Moonraker brewing is an absolute favorite amongst our staff members here in California. So, when they agreed to collaborate on a beer kit, we were through the moon. Moonraker is located in Auburn, CA and prides themselves on sustainability and quality. Their pedigree and collection of awards are undoubtedly incredible. Excelling at hazy IPAs, as well as traditional and experimental styles, everything produced is orally orgasmic. Luminescent particles are scattered to the ether, condemned to wander the void or bound to coalesce into new celestial bodies. Some believe that amongst the chaos of colliding fragments, a mythical form of cosmic dust condenses into Space Nectar—matter so delicious that our Terra-bound taste buds would surely find it incomprehensible. Physics be damned, Moonraker Brewing Company's extraordinary Hazy IPA is the best estimation of what it may be like to take in this heavenly ambrosia. Space Nectar overflows with flavors of peach, apricot and orange sherbet. Over half of the hop bill is comprised of Cryo Hops® which lend a clean, pungent aroma to this absolute juice bomb. Matt Brynildson of Firestone Walker Brewing Co., Paso Robles, California. It seems to some that Matt has almost been bred to brew beer. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Since then, Firestone Walker has been gaining a large following in California due in part to it's flagship beer, Double Barrel Ale, which is produced in a Burton Union system that has the beer fermenting in barrels. Firestone Walker Brewing Company is the only brewery in the U.S. to ferment in barrels and one of only two in the world. When not under pressure, do not expose to liquids above 131°F
When under pressure, do not expose to any temperatures above 95°F*
*Please note that the temperature rating for the FermZilla tank is lower when using it under pressure. When not under pressure, it is perfectly safe to transfer wort into the tank below 131°F or to use hot liquids below this temp for cleaning. When under pressure, make sure to keep your fermentation temperature below 95°F and keep the fermenter in an environment that is below 95°F ambient. This is especially important when fermenting with kveik yeast. These strains are known to ferment hot if no temperature control is being used. Exceeding the temperature rating may compromise the tank, leading to a shorter life span or sudden failure to maintain pressure. Even with proper use, we recommend replacing the tank every two years.

NOTE: FermZilla tanks are marked with a manufacturer’s “expiry date”. This does not indicate that the tank is bad after this date; it simply indicates that a hydro test may be in order. 2 years after production and every 2 years after first use, it is recommended that the tank be hydro tested to ensure the tank is holding pressure. Hydro test instructions are available here. You will also need the D1072 Green PRV to perform the test. If you do not plan to pressurize the fermenter, the test is not necessary.
FermZilla All Rounder 30L & 60L | User Guide
Airlocks are another one of those necessary pieces of equipment for every homebrewer. If you ferment in a carboy or bucket this 3 piece airlock is a must! It’s a popular alternative to the triple ripple type of airlock because it can be taken apart and cleaned, and is easy to fill. (However we do sell the triple ripple type (FE371) in case you are used to that type and would like to stay with it.) While a simple device not all airlocks are the same. Some other designs have only a couple holes in the plastic lid and this can cause the airlock to pop out during an active fermentation. Our design features multiple holes that allow CO2 to escape easily. Additionally some other airlocks have a cross hatch design on the bottom. We have found this more easily leads to Krausen clogs and the airlock being pushed out of the fermenter. Ours is open, allowing Krausen foam to enter the airlock if necesary. Better to clean your airlock out than to find it laying on the floor next to your fermenter 3 days later. Another cool feature of this 3-piece airlock is that 1/2" ID Silicone tubing will fit onto the center post for use as a blowoff. In the cases where you are using a yeast known to produce lots of Krausen (wlp002 from White Labs or 1968 from Wyeast for example) remove the top cover, remove the plastic 'hat', and install the silicone tubing. Run the silicone tubing into a jar or bucket of water. When fermentation dies back down remove the tubing and replace the hat and cover. Please Note: Airlock only - stopper not included.

Equipment Required for Flash Brewing®
Flash Brews can be fermented in any wide mouth 6 or 7-gallon fermenter you already own. We suggest a wide mouth fermenter so you can easily pour in the ingredients. MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Jim was looking for a dark, smooth, creamy mouth feel stout just like an Australian stout he had tasted years ago. Over the years, Jim found a clone that was close but needed some small changes. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. Jim recommends WLP004 Irish ale yeast.

Cooling Jacket Operating Limits
Maximum Operating Pressure: 15 PSI (1.0 BAR). Always ensure your glycol chiller or liquid cooling source is regulated below 15 PSI.
Unrestricted Flow Required: Keep the jacket outlet port open and unblocked during operation. Never cap or valve off the outlet return line, as fluid needs to circulate freely to prevent pressure buildup.

This imperial stout is one of our most complex recipe kits. Not only because of the ingredients invovled (12 pounds of base malt, 5 specialty malts, and 3 different hops!), but because of the mouthfeel, flavors, and aromas it provides. The all grain kit even includes 2 pounds of dry malt extract because the amount of malt simply won't fit in your average size mash tun!
This is also one of those beers that continues to improve the longer it's allowed to age. Our Old Bearded Stout is bold, boasting an incredible roasty, bready flavors, and aromas of chocolate and coffee. Oxygenate your wort like the pros with the OxyWand Oxygenation kit! Insert the oxygenation wand into your fermenter and pump in thousands of microscopic oxygen bubbles for 1-2 minutes to improve the health of your yeast. Healthy yeast produce amazing flavors and have the stamina to completely finish fermentation.
That is not the only reason yeast love the OxyWand™. Yeast hate to compete with bacteria and you hate to drink them. Sintered stainless stones are made of tightly compressed stainless steel powder to create a porous block through which oxygen can flow. This micro maze is also the perfect environment for bacteria to live in after the stone has been used once in wort. That is why we love to boil our stones prior to use. The stone on the OxyWand™ is connected via a 1/4" flare fitting and can easily be removed and cleaned after use and then boiled before your next brew day.

This ale recipe features the use of clover honey, dried rice extract and sorghum. Try adding some dark candi syrup to give it some color.
Gluten-Free beers are a different world when it comes to finding a suitable replacement for the base extract. Celiacs are allergic to the hordein protein found in the base malts such as 2-Row and Pilsner malt.
They are also allergic to the gliadin protein found in wheat which is the biggest offender of the two proteins. As a homebrewer your goal is to find a suitable fermentable that can emulate the maltiness in beer.
Our Gluten Free recipes use Sorghum extract for the base fermentables. Hops aggressively cut through the maltiness from sorghum easily. Hop additions in gluten free beers tend to be 40-50% less than normal.
All our gluten-free kits include dry yeast due to the small traces of the gliadin protein found in liquid yeast. (Although lab research has found the yeast metabolize the gliadin protein after fermentation and significantly reduce the ppm present.)

This German-style Wheat Beer has a lovely blond color and distinct hazy appearance in the glass. The flavor for German Hefeweizen is primarily based on the flavor of the very specialized Hefeweizen yeast, so be sure to select one of these strains for fermentation. Just be ready for a vigorous fermentation! This beer is known to pop off airlocks if there isn't enough room in the fermenter. This is a true German-style Hefeweizen recipe using 60% White Wheat malt and 40% 2-Row malt. A dash of Northern Brewer hops provides just enough bitterness to balance the malt and yeast character. Despite the simple recipe, this is one of our most popular ingredient kits. Our German Hefeweizen is a customer favorite that has brought home many ribbons.
If you want to put a little spin on this recipe, add 8 oz of Caramunich and 4 oz of Chocolate malt to make a Dunkelweizen!

This DigiBoil model has two built-in heating elements that run off a 220V plug. One element is 1900w and the other is 500w for a combined 2400 watts! The elements can be individually controlled, allowing you to use a single element to gently hold temperatures, or engage both elements to quickly go from steeping temp to boiling. Temperatures are set and automatically maintained through the digital control panel. Simply set your desired temperature and flip on the heating element(s).
If you have access to 220V power, this is definitely the unit we recommend. Although 110V power is enough to get up to boil, 220V will get you there faster and provide a much more vigorous boil.
Integrated stainless ball valve comes with a 13mm barb (approx. 1/2"). The barb can be removed to attach 1/2" FPT fittings if desired.

Another brewer that got his start at home - Rodger has been a homebrewer since 1991, and a commercial brewer since 1996. After taking the Eight - week course at Sieble, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. Their attention to detail and their commitment to making great beer is evident in each batch that rolls out of the brewery. Definitely another 'must' for any beer fan visiting the Bay Area. One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

Erik Beer was the president of the local homebrew club, DOZE, for a number of years. During that time, he created and perfected recipes for a number of different brews, this easy-drinking Cream Ale being one of them. Featuring a blend of Pale and Pilsener Malt with some Flaked Maize thrown in to lighten things up, this beer is sure to be a hit with everyone you share it with. (If you share it at all!). Hopping is light on this one, but definitely enough to balance things and make this brew go down smooth.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
