    These hot fill bladders are a great way to cut time out of your brew day using the "no chill" or "hot packing" method of cooling wort. When your boil is over, simply fill them up and wait for the wort to chill overnight or throw it in the fridge. This eliminates the traditional 30-60 minutes of chill time common in most brew days.  Use the wort immediately after it has cooled down, or store refrigerated for short periods of time. When chilled and ready to go, most brewers transfer the wort out of the bag and into their favorite fermenter. However it is possible to ferment directly in the bag with the use of a #7 stopper and airlock. Hot packing and the storage of wort at room temperature has been done in Australia as a common practice for decades.  Because of the temperature of wort entering the bag, any bacteria are killed. However there does exist a small chance of Botulism contamination for wort that is hot packed and stored.  Botulism spores can survive a boil and are only killed through high temperature pasteurization. We always recommend using the wort as quickly as possible once it has cooled.   Hot fillable means they can be filled with any liquid up to 212°F.  The triple layer construction makes these bags puncture resistant, chemical resistant, and gives the bag superior oxygen barrier properties. Stavin fire-toasts their staves whole, just like they would when making a barrel, and then cuts them down to size. The result is a gradation of toasting from the surface through to the center of the cube, where each different toast level represents a different flavor set that the oak will give your beer. The result is a much more complex and natural profile; by comparison convection toasted cubes taste one dimensional. Oak cubes also release their flavor into your beer more slowly than chips, giving you more control over the final degree of impact in your beer. You should plan on an extended aging period of 1-6 months when using cubes. This longer contact time again promotes flavor complexity by allowing all the flavors of the oak and your beer to marry. Recommended Dosage is 2 oz per 5 gallons for impact equivalent to aging in a brand new oak barrel.

There’s a lot to brewing. Although it’s relatively simple to learn, it can take a lifetime to master, and with all the different yeast, malts, hops, and specialty versions of each it can get more than a little complicated. Do you need to refrigerate the ingredients until brew day? +

The yeast is the most important ingredient to refrigerate once you receive your order. Hops should be refrigerated after a couple days if they're left out at room temp. Hops can be frozen and will last for 2-3 years still preserving their freshness. Malt extract should be left at room temperature until brew day up to 1-2 weeks. Liquid Malt Extract can can be refrigerated but will become rock solid which requires a hot water bath to thaw out or 24 hours at room temp to re-liquify. Dried Malt Extract should be stored at room temperature. Any grains in a paper bag should be used within 2-3 days for optimum freshness especially if they are pre-milled. Grain stored in plastic bags will last a couple months un-milled. We suggest double bagging to prevent oxidation.
