Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Chocolate and Black Patent malts are the backbone of this style. Our all-grain version of Porter features munich malt for a little maltiness and carapils for better mouthfeel and head retention. The Northern Brewer hops impart a nice, but not overpowering bitterness. Good first dark beer. However, for many people, this is their favorite style. Just ask Regan who is a Porter nut. All of our Porter recipes are descendants of his designs which date back to the 1980s. You will not find any Roasted Barley in our Porter recipes as we believe this is the defining difference between Stout and Porter. If you would like to see the difference for yourself try making our B3 Stout (in extract) or our Silk Stout in all grain form and then one of our Porters. It is fun to have them on tap at the same time and show people the difference in dark beers.

Dark Hill Porter is a tribute to one of our favorite west coast porters. This Black Butte Porter clone, commercially brewed by Deschutes Brewery in Oregon, is one of the most well-rounded porters out there. Being bittered with Bravo hops helps to initially balance the malty backbone, but that bitterness fades quickly, providing a smooth transition into the complex flavors of four different character malts. This combination of Wheat, Carapils, Crystal 120L, and Chocolate malts create a rounded mouthfeel and chocolate flavor.
If you like dark beers, you're going to love our Dark Hill Porter. If you don't like dark beers, this just might be the one to change your mind!

Background: MoreBeer! has a small beer fridge in our Concord, CA location. We try to order different beers every week, to allow our customers something new to try while they're in the shop browsing or purchasing equipment and ingredients for their next brew. We recently received "Tart of Darkness" from The Bruery. Nobody here had tried it before, so we opened a bottle to split amongst numerous employees. Within a few sips, the two cases we received had been completely purchased by employees - sorry Concord customers! We instantly got in contact with The Bruery, and being from a homebrewing background, they agreed to work with us on the recipe!

Eitrheim multi-strain comes from Reidar Eitrheim in Tokheim. The flavor and aroma primarily derive from apricot and peach, with secondary notes of orange and pineapple. Eitrheim ferments well between 59-100°F and will ferment faster at higher temperatures. At an optimal temperature of 88-95°F, you can expect fermentation to take up to 72 hours. Eitrheim is suitable for IPAs, pale ales, and NEIPAs.
The Eitrheim kveik comes from Reidar Eitrheim from Tokheim, Norway. Tokheim is located close to Odda in the heart of the Hardangerfjord and next to the Folgefonna National Park. The yeast has been passed on for generations, and Reidar got it from his grandfather. The yeast is very versatile and can be used in different beer types such as IPA, Pale Ale, NEIPA, Stouts, and Porters.

The intensity is medium at high fermentation temperatures, and at lower temperatures, it will be less intense.
Fermentation
Eitrheim ferments well from 59°F up to 100°F. The higher fermentation temperature, the faster fermentation. At the optimum temperature 88-95°F expect fermentation to finish in 72 hours. When fermentation is done at low temperatures you can expect fermentation time to increase. For high gravity beers, we recommend users to pitch two packs of yeast and add yeast nutrition to ensure a healthy fermentation.
Pitching
Pitch directly into wort by sprinkling it across the surface, or rehydrate yeast. For fermentation below 64°F, or high gravity, increase pitching rate to 2.25 g/Gal.

Use only with reverse osmosis (RO), deionized (DI), or distilled water.
Add the full contents of this pack to 6 gallons (23 L) of brewing water before mashing. Stir until dissolved.
Mash in as usual — no additional acid or salt adjustments are typically required.
Proceed with your normal brewing process.
Note: These salts are designed to set mash pH without acid additions. Because malt acidity varies, you may wish to verify your mash pH and make small corrections if needed, though this is rarely necessary. Dextrose is used in trace amounts as a processing aid for blend consistency and flow and does not affect fermentation or flavor.

The patented Stainless Steel Intertap Faucet is a forward sealing faucet that represents the most modern faucet design. It has a modular, threaded spout which can fit a variety of different attachments including a growler filler or a stout spout.
In normal rear-sealing faucets the entire faucet has to drain of beer. In forward-sealing faucets the faucet keeps beer in it so the inside doesn't have a chance to get sticky, making cleaning much easier. It also reduces the chance of off flavors transfering to your beer while you pour.
Other forward sealing faucets use a floating o-ring, which is just as sanitary but requires the o-ring to move inside the faucet body in order to seal correctly. This can become a problem as the faucet ages. Intertap faucets use a sliding shuttle that guides the o-ring into the perfect position every time.
The threaded spout easily unscrews from the faucet and can be replaced by a growler filler or stout spout quickly and easily. Pour a pint and then fill a growler in no time at all.

Every unit also comes with an adapter to use the included KOMOS CO2 regulator with a Nitrogen gas cylinder. Serving with Nitrogen
Nitrogen cylinders can be filled with either pure nitrogen or "Beer Gas", which is a blend of Nitrogen and CO2. Pure nitrogen is recommended for serving cold brew coffee in order to avoid the effects of carbonation. Carbonic acid dissolving into solution will change the mouthfeel of your cold brew and heighten the acidity and bitterness. Stouts, on the other hand, are commonly served with a mix of Nitrogen and CO2, and will give your pours that signature Guinness-like cascade of bubbles as CO2 is knocked out of solution when it passes through the stout spout's aerator disc. The most eye-catching difference between the KOMOS unit and other kegerators is definitely the capacity. This is the first kegerator we have offered that comes with a quadruple tap tower option, and that’s all thanks to the redesigned interior. Most kegerators position the compressor on the right or left side of the inside floor, making one side shallower than the other. KOMOS positions the compressor in the middle so both sides of the interior have an equal depth. This seemingly small detail allows the unit to hold up to four 5-gallon Slimline Torpedo or Ball Lock Corny kegs.
Dual gas line inlets are absolutely clutch if you want to serve beverages at two different pressures or use two different types of gas. The previous model had one inlet that was only wide enough for a single line to pass through. Now both inlets are just over 3/4" in diameter and feature PCO 1881 threads. This threading allows you to use the plastic Carbonation Ball Lock Cap (FE13) as a quick connect option for your gas lines.
Upgraded condenser, evaporator, and insulation make this unit highly efficient, yet quiet, so you can serve ice cold beer in even the warmest temperatures. The unique internal fan provides excellent air circulation, pulling cold air from below the evaporator and blowing it back over the top of your kegs and up into the tower to chill your draft lines.
Extra Wide Temperature Range is Perfect for Homebrewers
The KOMOS kegerator is tailored to a homebrewer's needs. Take, for example, the extended range digital controller with an adjustable temperature range from 26 - 82°F. This allows homebrewers to use as fermentation chamber and is something that other kegerators don't do. Although the unit does not provide heating, the extended range allows you to program the internal temperature at say an ale fermentation temp of 68°F and will provide cooling whenever the temp rises above that set point. With the insulation provided by the kegerator, heating should rarely be needed, but you can always place a low wattage heat wrap inside the unit if ever needed. The digital controller always displays the temperature and is easily adjusted from the front of the kegerator with the door closed. It's pretty nice.

We love Duotight push-in fittings for their quick connection, reliable seal, and versatility. Setting up and connecting draft line has never been easier -- no more hose clamps or heating water to soften tubing! Each kegerator comes with Duotight fittings for the tower shanks, regulator, and for splitting gas lines (double & triple tap only). We recommend adding Duotight fittings to use for your keg connections as well. Cacao Nibs are a great way to introduce rich chocolate flavor into any beer. Impress your friends with a unique tasting experience!
Cacao nibs (also referred to as cocoa nibs) are the key ingredient in chocolate. They are crushed and roasted seeds from the cacao plant. Tcho Nibs have a wonderful cocoa smell to them, and will provide a very subdued cocoa-like flavor to any beer.
You can use these cacao nibs like you would a dry hop, by adding the cacao nibs to your secondary fermenter or keg for a couple of weeks (4 ounces per 5 gallons is a great place to start), allowing the beer to draw out the subtle flavors and aromas of the cacao nibs. They can also be used in the boil or mash - wherever you would like to experiment with them. Adding the nibs pre-boil will impart some bitterness, so use a lot less than you would when adding them to a keg. Stone Brewing Company made a stout using cacao nibs in the boil to actually replace some of the hops in the recipe.

Because JP tends to get really good boilovers when he brews he usually makes high gravity beers whether he intends to or not. Dark Hill Porter is a tribute to one of our favorite west coast porters. This Black Butte Porter clone, commercially brewed by Deschutes Brewery in Oregon, is one of the most well-rounded porters out there. Being bittered with Bravo hops helps to initially balance the malty backbone, but that bitterness fades quickly, providing a smooth transition into the complex flavors of four different steeping grains. This combination of Wheat, Carapils, Crystal 120L, and Chocolate malts create a rounded mouthfeel and chocolate flavor.

Expect earthy, grainy flavors and a noticeable palate fullness when incorporating Rahr Malted Oats into a recipe. Its high protein content, coupled with low color and beta-glucan levels, helps to mitigate the risk of slow or stuck lauters during the brewing process.
