This ale recipe features the use of clover honey, dried rice extract and sorghum. Try adding some dark candi syrup to give it some color.
Gluten-Free beers are a different world when it comes to finding a suitable replacement for the base extract. Celiacs are allergic to the hordein protein found in the base malts such as 2-Row and Pilsner malt.
They are also allergic to the gliadin protein found in wheat which is the biggest offender of the two proteins. As a homebrewer your goal is to find a suitable fermentable that can emulate the maltiness in beer.
Our Gluten Free recipes use Sorghum extract for the base fermentables. Hops aggressively cut through the maltiness from sorghum easily. Hop additions in gluten free beers tend to be 40-50% less than normal.

Tri-clamp fittings are standard fare in professional breweries, and they’ve been widely adopted in homebrewing as T.C. fermenters and pumps become more affordable and widely available. Tri-clamp fittings, also known as Tri-clover, allow you to make a sanitary connection that is free of nooks and crannies for contaminants to take hold. They are much easier to break down for cleaning compared to threaded connections, and they don’t require Teflon tape to make a watertight seal. T.C. fittings and accessories also give you the distinct advantage of being able to clean in place (CIP), so you don’t need to break down your entire system after every brew day.

Beefy 304 Stainless
These kettles are made from 304 grade stainless. That means you will have less corrosion issues than with a kettle made from lower grade 201 type stainless. We put these kettles through a corrosive salt water test in the MoreBeer! shop and they passed with flying colors. We also made sure the rivets and riveted handles were also made of stainless steel for a long term, trouble free life. The 10 and 15 gallon size are made from 1.0mm thick stainless steel. The 20, 30 and 50 gallon size are made with 1.2mm stainless - that's pretty thick stuff - and you will know it when you pick one up. The included ball valve is a two piece design that allows for easy cleaning (we prefer these over 3 piece for ease of assembly) and is also made from 304 stainless.
Mirror Polish Finish
The mirror polish finish isn’t just for making your Instagram feed pop! This extra slick finish is much easier to clean and sanitize than a standard brushed stainless kettle. Hop trub and other organic solids left behind after a brew day will have a hard time clinging to the interior surface and scrub away with ease.
Size Ratios and Stuff
All the BrewBuilt kettles follow the recent trend to a 1.2:1 ratio where the height is 1.2 times the diameter. This is a proven commercial ratio that has been adopted in homebrewing to achieve a more consistent 10% evaporation rate during the boil. We do like this ratio for boiling. For Mashing we would prefer a little bit shallower but that is a small compromise. Dimensions for a hot-liquor tank, if you are thinking brewing system down the road, are irrelevant as any ratio kettle will do.

WiFi/Bluetooth Enabled RAPT Controller
The RAPT Controller is mounted to the top of the boiler body, allowing for easy operation when you have the unit set on the ground. The controller can be tilted upwards to give you an even better view, or it can be removed from the BrewZilla entirely if you'd prefer to mount the controller on your wall or lay it down on a workbench. From the controller, you'll orchestrate your entire brew day. Program mash steps, dial in element power, and operate the integrated pump all from one screen.
But the RAPT Controller is much more than a beautiful, full-color display switch board. Once synced to the RAPT Portal, you'll be able to track, record and monitor your brews online. No need for handwriting notes or punching brew day details into your phone -- all of the data from your brew is automatically logged to your portal profile. This information doesn't just include your mash profile; it also captures detailed information about your element power and pump activity, opening the door for very precise repeatability.
And the RAPT Portal isn't just a digital archive for your brew days. With your BrewZilla powered on, you can control your brewery from virtually anywhere using your phone's web browser. Not sure when you'll be home from work or your kid's ball game going into extra innings? No problem! High Capacity Malt Pipe
With an approximately 23.5 lb capacity, the BrewZilla can mash nearly 50% more grain than similar sized models of the Anvil Foundry and Grainfather G30. If you want to fill your fermenter with more than a 5-gallon batch worth of wort, or brew the highest gravity beer recipes, the BrewZilla is the brewhouse for the job. And the included malt pipe is just the beginning. If you want to expand your brewery's grain capacity even further, KegLand makes Boiler Extension Kits and Extended Malt Pipes for that very purpose. The malt pipe features a perforated section at the bottom which improves mash recirculation flow without sacrificing efficiency.
Concave Base with Center Draining
Leave no wort behind! The concave base with center drain means you'll be able to extract every last drop of wort to your fermenter. If you've brewed in a traditional flat bottom kettle, this center drain may be a bit perplexing at first. Many brewers are used to whirlpooling after the boil to pull hop matter into the center of the kettle, then transfer out using a pick-up tube that pulls from the kettle wall in order to avoid sucking up the solids. But fear not! One of the key features of the BrewZilla is the false bottom protection screen. This screen avoids the need for doing a whirlpool, filtering wort as it transfers and blocking more than 95% of hops and hot break from getting sucked into the pump. This not only prevents blocked pump issues, it also increases the efficiency of your brewhouse by eliminating kettle loss from wort that may have otherwise been left behind.
Ultra Low Watt Density Elements
The concave base on the BrewZilla also allowed for larger heating elements with significantly lower watt density than other breweries. When a lot of energy is coming off of a small element, the local temperature near the element can be so high that it scorches the wort and causes caramelization. Lower watt density essentially means you can produce lighter color beers that would otherwise have fallen victim to caramelization effect. It also reduces that chance of boilovers and reduces stress on the elements which extends their life expectancy.
Easy Access Built-In Pump
The built-in pump allows you to recirculate your wort during the mash for improved efficiency and more even temperature distribution. But it can also be used to transfer your wort from kettle to fermenter rather than relying on a gravity feed, and with the optional CIP Rotar, you can used the pump to clean your BrewZilla (or fermenter) after every use. During your brew day you'll be able to control the pump from the RAPT Controller with a dedicated button for turning the pump on and off. Another feature you'll find on the controller is adjusting the pump flow. This doesn't control the actual volume of the flow (you can do that from the ball valve located on the recirculation arm), but rather cycles the pump on and off automatically based on your setting. At 100%, the pump remains on continuously. But at 80%, the pump will cycle to be on 80% of the time and off 20% of the time. This may not be a feature that every brewer thinks they need, but it's an excellent way to avoid running the pump dry accidentally, as the time the pump is off allows recirculating wort to filter through the grain bed and back into the pump inlet.
If you flip over the boiler, you'll find the magnetic drive pump and all the plumbing is right at your fingertips. This means you don't have to disassemble the base in order to access the pump for cleaning or maintenance if required. It also means the plumbing can be changed more easily too. For instance, the unit comes as standard with the plumbing from the pump feeding both the recirculation arm and the transfer valve, but you change this so the tap outlet bypasses the pump if you prefer.

Please Note: When removing the malt pipe to drain after mashing, it is important to do so slowly rather than in one swift pull. If the malt pipe is removed all at once when it is full of wort, it is possible for the draining wort to spray out and over the rim of the brewery through the perforated bottom. Remove the malt pipe slowly so that some of the wort can drain out before it is fully removed and set on its bottom feet. This can be done by hand on the 35L unit, but for the 65L and 100L units we highly recommend using the Pulley System for removing the malt pipe.
Warning: Do not engage the adjustable lid clamps when brewing with the BrewZilla's standard glass lid. The clamps are only intended to be used with distillation lids or other metal accessories. With too much tension, it is possible for the lid clamps to break the glass lid when engaged.

MoreBeer!'s Patent Pending sparge arm design is the perfect addition to almost any all grain setup! This sparge arm assembly is made completely of stainless steel and silicone, and has two adjustment points. One of these will help to hold the sparge arm against your kettle, while the other allows you to move the sparge arm up or down inside the kettle to accommodate different amounts of grain. These adjustment knobs are very easy to hand tighten and loosen, meaning no tools are necessary. Excellent for sparging as well as recirculating your mash in a RIMS or HERMS system!
To use, simply install on your kettle wall, tighten down the stopper bumper to hold the sparge arm in place, adjust the height of the bottom disc to be right above your grain bed but below the mash tun's water level, and adjust the flow level using the included ball valve. This unit will not include a barb or quick disconnect on the inlet of the ball valve, as every brewery is different. Please choose an inlet attachment from the sparge arms recommended items. Note - This sparge arm will not fit on most coolers. Make sure to check out the video in the video tab below.

Chocolate and Black Patent malts are the backbone of this style. Our all-grain version of Porter features munich malt for a little maltiness and carapils for better mouthfeel and head retention. The Northern Brewer hops impart a nice, but not overpowering bitterness. Good first dark beer. However, for many people, this is their favorite style. Just ask Regan who is a Porter nut. All of our Porter recipes are descendants of his designs which date back to the 1980s. You will not find any Roasted Barley in our Porter recipes as we believe this is the defining difference between Stout and Porter. If you would like to see the difference for yourself try making our B3 Stout (in extract) or our Silk Stout in all grain form and then one of our Porters. Give your homebrew that refining touch.
Adding Maltodextrin to your extract brew will help you fine-tune the body and mouthfeel without affecting the flavor. The Maltodextrin molecule is a chain of sugars between 4 and 20 dextrose units in length. That means it is only 3% fermentable by brewer's yeast, and so will contribute body to the finished beer. It is naturally present in all finished beers, up to 6% by weight, but the grains that yield it in All Grain brews don’t respond well to steeping in extract batches.
Our maltodextrin is composed of .5% dextrose, 2.5% Maltose, 3.5% maltotriose, 93.5% higher saccharides, and is made from corn. It is often also referred to as Dextrin or Dextrine Powder.
Add to the wort at the same time as the extracts.

Oxblox 3D is a specially formulated blend of gallotannins, ascorbic acid, and metabisulphite that is added to your strike water right before mash-in. It dissolves easily and is extremely useful to reduce oxidation during the mashing process. Through multiple actions, it reduces dissolved oxygen levels and helps inhibit the lipoxygenase enzyme found in malt that is infamous for causing downstream wet paper / cardboard flavors attributed by the (E)-2-nonenal compound. Oxblox 3D has minimal impact on pH but may lower pH levels by 0.2-0.4 in both the mash and the finished beer.
You may not always notice stale flavor compounds in beer when present, especially at low levels. But when removed, the beer can smell and taste fresher. Beer treated with Oxblox also has an enhanced shelf life, staying fresher for longer.
Overall, Oxblox 3D is a low cost, easy-to-use addition to help you brew better tasting beer that lasts longer in keg, can, or bottle.
Use:
Mix 0.2 to 0.4 g per gal (0.05 to 0.1 g per liter) into your strike water directly before dough-in. We recommend starting with a dosage of 0.3 g per gallon of strike water (0.08 g per liter of strike water) and adjust as desired in future batches.
Another hit from the Southern Hemisphere! Rakau™ is a dream dual purpose hop, with plenty of alpha acids for bittering and an explosion of tropical fruit character as a late addition. The soft bitterness makes it ideal for beers where you're looking for a lot of hoppy character but without the bitter bite that comes with some highly hopped brews. With a high oil content, partcfularly myrcene, you'll find notes of passionfruit, peach, apricot, plum, mango, pear, and other stone fruit. Our Premium BIAB (Brew In A Bag) kettle and bag kit is the most affordable way to get into all-grain brewing. This hardware kit includes a stainless steel kettle, ball valve, hose barb connection, 1/2" plug and plumbers tape to seal the connections. While it does not include directions (you can easily Google BIAB), the basic concept is that you place the bag in the kettle, add the grain from your recipe along with a measured amount of hot water and let it steep for 60 minutes. If you're a fan of Amber Ales, then you need to try this Alaskan Amber clone kit! The recipe is one of true Amber fashion, using three different crystal malts as the only steeping grain. Everything you need to get right down to business with the MaltZilla Motorized Grain Mill! This complete kit includes the MaltZilla Grian Mill, Aluminum Hopper, PPE Base Board, and 110V Power Supply.
KegLand put an exceptional amount of time into the research, testing, and development of the MaltZilla, and what they came up with is a motorized grain mill unlike anything we've seen before. It features an integrated motor so you'll never have to mess with a hand crank or power drill to spin the rollers. And the rollers themselves are made with a diamond-impregnated surface that offers superior performance and longevity compared to conventional knurled steel rollers.
The integrated 24V motor is powerful enough to chew through popping corn kernels with ease, and works on voltages from 12-30V DC. The higher the voltage the faster the rollers spin, although we recommend 24V for optimum speed and grist results. The included power supply is straight forward, and allows you to plug the unit into a standard 110V power socket.
Knurled Steel vs. Diamond Coated Rollers
Your run-of-the-mill grain mills are often manufactured with steel rollers with a knurled finish. The knurling helps grip and pull the grain through the rollers, but even the knurling on hardened steel will go blunt eventually and hinder the mill's performance. Some manufacturers attempt to solve this problem by using geared rollers to better grab the grain, or add a third roller to the mill so the first two rollers with a larger gap force the grain into the third roller. These are only workarounds to the real issue—all steel rollers will go blunt eventually, especially if used with hard grains like wheat or corn. In a commercial setting, it’s not uncommon to send the rollers off to a metalworking factory to re-sharpen and re-knurl, but this is an expensive, time-consuming hassle. Many homebrew-scale users might just end up throwing the mill away and purchasing a new one.
The MaltZilla Diamond Mill is quite a different mill design, and it’s the first in the world to use diamonds impregnated into the surface of the roller. Even after many tons of grain are processed through the mill, the diamond surface will stay just as sharp as it was on day one. The sharpness of the diamonds draws grain exceptionally well, and even when hard grains are used the diamond rollers won't dull or slip in performance.
Sheer Instead of Chop
Most mills require aggressive knurling to push into the grain and “chop” the grain as it passes through a tight gap, which means your grains are often chopped in half. The MaltZilla works on a different principle and gap setting is not as critical. The MaltZilla uses impregnated diamonds to grip the surface of the kernel and the friction of pulling the grain through the gap causes a sheering action. When set up correctly, the sheering action can leave the entire husk intact, reducing the chance of stuck sparge and improve efficiency, while still opening the husk enough that the entire contents of the kernel is available to the mashing process. The 70 mm diameter rollers are double the diameter of many other mills, which significantly improves the crush and assists in drawing the grain in more effectively.
Integrated Motor
You generally would not purchase a car without an engine, so why would you purchase a grain mill without a motor? Milling grain has an optimum RPM— too slow and it will take you a long time, too fast and you will end up with excessive powder. Hand cranking can be a pain in the backside, especially with larger grain bills, and using a power drill doesn't offer much in the way of speed control and adds the potential risk of burning out your drill. The MaltZilla has an integrated motor with a very constant RPM putting out optimum RPM with an integrated gearbox. The high torque and sealed construction make it ideal for a brewing environment, as the motor is well protected from moisture and grain dust.
The motor is seamlessly integrated into the side body of the mill. Being DC, the motor is safer than higher voltage AC, especially in an environment where splashing and hose spray are commonplace. The DC motor is also reversible so the direction of spin can be changed based on the polarity. This is particularly useful for over-mount and under-mount installation.

Bubbling Crude, Black Gold, Texas Tea - you may not strike oil in your backyard, but you can make Imperial Stout at home. With a texture and color similar to black crude oil, this monstrous, thick, chewy beer takes a minimum of six months to age out. The foundation of the beer is 12 lbs of malt extract. Then we throw in some Crystal, Chocolate, Roasted Barley, and Black Patent malts. Yes, there are two additions of hops in this recipe but you probably will never taste them through all that malt flavor. This is a great beer for sipping in front of the fire. Will age for years, eventually gaining some Port-like flavors.

The rotating spigot allows you to push the bucket deeper into your counter or benchtop without obstruction. When it's time to transfer out, bring the bucket to the edge of your counter and rotate the spigot to point down. These buckets are made from Polypropylene and are ideal for all types of fermentations, especially beers with high krausen. Why Polypropylene? These buckets are made from polypropylene as it is less porous and significantly smoother than other HDPE fermenters. HDPE is porous and can harbor microbial activity making it more difficult to clean and sanitize. Being less porous, polypropylene also does not absorb aroma like HDPE so there is less flavor carry over from batch to batch. Phantasm Powder has been causing quite a stir on the craft beer scene, and the buzz is well deserved. Adding this powder to your wort and fermenting it with a thiolized yeast strain is one of the easiest ways to boost tropical flavor and aroma in your finished beer. Derived from Marlborough Sauvignon Blanc Grapes, this powder will add a concentrated dose of thiol precursors.
