All Grain Brewing Instructions

Welcome to the next level of brewing! All-Grain brewing is a lot of fun, and the quality of your beer is going to increase significantly. All-Grain brewing can be very complex, but don’t be afraid, that's what makes it an art form! We are going to make it easy for you, and all you need is a larger grain bag!

This instruction guide is intended to give you the basic principles of All-Grain brewing. We will touch on many high-levelsubjects and also try to make this guide relevant to as many brewing styles as possible.

These instructions are geared for a brew-in-a-bag (BIAB) or three-vessel single-infusion mash setup, but can easily be modified for any system or size. This will also be perfect for any all-in-one brewing setup or single-vessel system.

The two methods noted here are actually very similar in theory and you can achieve similar results in the end. In a single-vessel system or BIAB setup, everything is done in one kettle, which serves as both your mash tun and boil kettle. In a three-vessel system, you’ll use a boil kettle, mash tun, and hot liquor tank to do specific steps to create your wort.

Overview Of All-Grain Brewing:

  • Clean and set up all-grain system

  • Create recipe

  • Calculate mash water/start water

  • Heat/treat water for mash (152–154°F + __°F for temp drop)

  • Stir in grains for 3 minutes

  • Mash for 60 minutes

  • Collect 1–2 gallons more than final volume of wort

  • Proceed as you would in an extract batch

NECESSARY EQUIPMENT:

  • BOIL KETTLE: 8-gallon or larger kettle.

  • LARGE GRAIN BAG: To hold between 8–16 pounds of grain depending on the recipe.

  • HOT LIQUOR TANK: Vessel that can hold hot water to sparge with. A cooler or a second large kettle is a perfect example of a Hot Liquor Tank.

OPTIONAL EQUIPMENT:

THREE-VESSEL SYSTEM: One of the most common setups is a three-vessel system to fly or batch sparge. Ideally, these vessels would be on a stand, but you can use gravity or other ways of making the three kettles work in unison. Requires the following equipment:

  1. BOIL KETTLE capable of collecting 2–3 gallons more than the intended final volume.

  2. MASH TUN WITH FALSE BOTTOM vessel at least as big as the intended final volume. Equipped with a sparge arm or ring for rinsing the grain.

  3. MASH PADDLE or large spoon for stirring.

  4. HOT LIQUOR TANK vessel that can hold hot water to sparge with.

  5. HIGH TEMPERATURE PUMP(S) this is essential if your three vessels aren’t arranged to use gravity to transfer from vessel to vessel. A pump will also improve the recirculating/vorlaufing process, which leads to better clarity in the mash and boil kettle.

PH TESTING: The Mash pH is critical for good conversion and overall sugar extraction, which leads to hitting your target gravity. Ideally you would use a water test kit to make sure you have the ideal water profile, then use salts and acids to adjust from there if necessary. But using a pH mash stabilizer will also work to get you near the median pH of 5.2.

BREWING SOFTWARE: We highly recommend using a brewing software, which will help plan your brew day and make it easier to repeat those great recipes. If not using a software, take good notes throughout the process so you can adjust your methods on your next brew day if necessary.

MASH WATER CALCULATION:

If you are brewing with a single vessel or using the Brew-In-A-Bag method, then you will want to calculate the amount of water that you are going to start with. This will represent your mash water. Here is a calculation for achieving this:

“Grain Absorption” + “Finished Batch Size” + “Boil Off Rate”
(60 min boil) + “Trub Loss” = Start Water

For Grain Absorption, we have assumed 0.12 gallons of absorption per pound of grain. Finished batch size is what you want in the fermenter, so usually you’ll aim for around 5.25 to 5.5 gallons to yield 5 gallons of finished beer. The Boil Off Rate will vary by kettle size and altitude, but assume a bare minimum of 0.5 gallons. Finally, Trub Loss is the volume lost or left behind in the boil kettle and will be greater with the amount of hops used. (If doing BIAB skip to “Add Filtered Water:”)

If you are brewing with three vessels, then you will want to calculate the amount of water needed for the mash tun. From your recipe, add up the total pounds of grain to be used. Make sure to include everything under the “All-Grain” column and everything under the “Specialty Malts” column to get your total number. From this number we can figure out how much water we need to start with. As a basic rule of thumb, we recommend 1.1 quarts of water per pound of malt. When doing this calculation please be aware of how much “dead space” you have under the false bottom and add that volume of water to the number that you calculate below.

Calculate mash water: ____lbs x 1.1 qts = __ /4 = ___Gallons

ADD FILTERED WATER:

If you are using a designated mash tun, make sure you have your false bottom in the bottom of the kettle. Fill your Mash Tun with the amount of calculated mash water or start water. Important Note: Water is one of the most critical ingredients to an award-winning beer. Using RO water to start with a clean slate and building the correct water profile is ideal. If you are using tap water, we recommend using a water test kit to identify your existing water profile and then use brewing salts and acids to make adjustments as needed. At a bare minimum, use a carbon activated filter to remove chlorine or Chloramines from your tap water. Carbon filtering also has the advantage of removing any bad flavor that is organic in nature. Lastly be aware of your mash pH if you are having issues with conversion.

MASH TEMPERATURE:

Mash Temperature plays a very important role in the flavor of the final beer. Most recipes will have you hold the mash at a temperature between 148°F and 158°F for 60 minutes which is sufficient for activating the naturally occurring enzymes in the grains to convert starches into sugars. Certain recipes will have you stray from this range and timeline but those are the outliers. Within that range, the low end (148–152° F) will produce an overall dryer beer, while the high end (154–158° F) will produce a beer with a maltier flavor. The middle range of 151–154° F is a great compromise for most beers. When adding the grain to the water, plan for temperature drops of 9–15° F since the grain is sitting at room temperature.

MASHING:

  • The first step is to calculate the strike water temperature so that you achieve the correct mash temperature after your grains have been added to the water.

  • For BIAB, you only typically lose around 4–6°F. Single-vessel systems are similar in temperature loss.

  • For a designated mash tun, you want to figure on a drop of 10°F if you are in a warm environment, and 15°F if you are in a cold environment.

  • So, first decide on your desired mash temperature according to the section above and then add the expected temperature loss on top based on your brewing method and environment to calculate your strike temperature.

  • Heat the water up to the strike temperature that you calculated.

  • If you are doing the BIAB method then ideally you will want to carefully put your grain bag in the kettle and attach it to the sides of the kettle. For a single vessel system, put your grain in your mash basket.

  • Once you have reached the strike temperature, steadily add the grain to the water while stirring, making sure to break up any clumps (aka “dough balls”) . Always add grain to water, not water to grain.

Important Note: Make sure all of the grain stays inside the grain bag if you are doing the BIAB method. You will want to tie off the sides of the bag or just be very careful.

  • Continue stirring for a few minutes after the grain has been added to make sure that the entire mash is a consistent temperature and that all dough balls have been eliminated. In most scenarios, letting the mash sit for 60 minutes at 148– 160° will result in full enzymatic conversion of the starches to sugars.

  • Make sure the lid is placed on the mash to retain heat. If you are brewing in a very cold environment, you might consider insulating the mash vessel, but in most situations, the large thermal mass of the mash will hold the temperature just fine. If you should miss your target temperature, it is easiest to add hot water or cold water to move it a few degrees up or down. Important Note: We do not recommend adding flame under the vessel, as it is very easy to scorch the grains, causing off flavors.
RECIRCULATION (Optional, not for BIAB):

A little step in-between mashing and sparging that helps clear up the runoff from the mash.
  • Recirculate by removing wort from the spigot below the false bottom, and adding it back to the top of the grain bed. A pitcher works great for this purpose. Do this until the runoff is nearly free of visible debris, then you can start the sparge.

The Sparge

Regardless of the system you are using, the goal is the same. You are trying to collect as much of the wort or sugar water that you just created as possible without having any grain left. You will always leave a little sugar water inside the grain when trying to take it out but the secret is to take your time.

IF USING A BIAB SETUP:

Important Note: Please be sure to use thick rubber gloves as the grain and runnings are extremely hot.

  • Remove the bag of spent grain from the kettle. To make sure you extract as much sugar as possible, you can hold the bag over the kettle and let it drain. A pulley system is great for this step, or you can simply set the bag on a mash paddle over the kettle. For all single-vessel systems your goal is to extract as much sugar as possible while collecting enough volume. Just be careful.
IF USING A THREE–VESSEL SYSTEM:
  • Calculating Sparge Water: An easy way to calculate sparge water is to plan on using 1⁄2 gallon for every pound of grain used in the mash. This simplified calculation ensures you have more sparge water than you will actually need.

SPARGE:

Temperature plays a key role in sparging; it is best to be as closeto 170°F without going over. At this temperature, you will dissolve the sugars without leaching tannins from the grain husk.
  • To begin the sparging process, open the Hot Liquor tank valveand allow the water to flow onto the grain bed. A simple hose will work for this process; however, a stationary sparge arm is a time saving addition.

  • Connect a piece of tubing onto the ball valve on the Mash Tun and allow it to run into the boil kettle.

  • Open the valve on the bottom of the Mash Tun, allowing the hot sparge water to flow through the mash. Try to get the same flow of water coming into the Mash Tun as wort flowing out of the Mash Tun and into the boil kettle. Keep at least a two-inch layer of water on top of the grain bed to keep incoming sparge water from channeling through the grain bed.

  • We recommend a slow sparge, usually taking 45–60 minutes to ensure that there is plenty of time for the sugars to rinse out.

THE BOIL:

  • Sparge until you have collected 1–2 gallons of wort over thefinal amount you want (depends upon your batch size and boiloff rate).

  • Bring the collected wort to an even, rolling boil.

  • Be careful not to “overboil”. Monitor your boiling wort and reduce the heat to prevent it from boiling over and creating a mess. Foam reducers are available to prevent overboil in the kettle.

  • You typically boil for 60 or 90 minutes, adding hops and other ingredients as the recipe calls for.
    • Recipes are listed as time elapses, so a hop listed as “60 mins” would be added at the beginning of the boil and a hop listed as “5 mins” would be added 5 minutes before the boil ends, which would be 55 minutes into a 60-minute boil.

  • Near the end of the boil make sure to add yeast nutrient and clarifier.

  • We recommend that you whirlpool near the end of the boil if you can. This means bare minimum using your spoon to carefully stir the wort to cone your hops in the center of the kettle.

Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Packed with hops in the kettle and finished with fresh oranges in the fermenter, this IPA is primed to explode in your mouth Includes Columbus, Simcoe®, and Centennial hops Estimated ABV: 6.5% Estimated IBUs: 75-80 Makes 5 gallons of finished beer Remember your parents scaring you with "Be careful of firecrackers, they can explode in your hand!"  Well let us warn you right now... our new, juicy M-80 IPA is going to explode in your mouth. It's going to be crazy. Flavors going everywhere. Maybe your parents would tell you to use caution and not to make this beer. But you're grown up now, making adult decisions (most of the time), and we think you've earned the right to buy a beer kit with a fuse and a lighter. With a slight smile and a wink of the eye, we say "go ahead... have some fun". Let us tell you about the inner workings of this bomb. Sure it has big IPA malt, but you want to know about the hops. It starts with an unreasonable amount of Simcoe®, Columbus, and Centennial hops. By themselves these are all explosive hops, but together they combine to bring true, huge IPA hop flavor.  Because of the similarity of hops, one MoreBeer! staffer dubbed it a mini "Pliny The Elder... but with orange". High praise indeed. Did you just say Orange? Well done sir, good paying attention. What really sets this IPA apart from the masses is that the recipe calls for you to cut up and add three fresh oranges into the fermenter. Crazy? We thought so. But that is what we love about our Signature Series of Beer Kits, a selection of crazy, unique beers that really stand out. M-80 IPA was designed and created by your fellow homebrewer, Carlos Musquez. We do admit he went a little AWOL on this kit and into uncharted territory, but we love a rebel. You will need to supply the three fresh oranges... we'd ship them to you, but they would get a little squishy. A truly sessionable IPA overflowing with hop character Includes Warrior®, Centennial, and Simcoe® hops Estimated ABV: 5% Estimated IBUs: 58-62 Makes 5 gallons of finished beer If you're looking for a new session IPA to obsess over, look no further!  We recently changed this recipe slightly, making all finishing hops Centennial (rather than a blend between Centennial and HBC-342).  We made sure to keep the Simcoe® dry hop though, as we felt this really brought a "pop" to the aroma!   While the general rule of thumb has been "one or two IPAs and you're feeling it", at just under 5%, we like to think of this beer as a hop lovers dream.  The type of IPA that you can open up at noon, get the grill going, and forget worrying about how you're going to feel after drinking 8% IPAs for a few hours!  (Yes, we know that feeling too...) A half pound of corn sugar helps this one finish out nice and dry, while a small amount of acidulated malt will help make those hops pop. Stone Brewing 12th Anniversary Bitter Chocolate Stout | 5 Gallon Beer Recipe Kit | All-Grain

    17 reviews

This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Stone Brewing Company A huge oatmeal stout that draws bitterness from cacao nibs added to the kettle in addition to hops Includes a single addition of Willamette hops Estimated ABV: 9.4% Estimated IBUs: 45-48 Makes 5 gallons of finished beer Founded in 1996, Stone Brewing Co. has unleashed a demand for over-the-top beers. Their flagship, Arrogant Bastard Ale, challenged us to pick up a bottle and drink it, kicking off a cult-like following of the beer and the brewery. For their 12th Anniversary, Head Brewer Mitch Steele and the Stone Brew Crew worked with homebrew recipes from Brewhouse Supervisor Jeremy Moynier and Distribution Supervisor Jake Ratzke to create this huge oatmeal stout, but instead of relying on just hops for the bitterness he added some cacao to the boil kettle. The result is simply amazing! We first had this beer at the shop and thought, "We have to have this recipe"! Mitch and Greg must have felt the same way about this beer that we did and handed it over. Stone Brewing Co. is located in Escondido, Ca, so next time you are in Southern California, make it a point to stop by. They have a fantastic restaurant as well, using locally-grown food and a focus on quality. Learn more at www.stonebrew.com Like we said, this beer is huge - with over 21 pounds of grains in it, there is only one question we have for you ... is your mash tun worthy? It seems to some that Matt has almost been bred to brew beer. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Since then, Firestone Walker has been gaining a large following in California due in part to it's flagship beer, Double Barrel Ale, which is produced in a Burton Union system that has the beer fermenting in barrels. Firestone Walker Brewing Company is the only brewery in the U.S. to ferment in barrels and one of only two in the world. In addition to the line-up at Firestone Walker, Matt also brews the Nectar Ales line of beers, as well as a few of the Trader Joe's house brands. Learn more at www.firestonebeer.com Don't let the name fool you, this beer is easy on the oak, having been created so that all ingredients blend perfectly with one another, even the oak. In fact, the oak really takes a back seat to the wonderful malt characteristics that this beer presents, which may be hard to imagine once you realize there are 2 ounces of oak in this one! A blend of American and English base malts provide the foundation for this beer. A little Munich, some crystal, and that's it - simple, yet flavorful. Just how we like it. One can easily spend all night drinking this smooth amber ale ... in fact, many of us at MoreBeer! have done just that! Left Coast Pale Ale by Phil Montalbano | 5 Gallon Beer Recipe Kit | All-Grain

    1 review

Our Signature Series kits offer a selection of crazy, unique beers developed by MoreBeer! customers, associates, and homebrewing legends! Enjoy the citrus/orange hop character Amarillo® hops impart on to this thirst-quenching Pale Ale Includes 100% Amarillo® hops Estimated ABV: 5.3% Estimated IBUs: 50-55 Makes 5 gallons of finished beer Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale. This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends. Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit). Makes 5 gallons Estimated Original Gravity: 1.050-55 SRM (Color Range): 12 IBUs: 50-55 Estimated Alcohol Percentage: 5.0-5.5%   Our recipe kits DO NOT include grain bags, yeast or priming sugar. • Kit (All Grain) - American Honey Pale Ale - PLACEHOLDER Kit (All Grain) - American Honey Pale Ale - PLACEHOLDER

American Honey Pale Ale | 5 Gallon Beer Recipe Kit | All-Grain

    4 reviews

This ale will deliver a smooth blend of Cascade floral character and biterness, tempered by a slight sweetness from the honey Includes 100% Cascade hops Estimated ABV: 6% Estimated IBUs: 40 Makes 5 gallons of finished beer In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super were excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the Commander In Chief of America and his White House Brewmasters should be using fresh ingredients from well...America. Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since its for the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here. So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style. This American Honey Pale Ale uses all American ingredients, including: White Wheat, Crystal 15L, and 2-Row grown in the USA Cascade hops California Wildflower Honey Truly a classic American Pale Ale recipe!  This ale will deliver a smooth blend of Cascade floral character and biterness, tempered by a slight sweetness from the honey.  The California Wildflower Honey delivers just enough residual sweetness to result in an amazingly balanced, hoppily delicious pale ale. This red-colored beer is similar to an Amber Ale but without the deeper, caramalized flavors Includes Perle, Mt. Hood, and Cascade hops Estimated ABV: 4.5% Estimated IBUs: 35-45 Makes 5 gallons of finished beer There really is no "Red" style historically, though it has been sort of created in microbreweries around the US. Sour Belgian Blonde | 5 Gallon Beer Recipe Kit | All-Grain

A classic lambic that is as mild or as wild as you make it. Requires a two-step fermentation process  Includes Hallertau hops Estimated ABV: 6.5% Estimated IBUs: 7-10 Makes 5 gallons of finished beer Brewed for the first time in 2010 in our parking lot at the annual July 15th Showroom Sale, we decided to experiment with another sour. This Belgian Style Blonde, destined for a Brettanomyces fermentation was born! On a whim, the boys decided to have fun with it and add 1lb of California Golden Raisins per 5 gallons with the second dose of Brettanomyces. The sugars in the raisins ferment out completely and seem to be an excellent source of food for our ‘lil wild buddy's. The end result: A classic lambic that is as mild or as wild as you make it! This is a great base recipe for a Belgian Style Blonde Ale. Great body and mouthfeel balanced with a funky delicious sour edge. So have fun with this Lambic Recipe and make it your own! Tip: Patience, patience, patience. If brewing All-Grain, try mashing higher for some added body. (We recommend 156F.) Brettanomyces loves oxygen just as much, or maybe more than Saccharomyces spread the love! Use restraint with these critters, don’t add the whole kitchen sink. Experiment with one to two cultures per batch, at intervals, and preferably with a small amount of a new food source. Patience. CA Golden Raisins are an excellent food source! (ahem, hint hint!) Don’t disturb the fermentation vessel while the pellicle is formed. The pellicle provides protection from excessive oxidation over the long aging time. Patience. Use excellent sanitary methods when working with our wild lil buddy’s to ensure a clean brewhouse. Try adding any local fruit as a food source for the bugs and wild yeasts. They love it! Patience! Makes 5 gallons Estimated Original Gravity: 1.060-65 SRM (Color Range): 4-6 IBUs: 7-10 Estimated Alcohol Percentage: 6.5% Please Note: Kit does not include raisins. After taking the American Brewers Guild program, he realized brewing was what he wanted to do, and left NorCal to head down south and open up Skyscraper. Phil says, "I started out, like everyone, as a homebrewer. Living in Salt Lake City in 1999, I got sick of paying $13 for a six pack of Sam Adams, and some homebrewer friends got me started with my first batch, a hybrid Bohemian Pilsner that was fantastic! When I got sick of my job writing software, I attended the American Brewers Guild program, worked for BJ's for a year, and then struck out on my own." Most of you have probably already seen the brewery in a certain cellular phone ad, where two guys are trying to sell beer - the guy on the forklift was Phil himself! His Bulldozer Hefe is Phil's flagship beer, and he was kind enough to let us in on the recipe. Next time you are in Southern California, be sure to put Skyscraper on your list of must-visits! Sorry Aboot Brunch Stout | Founders Canadian Breakfast Stout® Clone | 5 Gallon Beer Recipe Kit | All-Grain

    1 review

Inspired by Founders Canadian Breakfast Stout®, this kit combines our All Out Brunch Stout recipe with an addition of maple syrup and Canadian whiskey-soaked oak chips Includes Nugget and Willamette hops Estimated ABV: 7.5% Estimated IBUs: 60 Makes 5 gallons of finished beer Only a hoser would pass up the chance to brew a stout influenced by the Great White North. Similar to "All Out", this recipe combines a variety of dark malts, cacao nibs, and ground coffee for a remarkably rich flavor profile, and then takes it to new vistas with an addition of maple syrup and Canadian whiskey-soaked oak chips. The maple syrup and oak chips are added to simulate the barrel-aging process used for making Founders Canadian Breakfast Stout®, or "CBS". The result is a deeply complex stout that would have Bob and Doug McKenzie swearing off Elsinore beer after one sip. Not to cause a kerfuffle, but patience is key when brewing Sorry Aboot Brunch Stout. We recommend conditioning the beer for 2 to 6 months after the oak chips are added. Best enjoyed in your favorite tuque with a box of Timbits. Please note: this recipe calls for 2 oz of Kona and Sumatra coffee grounds, 16 oz of Maple Syrup, and 1 cup of Canadian Whiskey, which are not included in the kit. Frequently Asked Questions

What temperature is ideal for mashing grains during the all grain brew process? +

You want to be mashing anywhere in the range of 146F to 156F. Mashing at lower temperatures yields more readily fermentable short-chain sugars and yields a drier beer. Higher temperature mashes yield beers with higher final gravities and more body. Mashing over 158F tends to yield beers that are overly astringent due to the extraction of harsh tannins from the grain husk at that temperature. If you are in the 152F range, that is a good, all-around temp to reach for.

What is a Diacetyl Rest? +

A diacetyl rest is used when making lagers and ales. After a beer has fermented to near final gravity the beer is raised from fermenting temperature to a higher temperature roughly 3-4 degrees Fahrenheit above the original fermentation temperature and allowed to sit for two-four days. The purpose of this higher temperature rest is to allow the yeast to reabsorb their diacetyl that is naturally produced during fermentation. While yeast will absorb diacetyl at colder temperatures as well, the absorption happens much faster at warmer temperatures when the metabolic activity of the yeast is speed up. This quick absorption of diacetyl may help to lower the overall necessary aging time and help make a cleaner tasting beer.

How do I convert an extract recipe to an advance all grain recipe? +

Being that there are all kinds of recipes out there we often get asked how to change a recipe to match the way they currently brew. This can be fairly simple actually, but there are a few variables that change for each individual. You can look at the situation two ways, first, if you use Promash (or similar software) and the recipe publishes what the Original Gravity (O.G.) is then you can replace the base malt with extract, or vise versa to get the same original gravity. The second way is to approximate how much sugar one can generally expect out of that type of Base Malt and reverse engineer to make it work with how you usually brew. Base Grain malt to Liquid Extract Malt is usually a 20% difference, meaning if the recipe calls for 10lbs of 2-row, you can replace this with 8lbs of our Ultralight Liquid Malt Extract. If you prefer Dry Malt Extract, you would use 20% less than the liquid, so that would equate to 6.4lbs of the DME.

I brewed a week ago, and my beer STILL has a krausen on it? +

No, some yeast strains form a tight krausen like that - the beer is perfectly ok! Take a sample, and if the beer is done (has reached approximately 25% of its starting gravity) your can proceed with racking it into your keg or bottling bucket. Don't worry about the krausen at all.

When should I bottle my beer? +

We are going to assume that you are making an ale. Provided that you fermented your ale between a temperature of 62-75 degrees we are going to assume that fermentation will be done in two weeks. This is the case 99% of the time within the above temperature range. However it is an assumption that needs to be confirmed with a hydrometer reading. If you are making one of our recipes then an estimate for a final gravity (FG) hydrometer reading will be provided. If you are not making one of our kits, and you have concerns about your fermentation and no FG estimate is provided you can use the following formula as rough guess of what your FG should be. Take your original gravity reading and multiply that by .25. Compare this number with your actual reading and if you are within a few points in either direction go ahead and bottle. If you are more than a few points above your estimated FG you will need to wait a couple more days. After a few days take another reading to see if the FG has dropped. If the FG has not dropped give us a call on our advice line at 800-600-0033.
