    Hefeweizen Ale I is a classic German wheat strain. It's a cloudy, big top cropper with the archetypical banana and clove character you expect in a hefe yeast. Ester notes turn up with increased fermentation temp, wort density and decreased pitch rate. Ferment at the lower end of its range to mute the ester expression and highlight notes of cloves. Over-pitching can lessen the banana, so plan accordingly. If you get a little too much sulfur, let the beer age longer and to condition out.
