Our Irish Red Ale recipe is hard to nail down as any specific style—similar to a big Amber Ale, but it's so unusual it does not really fit within any category. Malt character utterly dominates this beer's flavor profile, containing dark Crystal malts, including Special B, and a pinch of Roasted Barley for a deep, red color and a very distinctive caramel flavor. Irish Red Ale has been one of our most popular ingredient kits for many years, and continues to receive a lot of positive feedback from satisfied customers to this day. The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops! The resulting flavor is malty with plenty of hop flavor, courtesy of the copious amounts of Cascade and Willamette hops. One day while on the phone placing an order with us, Frank got tired of having to make these additions to our existing KIT250 so he asked why he couldn’t have his own kit to cut down on confusion. He was absolutely right! So the series was born! When you are drinking any of the Signature Series recipes, raise your glass and give a virtual cheers to fellow homebrewer Frank Ellis in Missouri for the good idea. We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! Epidemic Ales opened in Concord, CA at the beginning of 2016 and have been brewing quality libations that leave a lasting impression ever since. Background: MoreBeer! has a small beer fridge in our Concord, CA location. We try to order different beers every week, to allow our customers something new to try while they're in the shop browsing or purchasing equipment and ingredients for their next brew. We recently received "Tart of Darkness" from The Bruery. Nobody here had tried it before, so we opened a bottle to split amongst numerous employees. Within a few sips, the two cases we received had been completely purchased by employees - sorry Concord customers! We instantly got in contact with The Bruery, and being from a homebrewing background, they agreed to work with us on the recipe!
Their Tart of Darkness sour stout is the perfect blend of roasty, sweet, tart, and smooth. This delicious Pale Ale is based on new experimental hop, HBC438, that has the unofficial name of Ron Mexico due to its native US neomexicanus hop heritage. This hop has enticing aromas of stone and tropical fruit, orange, mint, and herbal characteristics. Vinnie from Russian River Brewing (of Pliny fame) used this hop in an experimental beer brewed for the National Homebrewers Conference and also recently raved about this hop in a talk we attended.
The story of this hop is really unique. Traditionally hop breeders finish the testing of experimental hops internally and then release to the commercial market. Now they are turning the tables and trying something new! HBC 438 is being released EXCLUSIVELY to the Homebrewing community first. Then in the future, as more is grown, they will release it to commercial brewers. So the tables are flipped - Pro brewers will be reading your reviews and seeing what you thought of the hottest new hop.
What is also cool is that all proceeds from the sales of these hops go to ALS.net and help fund the ALS Therapy Development Institute, the world's largest non-profit biotech focused entirely on ALS Research.

The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops! The resulting flavor is malty with plenty of hop flavor, courtesy of the copious amounts of Cascade and Willamette hops. One day while on the phone placing an order with us, Frank got tired of having to make these additions to our existing KIT250 so he asked why he couldn’t have his own kit to cut down on confusion. He was absolutely right! So the series was born! When you are drinking any of the Signature Series recipes, raise your glass and give a virtual cheers to fellow homebrewer Frank Ellis in Missouri for the good idea. Frank has brewed his own kit an amazing 62 times over the last decade! Frank recommends using White Labs California yeast, WLP001 or Wyeast American, WY1056.

Nose Goblin from Ghost Town Brewing in Oakland, CA is their infamous West Coast-style Imperial IPA with big honking notes of white grapes, melons, berries, and uncouth levels of dankness. This dangerously smooth double IPA is all about the hops with very little malt character. Almost exclusively comprised of Pilsner with just a dash if acidulated malt, Nose Goblin is a beautiful clear straw color in the glass. Your nose if free to pick up all of the incredible flavor and aroma contributed from ample whirlpool and dry hop additions.
Ghost Town Brewing's Nose Goblin took Gold at the 2021 Great American Beer Festival, besting 170 other beers submitted in the Imperial IPA category. Although Ghost Town will switch up the hops on every edition of Nose Goblin, this kit is modeled after the same recipe that took 1st at GABF, featuring additions of Nelson, Strata, and Mosaic® CRYO HOPS®.

Hop Hunter IPA by Sierra Nevada brewing is the inspiration for this delicious recipe. Hop Gatherer is a Hop Hunter clone, which contains all of the same ingredients as the original beer, but gives you the option of what distilled oil you would like to use. We offer the kit with either Chinook or El Dorado farm distilled hop oil. Either way, this makes a tasty, easy drinking and highly aromatic IPA!
A bit about farm distilled hop oil: Distilled immediatley after picking, farm distilled hop oil gives you the bursting aroma provided by fresh hops. By distilling the oil at the farm, the distinct character of a "wet hop" beer is able to be replicated year round. The oil can be added post fermentation, typically at bottling. You can even add the oil directly to your glass! Be careful, it is VERY POTENT!
Light in color and incredibly smooth, this IPA is enjoyed by all. Not too bitter, but absolutely hoppy enough to please the biggest hop head!

If you have a monstrous craving for intense hop flavor, you’ll need a beast of equal proportion to do battle. Enter Hop Mothra! This liquid kaiju isn’t interested in saving (or destroying) Tokyo. Her only motive is to slake your thirst and leave you yearning for more – so much so that you’d swim to Infant Island for another taste. With a nice malt backbone (err thorax?) this beast will soar over your tongue and, with a flap of her wings, send a hurricane of hop flavor to assault your taste buds.
Jim Nielsen’s Hop Mothra IPA uses 10 lbs of Ultralight Malt Extract, 1 pound of Light DME, and a trio of crystal malts that give this beer a beautiful pale to medium amber color. Perle, Cascade, and Liberty hops lend a spicy aroma with flavors of grape fruit and citrus.
Jim began home brewing in 1994, but it wasn’t until the Great American Beer Festival of ‘98 that he came across a beer that would alter the course of his hobby. Grant’s Brewing Company made a batch of beer especially for the festival – Hopzilla! This kit recipe was given to us by our friend and former MoreBeer! employee, Wynn Whisenhunt. One of the many MoreBeer! past employees to turn pro, Wynn is now the owner and head brewer of Wondrous Brewing Company. If you want to brew it as they do at Wondrous, Wynn suggests using WLP001 California Ale yeast for fermentation. Ferment until complete at 66°F then dry hop and raise the temp to 68°F for 6 days. D-test then crash! If you're kegging, force carb to 2.6 volumes of CO2.

Just as King Ghidora is not limited to a single ferocious maw, you’ll be hard-pressed to have but a single pour of this juicy, tropical brew. Without a ragtag ensemble of advorseries spearheaded by Godzilla himself, King G will reign over your beer rotation till he ultimately brings about the Earth’s next extinction-level event and moves on to another planet victim.
King Ghidora was brewed in collaboration with our Pittsburg, CA neighbors, E.J. Phair Brewing Company. It features a clean malt profile of light DME with a touch of white wheat for head retention. With only a quarter ounce of Citra® added late in the boil, this beer shows very little bitterness and lets the flavor and aroma hops do the talking. The first dry hop addition is added to the fermenter before transferring wort from the kettle. Although this isn't a Hazy IPA, the beer will have a slight permanent haze due to biotransformation, which occurs when yeast interact with hop oils during primary fermentation.

We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: Ultralight malt extract, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! The new and improved Wild Water Hard Seltzer kit features retooled water modifier salt packets for increased fermentation performance. The previous single salt pack has been split into separate A and B salt packs, which we found significantly increased the buffering capacity to prevent the fermentation pH from dropping below the tolerance level of the yeast, leading to far fewer instances of stuck fermentation or not reaching the target final gravity.
Please note: each kit includes an extra packet of yeast and FermFed (DAP Free). Read the instructions carefully, and only use the extra packets if you experience a stuck fermentation.
Tip: to ensure your seltzer ferments all the way out, we recommend keeping the fermentation temperature above 70°F. Although it is unlikely to happen with the buffers included in the Water Modifier Salt Packets, a drop in pH below 3 can cause the fermentation to stop. Adding a few grams of chalk, baking soda, or potassium carbonate will bring the pH back up. This should only be done if you have measured the pH and found it is too low.

Continually throw enough stuff into the mix and, eventually, you score a win like this one. We started with a basic recipe similar to our famous Irish Red, but added Rye as well. A brash move? You bet! But we didn't stop there. We've added Magnum and Columbus hops everywhere, including into the carboy for dry hopping. If you want to go for a Home Run, add 1oz of the included French Oak chips after the first week of fermentation.

Whether you're in constant search of new ways to push the "traditional boundaries" of brewing, or you're just looking for another crushable crowd pleaser to add to your arsenal of recipes, Proper Sake's White Koji Ale is the beer for you. As the name implies, this recipe is crafted around the specialty ingredient of White Koji. Koji is a staple ingredient in the fermentation processes for sake, soy sauce, miso, and more. But White Koji, in particular, is gaining ground as a new brewing ingredient which can impart a beautiful citric acidity in the final beer.
This recipe from Proper Sake Co. results in an incredibly crushable light pale ale with a slight haze in the glass. The malt character will hang in the background as Cascade and Huell Melon support the overall refreshing, citrusy quality enhanced by the White Koji.

Background: MoreBeer! has a small beer fridge in our Concord, CA location. We try to order different beers every week, to allow our customers to try something new. We recently received "Tart of Darkness" from The Bruery. Nobody here had tried it before, so we opened a bottle to split amongst numerous employees. Within a few sips, the two cases we received had been completely purchased by employees - sorry Concord customers! We instantly got in contact with The Bruery, and being from a homebrewing background, they agreed to work with us on the recipe!
Their Tart of Darkness sour stout is the perfect blend of roasty, sweet, tart, and smooth. From the second it hits your palate, to the satisfying "ahhhh" after taking a sip, this is a beer that will leave you wanting another every time!
