This Scotch Ale recipe is a huge, malty beer with a deep rich copper color. Scotch Ales have a flavor a little reminiscent of single malt Scotch with smoky overtones and roasted flavors. With a 1.075 to 1.080 starting gravity and 24 IBU of bitterness, it is distinctly malty, but not cloying like some Scotch Ale recipes. Scotch Ale strains typically ferment well down to 60 degrees and leave behind very few esters or fruity flavors, emphasizing the malt.

Jim was looking for a dark, smooth, creamy mouth feel stout just like an Australian stout he had tasted years ago. Over the years, Jim found a clone that was close but needed some small changes. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. Jim recommends WLP004 Irish ale yeast.

A very unique Belgian Ale. This recipe has moderate bitterness from early kettle additions of Saaz hops. This beer is spiced with Bitter Orange Peel and Coriander which lends a surprisingly pleasant flavor and aroma. The grain bill includes Oats and Flaked Barley which when combined with a very special non-flocculating yeast leaves a cloudy, almost white appearance. Hence the name wit which means white. This is a very refreshing style that has a light, crisp flavor. There are some phenolic flavors as well, like you would find in some Belgian Abbey Ales and even German Hefeweizen. Hoegarden or Celis White would be some commercial examples that represent this style.

Jamil brews more, consistenly high-quality beer than any hombrewer we know. He won California Homebrewer of the Year in 2002, after winning over 150 total awards at brewing competitions, 55 of them being FirstPlace. Of all the beers that he brews, the Chocolate Hazlenut Porter (CHP, as Jamil says) is the cult favorite and the recipe he is asked-for the most. It also won Best of Show 2002, several First Place ribbons, and countless other awards. It comes complete with 25 ml of Hazlenut extract and 8 oz of chocolate. Let us tell you about the inner workings of this bomb. Sure it has big IPA malt, but you want to know about the hops. It starts with an unreasonable amount of Simcoe®, Columbus, and Centennial hops. By themselves these are all explosive hops, but together they combine to bring true, huge IPA hop flavor. Because of the similarity of hops, one MoreBeer! staffer dubbed it a mini "Pliny The Elder... but with orange". High praise indeed.

What really sets this IPA apart from the masses is that the recipe calls for you to cut up and add three fresh oranges into the fermenter. Crazy? We thought so. If you're looking for a new session IPA to obsess over, look no further! We recently changed this recipe slightly, making all finishing hops Centennial (rather than a blend between Centennial and HBC-342). We made sure to keep the Simcoe® dry hop though, as we felt this really brought a "pop" to the aroma!
While the general rule of thumb has been "one or two IPAs and you're feeling it", at just under 5%, we like to think of this beer as a hop lovers dream. The type of IPA that you can open up at noon, get the grill going, and forget worrying about how you're going to feel after drinking 8% IPAs for a few hours! (Yes, we know that feeling too...)

Chocolate and Black Patent malts are the backbone of this style. Our all-grain version of Porter features munich malt for a little maltiness and carapils for better mouthfeel and head retention. The Northern Brewer hops impart a nice, but not overpowering bitterness. Good first dark beer. However, for many people, this is their favorite style. Just ask Regan who is a Porter nut. All of our Porter recipes are descendants of his designs which date back to the 1980s. You will not find any Roasted Barley in our Porter recipes as we believe this is the defining difference between Stout and Porter. If you would like to see the difference for yourself try making our B3 Stout (in extract) or our Silk Stout in all grain form and then one of our Porters. Founded in 1996, Stone Brewing Co. has unleashed a demand for over-the-top beers. Their flagship, Arrogant Bastard Ale, challenged us to pick up a bottle and drink it, kicking off a cult-like following of the beer and the brewery. For their 12th Anniversary, Head Brewer Mitch Steele and the Stone Brew Crew worked with homebrew recipes from Brewhouse Supervisor Jeremy Moynier and Distribution Supervisor Jake Ratzke to create this huge oatmeal stout, but instead of relying on just hops for the bitterness he added some cacao to the boil kettle. The result is simply amazing! We first had this beer at the shop and thought, "We have to have this recipe"! Mitch and Greg must have felt the same way about this beer that we did and handed it over. Aside from brewing many award-winning beers, Tasty helped grow homebrewing as a hobby, and as a community, here in the Bay Area and well beyond.
Mike's American Amber Ale earned him multiple 1st- and 2nd-place ribbons, including a Gold Medal at the National Homebrew Competition. We were after him for awhile for this recipe and he finally gave his consent, allowing this to be the 11th entry into MoreBeer!'s lineup of Signature Series kits. Contrary to its name, Ugly Fish IPA is actually one of the most beautiful beers we have to offer! Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.

Kiwi Kiss is our ode to the many delicious hop varietals that hail from New Zealand. Hops were first planted on the north and south islands by British settlers in the mid-1800s, but it wasn't until the early 21st-century that NZ-grown hops really exploded in popularity. As beer drinkers began flocking to more tropical, citrus-forward interpretations of IPA, brewers began to recognize the potential for the hops exporting from kiwi country. Today, New Zealand hops are widely sought after for their highly aromatic quality and delicious array of fresh flavors. Kiwi Kiss is a clean, lightly-colored, Hazy IPA with a moderate alcohol level. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Since then, Firestone Walker has been gaining a large following in California due in part to it's flagship beer, Double Barrel Ale, which is produced in a Burton Union system that has the beer fermenting in barrels. Brought to us by Nate Smith, this IPA truly is a hop bomb! With almost 10oz. of hops in a 5 gallon batch, this is one that hop-heads definitely need to try. Falconer's Flight, Citra®, Magnum, Columbus and Centennial all play a role in the clean bitterness and amazing hop aroma and flavor that you get out of this IPA. Nate is a participant in the Brewing Network's Sunday Session podcast, an active member of D.O.Z.E. (Diablo Order of Zymiracle Enthusiasts) Homebrew Club, and has been homebrewing for over 14 years. Thick fog rolls over a dimly lit stage as the volume from an array of loudspeakers steadily rises. You feel the sonic waves emanating from the sound system pass through you, standing up the hair on the back of your neck. Just as the anticipation becomes too much to bear, the darkness is pierced by a spectrum of beam lights and the bass drops. Your eyes squeeze shut and you cover your ears in a trifling attempt to block out the deafening shrieks of 50,000 rabid fans. But it’s no use. Finally, you unclench your eyes and realize that you're not standing in a sea of concert-goers. And it's you that's cheering at the top of your lungs after taking your first sip of K-POP Kettle Sour.
If you've never brewed a kettle sour before, this is the perfect introductory kit. The process requires some extra equipment and steps compared to a normal brew day, but it's worth it! The end result will be a refreshingly light and easy-drinking beer with a delightful tartness that finishes clean. Check out the recipe sheet below and review the instructions before purchasing, and make sure to add both a yeast pitch and a lactobacillus pitch to your order.
This recipe makes a delicious golden sour that is enjoyable without further alteration, but we highly recommend adding dry hops or fruit to make it your own. You can purchase puree from the add-on options above or you can use your own fresh or frozen fruit. We recommend 1 lb of whole fruit per gallon or 1-2 packages of puree for a 5-gallon batch. Moonraker brewing is an absolute favorite amongst our staff members here in California. So, when they agreed to collaborate on a beer kit, we were through the moon. When galaxies collide, stars and planets alike are ripped apart with all types of matter being flung hither and yon. Luminescent particles are scattered to the ether, condemned to wander the void or bound to coalesce into new celestial bodies. Some believe that amongst the chaos of colliding fragments, a mythical form of cosmic dust condenses into Space Nectar—matter so delicious that our Terra-bound taste buds would surely find it incomprehensible. Physics be damned, Moonraker Brewing Company's extraordinary Hazy IPA is the best estimation of what it may be like to take in this heavenly ambrosia. Space Nectar overflows with flavors of peach, apricot and orange sherbet. Over half of the hop bill is comprised of Cryo Hops® which lend a clean, pungent aroma to this absolute juice bomb. Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale.
This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends.
Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit).
