After taking the Eight - week course at Siebel, Rodger was brewing at a few places in the Bay Area until he settled down at Drakes in 2002. Since then he has been keeping the awards and praises rolling into Drakes with their flagship IPA, which took Gold in 2002 at the Great American Beer Festival. Drakes Brewing has been around since 1989, and is one of the San Francisco Bay Area's oldest breweries. One of the best examples of a West Coast IPA that you can find on the market. It has a clean, crisp malt character backed by tons of hops - 6 additions in all! Somehow, the hops aren't too over the top and don't squash the malt as one might think from just looking at the recipe. This IPA is one that we have been asked to clone over the years, and we are excited to offer it straight from the brewers log book. Not over the top like some IPA's can be, Drakes is one beer to search for. Rodger recommends using White Labs California Yeast, WLP001.

The BrewBuilt Pressure Pack features a unique floating racking tube that can be used for taking samples, keg transfers, or serving finished beer. This innovative feature draws beer from the top down, which means you’re always pulling the clearest, most sediment-free beer possible. And with the included filter attachment, any floating vegetal matter will be blocked from ever entering the dip tube. Using pressure to draw a sample from the floating dip tube will also eliminate the tiny bit of oxygen that would be injected into your beer every time the traditional sample valve is opened. Pressure transferring from fermenter to keg is the best way to protect your beer from oxygen when it’s at its most vulnerable state. Kegging could be considered the final hurdle in the brewing process, where limiting oxygen exposure is critical. The FermZilla is the perfect option for brewers that want all the advantages of a conical fermenter without the price tag of a full-blown stainless-steel unit. It allows you to dump trub, harvest yeast, and with the addition of CO2 cylinder and regulator, you can carbonate and serve – all in one vessel! The clear PET tank allows you to visually monitor fermentation activity and is pressure rated to 2.4 Bar (34.8 psi), which means you can ferment under pressure, reducing ester and fusel alcohols in your finished beer. When not under pressure, do not expose to liquids above 131°F
When under pressure, do not expose to any temperatures above 95°F*
*Please note that the temperature rating for the FermZilla tank is lower when using it under pressure. When not under pressure, it is perfectly safe to transfer wort into the tank below 131°F or to use hot liquids below this temp for cleaning. When under pressure, make sure to keep your fermentation temperature below 95°F and keep the fermenter in an environment that is below 95°F ambient. This is especially important when fermenting with kveik yeast. These strains are known to ferment hot if no temperature control is being used. Exceeding the temperature rating may compromise the tank, leading to a shorter life span or sudden failure to maintain pressure. Even with proper use, we recommend replacing the tank every two years.
Please note: when using the FermZilla under pressure, you must perform a water pressure check to ensure your connections are leak proof. To do this, fill your FermZilla up with water, apply at least 15 psi pressure, and check for leaks around all caps and threads.
Pressure Stress
If you use the FermZilla to ferment under pressure, or you use CO2 to pressure transfer or force carbonate your finished beer, it is very important that you conduct semi-annual inspections of your tank. Even with perfect care, the FermZilla tank may show signs of wear from pressure stress over time. We recommend visually inspecting your tank for stress creases or other signs of wear once or twice a year. A hydro test should be conducted every two years, even if no signs of wear are found. The process is simple:
Fill the tank to the brim with water
Replace the Red PRV with a Green PRV rated to 4.5 BAR or higher
Pressurize the tank to 4 BAR (58 psi)
Check for leaks, then replace the Red PRV when finished
If leaks or potential points of failure are found, replace the tank before you continue using pressure with your FermZilla.
General Care
Taking good care of your FermZilla begins with cleaning and sanitizing the unit before and after use. The tank is made from food-grade PET, which is beautifully clear, but can be sensitive to long soaks in cleaners and acid-based sanitizers. In general, we do not recommend leaving products like PBW or StarSan soaking in the tank for more than an hour. Extended soaks have the potential to degrade the PET material and shorten the lifespan of the tank.

NOTE: FermZilla tanks are marked with a manufacturer’s “expiry date”. This does not indicate that the tank is bad after this date; it simply indicates that a hydro test may be in order. 2 years after production and every 2 years after first use, it is recommended that the tank be hydro tested to ensure the tank is holding pressure. You will also need the D1072 Green PRV to perform the test. If you do not plan to pressurize the fermenter, the test is not necessary.

We recently had a simple, yet exciting idea: What if we brewed the same recipe, used the same yeast, but changed one thing - the flavor, aroma, and dry hop additions using one hop varietal. That way we could take two beers that are close to identical and pick out the differences in just the hop flavors and aromas! And thus, the Single Hop Experiment was born. This recipe is based off of a simple Pale Ale: 2-Row, Crystal 15L, Magnum bittering hops, and then a single other hop for the rest of the additions. The malt in this recipe is basic and fairly neutral, the bittering clean and consistent, but the flavor and aroma from the late hop additions will vary; sometimes dramatically! Columbus, or CTZ (Columbus, Tomahawk, and Zeus), is a high alpha varietal with a neutral bitterness and intense aroma. A true dual-purpose hop that works very well for bittering, but shines just as easily as a late addition. CTZ hops have an earthy, spicy character that is great for bittering. But when used as an aroma addition, you'll find more floral and citrus notes come out that can be very pungent. Columbus is a perfect choice for IPAs, Pales, Imperial Ales, Hazys, Stouts, and Lagers.

Equipment Required for Flash Brewing®
Flash Brews can be fermented in any wide mouth 6 or 7-gallon fermenter you already own. We suggest a wide mouth fermenter so you can easily pour in the ingredients. Jonathan Plise has been making beer since the year 2000 - his first batch being a porter that was less than drinkable. He then spent the next few years researching and developing his recipes, fermentation regimen, and sanitation - Jonathan's most dramatic improvements came when he learned about oxygen and yeast starters. In 2006 he was awarded California Homebrewer of the Year sponsored by Sierra Nevada Brewing Co.
Jonathan's Munich Helles is rich and complex. The malt is upfront and smooth, while being anchored by the low hop additions. He has won 9 awards with this recipe, including one Best of Show and a Gold at the NHC in 2005. Jonathan recommends White Labs WLP833 German Bock Yeast.

You now know JP as a host on the Brewing Network, but before the Brewing Network JP was an original employee at MoreBeer! where his first job was cleaning up an infamous and massive malt extract spill Olin caused while taking and filling orders at the same time. Because JP tends to get really good boilovers when he brews he usually makes high gravity beers whether he intends to or not. It may have something to do with consumption while brewing, not that any of us know anything about that. The result is always a starting gravity that is higher than anticipated. We put the beer on tap in the shop and it got rave reviews. It was both outstanding and unique. Sometimes things do happen for a reason! The beer can easily be described as a Porter on steroids. This kit has a lot of grain in it, so you may find two grain bags useful.

Lemondrop™ was originally developed by Hopsteiner as Experimental #01210 and released in 2012. Derived from Cascade, you will find some familiar flavors residing in these lupulin glands. The hops name alludes to the aroma descriptors of lemon, mint, green tea, and slight melon. Lemondrop™ crushes as an aroma addition in Pale Ales, IPAs, Hoppy Lagers and NEIPAs, but don't shy away from it if you're looking to add some lemon-citrus flavor to your favorite Hefeweizen, Kolsch or Blonde Ale!

Pizza Port in Solana Beach was the first of three brewpubs to open under the Pizza Port name. Brandon Edwards, who used to be an employee of Morebeer, has been brewing in Solana Beach for a number of months, and with Pizza Port for a few years. Brandon made this recipe to celebrate the one year anniversary of the Toronado beer bar opening in San Diego. This brown ale is pretty malty and hoppy, but we wouldn't expect anything less from Brandon!

Jamil was going for a certain flavored Pale Ale styled after one of his favorite commercial examples. It features a light malt backround that includes crystal 15, vienna, and munich combined with an interesting mix of hops.
Jamil is famous for being "The Pope" on the Brewing Network and having been one of the most award winning homebrewers of all time. He also co-wrote Brewing Classic Styles and Yeast: The Practical Guide to Beer Fermentation. Now he owns Heretic brewing one of the top breweries in the country. What you don't know is that once he was a programmer and helped MoreBeer! create an online shopping site in the late 1990's.

A classic Porter recipe and a fantastic first dark beer! A super drinkable, smooth, delicious beer that everyone loves. Chocolate and Black Patent malts are the defining malts that give Porter its dark color and roasty flavor. Our recipe also features dextrin powder which gives it a creamy body. The Northern Brewer hops impart a nice, but not overpowering, bitterness.
This recipe was designed by Regan Dillon, original MoreBeer! partner, whose favorite beer style was Porter. Regan has made this Porter recipe since the 1980's so you can be assured it has passed the test of time. Jamil Zainesheff, owner of Heretic Brewing, said this Porter was the first inspiration for his future Porters, such as Shallow Grave. High praise!
