Bourbon Belle takes the beautifully complex flavor of Brunch Stout and adds a charming southern drawl. Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarakably rich flavor profile, and then adds a little giddy-up with an addition of bourbon-soaked oak chips. The oak chips are added to simulate the barrel-aging process used for making Founders Kentucky Breakfast Stout®, or "KBS". You wouldn't expect a foal to win the Triple-Crown, so practice patience when brewing Bourbon Belle. We recommend a conditioning period of 2 to 6 months to allow this beer to fully mature before entering the race.

If you have a monstrous craving for intense hop flavor, you’ll need a beast of equal proportion to do battle. Enter Hop Mothra! This liquid kaiju isn’t interested in saving (or destroying) Tokyo. Her only motive is to slake your thirst and leave you yearning for more – so much so that you’d swim to Infant Island for another taste. With a nice malt backbone (err thorax?) this beast will soar over your tongue and, with a flap of her wings, send a hurricane of hop flavor to assault your taste buds.
Jim Nielsen’s Hop Mothra IPA uses 2-row for the base and a trio of crystal malts that give this beer a beautiful pale to medium amber color. Perle, Cascade, and Liberty hops lend a spicy aroma with flavors of grape fruit and citrus.
Jim began home brewing in 1994, but it wasn’t until the Great American Beer Festival of ‘98 that he came across a beer that would alter the course of his hobby. Grant’s Brewing Company made a batch of beer especially for the festival – Hopzilla! This beer made such an impression on Jim that he decided to take his passion for home brewing to the next level, and he began his search for a brew system that would allow him to do everything the pros can do. We would not have put 3 lbs of honey with 4.5 lbs of malt extract in a pale ale, but Jim had no fear and did just that. The result - a really nice mix of malt and honey flavors. There is enough honey to make it through into the flavor. Just a little Cascade hops in the beginning and finish keep the flavor emphasis on the honey. He suggests WLP002 because it is less attenuative and leaves more malt behind.

Nose Goblin from Ghost Town Brewing in Oakland, CA is their infamous West Coast-style Imperial IPA with big honking notes of white grapes, melons, berries, and uncouth levels of dankness. This dangerously smooth double IPA is all about the hops with very little malt character. Almost exclusively comprised of Pilsner with just a dash if acidulated malt, Nose Goblin is a beautiful clear straw color in the glass. Your nose if free to pick up all of the incredible flavor and aroma contributed from ample whirlpool and dry hop additions.
Ghost Town Brewing's Nose Goblin took Gold at the 2021 Great American Beer Festival, besting 170 other beers submitted in the Imperial IPA category. Although Ghost Town will switch up the hops on every edition of Nose Goblin, this kit is modeled after the same recipe that took 1st at GABF, featuring additions of Nelson, Strata, and Mosaic® CRYO HOPS®.

"Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. Ryan also recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale.
This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends.
Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit).

“When you use a lager yeast to ferment an IPA, you get a cleaner and less ester-driven aroma profile,” said Brewmaster Matt Brynildson. “The colder fermentation also creates a lighter backbone that helps accentuate the bright, tropical hops we’re using. So while Hopnosis offers a lot of things you love in a straight-ahead West Coast IPA, the lager yeast is what pushes it toward the Cold IPA style.”

In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super were excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since this is the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.

Matt Brynildson of Firestone Walker Brewing Co., Paso Robles, California. It seems to some that Matt has almost been bred to brew beer. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Kiwi Kiss is our ode to the many delicious hop varietals that hail from New Zealand. Hops were first planted on the north and south islands by British settlers in the mid-1800s, but it wasn't until the early 21st-century that NZ-grown hops really exploded in popularity. As beer drinkers began flocking to more tropical, citrus-forward interpretations of IPA, brewers began to recognize the potential for the hops exporting from kiwi country. Today, New Zealand hops are widely sought after for their highly aromatic quality and delicious array of fresh flavors. Kiwi Kiss is a clean, lightly-colored, Hazy IPA with a moderate alcohol level. Chux DIPA from Danville Brewing Company in Danville, CA is all about the hops. This celebration of hop flavor is packed with bright, citrusy tropical aromas that jump from the glass! Most of the IBUs come from a "First Wort" addition of Magnum. This process refers to adding hops to your kettle as soon as you begin collecting wort from your completed mash, resulting in a very smooth bitterness up front. From there, healthy aroma additions of Cascade, Citra®, Mosaic®, and Strata are combined for an incredibly expressive Double IPA.

King Ghidora was brewed in collaboration with our Pittsburg, CA neighbors, E.J. Phair Brewing Company. It features a clean grist of 3 unique base malts, with a touch of white wheat for head retention and a dash of acidulated malt to lower pH. With only a quarter ounce of Citra® added late in the boil, this beer shows very little bitterness and lets the flavor and aroma hops do the talking. The first dry hop addition is added to the fermenter before transferring wort from the kettle. Although this isn't a Hazy IPA, the beer will have a slight permanent haze due to biotransformation, which occurs when yeast interact with hop oils during primary fermentation.

A modern twist on an American classic!
California Common is a unique beer style dating back to the days of the California Gold Rush, when brewers on the west coast incorporated caramel malts and additional hop character into their lager beers, helping mask the effects of warmer fermentation owing to a lack of available refrigeration. The resulting beer was a jack-of-all-trades: malty and full-bodied enough for a winter evening, but also hoppy and dry enough for the hottest California afternoon.
Here at MoreBeer! we love the classics, and Cal Common is no exception. But we’re a long way from 1849 and it’s time to give this classic, nearly forgotten beer style a chance to step into the modern age. To do that, we’ve combined the Northern Brewer hops that typify California Common with the Simcoe® hops that are so prevalent in today’s California IPAs, creating our first ever hop blend, “Norcoe.” The resulting beer is still a delicious jack-of-all-trades, but with a hop profile that’s at the same time common, and not Common at all!

Red Ale is technically not a beer style category. Oh, well. It was created (and is continually evolving) in microbreweries throughout the US. The result is a red-colored beer but without the deeper, caramalized flavors. Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.

Do you love huge dark beers, coffee, and a hint of spice? Then we have the totally unique, amazing beer for you. This is a massive Imperial Porter that starts with 15 lbs of base malt and a laundry list of specialty malts. This recipe hails from the Project Extreme Brewing book. It was originally created by Dogfish Head coworkers where it won an internal small batch brewing competition on the basis of its amazing, unique flavors. Big and black with caramel, wheat, black, and chocolate malts to give it a dark, roasty flavor. You provide the Sanka instant coffee, cinnamon, and nutmeg. Named after the coffee drinking, pioneer science teach Mr. Hector Vargus from the 80's movie Fast Times at Ridgemont High. This is one of those rare beers that can age gracefully for years.

Craig has been perfecting his Travelin Man recipe over the years by brewing for competitions and for his own consumption at home. Travelin Man is at the high end of the pale ale guidelines, with a nice balance between the malt and hops. This is a great beer to let cold condition. Cold conditioning brings forward the malt flavors and makes it even easier drinking. Craig created this beer to take the edge off a long day of driving on the southern California freeway system and as his house ale. So whether you have been to the East or just feel like someone has given you the third degree, this fine ale will deliver what you are looking for.
