    This highly concentrated form of White Labs Ultra Ferm is intended for professional breweries. The dosage rate is 2.5mL per 31 gallons.   Reduce saccharification time, break down starches in unmalted cereals, and increase attenuation with one simple product! Ultra-Ferm from White Labs is a highly concentrated liquid amyloglucosidase derived from a select strain of Aspergillus niger. Rather than acheiving 75 to 80% hydrolisis of present starches, as you would with traditional brewing methods, Ultra Ferm allows total hydrolisis of dextrins to fermentable glucose, from all types of starch.   UltraFerm WLN4100 makes for the perfect additive when brewing a Brut IPA or Champagne Beer by eliminating residual sugar, allowing you to acheive the dry flavor profile that is signature to the style. It can also be used for the production of low calorie and extra high-alcohol beers, as well as light or diatetic beers.   Add at the beginning of the mash-in. Ultra-Ferm optimal pH is between 3.5 and 5.5. Temperature should not exceed 140°F. Amyloglucosidase activity is completely destroyed when the wort is held at 185°F for 10 minutes.   We've experimented with adding this enzyme at different stages throughout the brewing process, and found that it isn't limited to the mash stage alone. When pitching Ultra Ferm alongside our yeast, we were able to achieve a final gravity of 1.000, with no negative effect on the finished beer. Great news for the extract brewers out there that want to produce an extra dry beer!   Store at 39-46°F. Stable for 12 months.

    Make your own gluten-free beer at home! Made from White Sorghum Grain Provides a mild flavor and light body 2-3 °L Sorghum is gaining popularity as a complete malt substitute in beer. Coeliacs (people allergic to gluten) have to avoid items with gluten in them, including beer. Substituting Sorghum extract for malt extract opens a whole new brewing door for people.  It is mild in flavor, light in body (2-3L). One pound per one gallon of water will yield 1.040 SG. We have experimented with this extract, and have found the flavor of sorghum is not like malt at all. It has a light spicy note to it, and the mouthfeel is virtually non-existent. These two things make brewing with 100% Sorghum a nice little challenge. While the result is a drinkable beer, it needs some work. We suggest trying Heather Tips, Honey, Belgian Candi Syrup, and to stay away from "citrusy" hops. You use about 50% less hops when bittering sorghum extract.  There are some ingredients that cannot be used in brewing a beer for a person who is allergic to gluten such as specialty grains, malt, liquid yeast and dextrin. If you're allergic to gluten, be sure to check with your doctor before deciding which ingredients are safe for you to use in your beer.

Although it’s relatively simple to learn, it can take a lifetime to master, and with all the different yeast, malts, hops, and specialty versions of each it can get more than a little complicated. Do you need to refrigerate the ingredients until brew day? +

The yeast is the most important ingredient to refrigerate once you receive your order. Hops should be refrigerated after a couple days if they're left out at room temp. Hops can be frozen and will last for 2-3 years still preserving their freshness. Malt extract should be left at room temperature until brew day up to 1-2 weeks. Liquid Malt Extract can can be refrigerated but will become rock solid which requires a hot water bath to thaw out or 24 hours at room temp to re-liquify. Dried Malt Extract should be stored at room temperature. Any grains in a paper bag should be used within 2-3 days for optimum freshness especially if they are pre-milled. Grain stored in plastic bags will last a couple months un-milled. We suggest double bagging to prevent oxidation.
