"Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to start with more water than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

Only a hoser would pass up the chance to brew a stout influenced by the Great White North. Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarkably rich flavor profile, and then takes it to new vistas with an addition of maple syrup and Canadian whiskey-soaked oak chips. The maple syrup and oak chips are added to simulate the barrel-aging process used for making Founders Canadian Breakfast Stout®, or "CBS". The result is a deeply complex stout that would have Bob and Doug McKenzie swearing off Elsinore beer after one sip. Not to cause a kerfuffle, but patience is key when brewing Sorry Aboot Brunch Stout. We recommend conditioning the beer for 2 to 6 months after the oak chips are added. Best enjoyed in your favorite tuque with a box of Timbits.

The next hot hop? This delicious Pale Ale is based on new experimental hop, HBC438, that has the unofficial name of Ron Mexico due to its native US neomexicanus hop heritage. This hop has enticing aromas of stone and tropical fruit, orange, mint, and herbal characteristics. Vinnie from Russian River Brewing (of Pliny fame) used this hop in an experimental beer brewed for the National Homebrewers Conference and also recently raved about this hop in a talk we attended.
The story of this hop is really unique. Traditionally hop breeders finish the testing of experimental hops internally and then release to the commercial market. Now they are turning the tables and trying something new! HBC 438 is being released EXCLUSIVELY to the Homebrewing community first. Then in the future, as more is grown, they will release it to commercial brewers. So the tables are flipped - Pro brewers will be reading your reviews and seeing what you thought of the hottest new hop.
What is also cool is that all proceeds from the sales of these hops go to ALS.net and help fund the ALS Therapy Development Institute, the world's largest non-profit biotech focused entirely on ALS Research.
Our take on a Ron Mexico pale includes some acid malt and carapils for body, crystal 60 for color and richness, and Rahr Two-Row for a great malty base.

All three hops are incorporated at each stage of the hopping schedule from the late boil aroma addition, to whirlpool, to dry hopping. With no specialty grains in the malt bill to distract your senses, you'll hone right in on the delicious hop character of citrusy lemon, grapefruit and gooseberry.
This kit recipe was given to us by our friend and former MoreBeer! employee, Wynn Whisenhunt. One of the many MoreBeer! past employees to turn pro, Wynn is now the owner and head brewer of Wondrous Brewing Company. If you want to brew it as they do at Wondrous, Wynn suggests using WLP001 California Ale yeast for fermentation. Ferment until complete at 66°F then dry hop and raise the temp to 68°F for 6 days. D-test then crash! If you're kegging, force carb to 2.6 volumes of CO2.

In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super were excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since it's for the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

Whether you're in constant search of new ways to push the "traditional boundaries" of brewing, or you're just looking for another crushable crowd pleaser to add to your arsenal of recipes, Proper Sake's White Koji Ale is the beer for you. As the name implies, this recipe is crafted around the specialty ingredient of White Koji. Koji is a staple ingredient in the fermentation processes for sake, soy sauce, miso, and more. But White Koji, in particular, is gaining ground as a new brewing ingredient which can impart a beautiful citric acidity in the final beer.
This recipe from Proper Sake Co. results in an incredibly crushable light pale ale with a slight haze in the glass. The malt character will hang in the background as Cascade and Huell Melon support the overall refreshing, citrusy quality enhanced by the White Koji.

Phantasm Powder has been causing quite a stir on the craft beer scene, and the buzz is well deserved. Adding this powder to your wort and fermenting it with a thiolized yeast strain is one of the easiest ways to boost tropical flavor and aroma in your finished beer. Derived from Marlborough Sauvignon Blanc Grapes, this powder will add a concentrated dose of thiol precursors. During fermentation, yeast will go to work on these aroma compounds and "free the thiol", boosting the tropical bouquet of your beer to supernatural levels. We're stoked to get this cutting-edge ingredient into the hands of homebrewers so we designed a series of Phantasm recipe kits that will set you up to take full advantage of brewing with Phantasm Powder.
Our Phantasm Hazy Double IPA includes 10 ounces of aroma hop additions from whirlpool to biotransformation to post fermentation, leaning on some choice New Zealand and American varietals and turns it up a notch with two additions of Cryo Hops® for an extra concentrated kick of hoppy goodness. Since this kit series is all about the thiols, we start with whole cone Mosaic in the mash to further increase the thiol precursors. Add the Phantasm Powder at flameout along with your whirlpool / hop stand additions. For maximum effect, we highly recommend choosing a thiolized yeast strain for fermentation which are specifically designed to boost thiol biotransformation.

In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since it's for the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

Shaun is known for creating beers that are well-balanced while doing some unique things, such as using watermelon juice in a wheat beer, or oyster shells in an oatmeal stout. His Assistant brewer Jesse created this beer, an easy-drinking pale ale with few bittering hops but giant fistfuls of flavor and aroma hops. This beer has low alcohol and a soft malt backbone with an incredible hop finish - your answer to the hop shortage! Jesse and Shaun recommend using WLP001.

Shaun's brewing career started like most in the beer industry - homebrewing. While working at a Southern California law firm, Shaun was spending his time making beers at home. After about 2 years, he not only decided that he wanted to make beer for a living, but that he wanted to open his own place! Our Irish Red Ale recipe is hard to nail down as any specific style—similar to a big Amber Ale, but it's so unusual it does not really fit within any category. Malt character utterly dominates this beer's flavor profile, containing dark Crystal malts, including Special B, and a pinch of Roasted Barley for a deep, red color and a very distinctive caramel flavor. Irish Red Ale has been one of our most popular ingredient kits for many years, and continues to receive a lot of positive feedback from satisfied customers to this day. The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops! The resulting flavor is malty with plenty of hop flavor, courtesy of the copious amounts of Cascade and Willamette hops. One day while on the phone placing an order with us, Frank got tired of having to make these additions to our existing KIT250 so he asked why he couldn’t have his own kit to cut down on confusion. He was absolutely right! So the series was born! We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! Pizza Port in Solana Beach was the first of three brewpubs to open under the Pizza Port name. Brandon Edwards, who used to be an employee of Morebeer, has been brewing in Solana Beach for a number of months, and with Pizza Port for a few years. Brandon made this recipe to celebrate the one year anniversary of the Toronado beer bar opening in San Diego. We recently received "Tart of Darkness" from The Bruery. Nobody here had tried it before, so we opened a bottle to split amongst numerous employees. Within a few sips, the two cases we received had been completely purchased by employees - sorry Concord customers! We instantly got in contact with The Bruery, and being from a homebrewing background, they agreed to work with us on the recipe!

This delicious Pale Ale is based on new experimental hop, HBC438, that has the unofficial name of Ron Mexico due to its native US neomexicanus hop heritage. This hop has enticing aromas of stone and tropical fruit, orange, mint, and herbal characteristics. Vinnie from Russian River Brewing (of Pliny fame) used this hop in an experimental beer brewed for the National Homebrewers Conference and also recently raved about this hop in a talk we attended.
The story of this hop is really unique. Traditionally hop breeders finish the testing of experimental hops internally and then release to the commercial market. Now they are turning the tables and trying something new! HBC 438 is being released EXCLUSIVELY to the Homebrewing community first. Then in the future, as more is grown, they will release it to commercial brewers. So the tables are flipped - Pro brewers will be reading your reviews and seeing what you thought of the hottest new hop.
What is also cool is that all proceeds from the sales of these hops go to ALS.net and help fund the ALS Therapy Development Institute, the world's largest non-profit biotech focused entirely on ALS Research.

The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops! The resulting flavor is malty with plenty of hop flavor, courtesy of the copious amounts of Cascade and Willamette hops. One day while on the phone placing an order with us, Frank got tired of having to make these additions to our existing KIT250 so he asked why he couldn’t have his own kit to cut down on confusion. He was absolutely right! So the series was born! When you are drinking any of the Signature Series recipes, raise your glass and give a virtual cheers to fellow homebrewer Frank Ellis in Missouri for the good idea. Nose Goblin from Ghost Town Brewing in Oakland, CA is their infamous West Coast-style Imperial IPA with big honking notes of white grapes, melons, berries, and uncouth levels of dankness. This dangerously smooth double IPA is all about the hops with very little malt character. Almost exclusively comprised of Pilsner with just a dash if acidulated malt, Nose Goblin is a beautiful clear straw color in the glass. Your nose if free to pick up all of the incredible flavor and aroma contributed from ample whirlpool and dry hop additions.
Ghost Town Brewing's Nose Goblin took Gold at the 2021 Great American Beer Festival, besting 170 other beers submitted in the Imperial IPA category. If you have a monstrous craving for intense hop flavor, you’ll need a beast of equal proportion to do battle. Enter Hop Mothra! This liquid kaiju isn’t interested in saving (or destroying) Tokyo. Her only motive is to slake your thirst and leave you yearning for more – so much so that you’d swim to Infant Island for another taste. With a nice malt backbone (err thorax?) this beast will soar over your tongue and, with a flap of her wings, send a hurricane of hop flavor to assault your taste buds.
Jim Nielsen’s Hop Mothra IPA uses 10 lbs of Ultralight Malt Extract, 1 pound of Light DME, and a trio of crystal malts that give this beer a beautiful pale to medium amber color. Perle, Cascade, and Liberty hops lend a spicy aroma with flavors of grape fruit and citrus.
Jim began home brewing in 1994, but it wasn’t until the Great American Beer Festival of ‘98 that he came across a beer that would alter the course of his hobby. Grant’s Brewing Company made a batch of beer especially for the festival – Hopzilla! If you're hearing ghostly tales whispered around your local homebrew shop, there's no need to pile your brew crew into the hippy van—this one is no mystery. Phantasm Powder has been causing quite a stir on the craft beer scene, and the buzz is well deserved. Adding this powder to your wort and fermenting it with a thiolized yeast strain is one of the easiest ways to boost tropical flavor and aroma in your finished beer. Derived from Marlborough Sauvignon Blanc Grapes, this powder will add a concentrated dose of thiol precursors. During fermentation, yeast will go to work on these aroma compounds and "free the thiol", boosting the tropical bouquet of your beer to supernatural levels. We're stoked to get this cutting-edge ingredient into the hands of homebrewers so we designed a series of Phantasm recipe kits that will set you up to take full advantage of brewing with Phantasm Powder.
Our Phantasm Hazy IPA packs a 10-ounce wallop of New Zealand and Pacific Northwest aroma hop additions. We selected some of our favorite varietals that will provide a juicy, citrusy, tropical punch blast—harmonizing perfectly with Phantasm Powder. Since this kit series is all about the thiols, we start with whole cone Cascade in the mash to further increase the thiol precursors. Add the Phantasm Powder at flameout along with your whirlpool / hop stand additions. For maximum effect, we highly recommend choosing a thiolized yeast strain for fermentation which are specifically designed to boost thiol biotransformation.

Terpene Dream will take you Offworld and back to experience flavors that some people wouldn't believe. Our take on the subgenre of India Pale Ale referred to as Dank IPA, this beer emphasizes the close genetic relation that hops and cannabis share. The hops selected for this beer contribute to an overall "dank" character that is full of pine, earthy, and resinous notes. A delicious bitterness, high alcohol content, and sturdy malt backbone all perfectly balance the assertive hop flavor. Time to brew.

Creek Park from Wondrous Brewing Company in Emeryville, CA is an incredibly refreshing West Coast IPA hopped with Nelson, Citra® and Centennial. All three hops are incorporated at each stage of the hopping schedule from the late boil aroma addition, to whirlpool, to dry hopping. With no specialty grains in the malt bill to distract your senses, you'll hone right in on the delicious hop character of citrusy lemon, grapefruit and gooseberry.
This kit recipe was given to us by our friend and former MoreBeer! employee, Wynn Whisenhunt. One of the many MoreBeer! past employees to turn pro, Wynn is now the owner and head brewer of Wondrous Brewing Company. If you want to brew it as they do at Wondrous, Wynn suggests using WLP001 California Ale yeast for fermentation. Ferment until complete at 66°F then dry hop and raise the temp to 68°F for 6 days. D-test then crash! If you're kegging, force carb to 2.6 volumes of CO2.

Craig has been perfecting his Travelin Man recipe over the years by brewing for competitions and for his own consumption at home. Travelin Man is at the high end of the pale ale guidelines, with a nice balance between the malt and hops. This is a great beer to let cold condition. Cold conditioning brings forward the malt flavors and makes it even easier drinking. Craig created this beer to take the edge off a long day of driving on the southern California freeway system and as his house ale. So whether you have been to the East or just feel like someone has given you the third degree, this fine ale will deliver what you are looking for. Craig recommends using White Labs California Ale Yeast.
