With a strong emphasis on the German malt flavor, it's sure to please anyone looking for a classic Oktoberfest beer. It is a copper-colored Lager that achieves that malt flavor with lots of Pilsner malt extract. The use of Caravienne and Caramunich malts contribute the copper color and a unique, subdued toffee/malt flavor. First-addition hops are Hallertauer, while finishing-hops are Czech Saaz.

Charlie Essers (AKA Push Eject) has been a longtime friend of MoreBeer, The Brewing Network, and homebrewers in general. Dubbed "one of the nicest guys in homebrewing" by those who know him, Push wanted us to have this recipe that he brews whenever his father-in-law comes for a visit. Push says: "My family has been supportive of all the brewing gadgets and scattered projects including my "dark-beer-phobic" father-in-law. This recipe is an Americanized pilsner that I have evolved for him over the years. Sweeter than a standard pilsner, but still crisp and refreshing, I can't keep this around long in the Summer months." Push began brewing in 1999 after buying a starter homebrew kit as a bad joke for a friend who earned a DUI and getting one for himself as well on impulse at the register. After going all grain in 2002, it was clear that automation was a necessity in his process, and his love of brewing gadgets was born. His first stand was designed and built in 2003 and his first Wort-O-Matic control panel in 2006. These led to the launch of wortomatic.com and a close relationship with MoreBeer! and The Brewing Network. Jonathan Plise has been making beer since the year 2000. He then spent the next few years researching and developing his recipes, fermentation regimen, and sanitation - Jonathan's most dramatic improvements came when he learned about oxygen and yeast starters. Jonathan became a famous homebrewer starting in 2005 when he recieved 33 awards for his beers, including several at the National Homebrewers Competition. He has also won California Homebrewer of the Year.
Jonathan's Munich Helles is rich and complex. The malt is upfront and smooth, while being anchored by the low hop additions. He has won 9 awards with this recipe, including one Best of Show and a Gold at the NHC in 2005. Jonathan recommends White Labs WLP833 German Bock Yeast

Maybe you have heard of John Palmer? His best selling "How to Brew" is the default homebrewing text. John gave us this recipe early on and it has always been a special recipe. John describes his kit as: "a smooth, copper lager that strikes the perfect balance between a toasty sweet malt body and the noble overtures of the hops. This interpretation of the Vienna style has more hop flavor dancing around the edges than the current BJCP guidelines specify, but the hop profile really complements the rich malt palate for a lively complexity that you don't get from the hoppier Bohemian Pilsener or maltier Oktoberfest styles, and is richer and smoother than Dortmunder Export." This beer will not disappoint! Thanks, John, for the kit, the book, and the advice! John recommends White Labs WLP833 for a dried beer, and WLP820 for a maltier version.

Gary Glass started homebrewing in 1992, shortly after tasting his first homebrew while attending while attending college at Cal Poly, San Luis Obispo. Gary brews on a home-built HERMS system, and he's never brewed the same recipe twice and can't brew any recipe without some kind of tweaking. Gary is a BJCP judge who has judge in many competitions including the World Beer Cup and the Great American Beer Festival. Gary is also now president of the American Homebrewers Association!
Gary holds a Masters Degree in American Diplomacy from the University of Colorado at Boulder. When not homebrewing, he enjoys fly fishing, hiking, and backpacking in the Rocky Mountains. He's also into gardening (his Cascades finally produced a good crop this year!), home improvement projects, and building furniture.
Gary lives in Longmont, Colorado with his wife Erin, who fully supports his brewing habits she bought him a conical fermenter and is encouraging him to install taps in their family room. He knows you are jealous. Gary is looking forward to teaching his daughter, who is due in November, to brew someday.
Gary enlightens us on how to authentically brew his beer: "This recipe can be brewed as either a Maibock or a Belgian strong ale. The beer was originally brewed as a 10.5 gallon batch split into two carboys with yeast slurry from previously brewed pilsner. To accurately recreate the Belgian strong ale, one should accidentally pour hot wort (due to user error with a counter-flow chiller) onto lager yeast slurry, being sure to thoroughly cook the yeast. Chill, then pitch a vial of Belgian ale yeast. The Maibock came out great, the Belgian strong even better. Of course, if you don't feel like attempting to cook yeast to make this beer, a nice big starter of Belgian ale yeast should do the trick."
