S-23 is highly recommended for making fruity and hoppy lagers
Originating from Berlin, Germany, this lager strain can ferment as high as 64°F
Fermentis active dry yeast offers reliability, ease-of-use, and consistency to home and professional beverage makers across the world
Great to keep on hand, either as a backup, or as a go-to yeast for your lagers. Produces a nice lager taste: clean and crisp.
Finally there is dry lager yeast we can recommend. This bottom fermenting yeast is widely used by Western European commercial breweries. This yeast develops the best of its flavors when fermented at low temperatures (54-59°F) yet it can still produce "lager characteristics" at higher temperatures. We recommend that you keep it between 54-59°F to produce the best beer possible.
This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below.
Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
Attenuation: 80-84%
Sedimentation Time: Fast
Alcohol Tolerance: 9-11% ABV
Optimum Fermentation Temp: 54-64°F

A true bottom-fermenting Saccharomyces pastorianus hybrid that produces clean lager beers with distinct flavor characteristics and superior fermentation performance
Lallemand premium brewing yeast offers brewers unmatched consistency, reliability and purity from one batch of beer to the next
LalBrew NovaLager is a true bottom fermenting Saccharomyces pastorianus hybrid from the novel Group III (Renaissance) lineage that has been selected to produce clean lager beers with distinct flavor characteristics and superior fermentation performance. LalBrew NovoLager is a robust lager strain with ideal characteristics for lager beer production including fast fermentations, high attenuation and high flocculation. The distinct flavor profile is very clean, slight esters over a wide temperature range. Through expression of a β-glucosidase enzyme, LalBrew NovaLager can promote hop biotransformation and accentuate hop flavor and aroma.
This product is the result of the research and development work of Renaissance Bioscience Corp. (Vancouver BC, Canada) in partnership with Lallemand Brewing. LalBrew NovaLager was selected using classical and non-GMO breeding methods to obtain a novel Saccharomyces cerevisiae x Saccharomyces eubayanus hybrid strain that defines a novel Group III (Renaissance) lager lineage that is distinct from any other traditional Saccharomyces pastorianus strains. This strain is a low VDK/diacetyl producer and utilizes patented technology from the University of California Davis (USA) to ensure that the strain will not produce hydrogen sulfide (H2S) off-flavors, therefore reducing the maturation time associated with lager beer production.

GERMAN is the classic lager strain from Weihenstephan Germany that has been used for generations
Produces clean, balanced lagers from pilsners to doppelbocks
Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation before pitching required
Ferment between 50-59°F
CellarScience offers high-quality yeast that is easy to use, consistent, and available at a tremendous value
The classic lager strain from Weihenstephan Germany that has been used for generations to produce clean, balanced lagers from pilsners to doppelbocks. Like all CellarScience yeast, GERMAN is eligible for direct pitch straight into your wort. CellarScience provides 15g of yeast per sachet, which is up to 36% more than any other brand of dry yeast. Every batch of yeast is PCR tested to ensure quality. GERMAN has been selling to pro breweries for awhile but was just recently packaged down to sachets for homebrewers.
Dosage:
One sachet is enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2.5–4 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly.
For professional brewers, use at a rate of 80-120 grams per barrel, depending on wort temperature and gravity.
Direct Pitch or Rehydrate:
GERMAN yeast is designed to be sprinkled directly onto the surface of your wort with no oxygenation required in the initial fermentation. Our aerobic growth process makes this possible by creating dry yeast with high viability and high sterol levels. GERMAN yeast is pre-loaded with essential nutrients to ensure a successful, complete fermentation. While not required, some brewers prefer to rehydrate yeast. To hydrate yeast, first, sanitize the yeast brick and scissors. Use 10 grams of sterilized tap water between 85-95°F (29-35°C) mixed with 0.25 grams of FermStart per gram of yeast. Sprinkle yeast on the water. Allow the slurry to stand undisturbed for 20 minutes, then swirl. Use small amounts of wort to adjust to within 10°F (6°C) of wort temperature before pitching. Ferment between 50-59°F (10-15°C).
Optimum Fermentation Temp: 50-59°F
Flocculation: High
Alcohol Tolerance: 9-10% ABV (WY2124 9%)
Attenuation: 78-85%

CellarScience Yeast:
For years liquid yeast has been sold as the higher quality option but times are changing. Yes, 20 years ago dry yeast was made by bread yeast producers and the quality was not as good as liquid yeast. CellarScience is helping to flip that script with a full lineup of high-quality dry yeasts. Cell count and viability is usually higher than commercial liquid yeast pitches, which vary from pouch to pouch and don't ship well. CellarScience yeast can be pitched directly in most batches of wort, offering significant time savings. Yeast that is quick and easy to use, high quality, and available at a reasonable cost adds up to a tremendous value. Quality yeast that doesn't "break the brink".
CellarScience Nutrients:
For high gravity ferments consider rehydrating yeast with CellarScience FermStart yeast hydration nutrient. For high gravity or low nutrient wort, feed your fermentation with CellarScience FermFed DAP Free complex yeast nutrient mix.
S-189 is a great strain for brewing elegant lagers with floral notes
Originating from the Hürlimann brewery in Switzerland, this lager yeast's profile produces fairly neutral flavor beers with high drinkability
Fermentis active dry yeast offers reliability, ease-of-use, and consistency to home and professional beverage makers across the world
Fermentis Saflager S-189 is an ideal lager strain for many lager and pilsner beers. It can ferment well within the temperature range of 54-64° F, but is ideally fermented between the tighter range of 54-59° F. Highly flocculant, this yeast falls out of suspension easy resulting in brilliantly clear beer. A great choice as a very tolerant strain that makes great lagers.

Makes 5 gallons of finished beer
We have been a fan of John Palmer ever since his book, "How to Brew" hit our shelves way back when. After meeting him at a few gatherings here and there, and after recommending his book hands down over any other, we decided to try and add John to our Signature Series line-up. When he agreed, we knew we would get something special from him, and he did not disappoint. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." This beer will not dissapoint! Thanks, John, for the kit, the book, and the advice! John recommends White Labs WLP833 for a dried beer, and WLP820 for a maltier version.

MUNICH delivers crisp, clean flavor with minimal ester production
Recommended for Pilsner, Helles, Dunkel, Märzen, Bock
Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation before pitching required
Pressure-Tolerant: Ferments under pressure up to 12 PSI (0.8 bar) with clean results
Ferment between 50-64°F
A performance-selected isolate from a classic Weihenstephan lager strain, MUNICH is particularly well suited to malt-focused lager styles where fermentation character should remain restrained. Its softer, rounder profile allows malt character to remain prominent, with bread, cracker, toast, and other malt-derived flavors carrying through without the yeast competing for attention. Its attenuation profile helps preserve a slightly fuller, smoother presentation while maintaining a balanced lager finish.
MUNICH excels at traditional cold fermentation, and it remains remarkably clean and stable when fermented warmer under pressure, allowing brewers to push temperature upward while maintaining restrained lager character. That wider fermentation range and pressure tolerance make it equally useful for traditional lager fermentation and more efficiency-driven production schedules.
Crisp, clean flavor with minimal ester production
Fermentation Range: 50–64°F (10–18°C) — clean even at the upper end

Barebottle's award-winning Torcido is a Mexican pilsner with a German Helles twist. Combining these styles results in a light and refreshing lager that would make even M. Night Shyamalan do a double take. Originally developed by Barebottle brewer John "Magic" Montes De Oca, Torcido Torcido took gold in the International Pilsener category of the 2019 Great American Beer Fest and in turn became the inaugural inductee into the Viking Malt Hall of Fame. Brewed with Viking Pilsner, flaked corn, a dash of Carahell®, and hopped with two additions of Crystal and Saaz. Barebottle Brewing Company was born in San Francisco, CA with the idea that craft brewing shouldn't adhere to the strict guidelines of established beer styles. Founded by a trio of friends and former classmates, they continue to pay homage to their homebrewing roots by printing a scaled down version of their recipe on every label. If you ever see one of their creations out in the wild, we highly recommend that you buy it, drink it, and then brew it! White Labs Yeast has been producing high-quality brewer's yeast since 1995 and continues to raise the bar in the art of fermentation Don't need a full package? Put the lid back on and store in the refrigerator for your next batch! One of the most widely used Lager yeasts in the world. Very malty and clean, great for all German Lagers, Pilsners and Marzens. PurePitch® Next Generation—now with more yeast, get a foolproof fermentation without a starter! Just twist the cap & pitch! Why PurePitch Next Gen versus other options? Typically yeast manufacturers use a range for how many yeast cells are going into each package. This can vary widely, especially from strain to strain. Next Gen offers a far more precise cell count across all strains allowing you to use the Whitelabs exclusive pitch calculator. Simply scan the barcode on the back of each package to be taken to their online calculator. Enter the volume, strength, and pitching temperature of the wort you are fermenting and the calculator tells you exactly how much yeast to pitch. You will be fermenting like a professional brewer, using the same concentration of yeast every time and enjoying more consistent results. Don't need a full package? Put the lid back on and store in the refrigerator for your next batch. Whitelabs has also increased the viability (the number of living cells in the package) over the shelf life of the yeast. Next Gen strains are grown in their unique, small-batch reactors to assure freshness and then packaged in a special film that allows for off-gassing, assuring that their viability is absolutely industry leading. Attenuation: 74-79% Flocculation: Medium Alcohol Tolerance: 5-10% ABV Optimum Fermentation Temp: 50-55°F Cell Count: 150 Billion For best results we always recommend ordering an ice pack with your liquid yeast. Please Note: When choosing an ice pack option beware that the liquid yeast will not arrive cold even when shipped together. Ice packs and insulated mailing options are designed to keep the yeast colder for longer during shipment, but they will not ensure that your yeast arrives cold. We will not replace liquid yeast that arrives warm. During warmer months we strongly recommend you choose dry yeast.
MATTERHORN is a top choice for everyday light lagers that define a brewery’s baseline
Delivers crisp, well-attenuated beers with a minimal fermentation signature
Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation before pitching required
Ferment between 48-58°F
MATTERHORN is a Swiss-origin lager strain particularly well suited to light lagers and other styles where clear malt and hop definition is important. Its fermentation character remains subtle, with a light floral quality that adds aromatic lift without competing with the malt or hops. Combined with its attenuation profile, MATTERHORN produces a firm, dry finish that keeps delicate malt character and hop bitterness clearly expressed.
That makes MATTERHORN particularly useful for German or Czech-inspired Pilsners, everyday light lagers, modern hoppy lagers, and West Coast Lagers. It can also work well with richer wort grists when the goal is to maintain a dry, refreshing finish and prevent malt character from becoming overly heavy. Its consistent performance across its recommended temperature range provides the reliability and repeatability needed for both traditional and modern lager production.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

SH-45 is the ideal lager yeast to enhance hop thiol release
Expect enhanced levels of fruitiness and intensified citrus and tropical notes
Fermentis active dry yeast offers reliability, ease-of-use, and consistency to home and professional beverage makers across the world
SafLager™ SH-45 is a carefully selected lager yeast, ideal for expressing some of the aromatic compounds coming from the raw materials in beer, more specifically the hops. This strain possesses the capability to release and esterify thiols. As a result, beers crafted with SafLagerTM SH-45 may present enhanced levels of fruitiness with intensified citrus and tropical notes.

This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Barebottle Brewing Company This light and refreshing lager has a Mexican pilsner framework with a German Helles twist Includes Crystal and Saaz hops Estimated ABV: 4.7% Estimated IBUs: 18 Makes 5 gallons of finished beer The most compelling stories always have a twist. Barebottle's award-winning Torcido is a Mexican pilsner with a German Helles twist. Combining these styles results in a light and refreshing lager that would make even M. Night Shyamalan do a double take. Originally developed by Barebottle brewer John "Magic" Montes De Oca, Torcido took gold in the International Pilsener category of the 2019 Great American Beer Fest and in turn became the inaugural inductee into the Viking Malt Hall of Fame. The extract Torcido clone recipe is brewed with pilsen extract, flaked corn, a dash of Carahell®, and hopped with two additions of Crystal and Saaz.

This is my personal favorite when it comes to German lager strains. It could be my family association with Bamburg and the excellent rauchbier that this creates, or it could be the rich malt complexity that this strain delivers. Excellent for both helles lagers and more rich and malty lagers, such as maibocks, marzens, vienna lagers and doppelbocks. As a beer geek, I swear that you will love this strain if you enjoy a good German lager!

This classic German hop has an herbal/floral character and smooth bitterness, making it an ideal choice for brewing lagers, especially traditional pilsners. Hallertau Mittelfruh is one of the original four Noble hops, and is categorized as a "landrace" hop, meaning that it grew and adapted naturally over time in its native region. Its name is derived from the region of Hallertau, the world's largest hop growing region, and the German word mittelfrueh meaning "middle-early", referring to the early middle part of the growing season when it's ready to be harvested. The majority of its oil content comes from Humulene which provides the floral, herbal, and spicy character. Clean, crisp, and perfect for your next pilsner or hoppy lager.
