Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Ale Industries was the second brewery to open in Concord, and just happened to be right next door to us (man, we were lucky)! Morgan and Steve, the brewers and co-owners, opened Ale Industries with one thing in mind - to not brew the same beers that everyone else is brewing. Their first beer, a hybrid Witbier called "Orange Kush" (now called Golden State of Mind), is more malty and aromatic than most commercial wits are. The second beer, Rye'd Piper, is a malty red ale that has a very hop-forward structure, but not over the top, like some reds can be.

Looking for the perfect Pale Ale to share with friends this summer? Do you like a Pale Ale with a rich malt flavor and a ton of hop character but without an overwhelming bitterness? Then the Pale Ale II should be your next brew.
We took our American Pale recipe and upped the malt, threw a ton of hops in the finish for flavor, but kept the bitterness the same. We think toning down the perceived bitterness is one reason we consistently get great reviews from brewers sharing this with friends.
Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer. We like damn good beer. And yes we like to wear our Sperry Topsiders and listen to Van Halen when we drink this (note if you were born in the 80's ignore this comment).

Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Siebel, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. Their attention to detail and their commitment to making great beer is evident in each batch that rolls out of the brewery. Definitely another 'must' for any beer fan visiting the Bay Area. One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

The Fermonster Fermenter - A Huge Upgrade Over Standard Buckets or Glass "Carboy" Water Bottles
Unlike buckets or glass carboys, the Fermonster fermenter was designed for brewing beer. It is made from tough, clear, virgin grade PET plastic so you can see the magic of fermentation. Unlike glass it will never break and shatter if dropped. It represents a huge upgrade over traditional buckets because these fermenters are much less likely to get scratched. Scratches can hold bacteria that can cause off flavors in the beer. The BrewBuilt Pressure Pack features a unique floating racking tube that can be used for taking samples, keg transfers, or serving finished beer. This innovative feature draws beer from the top down, which means you’re always pulling the clearest, most sediment-free beer possible. And with the included filter attachment, any floating vegetal matter will be blocked from ever entering the dip tube. Using pressure to draw a sample from the floating dip tube will also eliminate the tiny bit of oxygen that would be injected into your beer every time the traditional sample valve is opened. Pressure transferring from fermenter to keg is the best way to protect your beer from oxygen when it’s at its most vulnerable state. Kegging could be considered the final hurdle in the brewing process, where limiting oxygen exposure is critical. This could mean the difference between your beer tasting great for months or tasting great for a week. Don’t take any chances. Use the Pressure Pack to keg from the top down and leave sediment behind. Installs on the 4" T.C. port welded into the lid of the BrewBuilt X-Series Uni Conical. Travelin Man is at the high end of the pale ale guidelines, with a nice balance between the malt and hops. This is a great beer to let cold condition. The FermZilla is the perfect option for brewers that want all the advantages of a conical fermenter without the price tag of a full-blown stainless-steel unit. It allows you to dump trub, harvest yeast, and with the addition of CO2 cylinder and regulator, you can carbonate and serve – all in one vessel! The clear PET tank allows you to visually monitor fermentation activity and is pressure rated to 2.4 Bar (34.8 psi), which means you can ferment under pressure, reducing ester and fusel alcohols in your finished beer. This also gives the ability to perform pressure transfers. If you prefer to move your finished beer to a keg or other vessel, you can do so with little to no oxygen exposure.

When not under pressure, do not expose to liquids above 131°F
When under pressure, do not expose to any temperatures above 95°F*
*Please note that the temperature rating for the FermZilla tank is lower when using it under pressure. When not under pressure, it is perfectly safe to transfer wort into the tank below 131°F or to use hot liquids below this temp for cleaning. When under pressure, make sure to keep your fermentation temperature below 95°F and keep the fermenter in an environment that is below 95°F ambient. This is especially important when fermenting with kveik yeast. These strains are known to ferment hot if no temperature control is being used. Exceeding the temperature rating may compromise the tank, leading to a shorter life span or sudden failure to maintain pressure. Even with proper use, we recommend replacing the tank every two years.
Please note: when using the FermZilla under pressure, you must perform a water pressure check to ensure your connections are leak proof. To do this, fill your FermZilla up with water, apply at least 15 psi pressure, and check for leaks around all caps and threads.
Pressure Stress
If you use the FermZilla to ferment under pressure, or you use CO2 to pressure transfer or force carbonate your finished beer, it is very important that you conduct semi-annual inspections of your tank. Even with perfect care, the FermZilla tank may show signs of wear from pressure stress over time. We recommend visually inspecting your tank for stress creases or other signs of wear once or twice a year. A hydro test should be conducted every two years, even if no signs of wear are found. The process is simple:
Fill the tank to the brim with water
Replace the Red PRV with a Green PRV rated to 4.5 BAR or higher
Pressurize the tank to 4 BAR (58 psi)
Check for leaks, then replace the Red PRV when finished
If leaks or potential points of failure are found, replace the tank before you continue using pressure with your FermZilla.
General Care
Taking good care of your FermZilla begins with cleaning and sanitizing the unit before and after use. The tank is made from food-grade PET, which is beautifully clear, but can be sensitive to long soaks in cleaners and acid-based sanitizers. In general, we do not recommend leaving products like PBW or StarSan soaking in the tank for more than an hour. Extended soaks have the potential to degrade the PET material and shorten the lifespan of the tank.

NOTE: FermZilla tanks are marked with a manufacturer’s “expiry date”. This does not indicate that the tank is bad after this date; it simply indicates that a hydro test may be in order. 2 years after production and every 2 years after first use, it is recommended that the tank be hydro tested to ensure the tank is holding pressure. You will also need the D1072 Green PRV to perform the test. If you do not plan to pressurize the fermenter, the test is not necessary.

We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: Ultralight malt extract, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! An extremely malty, copper colored beer. A lager requiring cold fermentation in the 48 to 58 degree range. The hop flavor is subdued in favor of the rich maltiness. The malt extract for this kit is made entirely from German Pilsner Malt, giving it that classic European flavor.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! Columbus, or CTZ (Columbus, Tomahawk, and Zeus), is a high alpha varietal with a neutral bitterness and intense aroma. A true dual-purpose hop that works very well for bittering, but shines just as easily as a late addition. CTZ hops have an earthy, spicy character that is great for bittering. But when used as an aroma addition, you'll find more floral and citrus notes come out that can be very pungent. Columbus is a perfect choice for IPAs, Pales, Imperial Ales, Hazys, Stouts, and Lagers.
