In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super were excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the Commander In Chief of America and his White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since its for the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

Brewed for the first time in 2010 in our parking lot at the annual July 15th Showroom Sale, we decided to experiment with another sour. This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it!
This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own!
Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience. Use excellent sanitary methods when working with our wild lil buddy’s to ensure a clean brewhouse. Try adding any local fruit as a food source for the bugs and wild yeasts. They love it! Patience!

Because JP tends to get really good boilovers when he brews he usually makes high gravity beers whether he intends to or not. Gary Glass started homebrewing in 1992, shortly after tasting his first homebrew while attending while attending college at Cal Poly, San Luis Obispo. Gary brews on a home-built HERMS system, and he?s never brewed the same recipe twice and can't brew any recipe without some kind of tweaking. Gary is a BJCP judge who has judge in many competitions including the World Beer Cup and the Great American Beer Festival.
Gary holds a Masters Degree in American Diplomacy from the University of Colorado at Boulder. When not homebrewing, he enjoys fly fishing, hiking, and backpacking in the Rocky Mountains. He's also into gardening (his Cascades finally produced a good crop this year!), home improvement projects, and building furniture.
Gary lives in Longmont, Colorado with his wife Erin, who fully supports his brewing habit,bought him a conical fermenter and is encouraging him to install taps in their family room. He knows you are jealous. Gary is looking forward to teaching his daughter, who is due in November, to brew someday.
Gary enlightens us on how to authentically brew his beer: "This recipe can be brewed as either a Maibock or a Belgian strong ale. The beer was originally brewed as a 10.5 gallon batch split into two carboys with yeast slurry from previously brewed pilsner. To accurately recreate the Belgian strong ale, one should accidentally pour hot wort (due to user error with a counter-flow chiller) onto lager yeast slurry, being sure to thoroughly cook the yeast. Chill, then pitch a vial of Belgian ale yeast. The Maibock came out great, the Belgian strong even better. Of course, if you don't feel like attempting to cook yeast to make this beer, a nice big starter of Belgian ale yeast should do the trick." Sounds great to us!

A modern twist on an American classic!
California Common is a unique beer style dating back to the days of the California Gold Rush, when brewers on the west coast incorporated caramel malts and additional hop character into their lager beers, helping mask the effects of warmer fermentation owing to a lack of available refrigeration. The resulting beer was a jack-of-all-trades: malty and full-bodied enough for a winter evening, but also hoppy and dry enough for the hottest California afternoon.
Here at MoreBeer! we love the classics, and Cal Common is no exception. But we’re a long way from 1849 and it’s time to give this classic, nearly forgotten beer style a chance to step into the modern age. To do that, we’ve combined the Northern Brewer hops that typify California Common with the Simcoe® hops that are so prevalent in today’s California IPAs, creating our first ever hop blend, “Norcoe.” The resulting beer is still a delicious jack-of-all-trades, but with a hop profile that’s at the same time common, and not Common at all!

This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005.
Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back.

A very well balanced Pale Ale. You can taste the malt and the hops without being overpowered by the bitterness. We use Crisp Maris Otter malt for a drier finishing Pale Ale. We differ from the standard British Pale Ale recipes by throwing in a 1/2 of Munich for a little roundness of flavor and 1/2 pound of Carapils for added body. The crystal malt used is British Carastan. Northern Brewer hops are really mellow and not at the front of the flavor profile.

Our Flander's Red recipe creates a beer that is deep red in color with a nice malt structure, this beer is based on those from certain regions of Belgium, and have distinct sour overtones to them. This is due to the wild spores that inhabit the air - and some breweries - of the area. While this would normally be a "bad" thing, the infection lends special tart and sour qualities unlike any other beer can. For a more traditional spin on this kit, try aging it on some oak cubes!
We recommend fermenting this beer with WLP001 California Ale for two weeks. Then add Wyeast 3763 Roeselare Belgian Sour Blend in the secondary fermenter bucket. This kit does require some special instructions, as it is a special beer. Once the gravity hits 1.015 - 1.020, rack the beer into a plastic bucket and pitch the sour blend tube. Age the beer at 65F-70F for 6 months, until the white cap that will form drops. The reason for the plastic bucket aging is so that tiny amounts of oxygen are allowed to be taken in by the plastic and come in contact with the beer. This micro-oxidation adds to the over all flavor of the beer itself.
Reminder: you will need to keep the equipment used to handle the beer after the sour blend is introduced separated from the rest of your brewing equipment, or clean and sanitize very well after use.

Belgian ales are really about creating a simple yet elegant malt base upon which the unique Belgian yeast strains can create their wonderful, complex flavors. This Belgian Ale is their equivalent of our pale ale in alcoholic strength and body. The difference is that the hops are very subdued and only complimentary where as in many American beers hops can create a majority of the flavor profile. One is not better than the other just different, and we love diversity in beer.
Terms used to describe Belgian Ales include phenolic, fruity, with the occasional clove, plum, and banana flavors coming through. Sometimes you just have to try one to understand. In the Dubble and Triple you will have some higher alcohol flavors coming through. This version is less alcoholic and highly drinkable.
Any of the four Belgian yeast strains that we carry from Whitelabs could be used in any of the Belgian recipes. They are all excellent in their own right. The malt extract for this kit is made entirely from our German Pilsner Malt, giving it authentic European flavor. We use turbinado sugar to help up the alcohol and dry out the beer during fermentation.

After taking the Eight - week course at Sieble, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

If you have a monstrous craving for intense hop flavor, you’ll need a beast of equal proportion to do battle. Enter Hop Mothra! This liquid kaiju isn’t interested in saving (or destroying) Tokyo. Her only motive is to slake your thirst and leave you yearning for more – so much so that you’d swim to Infant Island for another taste. With a nice malt backbone (err thorax?) this beast will soar over your tongue and, with a flap of her wings, send a hurricane of hop flavor to assault your taste buds.
Jim Nielsen’s Hop Mothra IPA uses 2-row for the base and a trio of crystal malts that give this beer a beautiful pale to medium amber color. Perle, Cascade, and Liberty hops lend a spicy aroma with flavors of grape fruit and citrus.
Jim began home brewing in 1994, but it wasn’t until the Great American Beer Festival of ‘98 that he came across a beer that would alter the course of his hobby. Grant’s Brewing Company made a batch of beer especially for the festival – Hopzilla! John C. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982. In the Fall of 1986, he decided to turn his passion into a job and attended the Siebel Institute of Technology, graduating from their 50th course in Brewing Technology. The Alaskan Brewery in Juneau hired John as Assistant BrewMaster in March of 1987. In 1988 he won the prestigious American Homebrewer's Association Homebrewer of the Year award. Nose Goblin from Ghost Town Brewing in Oakland, CA is their infamous West Coast-style Imperial IPA with big honking notes of white grapes, melons, berries, and uncouth levels of dankness. This dangerously smooth double IPA is all about the hops with very little malt character. Almost exclusively comprised of Pilsner with just a dash if acidulated malt, Nose Goblin is a beautiful clear straw color in the glass. Ghost Town Brewing's Nose Goblin took Gold at the 2021 Great American Beer Festival, besting 170 other beers submitted in the Imperial IPA category. "Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. Ryan also recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

This is our normal Ugly Fish IPA that you know and love but with pineapple flavoring included. Add the flavoring just prior to bottling or kegging and you'll have a great tropical IPA to enjoy.
Contrary to its name, Ugly Fish IPA is actually one of the most beautiful beers we have to offer! Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.
If you're looking to treat your taste buds to a beer that we think has been hopped perfectly, we highly recommend the Ugly Fish IPA!

Ale Industries was the second brewery to open in Concord, and just happened to be right next door to us (man, we were lucky)! Morgan and Steve, the brewers and co-owners, opened Ale Industries with one thing in mind - to not brew the same beers that everyone else is brewing. Their first beer, a hybrid Witbier called "Orange Kush" (now called Golden State of Mind), is more malty and aromatic than most commercial wits are. The second beer, Rye'd Piper, is a malty red ale that has a very hop-forward structure, but not over the top, like some reds can be.

We would not have put 3lbs of honey with 7 lbs of malt in a pale ale, but Jim had no fear and did just that. The result - a really nice mix of malt and honey flavors. There is enough honey to make it through into the flavor. Just a little Cascade hops in the beginning and finish keep the flavor emphasis on the honey. He suggests WLP002 because it is less attenuative and leaves more malt behind.

The "Original Gatoraid", Bière de Garde was said to give the French and Belgian farmer a much needed boost of energy during the day, due to the low alcohol and relatively high residual sugar content. Our version has a bit more malt than tradition dictates, but we think you will find this beer highly drinkable. The malt is the focus of this style of beer, with a slight toasty nose from the Munich. A yeasty character is not uncommon, and is achieved by an extended period of contact with the yeast bed – some commercial breweries go for up to six weeks! This should be fermented at 64°F.

Pizza Port in Solana Beach was the first of three brewpubs to open under the Pizza Port name. Brandon Edwards, who used to be an employee of Morebeer, has been brewing in Solana Beach for a number of months, and with Pizza Port for a few years. Brandon made this recipe to celebrate the one year anniversary of the Toronado beer bar opening in San Diego. This brown ale is pretty malty and hoppy, but we wouldn't expect anything less from Brandon!

Jason use to brew up Jim Rossi's Honey-Pale and our B3 Stout and mix them together out of the tap 50/50. Jason decided to take it one step further and started brewing them together. He says "It is a like a Black and Tan" with a honey flavor of course. The beer does not taste like a true stout but is very far from being a Pale Ale. Chux DIPA from Danville Brewing Company in Danville, CA is all about the hops. This celebration of hop flavor is packed with bright, citrusy tropical aromas that jump from the glass! Most of the IBUs come from a "First Wort" addition of Magnum. This process refers to adding hops to your kettle as soon as you begin collecting wort from your completed mash, resulting in a very smooth bitterness up front. From there, healthy aroma additions of Cascade, Citra®, Mosaic®, and Strata are combined for an incredibly expressive Double IPA.
Danville's Chux DIPA beat out 218 other entries to bring home Bronze in the Imperial India Pale Ale category at the Great American Beer Festival in 2017.

Just as King Ghidora is not limited to a single ferocious maw, you’ll be hard-pressed to have but a single pour of this juicy, tropical brew. Without a ragtag ensemble of advorseries spearheaded by Godzilla himself, King G will reign over your beer rotation till he ultimately brings about the Earth’s next extinction-level event and moves on to another planet victim.
King Ghidora was brewed in collaboration with our Pittsburg, CA neighbors, E.J. Phair Brewing Company. It features a clean grist of 3 unique base malts, with a touch of white wheat for head retention and a dash of acidulated malt to lower pH. With only a quarter ounce of Citra® added late in the boil, this beer shows very little bitterness and lets the flavor and aroma hops do the talking. The first dry hop addition is added to the fermenter before transferring wort from the kettle. Although this isn't a Hazy IPA, the beer will have a slight permanent haze due to biotransformation, which occurs when yeast interact with hop oils during primary fermentation.

And since his I2PA was such a hit when we released it, we asked him for another one. Being the nice guy that he is, he sent over one of his private, 2050-System-only, impossible-to-taste-unless-you-live-in-Newport, Oregon brews - Blackened Brutal Bitter! Do you love huge dark beers, coffee, and a hint of spice? Then we have the totally unique, amazing beer for you. This is a massive Imperial Porter that starts with 15 lbs of base malt and a laundry list of specialty malts. This recipe hails from the Project Extreme Brewing book. It was originally created by Dogfish Head coworkers where it won an internal small batch brewing competition on the basis of its amazing, unique flavors. Big and black with caramel, wheat, black, and chocolate malts to give it a dark, roasty flavor. You provide the Sanka instant coffee, cinnamon, and nutmeg. Named after the coffee drinking, pioneer science teach Mr. Hector Vargus from the 80's movie Fast Times at Ridgemont High. This is one of those rare beers that can age gracefully for years.
