Lightly colored ale with some sweetness from the honey
Our Gluten Free recipes use Sorghum extract for the base fermentables
Includes Kent Goldings and Northern Brewer hops
Estimated ABV: 5.6%
Estimated IBUs: 15-18
Makes 5 gallons of finished beer
This ale recipe features the use of clover honey, dried rice extract and sorghum. Try adding some dark candi syrup to give it some color.
Gluten-Free beers are a different world when it comes to finding a suitable replacement for the base extract. Celiacs are allergic to the hordein protein found in the base malts such as 2-Row and Pilsner malt.
They are also allergic to the gliadin protein found in wheat which is the biggest offender of the two proteins. As a homebrewer your goal is to find a suitable fermentable that can emulate the maltiness in beer.
Our Gluten Free recipes use Sorghum extract for the base fermentables. Hops aggressively cut through the maltiness from sorghum easily. Hop additions in gluten free beers tend to be 40-50% less than normal.
All our gluten-free kits include dry yeast due to the small traces of the gliadin protein found in liquid yeast. (Although lab research has found the yeast metabolize the gliadin protein after fermentation and significantly reduce the ppm present.)

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

A classic lambic that is as mild or as wild as you make it. Requires a two-step fermentation process

Brewed for the first time in 2010 in our parking lot at the annual July 15th Showroom Sale, we decided to experiment with another sour. This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it!
This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own!
Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience. Use excellent sanitary methods when working with our wild lil buddy’s to ensure a clean brewhouse. Try adding any local fruit as a food source for the bugs and wild yeasts. They love it! Patience!

Rodger Davis former brewer of Drakes Brewing Co., San Leandro, California.
Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Siebel, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. Their attention to detail and their commitment to making great beer is evident in each batch that rolls out of the brewery. Definitely another 'must' for any beer fan visiting the Bay Area. Until then, find out more about Drake's at www.drinkdrakes.com.
One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

Inspired by Founders Kentucky Breakfast Stout®, this kit combines our All Out Brunch Stout recipe with an addition of bourbon-soaked oak chips
Includes Nugget and Willamette hops
Estimated ABV: 7.5%
Estimated IBUs: 60

Bourbon Belle takes the beautifully complex flavor of Brunch Stout and adds a charming southern drawl. Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarakably rich flavor profile, and then adds a little giddy-up with an addition of bourbon-soaked oak chips. The oak chips are added to simulate the barrel-aging process used for making Founders Kentucky Breakfast Stout®, or "KBS". You wouldn't expect a foal to win the Triple-Crown, so practice patience when brewing Bourbon Belle. We recommend a conditioning period of 2 to 6 months to allow this beer to fully mature before entering the race.

If you're hearing ghostly tales whispered around your local homebrew shop, there's no need to pile your brew crew into the hippy van—this one is no mystery. Phantasm Powder has been causing quite a stir on the craft beer scene, and the buzz is well deserved. Adding this powder to your wort and fermenting it with a thiolized yeast strain is one of the easiest ways to boost tropical flavor and aroma in your finished beer. Derived from Marlborough Sauvignon Blanc Grapes, this powder will add a concentrated dose of thiol precursors. During fermentation, yeast will go to work on these aroma compounds and "free the thiol", boosting the tropical bouquet of your beer to supernatural levels. We're stoked to get this cutting-edge ingredient into the hands of homebrewers so we designed a series of Phantasm recipe kits that will set you up to take full advantage of brewing with Phantasm Powder.
Our Phantasm Hazy Pale Ale features a 50/50 split of New Zealand and Pacific Northwest aroma hop additions that lean into a tropical, citrusy character that will pair perfectly with Phantasm Powder. Since this kit series is all about the thiols, we start with whole cone Cascade in the mash to further increase the thiol precursors. Add the Phantasm Powder at flameout along with your whirlpool / hop stand additions. For maximum effect, we highly recommend choosing a thiolized yeast strain for fermentation which are specifically designed to boost thiol biotransformation.

Our Oatmeal Stout is loaded to the brim with malt! A helping of Flaked Oats give this brew a smooth, almost slick, mouthfeel, while three different dark malts—Chocolate, Black Patent, and Roasted Barlery—combine for a very complex roast flavor. A lower bittering rate from a moddest hop addition allows the flavor emphasis to rest squarely on the synergy of maltiness, dark roasted malts, and oat flavor. Belgian Ale will give you a full roundup of phenolic, fruity, clove, plum, and banana flavors
Includes Perle and Saaz hops
Estimated ABV: 5%
Estimated IBUs: 32
Makes 5 gallons of finished beer
Belgian ales are really about creating a simple yet elegant malt base upon which the unique Belgian yeast strains can create their wonderful, complex flavors. This Belgian Ale is their equivalent of our pale ale in alcoholic strength and body. The difference is that the hops are very subdued and only complimentary where as in many American beers hops can create a majority of the flavor profile. One is not better than the other just different, and we love diversity in beer.
Terms used to describe Belgian Ales include phenolic, fruity, with the occasional clove, plum, and banana flavors coming through. Sometimes you just have to try one to understand. In the Dubble and Triple you will have some higher alcohol flavors coming through. This version is less alcoholic and highly drinkable.
Any of the four Belgian yeast strains that we carry from Whitelabs could be used in any of the Belgian recipes. They are all excellent in their own right. The malt extract for this kit is made entirely from our German Pilsner Malt, giving it authentic European flavor. We use turbinado sugar to help up the alcohol and dry out the beer during fermentation.
The extract version of this kit does NOT include grains. Most of the flavor from this beer is derived from the yeast and fermentation.

This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005.
Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back. You may now know Ray as the founder of the highly successful Cicerone Program which certifies and educates beer professionals.

This is our normal Ugly Fish IPA that you know and love but with grapefruit flavoring included. Add the flavoring just prior to bottling or kegging and you'll have a great fruity IPA to enjoy.
Contrary to its name, Ugly Fish IPA is actually one of the most beautiful beers we have to offer! Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.
If you're looking to treat your taste buds to a beer that we think has been hopped perfectly, we highly recommend the Ugly Fish IPA!

A smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops

Maybe you have heard of John Palmer? His best selling "How to Brew" is the default homebrewing text. John gave us this recipe early on and it has always been a special recipe. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." This beer will not disappoint! Thanks, John, for the kit, the book, and the advice! John recommends White Labs WLP833 for a dried beer, and WLP820 for a maltier version.

Whenever a hip new hop hits the scene, we're as excited to brew with it as you are! This allows you to really zero in on the different flavors and aromas of one particular hop, and it's how we recommend experiencing a new hop you haven't brewed with before. We'll continue to expand our Heavenly Haze series to include newly released hops that are perfect for NEIPAs, as well as circle back to include some of our favorite hazy hops that have long been available. The kiwis keep it coming with yet another hop varietal that's bursting with character. Riwaka™ varietal 85-6-23 was originally bred by New Zealand Hops by crossing Saaz with specially developed breeding selections. The result was a highly aromatic hop with almost double the oil content of its parent Saaz. Realesed in 1997, this was once an exceedingly difficult hop to get your hands on outside of New Zealand, as it was quickly bought up by the native brewers. With an almost 1:1 alpha to beta acids ratio, this rockstar aroma hop gives off strong notes of citrusy grapefruit and kumquat. Perfect for new world pale ales, IPAs, hoppy lagers, and any beer you want a bold fruity hop character to shine. Because JP tends to get really good boilovers when he brews he usually makes high gravity beers whether he intends to or not. It may have something to do with consumption while brewing, not that any of us know anything about that. The result is always a starting gravity that is higher than anticipated. We put the beer on tap in the shop and it got rave reviews. It was both outstanding and unique. Sometimes things do happen for a reason! The beer can easily be described as a Porter on steroids.

Spicy flavor and firm bitterness supported by a velvety-smooth body
Includes Magnum and Columbus hops
Estimated ABV: 6.6%
Estimated IBUs: 40-44
Makes 5 gallons of finished beer
You've never had this beer before, and, until very recently, neither had we. Imagine: a sexy, red color, spicy flavor, velvety-smooth body, terrific head, plus an aroma you could eat, all wrapped up with a firm bitterness. How did we do it? The creative shotgun approach! Continually throw enough stuff into the mix and, eventually, you score a win like this one. We started with a basic recipe similar to our famous Irish Red, but added Rye as well. A brash move? You bet! But we didn't stop there. We've added Magnum and Columbus hops everywhere, including into the carboy for dry hopping. If you want to go for a Home Run, add 1oz of the included French Oak chips after the first week of fermentation.

Only a hoser would pass up the chance to brew a stout influenced by the Great White North. Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarkably rich flavor profile, and then takes it to new vistas with an addition of maple syrup and Canadian whiskey-soaked oak chips. The maple syrup and oak chips are added to simulate the barrel-aging process used for making Founders Canadian Breakfast Stout®, or "CBS". The result is a deeply complex stout that would have Bob and Doug McKenzie swearing off Elsinore beer after one sip. Not to cause a kerfuffle, but patience is key when brewing Sorry Aboot Brunch Stout. We recommend conditioning the beer for 2 to 6 months after the oak chips are added. Best enjoyed in your favorite tuque with a box of Timbits.
Please note: this recipe calls for 2 oz of Kona and Sumatra coffee grounds, 16 oz of Maple Syrup, and 1 cup of Canadian Whiskey, which are not included in the kit.

Gary Glass started homebrewing in 1992, shortly after tasting his first homebrew while attending while attending college at Cal Poly, San Luis Obispo. Gary brews on a home-built HERMS system, and he?s never brewed the same recipe twice and can't brew any recipe without some kind of tweaking. Gary is a BJCP judge who has judge in many competitions including the World Beer Cup and the Great American Beer Festival.
Gary holds a Masters Degree in American Diplomacy from the University of Colorado at Boulder. When not homebrewing, he enjoys fly fishing, hiking, and backpacking in the Rocky Mountains. He's also into gardening (his Cascades finally produced a good crop this year!), home improvement projects, and building furniture.
Gary lives in Longmont, Colorado with his wife Erin, who fully supports his brewing habit, bought him a conical fermenter and is encouraging him to install taps in their family room. He knows you are jealous. Gary is looking forward to teaching his daughter, who is due in November, to brew someday.
Gary enlightens us on how to authentically brew his beer: "This recipe can be brewed as either a Maibock or a Belgian strong ale. The beer was originally brewed as a 10.5 gallon batch split into two carboys with yeast slurry from previously brewed pilsner. To accurately recreate the Belgian strong ale, one should accidentally pour hot wort (due to user error with a counter-flow chiller) onto lager yeast slurry, being sure to thoroughly cook the yeast. Chill, then pitch a vial of Belgian ale yeast. The Maibock came out great, the Belgian strong even better. Of course, if you don't feel like attempting to cook yeast to make this beer, a nice big starter of Belgian ale yeast should do the trick." Sounds great to us!

A modern twist on an American classic!
California Common is a unique beer style dating back to the days of the California Gold Rush, when brewers on the west coast incorporated caramel malts and additional hop character into their lager beers, helping mask the effects of warmer fermentation owing to a lack of available refrigeration. The resulting beer was a jack-of-all-trades: malty and full-bodied enough for a winter evening, but also hoppy and dry enough for the hottest California afternoon.
Here at MoreBeer! we love the classics, and Cal Common is no exception. But we’re a long way from 1849 and it’s time to give this classic, nearly forgotten beer style a chance to step into the modern age. To do that, we’ve combined the Northern Brewer hops that typify California Common with the Simcoe® hops that are so prevalent in today’s California IPAs, creating our first ever hop blend, “Norcoe.” The resulting beer is still a delicious jack-of-all-trades, but with a hop profile that’s at the same time common, and not Common at all!

This incredibly unique recipe leans on a smoky quality that was once a staple of old-world English porters

Ray has been a long time friend of MoreBeer! and is currently running the Beer Cicerone program.

A twist on our standard English Pale Ale, this recipe calls for Munich and Carapils malts for added roundness and body
Includes Magnum and Northern Brewer hops
Estimated ABV: 5.1%
Estimated IBUs: 55-59

A very well balanced Pale Ale. You can taste the malt and the hops without being overpowered by the bitterness. We use Crisp Maris Otter malt for a drier finishing Pale Ale. We differ from the standard British Pale Ale recipes by throwing in a 1/2 of Munich for a little roundness of flavor and 1/2 pound of Carapils for added body. The crystal malt used is British Carastan. Northern Brewer hops are really mellow and not at the front of the flavor profile.

This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Firestone Walker Brewing Company Light in body and color, but strong in hop flavor and aroma Includes Fuggles, Chinook, Cascade, and Centennial hops Estimated ABV: 4.5% Estimated IBUs: 13 Makes 5 gallons of finished beer Fact: Firestone Walker has been named "Mid-Size Brewery of the Year" four times. Another fact: Pale 31 has won 10 Gold Medals since 2003 (yeah, that's one a year!). The Pale 31 California Pale Ale is what some refer to as "The Perfect American Pale Ale". Light in body and color, but strong in hop flavor and aroma, this is one of those beers that most beer lovers will always want on tap. After having one, you'll most likely want another, and being under 5% ABV makes this a little more possible! The recipe consists of American 2-Row, Munich malt, and Carapils for added mouthfeel. The hops are a perfect blend of Fuggles, Chinook, Cascade and Centennial. Firestone Walker's head brewer Matt Brynildson had worked on his Pale Ale recipe for a long time before being perfectly satisfied. We know that once you taste this beer, you'll agree with us that his hard work has definitely paid off! Don't forget to purchase The Brewing Network's "The Perfect American Pale Ale" DVD too! Matt Brynildson discusses water modification, recipe formulation, and techniques on how to brew Pale 31! To read more, See related product. Deep red in color with a nice malt structure and distinct sour overtones. Requires a two-step fermentation process

Our Flander's Red recipe creates a beer that is deep red in color with a nice malt structure, this beer is based on those from certain regions of Belgium, and have distinct sour overtones to them. This is due to the wild spores that inhabit the air - and some breweries - of the area. While this would normally be a "bad" thing, the infection lends special tart and sour qualities unlike any other beer can. For a more traditional spin on this kit, try aging it on some oak cubes!
We recommend fermenting this beer with WLP001 California Ale for two weeks. Then add Wyeast 3763 Roeselare Belgian Sour Blend in the secondary fermenter bucket. This kit does require some special instructions, as it is a special beer. Once the gravity hits 1.015 - 1.020, rack the beer into a plastic bucket and pitch the sour blend tube. Age the beer at 65F-70F for 6 months, until the white cap that will form drops. The reason for the plastic bucket aging is so that tiny amounts of oxygen are allowed to be taken in by the plastic and come in contact with the beer. This micro-oxidation adds to the over all flavor of the beer itself.
Reminder: you will need to keep the equipment used to handle the beer after the sour blend is introduced separated from the rest of your brewing equipment, or clean and sanitize very well after use.

You now know JP as a host on the Brewing Network, but before the Brewing Network JP was an original employee at MoreBeer! where his first job was cleaning up an infamous and massive malt extract spill Olin caused while taking and filling orders at the same time. This kit has a lot of grain in it, so you may find two grain bags useful.

Rodger Davis former brewer of Drakes Brewing Co., San Leandro, California.
Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Sieble, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002.

Patience!
