Chux DIPA from Danville Brewing Company in Danville, CA is all about the hops. This celebration of hop flavor is packed with bright, citrusy tropical aromas that jump from the glass! Most of the IBUs come from a "First Wort" addition of Magnum. This process refers to adding hops to your kettle as soon as you begin collecting wort from your completed mash, resulting in a very smooth bitterness up front. From there, healthy aroma additions of Cascade, Citra®, Mosaic®, and Strata are combined for an incredibly expressive Double IPA.
Danville's Chux DIPA beat out 218 other entries to bring home Bronze in the Imperial India Pale Ale category at the Great American Beer Festival in 2017.

Survive this opening assault and you’ll be hit with an Idaho Gem™ thunder spark of pineapple, and then swept away by hurricane winds of Cashmere lemon/lime and stone fruit. Just as King Ghidora is not limited to a single ferocious maw, you’ll be hard-pressed to have but a single pour of this juicy, tropical brew. Without a ragtag ensemble of advorseries spearheaded by Godzilla himself, King G will reign over your beer rotation till he ultimately brings about the Earth’s next extinction-level event and moves on to another planet victim.
King Ghidora was brewed in collaboration with our Pittsburg, CA neighbors, E.J. Phair Brewing Company. It features a clean grist of 3 unique base malts, with a touch of white wheat for head retention and a dash of acidulated malt to lower pH. With only a quarter ounce of Citra® added late in the boil, this beer shows very little bitterness and lets the flavor and aroma hops do the talking. The first dry hop addition is added to the fermenter before transferring wort from the kettle. Although this isn't a Hazy IPA, the beer will have a slight permanent haze due to biotransformation, which occurs when yeast interact with hop oils during primary fermentation.

A modern twist on an American classic!
California Common is a unique beer style dating back to the days of the California Gold Rush, when brewers on the west coast incorporated caramel malts and additional hop character into their lager beers, helping mask the effects of warmer fermentation owing to a lack of available refrigeration. The resulting beer was a jack-of-all-trades: malty and full-bodied enough for a winter evening, but also hoppy and dry enough for the hottest California afternoon.
Here at MoreBeer! we love the classics, and Cal Common is no exception. But we’re a long way from 1849 and it’s time to give this classic, nearly forgotten beer style a chance to step into the modern age. To do that, we’ve combined the Northern Brewer hops that typify California Common with the Simcoe® hops that are so prevalent in today’s California IPAs, creating our first ever hop blend, “Norcoe.” The resulting beer is still a delicious jack-of-all-trades, but with a hop profile that’s at the same time common, and not Common at all!

Jamil was going for a certain flavored Pale Ale styled after one of his favorite commercial examples. It features a light malt backround that includes crystal 15, vienna, and munich combined with an interesting mix of hops.
Jamil is famous for being "The Pope" on the Brewing Network and having been one of the most award winning homebrewers of all time. He also co-wrote Brewing Classic Styles and Yeast: The Practical Guide to Beer Fermentation. Now he owns Heretic brewing one of the top breweries in the country. Red Ale is technically not a beer style category. Oh, well. It was created (and is continually evolving) in microbreweries throughout the US. Usually very similar to Amber Ale but with additional, darker crystal malts. MoreBeer! takes a different approach. We make it red with 2oz of Roasted Barley. The result is a red-colored beer but without the deeper, caramalized flavors. We add a combination of Cascade and Northern Brewer hops that combine with the malt flavors to make this a unique beer you won't find anywhere else.

Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.

Do you love huge dark beers, coffee, and a hint of spice? Then we have the totally unique, amazing beer for you. This is a massive Imperial Porter that starts with 15 lbs of base malt and a laundry list of specialty malts. This recipe hails from the Project Extreme Brewing book. It was originally created by Dogfish Head coworkers where it won an internal small batch brewing competition on the basis of its amazing, unique flavors. Big and black with caramel, wheat, black, and chocolate malts to give it a dark, roasty flavor. You provide the Sanka instant coffee, cinnamon, and nutmeg. Named after the coffee drinking, pioneer science teach Mr. Hector Vargus from the 80's movie Fast Times at Ridgemont High. This is one of those rare beers that can age gracefully for years.

This recipe requests optional ingredients that are not included with the kit. An ounce of Sanka instant coffee, a 1/4 tsp of cinnamon and a 1/4 tsp of nutmeg should be added to the boil. You can also choose not to add these ingredients.

"Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to start with more water than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarkably rich flavor profile, and then takes it to new vistas with an addition of maple syrup and Canadian whiskey-soaked oak chips. The maple syrup and oak chips are added to simulate the barrel-aging process used for making Founders Canadian Breakfast Stout®, or "CBS". The result is a deeply complex stout that would have Bob and Doug McKenzie swearing off Elsinore beer after one sip. Not to cause a kerfuffle, but patience is key when brewing Sorry Aboot Brunch Stout. We recommend conditioning the beer for 2 to 6 months after the oak chips are added. Hop Hunter IPA by Sierra Nevada brewing is the inspiration for this delicious recipe. Hop Gatherer is a Hop Hunter clone, which contains all of the same ingredients as the original beer, but gives you the option of what distilled oil you would like to use. We offer the kit with either Chinook or El Dorado farm distilled hop oil. Either way, this makes a tasty, easy drinking and highly aromatic IPA!
A bit about farm distilled hop oil: Distilled immediatley after picking, farm distilled hop oil gives you the bursting aroma provided by fresh hops. By distilling the oil at the farm, the distinct character of a "wet hop" beer is able to be replicated year round. The oil can be added post fermentation, typically at bottling. You can even add the oil directly to your glass! Be careful, it is VERY POTENT!

Flash Brews can be fermented in any wide mouth 6 or 7-gallon fermenter you already own. We suggest a wide mouth fermenter so you can easily pour in the ingredients. The next hot hop? This delicious Pale Ale is based on new experimental hop, HBC438, that has the unofficial name of Ron Mexico due to its native US neomexicanus hop heritage. This hop has enticing aromas of stone and tropical fruit, orange, mint, and herbal characteristics. Vinnie from Russian River Brewing (of Pliny fame) used this hop in an experimental beer brewed for the National Homebrewers Conference and also recently raved about this hop in a talk we attended.
The story of this hop is really unique. Traditionally hop breeders finish the testing of experimental hops internally and then release to the commercial market. Now they are turning the tables and trying something new! HBC 438 is being released EXCLUSIVELY to the Homebrewing community first. Then in the future, as more is grown, they will release it to commercial brewers. So the tables are flipped - Pro brewers will be reading your reviews and seeing what you thought of the hottest new hop.
What is also cool is that all proceeds from the sales of these hops go to ALS.net and help fund the ALS Therapy Development Institute, the world's largest non-profit biotech focused entirely on ALS Research.

A few years age we had a competition in our Concord showroom for the best Holiday Beer. The winner was an unknown brewer named Kyle Sommers. We actually hired Kyle following the competition to work in our customer service office(see where good homebrew will get you!) We loved the big body, rich malt, and the extremely complex spice blend. When we went to make the recipe for sale we thought twice because we had to buy out the spice section of our local grocer. Spices include small amounts of All-Spice, Cloves, Nutmeg, Saigon Cinnamon, and Ginger.
Based on a Northern English style Brown Ale, it has 6 different spices added at two different times in the brewing and fermentation process, resembling and inspired by a Belgian-style winter beer. This winter warmer will make your kitchen smell like Thanksgiving Day at Grandma's house. With some added Belgian brown sugar to counter-balance the spice and add some alcohol content, this is a great way to top off your Holiday adventures by the fireside. If you are a firm believer in the Reinheitsgebot (no spices, sugar, etc.), this is not the beer for you!

Creek Park from Wondrous Brewing Company in Emeryville, CA is an incredibly refreshing West Coast IPA hopped with Nelson, Citra® and Centennial. All three hops are incorporated at each stage of the hopping schedule from the late boil aroma addition, to whirlpool, to dry hopping. With no specialty grains in the malt bill to distract your senses, you'll hone right in on the delicious hop character of citrusy lemon, grapefruit and gooseberry.
This kit recipe was given to us by our friend and former MoreBeer! employee, Wynn Whisenhunt. One of the many MoreBeer! past employees to turn pro, Wynn is now the owner and head brewer of Wondrous Brewing Company. If you want to brew it as they do at Wondrous, Wynn suggests using WLP001 California Ale yeast for fermentation. Ferment until complete at 66°F then dry hop and raise the temp to 68°F for 6 days. D-test then crash! If you're kegging, force carb to 2.6 volumes of CO2.

In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super were excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since it's for the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

Haze Craze is the Flash Brewing® take on the hazy New England IPA recipe. Also known as a North Eastern IPA, or Juicy IPA, it quickly became one of the most popular beer styles in the US. In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since it's for the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

Shaun is known for creating beers that are well-balanced while doing some unique things, such as using watermelon juice in a wheat beer, or oyster shells in an oatmeal stout. His Assistant brewer Jesse created this beer, an easy-drinking pale ale with few bittering hops but giant fistfuls of flavor and aroma hops. This beer has low alcohol and a soft malt backbone with an incredible hop finish - your answer to the hop shortage! Jesse and Shaun recommend using WLP001.

Shaun's brewing career started like most in the beer industry - homebrewing. While working at a Southern California law firm, Shaun was spending his time making beers at home. After about 2 years, he not only decided that he wanted to make beer for a living, but that he wanted to open his own place! Shaun moved up to the SF Bay Area to start working at a few local breweries, while taking several brewing courses at UC Davis. Shaun eventually teamed up with his business partner Nicco Freccia, and together, they founded the 21st Amendment Brewery and Restaurant. They are one of the few breweries in the country leading the craft beer canning revolution, canning their "Brew Free or Die" IPA, and their "Hell or High Watermelon", which is an American-style Wheat beer brewed with real watermelon juice.
