Eitrheim multi-strain comes from Reidar Eitrheim in Tokheim. The flavor and aroma primarily derive from apricot and peach, with secondary notes of orange and pineapple. Eitrheim ferments well between 59-100°F and will ferment faster at higher temperatures. At an optimal temperature of 88-95°F, you can expect fermentation to take up to 72 hours. Eitrheim is suitable for IPAs, pale ales, and NEIPAs.
The Eitrheim kveik comes from Reidar Eitrheim from Tokheim, Norway. Tokheim is located close to Odda in the heart of the Hardangerfjord and next to the Folgefonna National Park. The yeast has been passed on for generations, and Reidar got it from his grandfather. The yeast is very versatile and can be used in different beer types such as IPA, Pale Ale, NEIPA, Stouts, and Porters.

Fermentation
Eitrheim ferments well from 59°F up to 100°F. The higher fermentation temperature, the faster fermentation. At the optimum temperature 88-95°F expect fermentation to finish in 72 hours. When fermentation is done at low temperatures you can expect fermentation time to increase. For high gravity beers, we recommend users to pitch two packs of yeast and add yeast nutrition to ensure a healthy fermentation.
Pitching
Pitch directly into wort by sprinkling it across the surface, or rehydrate yeast. For fermentation below 64°F, or high gravity, increase pitching rate to 2.25 g/Gal.

Enoferm Alpha will ferment at lower temperatures and at lower pH levels compared to older Viniflora strains of Oenococcus Oeni Alpha was selected as dominant strain that has the capcity to achieve reliable MLF and improve wine complexity This strain will help contribute to mouthfeel while lowering the perception of green and vegetative flavors Lallemand Oenology specializes in the development, production, and marketing of top-grade yeast and bacteria This was the first improved ML strain that we carried and still the most popular. When compared with the older Viniflora strains of Oenococcus Oeni, Enoferm Alpha (which is a different strain of Oenoccoccus Oeni) will ferment at lower temperatures and at lower pH levels. Prevents Off-Flavors: ALDC from CellarScience helps prevent the production of Diacetyl, a butter-like off-flavor, ensuring a cleaner-tasting beer.
Reduces Conditioning Time: By limiting Diacetyl production during dry hopping or fermentation, ALDC reduces the time needed before your beer is ready for bottling or kegging.
Versatile Use: ALDC can be added during yeast pitching or dry hopping, benefiting any beer style, especially those with heavy dry hopping, by controlling hop creep.
Stop hop creep before it happens with ALDC from CellarScience. As modern beer styles call for increasing amounts of dry hops, a new risk for off-flavor in the finished beer arises. Hop creep is the result of yeast beginning a new fermentation when dry hops with trace amounts of fermentable sugars are introduced to the finished beer. This results in further production of Diacetyl and, if yeast are not given enough time to clean up after themselves, can lead to higher levels of Diacetyl in the finished beer. Diacetyl is often referred to as a butter or butterscotch like flavor and is not desirable in most styles, especially at high levels. ALDC, or alpha acetolactate decarboxylase, is a helpful enzyme that can be added at yeast pitching or along with your dry hops to limit the production of Diacetyl to protect your finished beer from off-flavors and reduce the conditioning time needed before its ready to bottle or keg.
Use:
Available in 1 oz dropper bottle or 8 oz and 32 oz Bettix bottles. Add to fermenter during yeast pitching or dry hopping at a rate of 1 dropperful per 5 gallons or 3 mL per bbl. 1 oz contains approximately 35 doses for 5-gallon batches (enough to treat approximately 10 bbl).
Additional Notes:
Although commonly added to heavily dry hopped beers, using ALDC during fermentation can benefit any beer style by reducing Diacetyl production. Brewing hops all contain the naturally occurring enzyme AMG or amyloglucosidase which breaks down long chain sugars into simple sugars that yeast can ferment. The reason hop creep is a relatively new phenomenon is due to the changing ways in which hops are dried and processed. As brewers started to demand more aromatics from their hops, growers began to lower the kilning temperatures to preserve volatile oils. This led to higher levels of AMG left on the hops as well, where they were previously denatured at the higher kilning temperatures. With more AMG present on the hops, dry hopping now leads to more fermentation activity and higher levels of Diacetyl produced after the primary fermentation is complete. Although the simplest remedy to hop creep is time—waiting for the yeast to naturally clean up the extra Diacetyl—ALDC is a great way to reduce conditioning time and the risk of off-flavors in your finished beer.

We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! Manifolds are a great way to have one CO2 tank supply multiple kegs. This manifold is made from aluminum, brass, and stainless. Made from traditional UK Cider Apples grown in the unique terroir of the finest apple-growing region in the world. Harvested from the adjoining British counties of Herefordshire and Worcestershire, apples grown in this region benefit from high quality soils, nearly year-round rainfall, and a mild maritime climate. Having been home to apple orchards for thousands of years, the climate of this area allows the apples to slowly mature, which produces fruit with excellent complexity and flavor balance.
Apple cider concentrate is produced by removing water from freshly pressed apple juice through evaporation while under vacuum. This process concentrates the natural sugars in the juice, making the resulting product easier to store for longer periods and less cumbersome when transporting.
Use:
We recommend diluting with 6 parts water to 1 part concentrate to reconstitute the original apple juice. This will leave you with a solution that is approximately 1.040 SG with an estimated alcohol content of 5.2% ABV after fermentation. The solution can be used as a flavor ingredient alongside fresh apple juice to impart high levels of tannin that will give your hard cider a wonderful mouthfeel, complex flavor, and great color and body.

What is a Foeder? Basically, it is a large barrel or oak vessel used to age wine and, as of late, many breweries have begun to use them as well. Breweries like New Belgium Brewing, Epic Brewing Company, Crooked Stave and Deschutes are using them for sour beer production and beyond. Although most popular for sour beers, you can add a matured oak character to any beer, such as porters, stouts, English ales, lagers and pilsners. Pilsners?! Yes, Pilsners. We have tasted a few excellent pilsners matured in foeders recently. We were so impressed, we decided to bring them in for our amazing customers to play with. Don't delay, get your foeder today!

Balazs barrels is a long-trusted brand of Hungarian oak barrels coopered by the famous Balazs Nagy. These barrels are equal or better in quality to French Oak barrels but available at a fraction of the cost of their more famous counterparts. Renowned for respecting fruit, Hungarian barrels offer winemakers a great option to impact the mouthfeel, structure and flavor of wine without stepping on the terroir of your grapes.
Due to the tight grain and slow release of phenolic compounds, you can feel secure storing your wine in Hungarian barrels longer than you can with other barrels. The slow process of micro oxygenation rounds the wine while various compounds in the wood such hemicellulose, lipids, and lignins are slowly integrated.
As most barrel makers know, the best source of wood for wine barrels is the oak grown in the territory of old-time Hungary, known as Slavonian oak. This rare, high-quality oak can be found in the Zemplén Mountains and in the Tokaj oak woods. The specific type of oak in those territories, and what is used in Balazs barrels, is the Quercus Petrea. This oak is characterised by a dense, hard structure combined with extra flavor. Forestry workers look after these forests with considerable expertise, and the forest density ratio in Hungary is 20–24%, with selective logging taking place between November and April.
Balázs Barrels is establishing a direct cooperation with the forestry workers, ensuring the continuous supply of the best quality oak, allowing them to source and work with the most excellent oak for wine barrel manufacturing from the foremost Hungarian forests.

They feature a "nuke-shaped" internal shuttle that is made from TPV, which provides superior laminar flow to further reduce foaming issues.
