Pliny the Elder is a truly amazing beer with a cult like following, and was once one of the hardest IPAs to find, as Russian River brewed it in very limited quantities. Depending on where you live, it may still be next to impossible to track down! But with this killer clone kit you can make your own Pliny and perhaps you will develop your own cult following where you are worshiped by your beer loving friends. (Hey, it could happen!). Light malt color, huge hops, and a dry finish. Be prepared for an outrageous amount of flavor.
This is THE original Pliny the Elder recipe, given to us directly by Vinnie at Russian River Brewing Company. This beer is an intense Double IPA. High bitterness with a dry malt finish, 8% alcohol, 6 separate hot side hop additions, 3 separate dry hop additions, and intense hop flavor and aroma! Pliny sets the standard for Double IPAs!
Who is Pliny the Elder?
This beer is named after Gainus Plinius Secondus, or Pliny the Elder, a Roman author, lawyer, naval man and naturalist who first mentions the botanical name for hops in his writings - lupus salictarius, which translated from Latin means Wolf Among Willows. Sadly, Pliny died while helping people escape the eruption of Mt. Vesuvius in August, 79 AD. Pliny the Younger was the nephew of Pliny the Elder and is the name of another outrageous and highly sought-after beer from Russian River.

Based off of one of the most exceptional east coast beers (in our humble opinion) on the market, this double IPA instantly became one of our favorite ingredient kits! Our version of a Heady Topper clone recipe is packed with almost a pound of hops, and is definitely a beer that will have hopheads in hopheaven.
One of the first things we noticed when pouring this beer into the pint glass was the aroma. With a dry hop addition consisting of Apollo, Centennial, Columbus, Simcoe®, and Amarillo® hops, we weren't necessarily surprised. Impressed is more like it. A balanced malt profile helps to tame the bitterness, allowing the hop flavor and aroma to be the true star in this recipe.

Dark Hill Porter is a tribute to one of our favorite west coast porters. This Black Butte Porter clone, commercially brewed by Deschutes Brewery in Oregon, is one of the most well-rounded porters out there. Being bittered with Bravo hops helps to initially balance the malty backbone, but that bitterness fades quickly, providing a smooth transition into the complex flavors of four different steeping grains. This combination of Wheat, Carapils, Crystal 120L, and Chocolate malts create a rounded mouthfeel and chocolate flavor.

Our Old Bearded Stout is bold, boasting an incredible roasty, bready flavors, and aromas of chocolate and coffee. MoreHaze! is a delicious, juicy, NE style double IPA. This beer was brewed as a collaboration between EJ Phair Brewing Co. and MoreBeer! We liked the beer so much that we wanted people to be able to brew it at home.
The beer is very high in alcohol (9.1% ABV), low in bitterness, light in color and loaded with hops. We dry hopped this beer in multiple stages, added lots of high protein grains and did not use any clarifying agents, which leads to a hazy beer loaded with flavor. Flavor and aroma is very citrusy (orange, tangerine, grapefruit) and mildly danky. The large addition of wheat and oats adds a soft, pillowy texture to the beer. The feed back was that this beer is delicious and dangerously easy to drink at such a high ABV.

Jim was looking for a dark, smooth, creamy mouth feel stout just like an Australian stout he had tasted years ago. Over the years, Jim found a clone that was close but needed some small changes. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. Jim recommends WLP004 Irish ale yeast.

Jamil brews more, consistently high-quality beer than any hombrewer we know. He won California Homebrewer of the Year in 2002, after winning over 150 total awards at brewing competitions, 55 of them being First Place. Of all the beers that he brews, the Chocolate Hazlenut Porter (CHP, as Jamil says) is the cult favorite and the recipe he is asked for the most. It also won Best of Show 2002, several First Place ribbons, and countless other awards. It comes complete with 25 ml of Hazlenut extract and 4 oz of Cacao Nibs. Jamil recommends using California yeast, WLP001. This kit has a lot of grain in it, so you may find two grain bags useful.

The Northern Brewer hops impart a nice, but not overpowering, bitterness.
This recipe was designed by Regan Dillon, original MoreBeer! partner, whose favorite beer style was Porter. Regan has made this Porter recipe since the 1980's so you can be assured it has passed the test of time. Janet’s Brown Ale is the recipe for which Mike won the 2004 National Homebrew Convention gold medal in its category. He once told us the most important critique he ever received was from his late wife, Janet. She really loved this brown ale and it was her favorite of all Mike’s creations. Bubbling Crude, Black Gold, Texas Tea - you may not strike oil in your backyard, but you can make Imperial Stout at home. With a texture and color similar to black crude oil, this monstrous, thick, chewy beer takes a minimum of six months to age out. The foundation of the beer is 12 lbs of malt extract. Then we throw in some Crystal, Chocolate, Roasted Barley, and Black Patent malts. Yes, there are two additions of hops in this recipe but you probably will never taste them through all that malt flavor. This is a great beer for sipping in front of the fire. Will age for years, eventually gaining some Port-like flavors.

This beer combines the richness of black malt with the old-world smokiness of Bamberg: a Franconian village that is at once worldly and yet devoted to its traditional ways. Brewed with an ale yeast, it mimics the origins of English porter, a beer made solely from brown malts dried over a direct wood fire. And since you'll never find a beer like this at your local liquor store, you'll have to brew it to appreciate the flavorful treats it can offer. With an astounding Two Pounds of Rauch Malt, any fan of smoked beers will fall in love with Ray's beer! Ray recommends British Ale yeast, WLP005.
Ray began brewing in 1989 after seeing a homebrew store ad at a Chicago hamburger shack. "The first batch was pretty good," he says, "but the second one was awful. Fortunately, I had already brewed the third batch before tasting the second, or that might have been the end of things. After tasting that beer, there was no looking back: I dove headlong into brewing and tasting and learning as much as I could about the art of brewing." That informaton was put together in his book, "Designing Great Beers", which has since become a must-have for any serious brewer. Over the years he has brewed more than 200 batches. When he started all-grain brewing in 1990 there weren't many options for buying mashing equipment, so he made his own 10-gallon vertical Coleman cooler Mashtun. More than 90 percent of the 200 batches he had made over the years were produced on the homemade equipment--although now the mash tun has been retired after some unsuccessful modifications a few years back. You may now know Ray as the founder of the highly successful Cicerone Program which certifies and educates beer professionals.

You now know JP as a host on the Brewing Network, but before the Brewing Network JP was an original employee at MoreBeer! where his first job was cleaning up an infamous and massive malt extract spill Olin caused while taking and filling orders at the same time. Because JP tends to get really good boilovers when he brews he usually makes high gravity beers whether he intends to or not. It may have something to do with consumption while brewing, not that any of us know anything about that. The result is always a starting gravity that is higher than anticipated. We put the beer on tap in the shop and it got rave reviews. It was both outstanding and unique. Sometimes things do happen for a reason! The beer can easily be described as a Porter on steroids. This kit has a lot of grain in it, so you may find two grain bags useful.

Bourbon Belle takes the beautifully complex flavor of Brunch Stout and adds a charming southern drawl. Mike's American Amber Ale earned him multiple 1st- and 2nd-place ribbons, including a Gold Medal at the National Homebrew Competition. Red Ale is technically not a beer style category. Oh, well. It was created (and is continually evolving) in microbreweries throughout the US. Usually very similar to Amber Ale but with additional, darker crystal malts. MoreBeer! takes a different approach. We make it red with 2oz of Roasted Barley. The result is a red-colored beer but without the deeper, caramalized flavors. We add a combination of Cascade and Northern Brewer hops that combine with the malt flavors to make this a unique beer you won't find anywhere else.

A modern twist on an American classic!
California Common is a unique beer style dating back to the days of the California Gold Rush, when brewers on the west coast incorporated caramel malts and additional hop character into their lager beers, helping mask the effects of warmer fermentation owing to a lack of available refrigeration. The resulting beer was a jack-of-all-trades: malty and full-bodied enough for a winter evening, but also hoppy and dry enough for the hottest California afternoon.
Here at MoreBeer! we love the classics, and Cal Common is no exception. But we’re a long way from 1849 and it’s time to give this classic, nearly forgotten beer style a chance to step into the modern age. To do that, we’ve combined the Northern Brewer hops that typify California Common with the Simcoe® hops that are so prevalent in today’s California IPAs, creating our first ever hop blend, “Norcoe.” The resulting beer is still a delicious jack-of-all-trades, but with a hop profile that’s at the same time common, and not Common at all!

"Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to start with more water than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

A few years age we had a competition in our Concord showroom for the best Holiday Beer. The winner was an unknown brewer named Kyle Sommers. We actually hired Kyle following the competition to work in our customer service office(see where good homebrew will get you!) In 2010 Kyle graduated from the Siebel Institute to continue his dream of becoming a professional Brewmaster. He is now brewing at Lagunitas
We loved the big body, rich malt, and the extremely complex spice blend. When we went to make the recipe for sale we thought twice because we had to buy out the spice section of our local grocer. Spices include small amounts of All-Spice, Cloves, Nutmeg, Saigon Cinnamon, and Ginger.
Based on a Northern English style Brown Ale, it has 6 different spices added at two different times in the brewing and fermentation process, resembling and inspired by a Belgian-style winter beer. This winter warmer will make your kitchen smell like Thanksgiving Day at Grandma's house. With some added Belgian brown sugar to counter-balance the spice and add some alcohol content, this is a great way to top off your Holiday adventures by the fireside. If you are a firm believer in the Reinheitsgebot (no spices, sugar, etc.), this is not the beer for you!

In 2011, the White House home brewed beer for the first time in, well, perhaps centuries! We were super excited when a MoreBeer! customer first submitted his freedom of information act request for the White House homebrew recipes. We were a little surprised, and we'll say it - let down - when we saw the actual recipes. One MoreBeer! staffer blurted out "Whoa...this seems like beer that Prince Harry should be brewing." English malt extract, English hops, and even an English yeast strain were used; so the only thing truly American was the honey! It seems that we were not the only beer lovers to pick up on this. So while we really, really love English beers as much as the next homebrewer, we think the White House Brewmasters should be using fresh ingredients from well...America.
Since we were tweaking the recipe towards this side of the pond, we decided we could also help educate the White House staff on their yeast selection. Yes dry yeast has gotten better but since it's for the White House and all, we think they can spring for liquid yeast...and is there any better choice for this recipe than Wyeast 1056 AMERICAN Ale or White Labs 001 California Ale?? Not really. In fact, just queue up the star spangled banner, turn on the football game, and throw some hot dogs on the grill because we are starting to feel pretty patriotic here.
So while we send this kit along with our friendly suggestions back to the White House, YOU can make the exact same beer at home. That way if you are in a diner somewhere on the campaign trail and the president pulls up you can whip out a bottle of the 'Honey Pale the White House Should Be Making' or the 'Honey Porter the White House Should Be Making' and enlighten the Top Dog, homebrewer style.

This is an amazingly drinkable porter recipe which will have you coming back for more! Jason, who recently graduated from the American Brewers Guild, now teaches our beginning and advanced brewing classes held every month in Concord, Ca. Jason use to brew up Jim Rossi's Honey-Pale and our B3 Stout and mix them together out of the tap 50/50. Jason decided to take it one step further and started brewing them together. He says "It is a like a Black and Tan" with a honey flavor of course. The beer does not taste like a true stout but is very far from being a Pale Ale. The continually positive response of "wow" from friends and other MoreBeer! customers prompted us to make his unique combination as his own kit, Honey-Stout. Pizza Port in Solana Beach was the first of three brewpubs to open under the Pizza Port name. Brandon Edwards, who used to be an employee of Morebeer, has been brewing in Solana Beach for a number of months, and with Pizza Port for a few years. Brandon made this recipe to celebrate the one year anniversary of the Toronado beer bar opening in San Diego. This brown ale is pretty malty and hoppy, but we wouldn't expect anything less from Brandon!
