A great aroma hop for German beers. Also known as Hallertauer Tradition, this hop has a super clean floral and herbal aroma which will go great in any German lager! When your making light lagers most brewers want the pils base malt to provide a bit of maltiness. It can be the difference between boring beer and amazing beer. We have gotten great feedback from pro brewers and many have switched to Viking after trying it.
We also have several craft breweries using this malt for the commercial production of light colored Pales, IPA's, and Hazys. A malt-forward German ale with a sturdy bitterness

"Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. Ryan also recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

Sometimes called Hallertau Hersbrucker as the Hersbruck region is right next to the Hallertau region and Hersbrucker is grown in both regions. A hop that represents a large acreage in Germany and what has essetially replaced traditional Hallertauer hops as they were more susceptible to disease.
Hersbrucker gives you classic noble type German hop flavor. Expect spice, fruit and floral characteristics. Often used as an aroma hop, Hersbrucker has a low alpha acid percentage but generous oil content. Great for Lagers, Pilsners, Bocks, Belgian Ales, Kolsch, Munich Helles, and Lambics.

This is the most common size used to make yeast starters using liquid yeast, great for higher alcohol beer and cold fermented lagers.
In the lab world, these flasks are known as "Student Grade," meaning there may be some cosmetic flaws in the glass, and the volume measurements are approximate due to variations in the thickness of the glass walls of the flask. This makes it a great flask for making yeast starters--at a great price!
We do not recommend the use of an electric element with these flasks. If this cannot be avoided, we suggest using a larger pot as a hot water bath on the stove.

Dosage:
One sachet is enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2–3 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly.
For professional brewers, use at a rate of 90-170 grams per barrel, depending on wort temperature and gravity.
Direct Pitch or Rehydrate:
MATTERHORN yeast is designed to be sprinkled directly onto the surface of your wort with no oxygenation required in the initial fermentation. Our aerobic growth process makes this possible by creating dry yeast with high viability and high sterol levels. MATTERHORN yeast is pre-loaded with essential nutrients to ensure a successful, complete fermentation. While not required, some brewers prefer to rehydrate yeast. To hydrate yeast, first, sanitize the yeast brick and scissors. Use 10 grams of sterilized tap water between 85-95°F (29-35°C) mixed with 0.25 grams of FermStart per gram of yeast. Sprinkle yeast on the water. Allow the slurry to stand undisturbed for 20 minutes, then swirl. Use small amounts of wort to adjust to within 10°F (6°C) of wort temperature before pitching. Ferment between 48-58°F (9-14°C).

Note: These salts are designed to set mash pH without acid additions. Because malt acidity varies, you may wish to verify your mash pH and make small corrections if needed, though this is rarely necessary. Dextrose is used in trace amounts as a processing aid for blend consistency and flow and does not affect fermentation or flavor.

Use to help replicate the maltiness and mouthfeel found in decoction mashes. Could be overpowering if used as more than 20% of the grain bill. Must be mashed. 6.6 °L - Viking Malt - Viking. Curing temperatures in the range of 110–120°C give the malt an aromatic, nutty character. The high curing temperature results in clearly reduced enzyme activities compared to Pilsner Malt.
Munich Malt is ideal malt for dark lagers, festival beers and bocks for underlining malty flavors and full bodied taste. The decreased enzyme activities have to be taken into consideration when designing the brewing recipe.
