All-grain beer recipes are made exclusively from grain without the use of malt extracts. All Grain Beer Recipe Kits differ from malt extract recipe kits or mini mash kits in that the home brewer employs the practice of mashing. Mashing is the process where malted grains are soaked in hot water. The heat activates naturally present enzymes that then convert starch to sugars. Once you've enjoyed that first pint of Sierra's signature seasonal release, it's hard to resist leaning into the holiday spirit. Sierra brews this recipe every year with their most recent haul of fresh, hand-selected hops, making each release slightly unique to past iterations. Even though our clone kit doesn't contain fresh hops, we strived to make a recipe that celebrates the character of Cascade, Centennial, and Chinook hops with heaps of citrus, piney, and floral notes. Our Holiday Hops kit is a classic West Coast IPA with a distinct, but balanced malt character, deep reddish color and plenty of hop bitterness to match the bite of winter weather. Cascade, Centennial, and Chinook hops are employed up and down the brew schedule, from the top of the 90-minute boil to the final dry hop addition days before packaging. Over the years, Jim found a clone that was close but needed some small changes. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. After meeting him at a few gatherings here and there, and after recommending his book hands down over any other, we decided to try and add John to our Signature Series line-up. When he agreed, we knew we would get something special from him, and he did not disappoint. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." This recipe has moderate bitterness from early kettle additions of Saaz hops. This beer is spiced with Bitter Orange Peel and Coriander which lends a surprisingly pleasant flavor and aroma. The grain bill includes Oats and Flaked Barley which when combined with a very special non-flocculating yeast leaves a cloudy, almost white appearance. Hence the name wit which means white. This is a very refreshing style that has a light, crisp flavor. There are some phenolic flavors as well, like you would find in some Belgian Abbey Ales and even German Hefeweizen. Hoegarden or Celis White would be some commercial examples that represent this style.     At just under 5%, we like to think of this beer as a hop lover's dream. It seems to some that Matt has almost been bred to brew beer. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Since then, Firestone Walker has been gaining a large following in California due in part to it's flagship beer, Double Barrel Ale, which is produced in a Burton Union system that has the beer fermenting in barrels. Firestone Walker Brewing Company is the only brewery in the U.S. to ferment in barrels and one of only two in the world.
