PBW is the cleaner of choice for many breweries, where it out performs more hazardous caustic chemicals without removing the flesh off your bones. PBW also will not corrode soft metals. Comes in a jar with screw top lid.   When mixing hot water and PBW in an air or water tight space, it will create pressure. Please use caution when using PBW in enclosed equipment.   Star San Star San is an acid based sanitizer that is quick, odorless, tasteless and safe for most materials except softer metals. Use of 1 oz of Star San per 5 gallons of water and a contact time of 1 minute makes Star San very economical and convenient.   As a high foamer, Star San's foaming action insures coverage and contact time in larger vessels and better penetration into nooks and crannys. Any foam that is left over in your carboy or keg from the Star San solution will not harm your beer or you, and is perfectly safe and non-toxic, nor will it impart any flavors or odors. Ultra-Ferm from White Labs is a highly concentrated liquid amyloglucosidase derived from a select strain of Aspergillus niger. Rather than acheiving 75 to 80% hydrolisis of present starches, as you would with traditional brewing methods, Ultra Ferm allows total hydrolisis of dextrins to fermentable glucose, from all types of starch. UltraFerm WLN410 makes for the perfect additive when brewing a Brut IPA or Champagne Beer by eliminating residual sugar, allowing you to acheive the dry flavor profile that is signature to the style. It can also be used for the production of low calorie and extra high-alcohol beers, as well as light or diatetic beers. Add at the beginning of the mash-in. Ultra-Ferm optimal pH is between 3.5 and 5.5. Temperature should not exceed 140°F. Amyloglucosidase activity is completely destroyed when the wort is held at 185°F for 10 minutes. We've experimented with adding this enzyme at different stages throughout the brewing process, and found that it isn't limited to the mash stage alone. When pitching Ultra Ferm alongside our yeast, we were able to achieve a final gravity of 1.000, with no negative effect on the finished beer. These fire-toasted oak cubes are as close as you can come to the full range of flavors you would get from aging your beer in a full sized barrel, unlike convection-toased cubes. The difference is that convection toasted cubes are made by cutting the stave to size, then passing the small cubes through a toasting chamber.     Super-Kleer K.C. is a  two stage wine and beer clarifying kit. Contains two pre-mixed pouches of kieselsol and chitosan. The fining porocess works by creating both strong negative and strong positive charges in the wine, which allow for larger yeast clumping and faster clearing. Works great in wine kits, grape and fruit wines, and alcohol mashes. 65 mL (2.2 fl oz) packet. Directions: Add kieselsol (packet D1) to carboy (5-6G/19-23L) of wine, etc. Gently stir. Dissolve chitosan (packet D2) in 1 fluid oz./30mL of warm water. Add and stir gently.  Clears wine  in 12-48 hours. May not clear pectin haze or products made with hard water. Storage: This product is not freeze/thaw tolerant. Frozen products will crystallize if stored at temperatures below 0°C/32°F for any length of time. There’s a lot to brewing. Although it’s relatively simple to learn, it can take a lifetime to master, and with all the different yeast, malts, hops, and specialty versions of each it can get more than a little complicated. Do you need to refrigerate the ingredients until brew day? +

The yeast is the most important ingredient to refrigerate once you receive your order. Hops should be refrigerated after a couple days if they're left out at room temp. Hops can be frozen and will last for 2-3 years still preserving their freshness. Malt extract should be left at room temperature until brew day up to 1-2 weeks. Liquid Malt Extract can can be refrigerated but will become rock solid which requires a hot water bath to thaw out or 24 hours at room temp to re-liquify. Dried Malt Extract should be stored at room temperature. Any grains in a paper bag should be used within 2-3 days for optimum freshness especially if they are pre-milled. Grain stored in plastic bags will last a couple months un-milled. We suggest double bagging to prevent oxidation.
