The cable allows you to place the temperature probe where needed and view the temperature reading from a convenient location. Especially helpful if your mash tun or hot liquor tank sit high up on a tiered gravity system. It also has a programmable alarm for when you hit your temp and a timer function you can use to track your mash progress or boil additions. Please note: the cable attached to the probe is not waterproof so be careful to not let it be fully submerged. If this does occur and your readings are off, you can place the probe in the oven (leaving the plug outside) and bake for 1 hour at 375°F to boil the moisture out of the probe.
