    Deep red in color with a nice malt structure and distinct sour overtones. Requires a two-step fermentation process  Includes Magnum and British Kent Goldings hops Estimated ABV: 6% Estimated IBUs: 16-18 Makes 5 gallons of finished beer Our Flander's Red recipe creates a beer that is deep red in color with a nice malt structure, this beer is based on those from certain regions of Belgium, and have distinct sour overtones to them. This is due to the wild spores that inhabit the air - and some breweries - of the area. While this would normally be a "bad" thing, the infection lends special tart and sour qualities unlike any other beer can. For a more traditional spin on this kit, try aging it on some oak cubes! We recommend fermenting this beer with WLP001 California Ale for two weeks. Then add Wyeast 3763 Roeselare Belgian Sour Blend in the secondary fermenter bucket. This kit does require some special instructions, as it is a special beer. Once the gravity hits 1.015 - 1.020, rack the beer into a plastic bucket and pitch the sour blend tube. Age the beer at 65F-70F for 6 months, until the white cap that will form drops. The reason for the plastic bucket aging is so that tiny amounts of oxygen are allowed to be taken in by the plastic and come in contact with the beer. This micro-oxidation adds to the over all flavor of the beer itself. Reminder: you will need to keep the equipment used to handle the beer after the sour blend is introduced separated from the rest of your brewing equipment, or clean and sanitize very well after use. Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. Ryan also recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost! Brandon Edwards, who used to be an employee of Morebeer, has been brewing in Solana Beach for a number of months, and with Pizza Port for a few years. Brandon made this recipe to celebrate the one year anniversary of the Toronado beer bar opening in San Diego. This brown ale is pretty malty and hoppy, but we wouldn't expect anything less from Brandon! The winner was an unknown brewer named Kyle Sommers. We actually hired Kyle following the competition to work in our customer service office(see where good homebrew will get you!) In 2010 Kyle graduated from the Siebel Institute to continue his dream of becoming a professional Brewmaster. He is now brewing at Lagunitas.  We loved the big body, rich malt, and the extremely complex spice blend. When we went to make the recipe for sale we thought twice because we had to buy out the spice section of our local grocer. Based on a Northern English style Brown Ale, it has 6 different spices added at two different times in the brewing and fermentation process, resembling and inspired by a Belgian-style winter beer. This winter warmer will make your kitchen smell like Thanksgiving Day at Grandma's house. With some added Belgian brown sugar to counter-balance the spice and add some alcohol content, this is a great way to top off your Holiday adventures by the fireside. If you are a firm believer in the Reinheitsgebot (no spices, sugar, etc.), this is not the beer for you!
