Pliny the Elder is a truly amazing beer with a cult like following, and was once one of the hardest IPAs to find, as Russian River brewed it in very limited quantities. Depending on where you live, it may still be next to impossible to track down! But with this killer clone kit you can make your own Pliny and perhaps you will develop your own cult following where you are worshiped by your beer loving friends. (Hey, it could happen!). Light malt color, huge hops, and a dry finish. Be prepared for an outrageous amount of flavor.
This is THE original Pliny the Elder recipe, given to us directly by Vinnie at Russian River Brewing Company. This beer is an intense Double IPA. High bitterness with a dry malt finish, 8% alcohol, 6 separate hot side hop additions, 3 separate dry hop additions, and intense hop flavor and aroma! Pliny sets the standard for Double IPAs!
Who is Pliny the Elder?
This beer is named after Gainus Plinius Secondus, or Pliny the Elder, a Roman author, lawyer, naval man and naturalist who first mentions the botanical name for hops in his writings - lupus salictarius, which translated from Latin means Wolf Among Willows. Sadly, Pliny died while helping people escape the eruption of Mt. Vesuvius in August, 79 AD. Pliny the Younger was the nephew of Pliny the Elder and is the name of another outrageous and highly sought-after beer from Russian River.
Russian River Brewing
If you have not tasted beers from Russian River Brewing Company, you should put it way up on your priority list. This is a brewery with huge demand that keeps quality as a first priority. Owner Vinnie Cilurzo is also unique in that he still actively brews and tests recipes and ingredients (on a MoreBeer! Brewsculpture by the way) on a constant basis. Amazing.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Our Cali Mountain Pale Ale is inspired by one of the most iconic pale ales in the country: Sierra Nevada's Pale Ale. This pale ale is a fairly simple recipe, consisting of ultralight malt extract, Crystal 60L, and four hop additions. This being said, don't be fooled. The flavors blend together perfectly, creating a complex yet easy to drink homebrew. The bittering hop additions are Magnum and Perle which provide a clean bitterness that balances the sweetness from the Crystal 60L malt perfectly. The aroma hop and dry hop additions are both Cascade, providing a citrus & floral aroma as fresh as the forests in California's mountains!

Bursting with hop character with a smooth and creamy mouthfeel. Our best-selling Hazy IPA year after year
Includes Warrior®, Citra®, and Mosaic® hops
Estimated ABV: 6.4%
Estimated IBUs: 28
Makes 5 gallons of finished beer
Haze Craze is our take on the hazy New England IPA recipe. Also known as a North Eastern IPA, or Juicy IPA, it quickly became one of the most popular beer styles in the US. It packs all of the hop character that craft beer nerds love, and it's much softer and less bitter than classic West Coast IPAs, making it a much more approachable style for the uninitiated. The style accentuates hop character while maintaining a smooth and creamy mouthfeel. Light in color but hazy due to heavy dry hopping, yeast selection, as well as additions of oat and wheat. Low in bitterness with a huge hop character due to hop-bursting, this beer will satiate even the biggest hop head.
NEIPA has become popular nationwide thanks to breweries like Tree House Brewing, The Alchemist, Hill Farmstead and Grimm Artisanal Ales. One taste of this delicious style will make a staple in your brew schedule.

This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Russian River Brewing Company
This is the original homebrew recipe that was the basis for Russian River Brewing Company's famous Blind Pig IPA

The original Double IPA! Vinnie Cilurzo began homebrewing in 1989 while in college. In 1994 Vinnie started the Blind Pig Brewing Company in Temecula, CA, a small, low-budget micro-brewery known for their extremely hoppy IPA—an IPA which won silver medals at both the Great American Beer Festival and the World Beer Cup. Vinnie sold his share in Blind Pig and was hired to manage and brew at the Russian River Brewing Company, a start-up brewery by Korbel Champagne in Guerneville, CA. In late 2002 Korbel decided to get out of the beer business and sold the Russian River name and brand to Vinnie who moved the brewery to Santa Rosa, CA, 90 miles North of San Francisco, where he and his wife Natalie opened a brew-pub which serves delicious bites and, of course, all of the Russian River Ales. Vinnie has won 10 awards at the Great American Beer Festival in just six years and was named Small Brewing Company Brewmaster of the Year in 1999. Russian River's smashing success continues to this day, expanding and opening a second brewery in Windsor, CA. Almost every beer that Vinnie makes commercially started out as a homebrew recipe at one point or another. Even as a professional brewer, Vinnie still homebrews at least 5 or 6 times a year.
This is the original homebrew recipe that was the basis for Blind Pig IPA which won Silver Medals at the World Cup of Beer and the Great American Beer Festival in 1996, the last year Vinnie brewed it. Two dry hop additions along with 1 oz of American Oak are added directly to the fermenter after the first week of fermentation. To say it is a very unique, extremely flavorful IPA is an understatement. Vinnie recommends using White Labs California yeast, WLP001.

Based off of one of the most exceptional east coast beers (in our humble opinion) on the market, this double IPA instantly became one of our favorite ingredient kits! Our version of a Heady Topper clone recipe is packed with almost a pound of hops, and is definitely a beer that will have hopheads in hopheaven.
One of the first things we noticed when pouring this beer into the pint glass was the aroma. With a dry hop addition consisting of Apollo, Centennial, Columbus, Simcoe®, and Amarillo® hops, we weren't necessarily surprised. Impressed is more like it. A balanced malt profile helps to tame the bitterness, allowing the hop flavor and aroma to be the true star in this recipe.
If you're a fan of IPAs, double IPAs, or anything having to do with hops, this Heady Topper clone is one beer you need to brew!

Contrary to its name, Ugly Fish IPA is actually one of the most beautiful beers we have to offer! Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. MoreHaze! is a delicious, juicy, NE style double IPA. This beer was brewed as a collaboration between EJ Phair Brewing Co. and MoreBeer! We liked the beer so much that we wanted people to be able to brew it at home.
The beer is very high in alcohol (9.1% ABV), low in bitterness, light in color and loaded with hops. We dry hopped this beer in multiple stages, added lots of high protein grains and did not use any clarifying agents, which leads to a hazy beer loaded with flavor. Flavor and aroma is very citrusy (orange, tangerine, grapefruit) and mildly danky. The large addition of wheat and oats adds a soft, pillowy texture to the beer. The feed back was that this beer is delicious and dangerously easy to drink at such a high ABV.

At just under 5%, we like to think of this beer as a hop lover's dream. A truly sessionable IPA overflowing with hop character
Includes Warrior®, Centennial, and Simcoe® hops
Estimated ABV: 5%
Estimated IBUs: 58-62
Makes 5 gallons of finished beer
If you're looking for a new session IPA to obsess over, look no further! We recently changed this recipe slightly, making all finishing hops Centennial (rather than a blend between Centennial and HBC-342). We made sure to keep the Simcoe® dry hop though, as we felt this really brought a "pop" to the aroma!
While the general rule of thumb has been "one or two IPAs and you're feeling it", at just under 5%, we like to think of this beer as a hop lovers dream. The type of IPA that you can open up at noon, get the grill going, and forget worrying about how you're going to feel after drinking 8% IPAs for a few hours! (Yes, we know that feeling too...)
A half pound of corn sugar helps this one finish out nice and dry, while a small amount of acidulated malt will help make those hops pop. The clean bitterness of Warrior® balances perfectly with a slightly sweet malt profile, all topped off with a white, frothy head thanks to the wheat malt.
So what are you waiting for?! Order your kit today and let the obsession begin!

DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Our take on Deschutes Brewery Mirror Pond Pale Ale, this beer is smooth and balanced with floral, citrus & grapefruit aromas and flavors
Includes 100% Cascade hops from boil to dry hop
Estimated ABV: 4.9%
Estimated IBUs: 39-43
Makes 5 gallons of finished beer
A truly tranquil beer, the Glass Lake Pale Ale is our take on the Deschutes Brewery Mirror Pond Pale Ale. We kept the malts simple, using maltodextrin and Crystal 10L, the lightest crystal malt we offer, to add a little body and color to the smooth malt backbone that our ultralight malt extract provides. Cascade is the only hop varietal in this recipe, being used from bittering all the way to the dry hop addition!
The result is a very smooth and balanced beer, complete with the classic floral, citrus & grapefruit aromas and flavors that Cascade hops are so well known for.

Our OG American Pale Ale recipe with the malt and hop character kicked up a notch
Includes Magnum, Cascade and Willamette hops
Estimated ABV: 5.3%
Estimated IBUs: 57
Makes 5 gallons of finished beer
Looking for the perfect American Pale Ale to share with friends this summer? Do you like a Pale Ale with a rich malt flavor and a ton of hop character but without an overwhelming bitterness? Then the Pale Ale II should be your next brew.
We took our American Pale Ale recipe and upped the malt, threw a ton of hops in the finish for flavor, but kept the bitterness the same. We think toning down the perceived bitterness is one reason we consistently get great reviews from brewers sharing this with friends.
Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer.
Truly delectable and different yet still keeping it real.

Throw on a pair of shades and button up your favorite floral print shirt, this ambrosial IPA is a vacation in a glass. Our Flamingos & Fronds IPA clone kit was inspired by Alvarado Street Brewery's Mai Tai PA, an extraordinarily tropical brew comprised of 100% Mosaic® hop additions. While technically a SMaSH beer (or in this case, single malt extract and single hop), this delicious west coast IPA has a surprisingly complex flavor and aroma profile that perfectly expresses the versatility of Mosaic® hops. Take a deep breath and let waves of passion fruit, mango, and lychee wash over you while sipping a pint of Flamingos & Fronds. Close your eyes and you'll hear the wind lightly rustling through the palms as a flock of wading birds quietly gabble and honk in the distance. Relax. You've earned a break from life's unrelenting hustle and bustle, if only for as long as there's beer left in your glass.

Flashing Lights is a delicious IPA that is bittered with Chinook and heavily dosed with Citra®, Mosaic® and Cascade. Beautifully aromatic and very easy drinking, this is a definite crowd pleaser! Flashing Lights is one of the many innovative rotating beers brewed by Cloudburst Brewing.
Cloudburst Brewing in Seattle Washington is one of our favorite craft breweries. We met Steve Luke (owner and head brewer) up at the Yakima Fresh Hop Ale Festival and were thoroughly impressed with his beer. After tasting every beer at the festival, there was no question that the Cloudburst Wet Hop IPA was best in show.
Steve, being an ex-homebrewer, was happy to help MoreBeer! with one of his famous IPAs. If you are not familiar with the amazing Cloudburst IPAs he makes, you might be familiar with another IPA of his, Elysian Space Dust. Cloudburst brews up a constantly rotating selection of flavorful and unique brews. Stop by the tasting room the next time you are in Seattle; until then, you'll just have to brew up some Flashing Lights!

MoreBeer! is proud to release this Black IPA recipe designed by our local homebrew Club D.O.Z.E.
After winning the AHA Homebrew Club Of The Year in 2010, the Diablo Order Of Zymiracle Enthusiasts (DOZE) put their minds together to collectively craft a beer they felt representative of the club and its brewers. The initiative was taken on as an all club project that spanned 5 months. In the end, over 50 members contributed ideas to this recipe and nearly 40 individual batches brewed by 23 DOZE members were tasted and refined to a single recipe. This beer is inspired by the style many refer to as Cascadian Dark Ale or Black IPA, however it is not intended to fit the mold of any particular guideline. Mostly it is big, dark, hoppy, and delicious.
The recipe was coined 'Diablo Dark Ale' in honor of our near by Mt. Diablo. Members of the Diablo Order of Zymurical Enthusiasts live in various cities located at the base of this great mountain. Also the location where many of us from MoreBeer! go mountain biking when we get the chance.

Packed with hops in the kettle and finished with fresh oranges in the fermenter, this IPA is primed to explode in your mouth
Includes Columbus, Simcoe®, and Centennial hops
Estimated ABV: 6.5%
Estimated IBUs: 75-80
Makes 5 gallons of finished beer
Remember your parents scaring you with "Be careful of firecrackers, they can explode in your hand!" Well let us warn you right now... our new, juicy M-80 IPA is going to explode in your mouth. It's going to be crazy. Flavors going everywhere. Maybe your parents would tell you to use caution and not to make this beer. But your grown up now, making adult decisions (most of the time), and we think you've earned the right to buy a beer kit with a fuse and a lighter. With a slight smile and a wink of the eye, we say "go ahead... have some fun".
Let us tell you about the inner workings of this bomb. Sure it has big IPA malt, but you want to know about the hops. It starts with an unreasonable amount of Simcoe®, Columbus, and Centennial hops. By themselves these are all explosive hops, but together they combine to bring true, huge IPA hop flavor. Because of the similarity of hops, one MoreBeer! staffer dubbed it a mini "Pliny The Elder... but with orange". High praise indeed.
Did you just say Orange? Well done sir, good paying attention. What really sets this IPA apart from the masses is that the recipe calls for you to cut up and add three fresh oranges into the fermenter. Crazy? We thought so. But that is what we love about our Signature Series of Beer Kits, a selection of crazy, unique beers that really stand out. M-80 IPA was designed and created by your fellow homebrewer, Carlos Musquez. We do admit he went a little AWOL on this kit and into uncharted territory, but we love a rebel.
You will need to supply the three fresh oranges... we'd ship them to you, but they would get a little squishy.

Have you ever wished you could crush your enemies and consume their life force!? .... yeah *cough* nor have we. But the same can't be said for the Juicy Brut! This maniacal monarch didn’t gain support for his claim to the throne through strategic wedding arrangements, nor did he bring his challengers to heel through deftly negotiated treaties. Oh, no. He conquered the realm using his dry, brutish nature and sheer force of juiciness. When the Juicy Brut enters the fray wielding his pulp-stained battle axe, he yawps but one maxim -- no quarter!
Juicy Brut IPA has a pronounced dry character with almost no malt sweetness, setting the stage for the Mosaic®, Amarillo® and Citra® hops to be on full display. Leaning heavily on whirlpool and post fermentation additions, the tropical flavor of these hops come bursting forth with aromas of lemon, orange, grapefruit, passionfruit and mango. We can offer only one piece of advice. Bend the knee and swear fealty to the Juicy Brut!
This recipe was developed by our own award winning Brewmeister Vito Delucchi as he was researching and writing an Article on Brut IPAs for BYO (Brew Your Own Magazine). Curious about Brut IPAs? Vito also wrote an article for MoreBeer.com on the subject. You can check out that article here: There and Back Again, A Brut IPA Tale! Rodger Davis former brewer of Drakes Brewing Co., San Leandro, California.
Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Siebel, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. Their attention to detail and their commitment to making great beer is evident in each batch that rolls out of the brewery. Definitely another 'must' for any beer fan visiting the Bay Area. Until then, find out more about Drake's at www.drinkdrakes.com.
One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

Fact: Firestone Walker has been named "Mid-Size Brewery of the Year" four times. Another fact: Pale 31 has won 10 Gold Medals since 2003 (yeah, that's one a year!).
The Pale 31 California Pale Ale is what some refer to as "The Perfect American Pale Ale". Light in body and color, but strong in hop flavor and aroma, this is one of those beers that most beer lovers will always want on tap. After having one, you'll most likely want another, and being under 5% ABV makes this a little more possible! The recipe consists of our ultralight liquid malt extract, Munich malt, and dextrin for added mouthfeel. The hops are a perfect blend of Fuggles, Chinook, Cascade and Centennial.
Firestone Walker's head brewer Matt Brynildson had worked on his Pale Ale recipe for a long time before being perfectly satisfied. We know that once you taste this beer, you'll agree with us that his hard work has definitely paid off!
Don't forget to purchase The Brewing Network's "The Perfect American Pale Ale" DVD too! Matt Brynildson discusses water modification, recipe formulation, and techniques on how to brew Pale 31! To read more, click here.

Our Ballast Point Sculpin® IPA clone recipe kit with a grapefruit twist. Add the flavoring at packaging and enjoy this fruity IPA
Bittered with Warrior® hops and finished with a beautiful blend of Cascade, Simcoe®, and Chinook late additions
Estimated ABV: 7%
Estimated IBUs: 62-69
Makes 5 gallons of finished beer
This is our normal Ugly Fish IPA that you know and love but with grapefruit flavoring included. Add the flavoring just prior to bottling or kegging and you'll have a great fruity IPA to enjoy.
With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.
If you're looking to treat your taste buds to a beer that we think has been hopped perfectly, we highly recommend the Ugly Fish IPA!

We would not have put 3 lbs of honey with 4.5 lbs of malt extract in a pale ale, but Jim had no fear and did just that. The result - a really nice mix of malt and honey flavors. There is enough honey to make it through into the flavor. Just a little Cascade hops in the beginning and finish keep the flavor emphasis on the honey. He suggests WLP002 because it is less attenuative and leaves more malt behind.

John C. Maier of Rogue Brewing Company, Newport Oregon has been an avid homebrewer since 1982. In the Fall of 1986, he decided to turn his passion into a job and attended the Siebel Institute of Technology, graduating from their 50th course in Brewing Technology. The Alaskan Brewery in Juneau hired John as Assistant BrewMaster in March of 1987. In 1988 he won the prestigious American Homebrewer's Association Homebrewer of the Year award. In May 1989 he left Alaska Brewery, and that same month walked in on the very first brew at Rogue Ales Brewery in Newport, Oregon. He has brewed over thirty million pints of beer for Rogue since.
Rogue beers have won too many awards to list, and the brewery consistently receives the highest level of critical and acclaim. In our opinion, Rogue makes some of the most original and best beers anywhere because John continuously experiments to expand and refine his brewing creativity. His commercial brewing for Rogue reflects his homebrewing background, in that Rogue produces an amazing variety of beers - well over 20 different regular styles plus additional seasonal specialities. Their beers are always intense, distinctive and literally packed with flavor. We know of no other hands-on BrewMaster who makes as much beer commercially (Rogue brews 1550 gallons per batch), yet still finds time to develop 20 gallon pilot batches for new, commercial beer products. In order to insure that his pilot brews run as quickly and consistently as possible, Rogue recently purchased a MoreBeer! Model 2050 Professional Series BrewSculpture™ System with all available options, plus a 24-gallon MoreBeer! Stainless Conical Fermenter with cooling option. This industry-standard brewing system now serves as the product developmental platform for all new Rogue beers. Visit Rogue in either Newport or Portland, Oregon, or online at www.rogue.com.
Imperial India Pale Ale ("I2PA") Recipe We were ecstatic when John offered us his famous Imperial India Pale Ale recipe as an ingredient kit. I2PA is a malty beer that is radically hopped with an intense aroma and hop bitterness. You can think of I2PA as an IPA on steroids. Beside the extract, the only other ingredient is a copious amounts of hops. No steeping grains! We suggest you buy a bottle of Rogue I 2 PA and see how your version matches up against the original. John recommends using White Labs California Yeast, WLP001.

Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale.
This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends.
Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit).

In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super were excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since this is the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.
This American Honey Pale Ale uses all American ingredients, including:

Brought to us by Nate Smith, this IPA truly is a hop bomb! With almost 10oz. of hops in a 5 gallon batch, this is one that hop-heads definitely need to try. Falconer's Flight, Citra®, Magnum, Columbus and Centennial all play a role in the clean bitterness and amazing hop aroma and flavor that you get out of this IPA. Nate is a participant in the Brewing Network's Sunday Session podcast, an active member of D.O.Z.E. (Diablo Order of Zymiracle Enthusiasts) Homebrew Club, and has been homebrewing for over 14 years. Needless to say, Nate's familiar with the scene!
Nate's Recommendations on the Citrus Bomb IPA:
Use WLP001 (with a starter) or WY1056 yeast. Plan on an 18-20 day fermentation: 10 Days at 65F, then raise to 68F on the 10th day. Add your dry hops 5 days later, and rack 3-5 days after that. *NOTE* Fining with biofine is recommended!
