We took our American Pale recipe and upped the malt, threw a ton of hops in the finish for flavor, but kept the bitterness the same. We think toning down the perceived bitterness is one reason we consistently get great reviews from brewers sharing this with friends.
Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer. We like damn good beer. And yes we like to wear our Sperry Topsiders and listen to Van Halen when we drink this (note if you were born in the 80's ignore this comment).

MoreBeer! is proud to release this Black IPA recipe designed by our local homebrew Club DOZE. This black IPA recipe has been coined the name as 'Diablo Dark Ale' in honor of our resident Mt. Diablo. Here is where the Diablo Order of Zymurical Enthusiasts brew at the foothills fine tuning their homebrew recipes and sharing their passion for making great beer at home.
After winning the AHA Homebrew Club Of The Year in 2010, the Diablo Order Of Zymiracle Enthusiasts (DOZE) put their minds together to collectively craft a beer they felt representative of the club and its brewers. The initiative was taken on as an all club project that spanned 5 months. In the end, over 50 members contributed ideas to this recipe and nearly 40 individual batches brewed by 23 DOZE members were tasted and refined to a single recipe. This beer is inspired by the style many refer to as Cascadian Dark Ale or Black IPA, however it is not intended to fit the mold of any particular guideline. Mostly it is big, dark, hoppy, and delicious.

If you're a fan of Amber Ales, then you need to try this Alaskan Amber clone kit! The recipe is one of true Amber fashion, leaning on three different crystal malts for the flavoring grains. This Scotch Ale recipe is a huge, malty beer with a deep rich copper color. Scotch Ales have a flavor a little reminiscent of single malt Scotch with smoky overtones and roasted flavors. With a 1.075 to 1.080 starting gravity and 24 IBU of bitterness, it is distinctly malty, but not cloying like some Scotch Ale recipes. Scotch Ale strains typically ferment well down to 60 degrees and leave behind very few esters or fruity flavors, emphasizing the malt.

Jim was looking for a dark, smooth, creamy mouth feel stout just like an Australian stout he had tasted years ago. Over the years, Jim found a clone that was close but needed some small changes. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. Jim recommends WLP004 Irish ale yeast.

There are certain beers that you can't help but associate with a specific time of year, and there might be no better example than Sierra Nevada's Celebration IPA. As the year begins to wind down and we enter the holiday season, our eyes instinctively start scanning the shelves for those striking red labels. Once you've enjoyed that first pint of Sierra's signature seasonal release, it's hard to resist leaning into the holiday spirit. Sierra brews this recipe every year with their most recent haul of fresh, hand-selected hops, making each release slightly unique to past iterations. Even though our clone kit doesn't contain fresh hops, we strived to make a recipe that celebrates the character of Cascade, Centennial, and Chinook hops with heaps of citrus, piney, and floral notes.
Our Holiday Hops kit is a classic West Coast IPA with a distinct, but balanced malt character, deep reddish color and plenty of hop bitterness to match the bite of winter weather. Cascade, Centennial, and Chinook hops are employed up and down the brew schedule, from the top of the 90-minute boil to the final dry hop addition days before packaging. We highly recommend using a Chico yeast strain for fermentation—it's a Sierra Nevada ale recipe after all!

This maniacal monarch didn’t gain support for his claim to the throne through strategic wedding arrangements, nor did he bring his challengers to heel through deftly negotiated treaties. Oh, no. He conquered the realm using his dry, brutish nature and sheer force of juiciness. When the Juicy Brut enters the fray wielding his pulp-stained battle axe, he yawps but one maxim -- no quarter!
Juicy Brut IPA has a pronounced dry character with almost no malt sweetness, setting the stage for the Mosaic®, Amarillo® and Citra® hops to be on full display. Leaning heavily on whirlpool and post fermentation additions, the tropical flavor of these hops come bursting forth with aromas of lemon, orange, grapefruit, passionfruit and mango. We can offer only one piece of advice. Bend the knee and swear fealty to the Juicy Brut!

Jamil brews more, consistenly high-quality beer than any hombrewer we know. He won California Homebrewer of the Year in 2002, after winning over 150 total awards at brewing competitions, 55 of them being FirstPlace. Of all the beers that he brews, the Chocolate Hazlenut Porter (CHP, as Jamil says) is the cult favorite and the recipe he is asked-for the most. It also won Best of Show 2002, several First Place ribbons, and countless other awards. It comes complete with 25 ml of Hazlenut extract and 8 oz of chocolate. Jamil recommends using California yeast, WLP001. This kit has a lot of grain in it, so you may find two grain bags useful.

A very unique Belgian Ale. This recipe has moderate bitterness from early kettle additions of Saaz hops. This beer is spiced with Bitter Orange Peel and Coriander which lends a surprisingly pleasant flavor and aroma. The grain bill includes Oats and Flaked Barley which when combined with a very special non-flocculating yeast leaves a cloudy, almost white appearance. Hence the name wit which means white. This is a very refreshing style that has a light, crisp flavor. There are some phenolic flavors as well, like you would find in some Belgian Abbey Ales and even German Hefeweizen. Hoegarden or Celis White would be some commercial examples that represent this style.

Let us tell you about the inner workings of this bomb. Sure it has big IPA malt, but you want to know about the hops. It starts with an unreasonable amount of Simcoe®, Columbus, and Centennial hops. By themselves these are all explosive hops, but together they combine to bring true, huge IPA hop flavor. Because of the similarity of hops, one MoreBeer! staffer dubbed it a mini "Pliny The Elder... but with orange". High praise indeed.
Did you just say Orange? Well done sir, good paying attention. What really sets this IPA apart from the masses is that the recipe calls for you to cut up and add three fresh oranges into the fermenter. Crazy? We thought so. If you're looking for a new session IPA to obsess over, look no further! We recently changed this recipe slightly, making all finishing hops Centennial (rather than a blend between Centennial and HBC-342). We made sure to keep the Simcoe® dry hop though, as we felt this really brought a "pop" to the aroma!
While the general rule of thumb has been "one or two IPAs and you're feeling it", at just under 5%, we like to think of this beer as a hop lovers dream. The type of IPA that you can open up at noon, get the grill going, and forget worrying about how you're going to feel after drinking 8% IPAs for a few hours! (Yes, we know that feeling too...)
A half pound of corn sugar helps this one finish out nice and dry, while a small amount of acidulated malt will help make those hops pop. The clean bitterness of Warrior® balances perfectly with a slightly sweet malt profile, all topped off with a white, frothy head thanks to the wheat malt.

Chocolate and Black Patent malts are the backbone of this style. Our all-grain version of Porter features munich malt for a little maltiness and carapils for better mouthfeel and head retention. The Northern Brewer hops impart a nice, but not overpowering bitterness. Good first dark beer. However, for many people, this is their favorite style. Just ask Regan who is a Porter nut. All of our Porter recipes are descendants of his designs which date back to the 1980s. You will not find any Roasted Barley in our Porter recipes as we believe this is the defining difference between Stout and Porter. If you would like to see the difference for yourself try making our B3 Stout (in extract) or our Silk Stout in all grain form and then one of our Porters. Their flagship, Arrogant Bastard Ale, challenged us to pick up a bottle and drink it, kicking off a cult-like following of the beer and the brewery. For their 12th Anniversary, Head Brewer Mitch Steele and the Stone Brew Crew worked with homebrew recipes from Brewhouse Supervisor Jeremy Moynier and Distribution Supervisor Jake Ratzke to create this huge oatmeal stout, but instead of relying on just hops for the bitterness he added some cacao to the boil kettle. Mike is one of the best homebrewers we’ve ever known, and one of our original customers way back when the entire MoreBeer! operation fit inside a storage shed. Aside from brewing many award-winning beers, Tasty helped grow homebrewing as a hobby, and as a community, here in the Bay Area and well beyond.
Mike's American Amber Ale earned him multiple 1st- and 2nd-place ribbons, including a Gold Medal at the National Homebrew Competition. We were after him for awhile for this recipe and he finally gave his consent, allowing this to be the 11th entry into MoreBeer!'s lineup of Signature Series kits.
