Gravity-based systems usually involve spirits being transferred to a holding tank, and unless your bottles and holding tank are pre-flushed with inert gas, some degree of oxidation is inevitable. Xpress Fill bottling systems have a closed pathway with a self-priming pump. They also have as an optional built-in sparging (pre-flushing) system that uses Nitrogen or Argon to pre-flush your bottles. To use, place two bottles under the filling spouts, push the gas button (optional at additional cost) to flush the bottles with inert gas. The modular design allows you to remove the borosilicate glass column and run it as a pot still for gins, whiskeys, grappa, brandy, and rums. This column is recommended for intermediate to advanced hobbyist distillers entering the commercial sector who want to a visual indicator of how the still is performing. New distillers are best suited to learn the basics with the AlcoEngine Reflux and AlcoEngine Pot Still range before venturing up to different types of distillation. This distillation kit is Cooling Management still, whereas the AlcoEngines are Liquid Management stills that restrict the flow of distillate, forcing a desired reflux ratio. With this design you are controlling the input of water to the RC component on the column to knock down vapors to fill the bubbler plates, taking on a small portion of the lightest vapors first and condensing them back into liquid as your final distillate. How The Bubble Plate Column Works: Vapor will come into contact with the plates and caps inside the column, causing the vapor to condense back into a liquid. This will happen at the very top of the still where the RC cooler will knock that vapor back into a liquid, causing a reflux action. As the liquid then falls down from bubbler cap to bubbler cap, the liquid that falls is eventually forced back up through the plates again. This process of being forced to run through the caps and plates multiple times creates an end product that has essentially been distilled multiple times in a single run, meaning you can get higher proof alcohol when compared to an empty column. The bubble plates perform a similar function as the copper packing in a hybrid column, but does so more efficiently. When running a bubble plate column, the first run will start in the range of 72.5%-85%. Depending on the quality of the wash, you can reach up to 95%-96% ABV, the highest-grade ethanol you can distill. Please note: There is no instruction manual. Columns & Routing Vapor The column manifold features a series of 3-way valves used to route vapor into or past each column. For example, during a vapor infusion run while making gin, you would route the vapor into the infusion column to pass through any botanicals you've added to the gin basket, and then bypass the copper 4-plate column, bypass the steel 16-plate column, and route the vapor to the product condenser. Conversely, for the highest purity neutral spirit, you would bypass the infusion column and route the vapor through both the copper 4-plate column and steel 16-plate column before entering the condenser. The beauty of this system is how easily you can adapt it to the type of spirit you want to produce. Simply, bypass columns or close off individual plates as needed. Clean-In-Place As mentioned above, this distillation system truly is a one-time installation with no breakdown required—when it comes to making different spirits but also when it comes to cleaning. Each part of the system from the kettle to the condenser and each plate features a CIP spray ball for convenient and thorough cleaning. The included CIP pump is powerful enough to clean an entire column at once, or you can flip the valves to clean individual plates if desired.   Please note: You will need to add a power supply for the pump and agitator (3 phase, 220V), pressure regulator for steam, and plumbing for the condenser's water source. What Is a Whiskey Barrel? In many distilleries, the secret ingredient is the barrel. This unassuming container does far more than hold the precious whiskey as it ages. Explore the anatomy, flavor factors and multiple lives of whiskey barrels to better appreciate these wooden marvels. Take a moment to admire the craftsmanship of a staved barrel before preparing to make your own whiskey or other brew at home. Anatomy of a Whiskey Barrel It all starts with the staves. The material chosen to make whiskey barrel staves, or long, thin pieces of wood, is carefully considered. The natural wood will imbue a surprising amount of flavor and mouthfeel to the whiskey, so a white oak barrel is a whole different animal than an Irish oak one. Whiskey needs to be aged in a barrel for a set period of time, which is regulated by law in many countries. In the United States, whiskey can’t be labeled as straight whiskey without aging in charred oak for at least two years. Other countries require three years or more. Why the Barrel Matters A whiskey barrel is the critical ingredient that separates different types of whiskey. The quality of the barrel can also separate a great drink from a subpar offering. A properly dried and charred barrel of a specific tree species can impart a wide range of complexity and flavor. You may notice that whiskey barrels don’t have the same flawless look as wine barrels. This is partially a matter of aesthetics, but also due to the fact that wine is much more sensitive to microbial infection consideration. Whiskey is less likely to leak out of a small imperfection in a barrel and less likely to be affected by a slight leak. Green staves would provide an acrid, unpleasant flavor to the drink. Instead of the natural drying process of wine barrels, whiskey barrels are usually kiln dried, though some distilleries are turning to natural-dried barrels for their product. All whiskey barrels need to be toasted or charred to create a finished barrel. The length and temperature of heat used in the process dramatically affects the flavor of the final product, so distillers carefully consider various types of toasting or charring. If making Bourbon, the legal requirement is a charred barrel, so many whiskey distilleries prefer this high heat process. The barrel selection process can’t be overstated. It’s estimated as much as 60% of the flavor of your whiskey comes from the barrel. Poor barrel manufacturing or improper barrel selection can create an unappealing, lackluster bottle. Second and Third Lives of Whiskey Barrels The United States requires all straight whiskeys to be produced in a new barrel. This doesn’t mean that the barrel has reached the end of its life after a single aging process. Irish whiskey in particular uses barrels after they’ve aged Bourbon.
