Chocolate and Black Patent malts are the backbone of this style. Our all-grain version of Porter features munich malt for a little maltiness and carapils for better mouthfeel and head retention. The Northern Brewer hops impart a nice, but not overpowering bitterness. Good first dark beer. However, for many people, this is their favorite style. Just ask Regan who is a Porter nut. All of our Porter recipes are descendants of his designs which date back to the 1980s. You will not find any Roasted Barley in our Porter recipes as we believe this is the defining difference between Stout and Porter. If you would like to see the difference for yourself try making our B3 Stout (in extract) or our Silk Stout in all grain form and then one of our Porters. It is fun to have them on tap at the same time and show people the difference in dark beers.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)

LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. Potassium Carbonate is used to lower acidity levels in wine. 3.8 grams per gallon will reduce acidity by about .1%. Potassium Carbonate requires that the fermenter be stored cold for several weeks after application (please see our guides to Cold Stabilization in the documents tab above). During the period of cold stabilization the tartaric acid drops out as potassium bitartrate. Doing a trial run with a small amount is strongly suggested to determine exactly what the drop in acidity will be. Calcium carbonate can be used in a similar manner and does not require cold stabilization. However it adversely affects flavor, takes month to precipitate out of solution, and preferentially reduces tartaric acid first before affecting malic or citric acid.
A rough approximate of weight is 1 tsp = 8.3 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.
Potassium Metabisulfite, (often referred to as "SO2", "sulfites" "meta", or "meta-bi") has several uses in winemaking. At the crush, sulfites are generally used to help control the spoilage bacteria and indigenous yeast that may already be present both on the fruit and in the winery (i.e. on the picking bins, processing equipment, tanks, tubing, etc).
The amount generally used is enough to inhibit most of the unwanted organisms but not enough to hinder a cultured yeast, which has a higher tolerance to sulfites than most of the indigenous organisms do. This inhibition effectively "wipes the slate clean" for the cultured yeast to step in and rapidly colonize the must so that it can effectively dominate the subsequent fermentation.
In addition, sulfites also help to inhibit the enzymatic browning of both musts and finished wines so that all of their delicate complexities can be preserved. Later, during storage and in the bottle, sulfites at the proper levels will further protect a wine by continuing to inhibit spoilage organisms, as well as by scavenging oxygen.
Note that the exact amount needed to effectively do the job is determined by the pH of the wine. Refer to our MoreManuals! on Red or White Winemaking or one of the winemaking books that we offer for a complete explanation on how to properly manage sulfites.
In addition, it's important to keep in mind that free SO2 levels fall faster in wood cooperage than in glass or stainless, so if you are using a barrel you will most likely need to manage sulfite levels more closely.
The most common form of Metabisulfite is as a powder which is fixed with potassium or sodium. 1/4 tsp of Potassium Metabisulfite adds 50ppm to 5 gallons of must. Old Metabisulfite loses potency with time and should be replaced every year to assure that you are getting correct levels. You can use old Metabisulfite to make solutions for sanitizing equipment.
Sorbistat K, Potassium Sorbate, ensures against renewed fermentation in wine when residual sugar is added post the initial ferment. Add at the rate of .5 to .75 grams per gallon (125-200ppm) in conjunction with .3 grams of meta-bisulphite (50ppm) per gallon. Use the higher end of the range (200 ppm) as the wine's pH approaches or exceeds 3.5 or when the alcohol conent of the wine is below 10%. Note: Will not stop an active fermentation. Potassium sorbate should not be used if the wine underwent an ML fermentation because sorbic acid (in the potassium sorbate) will react with lactic bacteria to produce a "geranium" smelling off-flavor.

Our Premium BIAB (Brew In A Bag) kettle and bag kit is the most affordable way to get into all-grain brewing. Electric Brewing
Typical home brewing starter kits set you up to brew your first batch of beer on the kitchen stove. This may lower the price tag but brewers will naturally progress beyond the kitchen to an outdoor gas burner or electric brewing system. Electric brewing systems have several advantages, firstly being that they do not require propane so there is no chance of running out of gas mid-brew. Secondly, electric kettles use a built-in temperature probe and digital controller to automatically maintain temperatures. This gives you a precise level of control that gas systems rarely match. 110V vs. 220V
The DigiBoil electric kettle comes in two power options, 110 volt and 220 volt. The 110V unit features a standard 3-prong plug and will work with most US household power outlets. The 220V unit features a NEMA 6-30R plug, typically only used with large household appliances such as washer/dryer outlets. Both power options are perfectly suitable for brewing. The 110V option provides greater flexibility, allowing you to move your brewery from the kitchen to the garage, basement, or outdoor patio with ease. If you have convenient access to 220V power, the 220V model will significantly reduce heating times and provide a more vigorous boil.
All Grain Brewing
Extract brewing is the most popular method for beginner brewers, but all-grain is really where it’s at. Instead of using concentrated malt extracts, the fermentable sugars are produced by steeping malted grains in hot water for an extended period of time, a process called ‘mashing’. All-grain brewing offers far greater control over the character of the finished beer, allowing the brewer to finely adjust the color, body, and malt profile. American Ale produces a light colored, hoppy Pale Ale that puts the beloved Cascade hop on full display. Cascade hops are one of the classic American hop varieties, and we love them for their citrus, grapefruit character.
Blonde Ale is a great starter beer for those who are new to craft beer. Blonde ales are an easy drinking ale, low in esters, balanced with enough hop character to accentuate the malt profile.

This pressurized transfer fitting from Ss Brewtech is perfect for pushing beer to kegs. Fits on any 1.5" tri clamp flange. It includes a relief valve right in the fitting that releases at 2-2.5 psi. Made from 304 stainless steel.
This kit is designed for owners of Chronical 2.0 Fermenters and includes everything you need to introduce CO2 pressure into your fermenter without removing the lid cap and risking O2 contamination. The Chronical BME's 3" Lid cap includes a PRV that prevents pressure from building to unsafe levels.
Due to the popularity of both open and closed transfers with Chronical 2.0 users, this kit does not include the output side to the keg, so please add a TC 1/2" barb, 3/8" barb or 1/4" MFL fitting and the appropriate tubing for the type of transfer you plan on doing.

Setup:
Begin by locating the 1/2" tubing and attach one side to the 3" TC lid cap's blow off barb that was included with the Chronical 2.0. Then attach the other side of the 1/2" tubing to the 1.5" TC to 1/2" Barb fitting, using hose clamps to secure both connections. Then attach the 1.5" TC to 1/2" Barb fitting to the included 1.5" TC to 1/4" MFL fitting with a TC clamp and gasket. Lastly, the 1/4" MFL connection can interface with common gas line flare fittings used on CO2 regulators.
This kit only includes accessories to introduce pressure into your fermenter. It does not include accessories for beer output.

ProElif QA23 is a double encapsulated yeast product developed by Proenol for secondary fermentations. The yeast cells are double encapsulated in an alginate bead. The beads can be directly inoculated into the bottle (eliminating the need to prepare a starter culture). This helps ensure control of the number of cells per bottle. Upon fermentation completion, the beads have a greater density than the wine and will quickly drop to the neck of the bottle when inverted. The beads accumulate more tightly than traditional riddling, therefore less wine is lost during disgorging. Traditional freezing and disgorging methods are used to finish the process. The use of ProElif QA23 results in a fresh sparkling wine. If greater yeast character is desired, you may make changes to the base wine with this in mind. For example, ProElif QA23 has been used with Opti-WHITE treated base wine with good results.
The base wine must be stable to avoid agglomeration of the beads which could cause subsequent difficulty during disgorging. All of these parameters act in synergy with one another. It is critical to manage them together. If one parameter is over the limit, try to compensate with the others or ferment at a higher temperature.

This complete distilling system is the perfect option for craft distilleries that want to make a range of spirits without compromising. Install once and never have to reconfigure the system to switch from a whiskey run to a vodka run. Whereas other stills need to be broken down and rebuilt depending on what spirit is being made, switching between spirits on this multi-column still is as easy as opening and closing a few valves. With the infusion column, 4-plate copper column, and 16-plate stainless column, this unit can quite literally make any spirit you desire—gin, rum, vodka, whiskey, brandy, tequila—it does it all!
Wash Pot
The steam jacketed Wash Pot has a gross volume of 1400L allowing for a maximum working volume of 1200L with a 15% headspace inside the pot. The kettle features analog thermometer and PT100 relay probe in the headspace, pressure gauge and relief valve, raked bottom for thorough draining, and manway with sight glass to monitor your wash boil. From the kettle, vapor rises through the copper onion-shaped expansion chamber, through the lyne arm and into the column manifold.
Columns & Routing Vapor
The column manifold features a series of 3-way valves used to route vapor into or past each column. For example, during a vapor infusion run while making gin, you would route the vapor into the infusion column to pass through any botanicals you've added to the gin basket, and then bypass the copper 4-plate column, bypass the steel 16-plate column, and route the vapor to the product condenser. Conversely, for the highest purity neutral spirit, you would bypass the infusion column and route the vapor through both the copper 4-plate column and steel 16-plate column before entering the condenser. The beauty of this system is how easily you can adapt it to the type of spirit you want to produce. Simply, bypass columns or close off individual plates as needed.
Clean-In-Place
As mentioned above, this distillation system truly is a one-time installation with no breakdown required—when it comes to making different spirits but also when it comes to cleaning. Each part of the system from the kettle to the condenser and each plate features a CIP spray ball for convenient and thorough cleaning. The included CIP pump is powerful enough to clean an entire column at once, or you can flip the valves to clean individual plates if desired.

You will need to add a power supply for the pump and agitator (3 phase, 220V), pressure regulator for steam, and plumbing for the condenser's water source.

This is a ring style burner and not a jet burner. The flame distribution and control is great and not concentrated like a jet burner. Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
Propper Seltzer is specially formulated to power your favorite beer yeast through a healthy sugar-based fermentation in as little as 7 days. One dose per five gallons will provide all the nutrients needed for a quick, successful batch of hard seltzer. For an even faster fermentation, we recommend Omega Yeast's Lutra™ Kveik strain, which can get the job done in as little as 4 days' time. One (1) pack provides yeast nutrient for (5) five gallons of sugar wort at 1.060 (15°P) or lower. Recommended for use with these strains: Lutra Kveik Hornindal Kveik Voss Kveik Espe Kveik Directions:
Add sugar to hot water and stir to dissolve. Boil for 10 min, measure gravity and adjust. Once desired gravity is reached, turn off the heat source and add Propper Seltzer nutrient. Transfer sugar base to the fermenter at desired ferm. temp. Aerate by shaking or oxygenating. Pitch your favorite Omega Yeast strain and let it roll.
