"Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to start with more water than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

If you're looking to spice up your next batch of porter or stout, look no further than the ever-tantalizing Boadicea hops. With just enough alpha acids to provide a round bitterness, Boadicea will contribute a lovely earthiness and floral character with a hint of spice and resin. While you may instinctively reach for the British Kent Goldings (BKG) when it's time to brew an English-style pale or IPA, we highly recommend giving this humble hedgerow hop from the UK a shake. Typically added late in the boil or during dry hop. Boadicea was first bred by Peter Darby at Horticulture Research International at Wye College in Kent, England where it was hailed as the world's first hop variety to be naturally resistant to aphids.

Premium, Fire-Toasted Oak Cubes from Stavin
Medium Toast French Oak will impart flavors of coconut, vanilla, cinnamon and chocolate.
These fire-toasted oak cubes are as close as you can come to the full range of flavors you would get from aging your beer in a full sized barrel, unlike convection-toased cubes.
The difference is that convection toasted cubes are made by cutting the stave to size, then passing the small cubes through a toasting chamber. Stavin fire-toasts their staves whole, just like they would when making a barrel, and then cuts them down to size. The result is a gradation of toasting from the surface through to the center of the cube, where each different toast level represents a different flavor set that the oak will give your beer. The result is a much more complex and natural profile; by comparison convection toasted cubes taste one dimensional.
Oak cubes also release their flavor into your beer more slowly than chips, giving you more control over the final degree of impact in your beer. You should plan on an extended aging period of 1-6 months when using cubes. This longer contact time again promotes flavor complexity by allowing all the flavors of the oak and your beer to marry.
Recommended Dosage is 2 oz per 5 gallons for impact equivalent to aging in a brand new oak barrel

MoreBeer! is proud to release this Black IPA recipe designed by our local homebrew Club D.O.Z.E.
After winning the AHA Homebrew Club Of The Year in 2010, the Diablo Order Of Zymiracle Enthusiasts (DOZE) put their minds together to collectively craft a beer they felt representative of the club and its brewers. The initiative was taken on as an all club project that spanned 5 months. In the end, over 50 members contributed ideas to this recipe and nearly 40 individual batches brewed by 23 DOZE members were tasted and refined to a single recipe. This beer is inspired by the style many refer to as Cascadian Dark Ale or Black IPA, however it is not intended to fit the mold of any particular guideline. Mostly it is big, dark, hoppy, and delicious.
The recipe was coined 'Diablo Dark Ale' in honor of our near by Mt. Diablo. Members of the Diablo Order of Zymurical Enthusiasts live in various cities located at the base of this great mountain. Also the location where many of us from MoreBeer! go mountain biking when we get the chance.

Our Irish Red Ale recipe is hard to nail down as any specific style—similar to a big Amber Ale, but it's so unusual it does not really fit within any category. Malt character utterly dominates this beer's flavor profile, containing dark Crystal malts, including Special B, and a pinch of Roasted Barley for a deep, red color and a very distinctive caramel flavor. Irish Red Ale has been one of our most popular ingredient kits for many years, and continues to receive a lot of positive feedback from satisfied customers to this day. 36–45 °L - Export Brown malt offers brewers a lighter alternative to traditional Brown Malt. Kilned to a color range of 36–45°L, it provides the sought-after biscuity, nutty, and lightly toasted characteristics of Brown Malt, but with a more subdued roast profile and a cleaner finish. In comparison to standard Brown Malt (150–191°L), Export Brown exhibits significantly less acrid bitterness and intense dry roast notes, increasing its versatility across a broader spectrum of beer styles.
Brewers can expect warm cereal notes, delicate coffee, and a kiss of dry cocoa. On the palate, it presents with less assertiveness than darker roasted malts. Export Brown contributes a pleasing depth to Brown Ales, Milds, Porters, and even Amber Lagers when incorporated at a rate of 5–15%, depending on the brewer's desired intensity. Premium, Fire-Toasted Oak Cubes from Stavin
Medium + Toast American Oak will impart flavors of campfire, vanilla, roasted coffee and butterscotch.
These fire-toasted oak cubes are as close as you can come to the full range of flavors you would get from aging your beer in a full sized barrel, unlike convection-toased cubes.
The difference is that convection toasted cubes are made by cutting the stave to size, then passing the small cubes through a toasting chamber. Stavin fire-toasts their staves whole, just like they would when making a barrel, and then cuts them down to size. The result is a gradation of toasting from the surface through to the center of the cube, where each different toast level represents a different flavor set that the oak will give your beer. The result is a much more complex and natural profile; by comparison convection toasted cubes taste one dimensional.
Oak cubes also release their flavor into your beer more slowly than chips, giving you more control over the final degree of impact in your beer. You should plan on an extended aging period of 1-6 months when using cubes. This longer contact time again promotes flavor complexity by allowing all the flavors of the oak and your beer to marry.
Recommended Dosage is 2 oz per 5 gallons for impact equivalent to aging in a brand new oak barrel.

Traditionally used in Belgian beers, these Sweet Orange Peels will not give you a metallic taste like some other kinds of Oranges tend to do. If you are familiar with the taste of Grand Marnier, this is the sort of flavor you will find in these peels. Great for that added depth in your holiday beer, strong ales, and Belgians. Potassium Metabisulfite, (often referred to as "SO2", "sulfites" "meta", or "meta-bi") has several uses in winemaking. At the crush, sulfites are generally used to help control the spoilage bacteria and indigenous yeast that may already be present both on the fruit and in the winery (i.e. on the picking bins, processing equipment, tanks, tubing, etc).
The amount generally used is enough to inhibit most of the unwanted organisms but not enough to hinder a cultured yeast, which has a higher tolerance to sulfites than most of the indigenous organisms do. This inhibition effectively "wipes the slate clean" for the cultured yeast to step in and rapidly colonize the must so that it can effectively dominate the subsequent fermentation.
In addition, sulfites also help to inhibit the enzymatic browning of both musts and finished wines so that all of their delicate complexities can be preserved. Later, during storage and in the bottle, sulfites at the proper levels will further protect a wine by continuing to inhibit spoilage organisms, as well as by scavenging oxygen.
Note that the exact amount needed to effectively do the job is determined by the pH of the wine. Refer to our MoreManuals! on Red or White Winemaking or one of the winemaking books that we offer for a complete explanation on how to properly manage sulfites.
In addition, it's important to keep in mind that free SO2 levels fall faster in wood cooperage than in glass or stainless, so if you are using a barrel you will most likely need to manage sulfite levels more closely.
The most common form of Metabisulfite is as a powder which is fixed with potassium or sodium. 1/4 tsp of Potassium Metabisulfite adds 50ppm to 5 gallons of must. Old Metabisulfite loses potency with time and should be replaced every year to assure that you are getting correct levels. You can use old Metabisulfite to make solutions for sanitizing equipment.
Oak Chips are a fast and economical way to add oak barrel flavor to any beer.
Oak Chips are made from seasoned American and French Oak staves which are chipped down and convection-toasted to create flavors similar to what a comparably toasted barrel would impart. The available toast levels are Medium, Medium +, and Heavy.
It's important to understand that each toasting level creates different flavors in the oak; not a greater intensity of impact in your beer. Don't think of them as weak, normal & strong; they're each a different flavor profile.
Heavy Toast French Oak chips will impart strong flavors of Clove, Spice, Smoke & Butterscotch; along with a small amount of Vanilla & Coconut flavor.
Because of the high surface area, oak chips can extract quickly and care should be taken not to overdo it. Taste your beer frequently after the first week of contact and be ready to rack off the oak chips.
Suggested Dosage is 1-2 oz per 5 gallons.

Rhizomes should be planted immediately for best results. If your area is still experiencing frost then you can plant them in a planter indoors until it is safe to transplant outside. The first years crop will generally be smaller than subsequent years. Since these are live plants, we cannot guarantee they will grow, so we recommend buying two of each type to help ensure their success.

3.5° L - Briess Malting - Goldpils® Vienna Malt is a superb example of a classic malt. Less sweet than Pale Ale Malt, it is a rich malty 2-Row base malt that offers complexity and depth with a toasted note at the finish for your classic Vienna, Oktoberfest and Marzen beers. Goldpils® Vienna Malt is less modified than Pale Ale Malt and less intensely kilned than Munich Malts. As a result it delivers malty flavor with less sweetness than Pale Ale Malt and less color than Munich Malts.
