    Vienna Malt - Viking Malt

    5 reviews

3.2-4.3 ° L - Viking Malt  - Viking Vienna Malt is cured at slightly higher temperatures than pilsner malt. Consequently Vienna Malt gives a golden colored beer and increases body and fullness. Due to the higher curing temperature, the enzyme activity of Vienna Malt is slightly lower than that of pilsner malt. Flavor of Vienna Malt is subtle, including maltiness, some sweetness and hints of caramel aromas. Slightly nutty sensations can also be found. Vienna Malt is well suited for relatively pale colored beers. Typical application is to enhance color and aroma of light beers. Vienna also has its own beer type, Vienna lager, which is famous for its deep golden color and malty taste. In 2016 Viking Malt and Danish Malting Group joined forces to better serve their customers. Wheat Malt - Viking Malt

    3 reviews

1.7-2.6 °L - Viking Malt - Viking Wheat Malt is produced from spring wheat.  Wheat goes through all the same process steps as done with barley malting.  Anyway, some special attention is needed during the germination because the shape of wheat kernels may promote very dense bed formation. Also the fact that the root let growth is modest keeps the wheat bed very tight. Due to this the temperature of the bed tries to rise easily. Especially during summer times there should be enough cooling capacity to perform controlled germination. Kilning end temperatures are in the area of 72-80C. Viking Malt’s Wheat Malt is well modified malt giving easiness in the brewing process. There is enough “everything” and it works well in high percentages giving its own amylase activity into the brew. The Viking Malt Wheat malt gives good flavor with low coloring values.  The extract content is high. In 2016 Viking Malt and Danish Malting Group joined forces to better serve their customers. Munich Light Malt - Viking Malt

    1 review

6.6 °L - Viking Malt - Viking. Curing temperatures in the range of 110–120°C give the malt an aromatic, nutty character. The high curing temperature results in clearly reduced enzyme activities compared to Pilsner Malt. Munich Malt is ideal malt for dark lagers, festival beers and bocks for underlining malty flavors and full bodied taste. The decreased enzyme activities have to be taken into consideration when designing the brewing recipe. In 2016 Viking Malt and Danish Malting Group joined forces to better serve their customers. GERMAN is the classic lager strain from Weihenstephan Germany that has been used for generations Produces clean, balanced lagers from pilsners to doppelbocks Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation before pitching required Ferment between 50-59°F CellarScience offers high-quality yeast that is easy to use, consistent, and available at a tremendous value The classic lager strain from Weihenstephan Germany that has been used for generations to produce clean, balanced lagers from pilsners to doppelbocks. Like all CellarScience yeast, GERMAN is eligible for direct pitch straight into your wort. CellarScience provides 12g of yeast per sachet, which is up to 9% more than any other brand of dry yeast. Every batch of yeast is PCR tested to ensure quality. GERMAN has been selling to pro breweries for awhile but was just recently packaged down to sachets for homebrewers. Dosage: Two sachets are enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2.5–4 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly. Direct Pitch or Rehydrate: GERMAN yeast is designed to be sprinkled directly onto the surface of your wort with no oxygenation required in the initial fermentation. Our aerobic growth process makes this possible by creating dry yeast with high viability and high sterol levels. GERMAN yeast is pre-loaded with essential nutrients to ensure a successful, complete fermentation. While not required, some brewers prefer to rehydrate yeast. To hydrate yeast, first, sanitize the yeast brick and scissors. Use 10 grams of sterilized tap water between 85-95°F (29-35°C) mixed with 0.25 grams of FermStart per gram of yeast. Sprinkle yeast on the water. Allow the slurry to stand undisturbed for 20 minutes, then swirl. Use small amounts of wort to adjust to within 10°F (6°C) of wort temperature before pitching. Ferment between 50-59°F (10-15°C). Optimum Fermentation Temp: 50-59°F Flocculation: High Alcohol Tolerance: 9-10% ABV (WY2124 9%) Attenuation: 78-85% Similar Strains: WLP830, WY2124, W-34/70 Gluten-free CellarScience Yeast: For years liquid yeast has been sold as the higher quality option but times are changing. Yes, 20 years ago dry yeast was made by bread yeast producers and the quality was not as good as liquid yeast. CellarScience is helping to flip that script with a full lineup of high-quality dry yeasts. Cell count and viability is usually higher than commercial liquid yeast pitches, which vary from pouch to pouch and don't ship well. CellarScience yeast can be pitched directly in most batches of wort, offering significant time savings. Yeast that is quick and easy to use, high quality, and available at a reasonable cost adds up to a tremendous value. Quality yeast that doesn't "break the brink". CellarScience Nutrients: For high gravity ferments consider rehydrating yeast with CellarScience FermStart yeast hydration nutrient. For high gravity or low nutrient wort, feed your fermentation with CellarScience FermFed DAP Free complex yeast nutrient mix.

  • Fermaid K - PLACEHOLDER Fermaid K - PLACEHOLDER

    Fermaid K

    26 reviews

Smart brewers know that a yeast starter is the best way to ensure proper cell count and yeast viability prior to pitching. If you want a reliable starter for your batch of beer, you need to feed the yeast. Adding a yeast nutrient to the starter will give the yeast an added boost! Fermaid K is a yeast nutrient that works for starters and main fermentation. Here’s how it works: Fermaid K is a complex formula that provides DAP, free amino acids, yeast hulls, unsaturated fatty acids, sterols; and micronutrients such as magnesium sulfate, thiamin, folic acid, biotin, calcium pantothenate, and other vitamins and minerals. Yeast use Nitrogen for protein synthesis and to maintain cellular growth. Nitrogen from the alpha amino acids contained in Fermaid K is utilized much more efficiently than from the ammonia salts like DAP. The unsaturated fatty acids and sterols available in Fermaid K are important survival factors needed to maintain alcohol resistance. They also help keep volatile acidity levels low. The cell wall fractions, available through the included yeast hulls, absorb medium chain fatty acids that are toxic to the yeast. They also provide nucleation sites to help keep the yeast in suspension. You do not need to add any additional fertilizers or DAP when adding Fermaid K. Use approximately 1 gram per gallon. Rehydrate in distilled water. A rough approximate of weight is 1 tsp = 4.7 grams. We highly recommend using a scale to weigh the product for an accurate dose. For a similar product check out CellarScience® FermFed Yeast Nutrient!

  • Fermentis Dry Yeast - Saflager S-23 - PLACEHOLDER

    Fermentis | SafLager™ S-23 Lager | Dry Beer Yeast

    27 reviews

S-23 is highly recommended for making fruity and hoppy lagers Originating from Berlin, Germany, this lager strain can ferment as high as 64°F Fermentis active dry yeast offers reliability, ease-of-use, and consistency to home and professional beverage makers across the world Great to keep on hand, either as a backup, or as a go-to yeast for your lagers. Produces a nice lager taste: clean and crisp. Finally there is dry lager yeast we can recommend. This bottom fermenting yeast is widely used by Western European commercial breweries. This yeast develops the best of its flavors when fermented at low temperatures (54-59°F) yet it can still produce "lager characteristics" at higher temperatures. We recommend that you keep it between 54-59°F to produce the best beer possible. This yeast can be pitched directly, but if you prefer to rehydrate, the instructions are below. Sprinkle the yeast in a minimum of 10 times its weight of sterile water or wort (we suggest 4 oz) at 70°F to 77°F (21 to 25 °C). Do not stir. Leave to rest 15 to 30 minutes. Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel. Attenuation: 80-84% Sedimentation Time: Fast Alcohol Tolerance: 9-11% ABV Optimum Fermentation Temp: 54-64°F Like Fermentis Saflager S-23 Lager Yeast? Then you will love CellarScience® BERLIN Dry Lager Yeast!

    Magnum | Pellet Hops

    8 reviews

Magnum is a great bittering hop with an aroma similar to a strong Willamette. It therefore works well with Willamette, Fuggles, and British Kent Goldings when used as an aroma hop in later boil additions.  Magnum makes an incredibly useful bittering agent in just about any beer, and due to its very smooth bitterness, you can really use as much as you want. Clean smooth bitterness with a slight floral/fruity aroma. This German variety generally has a higher AA content than US Magnum. This is the main high alpha variety grown and used in Germany. Fantastic hop to use for bittering.  Hop Statistics: Alpha Acids: 11.0 – 16.0% Beta Acids: 5.0 – 7.0% Alpha-Beta Ratio: 2.2 – 3.2 Cohumulone: (% of alpha acids): 21 – 29% Total Oils in mls per 100 grams dried: 1.6 – 2.6 Storage(% alpha acids remaining after 6 months storage at 68° F): 80 – 90% Similar Hop Varieties: Taurus, Nugget, Columbus

    13 reviews

ENGLISH is a rapid fermenting English ale strain that is loved for its clean flavor, neutral aroma and dry finish Recommended for all types of ales from malt-forward Ambers and Porters to high-gravity IPAs and hoppy Pales Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation before pitching required Ferment between 61-70°F CellarScience offers high-quality yeast that is easy to use, consistent, and available at a tremendous value A rapid fermenting English ale strain that is loved for its clean flavor, neutral aroma and dry finish. This yeast settles quickly and forms a compact sediment. Like all CellarScience yeast, ENGLISH is eligible for direct pitch straight into your wort. CellarScience provides 12g of yeast per sachet, which is up to 9% more than any other brand of dry yeast. Every batch of yeast is PCR tested to ensure quality. ENGLISH has been selling to pro breweries for awhile but was just recently packaged down to sachets for homebrewers. Dosage: One sachet is enough to treat a 5–6 gallon batch. When calculating for larger batches, use at a rate of 2–3 grams per gallon of wort. We recommend rounding up by one full sachet rather than measuring out the yeast exactly. Direct Pitch or Rehydrate: ENGLISH yeast is designed to be sprinkled directly onto the surface of your wort with no oxygenation required in the initial fermentation. Our aerobic growth process makes this possible by creating dry yeast with high viability and high sterol levels. ENGLISH yeast is pre-loaded with essential nutrients to ensure a successful, complete fermentation. Ferment between 61-70°F (16-21°C). Optimum Fermentation Temp: 61-70°F Flocculation: Very High Alcohol Tolerance: 12% ABV Attenuation: 75-83% Similar Strains: WLP007, WY1098, S-04 Gluten-free CellarScience Yeast: For years liquid yeast has been sold as the higher quality option but times are changing.
