Impress your friends with a unique tasting experience!   Cacao nibs (also referred to as cocoa nibs) are the key ingredient in chocolate. They are crushed and roasted seeds from the cacao plant. Tcho Nibs have a wonderful cocoa smell to them, and will provide a very subdued cocoa-like flavor to any beer.   You can use these cacao nibs like you would a dry hop, by adding the cacao nibs to your secondary fermenter or keg for a couple of weeks (4 ounces per 5 gallons is a great place to start), allowing the beer to draw out the subtle flavors and aromas of the cacao nibs. They can also be used in the boil or mash - wherever you would like to experiment with them. Adding the nibs pre-boil will impart some bitterness, so use a lot less than you would when adding them to a keg. Fermentation rate, fermentation time and degree of attenuation are dependent on inoculation density, yeast handling, fermentation temperature and nutritional quality of the wort. Attenuation may appear lower due to the formation of lactic acid. Production of lactic acid does not result in a loss of CO2. When sugar is consumed to produce lactic acid, there is no change in density. Therefore, the amount of residual sugar in the finished beer is lower than the final density would imply. This yeast produces a very acidic beer, with final beer pHs in the range of 3.0 and lactic acid in the range of 8 – 15g/L. Vigorous fermentation can be completed within 5 days. The resulting flavor and aroma profile of the beer is a slightly fruity acidic beer. Because of the resulting low pH and highly acidic conditions, we do not recommend re-pitching this yeast.     With the FermZilla Pressure Kit you can ferment under pressure, carbonate, and serve without ever needing to move your beer out of the fermenter. The kit inlcudes two stainless female threaded ball lock fittings with barbs, which thread onto the existing openings atop the FermZilla's lid. For the beverage out, you'll have a silicone dip tube with stainless steel float, allowing you to always draw from the clearest beer at the top of the tank. Pick up the Pressure Kit and turn your FermZilla into a true unitank! The silicone dip tube is 31" long. It will work perfectly as is for the 55L FermZilla. For the 27L model we recommend cutting the dip tube shorter to remove unwanted slack. With the optional Floating Dip Tube Filter, you can prevent hop material and other solids from ever entering the dip tube. Especially handy when you're pulling samples mid-fermentation! Fermenting Under Pressure: The pressure kit allows for fermenting under pressure, which will reduce esters and fusel alcohol production. This means you can ferment at warmer temperatures than you normally would, even making lagers at room temperature. Most commerical beer is fermented under pressure simply due to the size of commercial tanks and the pressure that is created by the column of beer. It is one of the distinct differences between homebrewing and brewing on a commercial scale. The FermZilla's lid already comes with a built-in pressure relief valve that will blow at 35 psi; the pressure kit simply allows you to add CO2 through the ball lock fitting. We strongly recommend that you also purchase an adjustable pressure relief valve, or spunding valve, which allows you to set a lower pressure. It's always a good idea to have two relief valves on the FermZilla anytime the unit is under pressure. Carbonating, Transferring, and Serving: When you are fermenting under pressure the beer is already carbonated when you are done fermenting. You can control the level of carbonation by using a spunding valve. This means you can eliminate kegging and serve directly from the fermenter. We love this idea but there will probably still be times that you want to keg. Attach a beer line from the FermZilla's bev out to your keg and enjoy the easiest kegging experience ever. You can also choose to send carbonated beer through a beer filter on the way to your keg. When applying pressure with a CO2 tank also make sure that you have a functional relief valve on your CO2 regulator. Eliminate Oxidation: Since the beer always has a CO2 blanket through fermentation and during any transfers out, oxidation is eliminated. When you cold crash you won't be sucking air back in through an airlock.     Potassium Metabisulfite, (often referred to as "SO2", "sulfites" "meta", or "meta-bi") has several uses in winemaking. At the crush, sulfites are generally used to help control the spoilage bacteria and indigenous yeast that may already be present both on the fruit and in the winery (i.e. on the picking bins, processing equipment, tanks, tubing, etc). The amount generally used is enough to inhibit most of the unwanted organisms but not enough to hinder a cultured yeast, which has a higher tolerance to sulfites than most of the indigenous organisms do. This inhibition effectively "wipes the slate clean" for the cultured yeast to step in and rapidly colonize the must so that it can effectively dominate the subsequent fermentation. In addition, sulfites also help to inhibit the enzymatic browning of both musts and finished wines so that all of their delicate complexities can be preserved. Later, during storage and in the bottle, sulfites at the proper levels will further protect a wine by continuing to inhibit spoilage organisms, as well as by scavenging oxygen. Note that the exact amount needed to effectively do the job is determined by the pH of the wine. In addition, it's important to keep in mind that free SO2 levels fall faster in wood cooperage than in glass or stainless, so if you are using a barrel you will most likely need to manage sulfite levels more closely. The most common form of Metabisulfite is as a powder which is fixed with potassium or sodium. 1/4 tsp of Potassium Metabisulfite adds 50ppm to 5 gallons of must. Old Metabisulfite loses potency with time and should be replaced every year to assure that you are getting correct levels. You can use old Metabisulfite to make solutions for sanitizing equipment.

This allows you more control over the recirculation and you can then use the pump to transfer your wort to your fermenter. As with any mash, be sure to stir your grain very thoroughly after mashing-in so you start out with an even temperature throughout the grain bed. Some competing models advertise their perforated malt pipes as "high flow", but what they don't mention is how this affects efficiency. When recirculating the mash, wort will escape through the side perforations rather than passing through the grain at the bottom-most end of the malt pipe which can lead to lower efficiency. The BrewZilla's malt pipe is designed so that recirculating wort must pass through the entire grain bed before escaping through the false bottom and being pumped over the top of the grain bed again. If you're worried about the flow rate, simply add a pound or two of rice hulls to your grain bill. This is especially recommended when brewing with a high level of wheat, oat, or flaked grains. The Fermonster Fermenter - A Huge Upgrade Over Standard Buckets or Glass "Carboy" Water Bottles Unlike buckets or glass carboys, the Fermonster fermenter was designed for brewing beer. It is made from tough, clear, virgin grade PET plastic so you can see the magic of fermentation. Unlike glass it will never break and shatter if dropped. It represents a huge upgrade over traditional buckets because these fermenters are much less likely to get scratched. Scratches can hold bacteria that can cause off flavors in the beer. The Fermonster comes with a built-in spigot that eliminates a long time issue in homebrewing of having to start a siphon to transfer your beer to the bottling bucket after fermentation is over.
