Pliny the Elder is a truly amazing beer with a cult like following, and was once one of the hardest IPAs to find, as Russian River brewed it in very limited quantities. Depending on where you live, it may still be next to impossible to track down! But with this killer clone kit you can make your own Pliny and perhaps you will develop your own cult following where you are worshiped by your beer loving friends. (Hey, it could happen!). Who is Pliny the Elder?
This beer is named after Gainus Plinius Secondus, or Pliny the Elder, a Roman author, lawyer, naval man and naturalist who first mentions the botanical name for hops in his writings - lupus salictarius, which translated from Latin means Wolf Among Willows. Sadly, Pliny died while helping people escape the eruption of Mt. Vesuvius in August, 79 AD. Pliny the Younger was the nephew of Pliny the Elder and is the name of another outrageous and highly sought-after beer from Russian River.

Haze Craze is our take on the hazy New England IPA recipe. Also known as a North Eastern IPA, or Juicy IPA, it quickly became one of the most popular beer styles in the US. It packs all of the hop character that craft beer nerds love, and it's much softer and less bitter than classic West Coast IPAs, making it a much more approachable style for the uninitiated. The original Double IPA! Vinnie Cilurzo began homebrewing in 1989 while in college. In 1994 Vinnie started the Blind Pig Brewing Company in Temecula, CA, a small, low-budget micro-brewery known for their extremely hoppy IPA—an IPA which won silver medals at both the Great American Beer Festival and the World Beer Cup. Vinnie sold his share in Blind Pig and was hired to manage and brew at the Russian River Brewing Company, a start-up brewery by Korbel Champagne in Guerneville, CA. In late 2002 Korbel decided to get out of the beer business and sold the Russian River name and brand to Vinnie who moved the brewery to Santa Rosa, CA, 90 miles North of San Francisco, where he and his wife Natalie opened a brew-pub which serves delicious bites and, of course, all of the Russian River Ales. Vinnie has won 10 awards at the Great American Beer Festival in just six years and was named Small Brewing Company Brewmaster of the Year in 1999. Russian River's smashing success continues to this day, expanding and opening a second brewery in Windsor, CA. Almost every beer that Vinnie makes commercially started out as a homebrew recipe at one point or another. Even as a professional brewer, Vinnie still homebrews at least 5 or 6 times a year.
This is the original homebrew recipe that was the basis for Blind Pig IPA which won Silver Medals at the World Cup of Beer and the Great American Beer Festival in 1996, the last year Vinnie brewed it. Two dry hop additions along with 1 oz of American Oak are added directly to the fermenter after the first week of fermentation. To say it is a very unique, extremely flavorful IPA is an understatement. Vinnie recommends using White Labs California yeast, WLP001.

Based off of one of the most exceptional east coast beers (in our humble opinion) on the market, this double IPA instantly became one of our favorite ingredient kits! Our version of a Heady Topper clone recipe is packed with almost a pound of hops, and is definitely a beer that will have hopheads in hopheaven.
One of the first things we noticed when pouring this beer into the pint glass was the aroma. With a dry hop addition consisting of Apollo, Centennial, Columbus, Simcoe®, and Amarillo® hops, we weren't necessarily surprised. Impressed is more like it. A balanced malt profile helps to tame the bitterness, allowing the hop flavor and aroma to be the true star in this recipe.

MoreHaze! is a delicious, juicy, NE style double IPA. This beer was brewed as a collaboration between EJ Phair Brewing Co. and MoreBeer! We liked the beer so much that we wanted people to be able to brew it at home.
The beer is very high in alcohol (9.1% ABV), low in bitterness, light in color and loaded with hops. We dry hopped this beer in multiple stages, added lots of high protein grains and did not use any clarifying agents, which leads to a hazy beer loaded with flavor. Flavor and aroma is very citrusy (orange, tangerine, grapefruit) and mildly danky. The large addition of wheat and oats adds a soft, pillowy texture to the beer. The feed back was that this beer is delicious and dangerously easy to drink at such a high ABV.

If you're looking for a new session IPA to obsess over, look no further! We recently changed this recipe slightly, making all finishing hops Centennial (rather than a blend between Centennial and HBC-342). We made sure to keep the Simcoe® dry hop though, as we felt this really brought a "pop" to the aroma!
While the general rule of thumb has been "one or two IPAs and you're feeling it", at just under 5%, we like to think of this beer as a hop lovers dream. The type of IPA that you can open up at noon, get the grill going, and forget worrying about how you're going to feel after drinking 8% IPAs for a few hours! (Yes, we know that feeling too...)

We met Steve Luke (owner and head brewer) up at the Yakima Fresh Hop Ale Festival and were thoroughly impressed with his beer. After tasting every beer at the festival, there was no question that the Cloudburst Wet Hop IPA was best in show.

MoreBeer! is proud to release this Black IPA recipe designed by our local homebrew Club D.O.Z.E.
After winning the AHA Homebrew Club Of The Year in 2010, the Diablo Order Of Zymiracle Enthusiasts (DOZE) put their minds together to collectively craft a beer they felt representative of the club and its brewers. The initiative was taken on as an all club project that spanned 5 months. In the end, over 50 members contributed ideas to this recipe and nearly 40 individual batches brewed by 23 DOZE members were tasted and refined to a single recipe. This beer is inspired by the style many refer to as Cascadian Dark Ale or Black IPA, however it is not intended to fit the mold of any particular guideline. Mostly it is big, dark, hoppy, and delicious.
The recipe was coined 'Diablo Dark Ale' in honor of our near by Mt. Diablo. Members of the Diablo Order of Zymurical Enthusiasts live in various cities located at the base of this great mountain. Also the location where many of us from MoreBeer! go mountain biking when we get the chance.

Remember your parents scaring you with "Be careful of firecrackers, they can explode in your hand!" Well let us warn you right now... our new, juicy M-80 IPA is going to explode in your mouth. It's going to be crazy. Flavors going everywhere. Maybe your parents would tell you to use caution and not to make this beer. But your grown up now, making adult decisions (most of the time), and we think you've earned the right to buy a beer kit with a fuse and a lighter. With a slight smile and a wink of the eye, we say "go ahead... have some fun".
Let us tell you about the inner workings of this bomb. Sure it has big IPA malt, but you want to know about the hops. It starts with an unreasonable amount of Simcoe®, Columbus, and Centennial hops. By themselves these are all explosive hops, but together they combine to bring true, huge IPA hop flavor. Because of the similarity of hops, one MoreBeer! staffer dubbed it a mini "Pliny The Elder... but with orange". High praise indeed.
Did you just say Orange? Well done sir, good paying attention. What really sets this IPA apart from the masses is that the recipe calls for you to cut up and add three fresh oranges into the fermenter. Crazy? We thought so. But that is what we love about our Signature Series of Beer Kits, a selection of crazy, unique beers that really stand out. M-80 IPA was designed and created by your fellow homebrewer, Carlos Musquez. We do admit he went a little AWOL on this kit and into uncharted territory, but we love a rebel.

This maniacal monarch didn’t gain support for his claim to the throne through strategic wedding arrangements, nor did he bring his challengers to heel through deftly negotiated treaties. Oh, no. He conquered the realm using his dry, brutish nature and sheer force of juiciness. When the Juicy Brut enters the fray wielding his pulp-stained battle axe, he yawps but one maxim -- no quarter!
Juicy Brut IPA has a pronounced dry character with almost no malt sweetness, setting the stage for the Mosaic®, Amarillo® and Citra® hops to be on full display. Leaning heavily on whirlpool and post fermentation additions, the tropical flavor of these hops come bursting forth with aromas of lemon, orange, grapefruit, passionfruit and mango. We can offer only one piece of advice. Bend the knee and swear fealty to the Juicy Brut!

Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Siebel, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. Their attention to detail and their commitment to making great beer is evident in each batch that rolls out of the brewery. Definitely another 'must' for any beer fan visiting the Bay Area. One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

Contrary to its name, Ugly Fish IPA is actually one of the most beautiful beers we have to offer! Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.
If you're looking to treat your taste buds to a beer that we think has been hopped perfectly, we highly recommend the Ugly Fish IPA!

John C. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982. In the Fall of 1986, he decided to turn his passion into a job and attended the Siebel Institute of Technology, graduating from their 50th course in Brewing Technology. The Alaskan Brewery in Juneau hired John as Assistant BrewMaster in March of 1987. In 1988 he won the prestigious American Homebrewer's Association Homebrewer of the Year award. In May 1989 he left Alaska Brewery, and that same month walked in on the very first brew at Rogue Ales Brewery in Newport, Oregon. He has brewed over thirty million pints of beer for Rogue since.

Imperial India Pale Ale ("I2PA") Recipe We were ecstatic when John offered us his famous Imperial India Pale Ale recipe as an ingredient kit. I2PA is a malty beer that is radically hopped with an intense aroma and hop bitterness. You can think of I2PA as an IPA on steroids. Beside the extract, the only other ingredient is a copious amounts of hops. No steeping grains! We suggest you buy a bottle of Rogue I 2 PA and see how your version matches up against the original. John recommends using White Labs California Yeast, WLP001.

Brought to us by Nate Smith, this IPA truly is a hop bomb! With almost 10oz. of hops in a 5 gallon batch, this is one that hop-heads definitely need to try. Falconer's Flight, Citra®, Magnum, Columbus and Centennial all play a role in the clean bitterness and amazing hop aroma and flavor that you get out of this IPA. Nate is a participant in the Brewing Network's Sunday Session podcast, an active member of D.O.Z.E. (Diablo Order of Zymiracle Enthusiasts) Homebrew Club, and has been homebrewing for over 14 years. Needless to say, Nate's familiar with the scene!
Nate's Recommendations on the Citrus Bomb IPA:
Use WLP001 (with a starter) or WY1056 yeast. Plan on an 18-20 day fermentation: 10 Days at 65F, then raise to 68F on the 10th day. Add your dry hops 5 days later, and rack 3-5 days after that. *NOTE* Fining with biofine is recommended!

Contrary to its name, Ugly Fish IPA is actually one of the most beautiful beers we have to offer! Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.

Hop Hunter IPA by Sierra Nevada brewing is the inspiration for this delicious recipe. Hop Gatherer is a Hop Hunter clone, which contains all of the same ingredients as the original beer, but gives you the option of what distilled oil you would like to use. We offer the kit with either Chinook or El Dorado farm distilled hop oil. Either way, this makes a tasty, easy drinking and highly aromatic IPA!
A bit about farm distilled hop oil: Distilled immediatley after picking, farm distilled hop oil gives you the bursting aroma provided by fresh hops. By distilling the oil at the farm, the distinct character of a "wet hop" beer is able to be replicated year round. The oil can be added post fermentation, typically at bottling. You can even add the oil directly to your glass! Be careful, it is VERY POTENT!
Light in color and incredibly smooth, this IPA is enjoyed by all. Not too bitter, but absolutely hoppy enough to please the biggest hop head!

If you have a monstrous craving for intense hop flavor, you’ll need a beast of equal proportion to do battle. Enter Hop Mothra! This liquid kaiju isn’t interested in saving (or destroying) Tokyo. Her only motive is to slake your thirst and leave you yearning for more – so much so that you’d swim to Infant Island for another taste. With a nice malt backbone (err thorax?) this beast will soar over your tongue and, with a flap of her wings, send a hurricane of hop flavor to assault your taste buds.
Jim Nielsen’s Hop Mothra IPA uses 10 lbs of Ultralight Malt Extract, 1 pound of Light DME, and a trio of crystal malts that give this beer a beautiful pale to medium amber color. Perle, Cascade, and Liberty hops lend a spicy aroma with flavors of grape fruit and citrus.
Jim began home brewing in 1994, but it wasn’t until the Great American Beer Festival of ‘98 that he came across a beer that would alter the course of his hobby. Grant’s Brewing Company made a batch of beer especially for the festival – Hopzilla! This beer made such an impression on Jim that he decided to take his passion for home brewing to the next level, and he began his search for a brew system that would allow him to do everything the pros can do. He helped MoreBeer! develop one of our first digitally controlled brew sculptures, and not long after he had brewed his own version of Hopzilla that he (unsurprisingly) enjoyed more than the original – HOP MOTHRA! There's a new style on the scene that has everyone tapping their toes, and we're excited to bring you a beer from the man who started the tune. In our latest addition to the BrewMaster Series lineup we have one of the original Brut IPA's - Puttin' on the Spritz! This hybrid IPA is the brainchild of Kim Sturdavant of Social Kitchen & Brewery in San Francisco, California. We first met Kim on our journey to brew with and understand the amyglucosidase enzyme (the signature ingredient responsible for a Brut's dry character). Kim, being the stand-up fella that he is, was kind enough to not only share his knowledge of the AMG enzyme, but also the very recipe that shook up the brew scene and inspired countless iterations of the style.
Despite its dry character, Puttin' on the Spritz is sneaky drinkable with a thirst-quenching profile. El Dorado and Mosaic® hops impart tart citrus and tropical fruit notes, while a malt bill primarily featuring pilsner DME and flaked corn makes for an ultra-clean finish with almost no caramel or overt malty flavors. Crisp, dry, clean, crushable.

It is the antithesis of todays super citrusy hopped, pale colored IPAs. This is all about malt, malt, malt and how British Kent Goldings (BKG) hops blend oh so well with a malt heavy beer. British Kent Goldings are the most prized ale hops in England and known for their subtle nature and floral aromas that really compliment malt flavors.
