An easy way to eliminate chill haze in your finished beer is to add one vial of Clarity Ferm to your fermenter prior to the onset of fermentation. Use 1 vial per 5 -7 gallon batch. For the beer geek (but still simplified!): Chill haze is caused in your fermenter during aging when polyphenols and polypetides bond together. Clarity ferm cleaves polypetides (a protein fraction) so they cannot bond with polyphenols (tannin). This product is also known as Brewer's Clarex. There are also discussions and testing being done with this product, finding that it reduces gluten levels in beer. Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
German Huell Melon or Hüll Melon, is a relatively new hop varietal developed by the Hop Research Institute in Hüll. This hop has very distinct flavors of honeydew melon and strawberry. Many people find the aromas associated with this hop to be entirely unique to the lupulin family. Hüll Melon has quickly become one of Germany's most popular hops and is rapidly taking over noble-hop acreage. Due to it's unique flavor profile, feel free to toss this into whatever you see fit. Many craftbrewers are making single hop pale ales and IPAs with it, but the possibilities are endless.

Easily make clear beer by adding Clearzyme to your fermenter at the same time you pitch your yeast. This enzymatic solution targets and breaks down haze-inducing proteins so they cannot later bind with tannins to create beer haze. Clearzyme by CellarScience specifically targets haze-active proteins, so it has no negative effect on flavor, aroma, or head retention. One of the huge benefits of Clearzyme is that it removes the need to cold crash, saving time and energy.

Add 1/4 tsp per 5 gallons at the start of fermentation. Works best at a temperature range between 50-68°F and pH of 4-6.
Additional Notes:
Clearzyme is a protease, or proteolytic, enzyme that partially or totally hydrolyzes peptide bonds in protein. The resulting protein fractions are then too small to bond with the polyphenols in hops. It also breaks down the gluten protein that causes allergic reactions. Beers made with barley and wheat that have had Clearzyme added typically show gluten levels below 20ppm. Store at temperatures under 70°F. Immediately recap bottle after each use.
The recommended shelf life is 12 months from the date the package is opened.

We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. This malt contains about half the enzyme potential of 2-row malt, which is enough to self convert in a mash. It can be steeped in an extract brew to achieve some of the flavor contribution, but will not add any sugars in a steep.

Dosage
Consider 1mL of Quantum Brite the flavor/aroma equivalent of 1 oz of T-90 pellet hops. Add after fermentation is complete, ideally at the coldest and latest point in your process, in your fermenter, keg, or bottling bucket. Or even add a drop or two to spike your finished beer in the glass.

Airlocks are another one of those necessary pieces of equipment for every homebrewer. If you ferment in a carboy or bucket this 3 piece airlock is a must! It’s a popular alternative to the triple ripple type of airlock because it can be taken apart and cleaned, and is easy to fill. (However we do sell the triple ripple type (FE371) in case you are used to that type and would like to stay with it.) While a simple device not all airlocks are the same. Some other designs have only a couple holes in the plastic lid and this can cause the airlock to pop out during an active fermentation. Our design features multiple holes that allow CO2 to escape easily. Additionally some other airlocks have a cross hatch design on the bottom. We have found this more easily leads to Krausen clogs and the airlock being pushed out of the fermenter. Ours is open, allowing Krausen foam to enter the airlock if necesary. Better to clean your airlock out than to find it laying on the floor next to your fermenter 3 days later. Another cool feature of this 3-piece airlock is that 1/2" ID Silicone tubing will fit onto the center post for use as a blowoff. In the cases where you are using a yeast known to produce lots of Krausen (wlp002 from White Labs or 1968 from Wyeast for example) remove the top cover, remove the plastic 'hat', and install the silicone tubing. Run the silicone tubing into a jar or bucket of water. When fermentation dies back down remove the tubing and replace the hat and cover. Please Note: Airlock only - stopper not included.

Liquid Gold! So smooth for a beer with an alcohol by weight of 7%! This recipe includes quality sugar, plus an immense amount of both dried and liquid Light Malt Extract, hops and uses the Trappist yeast strain. It leaves lots of classic phenolic flavor, but produces a very soft body without a high alcohol bite. Not that bitter, this golden beer is about a strong and complex malt body. It may take a goblet or two to grow on you, but once you acquire the taste.... some would say "beervana." The malt extract for this kit is made entirely from German Pilsner Malt, giving it that classic European flavor.

We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: Ultralight malt extract, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! A very well balanced Pale Ale. You can taste the malt and the hops without being overpowered by the bitterness. We use Crisp Maris Otter malt for a drier finishing Pale Ale. We differ from the standard British Pale Ale recipes by throwing in a 1/2 of Munich for a little roundness of flavor and 1/2 pound of Carapils for added body. The crystal malt used is British Carastan. Northern Brewer hops are really mellow and not at the front of the flavor profile.

The Artisan Hops® Hop Shot is an easy way to boost IBUs without adding vegetal matter to your beer. This CO2 hop extract is a blend of Cluster and Magnum hops, which will impart a slight earthy, fruity character to your beer. 1 mL boiled in 5 gallons of 1.050 wort for 60 minutes will add approximately 10 IBUs.

Another hit from the Southern Hemisphere! Rakau™ is a dream dual purpose hop, with plenty of alpha acids for bittering and an explosion of tropical fruit character as a late addition. The soft bitterness makes it ideal for beers where you're looking for a lot of hoppy character but without the bitter bite that comes with some highly hopped brews. Released in 2002, this German hop has one of the lowest alpha acid contents in the world so it is always used as an aroma hop. It has a citrus and tangerine aroma with a hint of spice. Saphir works great in Belgian Ales, Wheats, and Witbiers.
