount of wine or water (just enough to dissolve it) and add to the wine at the same time as the Malolactic bacteria. Opti'Malo Plus should not be added directly to the rehydration water.
Recommended Dosage: Use Opti'Malo Plus at a rate of 1 g/gal of wine.
A rough approximate of weight is 1 tsp = 3.1 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

OptiRED is a tailored inactivated yeast derivative produced by Lallemand using an innovative MEX™ method that makes high-molecular-weight polysaccharides immediately available in the must. When introduced early during maceration or alcohol fermentation, these compounds complex with freshly released anthocyanins and tannins, protecting color integrity and creating softer, more integrated tannin profiles. The result is a red wine with enhanced intensity, smoother palate, improved structural balance, and longer-term color stability—without over‑manipulating varietal character. This effect is particularly noticeable in light‑ to medium‑bodied reds or in vintages with lower phenolic maturity.
Protocol
Suspend the recommended dose in 10× its weight of clean must or water. Stir thoroughly to ensure full dispersion, then add at one of these points:
• At the beginning of maceration or alcoholic fermentation for enhanced color protection and tannin integration
• Toward the end of fermentation to smooth out persistent harshness without affecting initial extraction.
Usage Rates
Recommended dosage: 20–40 g per hectoliter
= 0.2–0.4 g per liter
= 0.76–1.5 g per gallon
For standard use, 30 g/hL (0.3 g/L or ~1.14 g/gal) provides excellent balance between color enhancement and mouthfeel refinement.
For home users a rough approximate of weight is 1 tsp = 2.6 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.
If you want to try your hand at winemaking, Opti-White is a key tool that helps preserve the protein stability and color of white wine.
Derived from natural, inactivated yeast, Opti-White has high anti-oxidative properties. It increases mouthfeel, avoids browning, increases the wine's protein stability and volatile thiols (aroma compounds), and protects fresh aromas during aging. Use at the rate of 1.9 grams per gallon. Dilute Opti-White in 4 times its weight of water or must and add at beginning of fermentation.
Approximately 3.4g/tsp. For best results, we recommend using a scale to weigh out the product for an accurate dose.

26 mm diameter caps fit American bottles. Some imported bottles and some sparkling wine bottles use a 29 mm cap instead. We recommend test fitting prior to filling if you're re-using an imported bottle.
Important to note: It is recommended that you only sanitize as many caps as you'll require at the time of bottling. The oxygen-absorbing agent is activated when the cap gets wet. If wetted caps are saved for later use, they'll still function as a normal cap, but the oxygen absorbing agent may be depleted.
