Phantasm Powder has been causing quite a stir on the craft beer scene, and the buzz is well deserved. Adding this powder to your wort and fermenting it with a thiolized yeast strain is one of the easiest ways to boost tropical flavor and aroma in your finished beer. Derived from Marlborough Sauvignon Blanc Grapes, this powder will add a concentrated dose of thiol precursors. During fermentation, yeast will go to work on these aroma compounds and "free the thiol", boosting the tropical bouquet of your beer to supernatural levels. We're stoked to get this cutting-edge ingredient into the hands of homebrewers so we designed a series of Phantasm recipe kits that will set you up to take full advantage of brewing with Phantasm Powder.
Our Phantasm Hazy Pale Ale features a 50/50 split of New Zealand and Pacific Northwest aroma hop additions that lean into a tropical, citrusy character that will pair perfectly with Phantasm Powder. Since this kit series is all about the thiols, we start with whole cone Cascade in the mash to further increase the thiol precursors. Add the Phantasm Powder at flameout along with your whirlpool / hop stand additions. For maximum effect, we highly recommend choosing a thiolized yeast strain for fermentation which are specifically designed to boost thiol biotransformation.

This plastic quick disconnect set features 1/4" barb which can be used with tubing ID 3/16" through 5/16". The quick disconnect functionality is activated by a shrouded thumb latch. We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: Ultralight malt extract, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
Craft Meister Oxygen Brewery Wash is an oxygen based cleaner that dissolves quickly into solution and gets to work faster than competing products. Unlike other oxygen based cleaners, Oxygen Brewery Wash will not leave behind a chalky residue or film on your equipment. Rinse with clean water and sanitize, if required.
Wine Making
Use Delvozyme (Lysozyme, Lysovin) for controlling lactic acid bacteria growth in your wine. Isolated from egg whites, this enzyme will degrade the cell wall of gram positive bacteria, but will not affect yeast or gram negative bacteria such as Acetobacter. Delvozyme can be used for both Red and White Wine Malo Fermentation.
Dosage:
To Delay Malolactic Fermentation: Red Wine - add to grapes at 100 - 200 ppm, or 0.38 - 0.76 grams per gallon. White Wine - Add to must at 200 - 300 ppm, or 0.76 - 1.14 grams per gallon.
To Block Malolactic Fermentation: White Wine - Add to must or wine at 300 - 500 ppm, or 1.14 - 1.90 grams per gallon.
Stabilizing wine after MLF is complete: Add to barrel during storage at 250 - 500 ppm, or 0.95 - 1.90 grams per gallon.
When blending partial and complete MLF wines: Add immeditatley after blending at 300 - 500 ppm, or 1.14 - 1.90 grams per gallon, to reduce the risk of further malolactic fermentation (MLF). Within several days any lactic should expire.
For sluggish or stuck yeast fermentation: Red Wine - Add at 150 - 400 ppm, or 0.57 - 1.52 grams per gallon. White Wine - add at 300 - 500 ppm, or 1.14 - 1.90 grams per gallon.
Directions for use: You can make a 10% solution of Delvozyme in water (100 grams per liter of water). However we find the easiest method is to add the desired dry weight of Lysovin in 5x its weight of warm(tepid) water. Mix for one minute, allow this mixture to stand for 45 minutes and add to must, juice or wine while mixing well. Allow 24 - 48 hours for reaction to complete.
**Note: 3tsp Delvozyme = 5g
Beer Making
Delvozyme can be used in beer making as well. Use either in the starter (recommended if you make starters) or when pitching (adding) the yeast to the wort, do not use over 140 F. Recommended dosages is 1 tsp per 5 gallons of wort. According to studies it has no effect on flavor or clarity.
Storage: Should be stored at room temperatures in a dry environment, can be stored up to 5 years.

Vanilla beans are a great way for the adventurous homebrewer to impart a different and unique flavor to their beers.
These Bourbon Vanilla Beans from Madagascar are fresh, (unlike the dry beans you typically see in grocery stores) and ready to be used in whatever beer you like.
To use, simply slice the bean open lengthwise and add to your Secondary or Keg. Want an easy-to-use, stainless vessel that ferments and carbonates? This 58L/15.3 Gallon keg has been modified to allow you to do both! The top is fitted with a large 4 inch tri-clamp lid with two ball lock posts and a pressure relief valve. You can use this vessel to ferment, carbonate, serve, or push the beer through a filter. Depending on how long it will take to consume the finished beer, we recommend using two kegmenters, one for fermentation and one for carbonating and serving. What is a Counter Pressure Filler? If you currently carbonate and store your homebrew in kegs, you can use a counter pressure filler to bottle beer directly from your kegs. One huge advantage of this method is that since you are bottling already carbonated, clear beer, there will be no sediment at the bottom of your bottles.
Counter pressure filling is how a brewery bottles beer. The bottle is under pressure while the carbonated beer flows in. Because the interior of the bottle is pressurized there is minimal loss of the CO2 in solution. The opposite of filling under pressure is when you pour a beer into a pint glass where CO2 erupts out of solution creating all that foam. Great in your glass but not good when you are trying to bottle carbonated beer. Our counter pressure filler mimics a single filling head on a professional bottling line, a concept that we all know works very, very well.
Features While some models flush the bottle from the top and fill from the bottom, our unit features a special valve that allows CO2 and beer to flow down the same stainless tube, directly to the bottom of the bottle. First CO2 flows down into the bottom of the bottle to flush from the bottom up. Next you switch the valve position and beer flows down the same tube, filling from the bottom up. The result is a more effective purging of oxygen and no foam during the filling process - not to mention that the whole thing takes one-hand to operate! Why hope that you flushed your bottle properly using a type of beer gun, when you can know for sure that you have created the best environment for your beer to be stored at by using a Counter Pressure Bottle Filler?
More Details
The unit is inserted into the bottle in the off position. The valve is then turned to CO2 to flush the bottle and then to beer for filling. The adjustable pressure relief on the side of the unit allows you control the speed of fill by adjusting the pressure in the bottle. The valve is positioned in such a way that it is easy to use with one hand, while the other holds the bottle. This model is designed for 12oz bottles but can easily be extended to accommodate larger bottles, such as 22oz, with a small piece of 1/4" tubing.
Setting Your PSI Pressure
Before you counter pressure fill a bottle make sure you are satisfied with the carbonation level and flavor. The goal for counter pressure bottle filling is to store your beer in the most sanitary and clean environment possible so when you get ready to share your homebrew its presentation is perfect when you go to pour.
An ideal set point to set your PSI level on your regulator is 10-14 psi. This range is dependent upon the temperature of your beer and the carbonation level. We recommend you start at a lower pressure around 10psi for the first 2-3 bottles to make sure you get everything dialed in before committing to filling a whole case.
Make sure your keg is always kept cold. If your keg warms up you will have foaming issues.
The BrewBuilt Pressure Pack features a unique floating racking tube that can be used for taking samples, keg transfers, or serving finished beer. This innovative feature draws beer from the top down, which means you’re always pulling the clearest, most sediment-free beer possible. And with the included filter attachment, any floating vegetal matter will be blocked from ever entering the dip tube. Oak Chips are a fast and economical way to add oak barrel flavor to any beer.
Oak Chips are made from seasoned American and French Oak staves which are chipped down and convection-toasted to create flavors similar to what a comparably toasted barrel would impart. The available toast levels are Medium, Medium +, and Heavy.

Blackstrap molasses is a robust, highly concentrated syrup used in brewing to impart deep, earthy, burnt caramel, and dark fruit flavors to heavier beer styles like stouts, porters, and old ales. Because it contains a high percentage of unfermentable sugars and intense minerals, it adds rich body to the finished beer but can easily overwhelm a recipe with astringency or a metallic bitterness if overused. Brewers typically incorporate it by stirring it directly into the hot wort during the last 10 to 15 minutes of the boil; this safely sterilizes the syrup while preventing it from sinking and scorching on the bottom of the kettle.
For a standard 5-gallon batch, the typical usage rate is between 4 to 8 oz (by weight), which provides a distinct character without dominating the base malts. For large scale commercial batches, the proportional equivalent is roughly 1.5 to 3 lbs per bbl.

Gluten-Free beers are a different world when it comes to finding a suitable replacement for the base extract. Celiacs are alleric to the hordein protein found in the base malts such as 2-Row and Pilsner malt. They are also allergic to the gliadin protein found in wheat which is the biggest offender of the two proteins. As a homebrewer your goal is to find a suitable fermentable that can emulate the maltiness in beer.
Our Gluten Free recipes use Sorghum extract for the base fermentables. Hops aggressively cut through the maltiness from sorghum easily. Hop additions in gluten free beers tend to be 40-50% less than normal.
All our gluten-free kits include dry yeast due to the small traces of the gliadin protein found in liquid yeast. (Although lab research has found the yeast metabolize the gliadin protein after fermentation and significantly reduce the ppm present.)

In wine, used to kill naturally occurring microorganisms and prevent spoilage. Also works as an antioxidant. Add at a rate of 1 tab/gallon to achieve 75 ppm free SO2. These tablets use potassium metabisulphate as opposed to sodium metabisulphate. This is generally preferred by winemakers who do not want to add sodium into their wine.

The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. What is a Foeder? Basically, it is a large barrel or oak vessel used to age wine and, as of late, many breweries have begun to use them as well. Breweries like New Belgium Brewing, Epic Brewing Company, Crooked Stave and Deschutes are using them for sour beer production and beyond. Although most popular for sour beers, you can add a matured oak character to any beer, such as porters, stouts, English ales, lagers and pilsners. Pilsners?! Yes, Pilsners. Balazs barrels is a long-trusted brand of Hungarian oak barrels coopered by the famous Balazs Nagy. These barrels are equal or better in quality to French Oak barrels but available at a fraction of the cost of their more famous counterparts. Renowned for respecting fruit, Hungarian barrels offer winemakers a great option to impact the mouthfeel, structure and flavor of wine without stepping on the terroir of your grapes.
Due to the tight grain and slow release of phenolic compounds, you can feel secure storing your wine in Hungarian barrels longer than you can with other barrels. The slow process of micro oxygenation rounds the wine while various compounds in the wood such hemicellulose, lipids, and lignins are slowly integrated.
As most barrel makers know, the best source of wood for wine barrels is the oak grown in the territory of old-time Hungary, known as Slavonian oak. This rare, high-quality oak can be found in the Zemplén Mountains and in the Tokaj oak woods. The specific type of oak in those territories, and what is used in Balazs barrels, is the Quercus Petrea. This oak is characterised by a dense, hard structure combined with extra flavor. Forestry workers look after these forests with considerable expertise, and the forest density ratio in Hungary is 20–24%, with selective logging taking place between November and April.

Want an easy-to-use, stainless vessel that ferments and carbonates? This 50L/13.2 Gallon keg has been modified to allow you to do both! As beer drinkers began flocking to more tropical, citrus-forward interpretations of IPA, brewers began to recognize the potential for the hops exporting from kiwi country. Today, New Zealand hops are widely sought after for their highly aromatic quality and delicious array of fresh flavors. Kiwi Kiss is a clean, lightly-colored, Hazy IPA with a moderate alcohol level. Wai-iti, Wakatu, and Waimea make multiple appearances throughout the hop bill, with Motueka and Nelson added during the double dry hopping.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)

LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
