We have been a fan of John Palmer ever since his book, "How to Brew" hit our shelves way back when. After meeting him at a few gatherings here and there, and after recommending his book hands down over any other, we decided to try and add John to our Signature Series line-up. When he agreed, we knew we would get something special from him, and he did not disappoint. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." This beer will not dissapoint! Thanks, John, for the kit, the book, and the advice! John recommends White Labs WLP833 for a dried beer, and WLP820 for a maltier version.

Background: MoreBeer! has a small beer fridge in our Concord, CA location. We try to order different beers every week, to allow our customers something new to try while they're in the shop browsing or purchasing equipment and ingredients for their next brew. We recently received "Tart of Darkness" from The Bruery. Nobody here had tried it before, so we opened a bottle to split amongst numerous employees. Within a few sips, the two cases we received had been completely purchased by employees - sorry Concord customers! We instantly got in contact with The Bruery, and being from a homebrewing background, they agreed to work with us on the recipe!
Their Tart of Darkness sour stout is the perfect blend of roasty, sweet, tart, and smooth. From the second it hits your palate, to the satisfying "ahhhh" after taking a sip, this is a beer that will leave you wanting another every time! A great beer for those that already love sours, or for those just getting into sours!

An extremely malty beer that really emphasizes malt over hops. Most styles are more balanced, which means the bitterness of the hops is proportional to the sweetness of the malt. Not true with our Scotch ale where the deep malt flavor is king. Scotch Ale yeast strains typically ferment well in the low-to-mid 60's and leave behind very few esters or fruity flavors, which further emphasizes the malt. This recipe has over 11 lbs of malt extract and only one ounce of hops!

That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: Ultralight malt extract, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! Cryo Hops® provide brewers with the ability to get gigantic hop character while reducing astringent and unpleasant vegetal flavors. With a substantially higher oil and resin content, LupuLN2 powder offers up all the flavor and aroma of a heavily hopped beer, but with a significanly reduced grassy character. Additionally, the lower dosage rate of the concentrated powder reduces the volume of trub and therefore, kettle loss. Using Cryo Hops® you will net more beer that is clearer!
Typical usage of Cryo Hops® would be roughly 50% of pellets. LupuLN2 powder can be used in any application where traditional hop products are utilized, including: Bittering, Kettle, Whirlpool and even direct to the fermentor. It is suggested that you use Cryo Hops® as late additions, in the whirlpool or dry hop, as the volatile aromatic compounds will be driven off if added early in the boil.
Cryo Hops® are an innovative hop product that is made by separating the lupulin from the hop flower using cryogenic processing. The result is a product with twice the potency of T90 pellets, with reduced astringency and vegetative material.

This kit is designed for owners of Chronical 2.0 Fermenters and includes everything you need to introduce CO2 pressure into your fermenter without removing the lid cap and risking O2 contamination. The Chronical BME's 3" Lid cap includes a PRV that prevents pressure from building to unsafe levels.

Setup:
Begin by locating the 1/2" tubing and attach one side to the 3" TC lid cap's blow off barb that was included with the Chronical 2.0. Dark Hill Porter is a tribute to one of our favorite west coast porters. This Black Butte Porter clone, commercially brewed by Deschutes Brewery in Oregon, is one of the most well-rounded porters out there. Being bittered with Bravo hops helps to initially balance the malty backbone, but that bitterness fades quickly, providing a smooth transition into the complex flavors of four different steeping grains. This combination of Wheat, Carapils, Crystal 120L, and Chocolate malts create a rounded mouthfeel and chocolate flavor.

Jonathan Plise has been making beer since the year 2000. He then spent the next few years researching and developing his recipes, fermentation regimen, and sanitation - Jonathan's most dramatic improvements came when he learned about oxygen and yeast starters. Jonathan became a famous homebrewer starting in 2005 when he recieved 33 awards for his beers, including several at the National Homebrewers Competition. He has also won California Homebrewer of the Year.

Reusable Nylon Mesh Bags are an indispensable part of any brew day.
These food-grade nylon mesh bags are available in a range of sizes and with either a fine or a medium mesh weave, which make them both more versatile and a better value than disposable cloth muslin bags. These bags are used for a wide range of different applications during brewing and fermentation.

We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! A very clean aroma hop that produces a mild, floral and spicy aroma. Due to it being mild and clean, this hop variety can be used in a variety of beer styles, including: Lagers, Kolsch, ESB, Pilsners, Pale Ales, IPAs, and Belgian Ales.
Rhizomes should be planted immediately for best results. If your area is still experiencing frost then you can plant them in a planter indoors until it is safe to transplant outside. The first years crop will generally be smaller than subsequent years. Since these are live plants, we cannot guarantee they will grow, so we recommend buying two of each type to help ensure their success.

The Sspunding Valve from Ss Brewtech allows you dial in the precise pressure at which you want your Unitank fermenting. A spunding valve is essentially an adjustable pressure relief valve. Normal PRVs that are found on kegs, couplers and come stock on Ss Unitanks, operate as safety features that will release pressure when it's nearing dangerous levels. Spunding valves, on the other hand, allow you to set the release pressure much lower. Simply dial in your desired fermentation pressure, and the Sspunding valve will release excess pressure when it gets too high. The scaled Sspunding valve includes an etched sleeve with a scale between 0-2 BAR, along with a pressure calibrated spring. This version is perfect for a home or nano brewer that wants to be able to dial in pressures on the fly without having to match the release pressure using a gauge. The scaled version also features a pressure release knob to quickly and easily verify or equalize tank pressure. If you're looking for a more affordable option, check out FE892Afor the non-scaled version. A six gallon food grade bucket for fermentation or bottling with a pre drilled hole and external volume markings up to five gallons. This bucket does not include a spigot. Our recommended spigots can be found below under You Might Also Need. To use as a fermenter you will need to pick up the optional lid, spigot, stopper, and an airlock.
If you use the bucket for fermentation be sure to use care when cleaning. Do not use any abrasive pads that would scratch. Once you get a scratch in a plastic bucket it is very hard to sanitize. This is also why we don't recommend storing equipment in a bucket between uses as a fermenter. A hot PBW soak is often a perfect way to clean a bucket, followed by a Star San soak for killing bacteria.

The Blichmann Therminator Wort Chiller is one of the most popular tools to use when chilling your wort, as it gets the job done quickly, effectively and without much effort from you.
