Balazs barrels is a long-trusted brand of Hungarian oak barrels coopered by the famous Balazs Nagy. These barrels are equal or better in quality to French Oak barrels but available at a fraction of the cost of their more famous counterparts. Renowned for respecting fruit, Hungarian barrels offer winemakers a great option to impact the mouthfeel, structure and flavor of wine without stepping on the terroir of your grapes.
Due to the tight grain and slow release of phenolic compounds, you can feel secure storing your wine in Hungarian barrels longer than you can with other barrels. The slow process of micro oxygenation rounds the wine while various compounds in the wood such hemicellulose, lipids, and lignins are slowly integrated.
As most barrel makers know, the best source of wood for wine barrels is the oak grown in the territory of old-time Hungary, known as Slavonian oak. This rare, high-quality oak can be found in the Zemplén Mountains and in the Tokaj oak woods. The specific type of oak in those territories, and what is used in Balazs barrels, is the Quercus Petrea. This oak is characterised by a dense, hard structure combined with extra flavor. Forestry workers look after these forests with considerable expertise, and the forest density ratio in Hungary is 20–24%, with selective logging taking place between November and April. Once the wood is sourced, it is air dried and aged for 24-28 months before cooperage.
Balázs Barrels is establishing a direct cooperation with the forestry workers, ensuring the continuous supply of the best quality oak, allowing them to source and work with the most excellent oak for wine barrel manufacturing from the foremost Hungarian forests.

Protocol

A longer contact period (up to several weeks) may deepen texture refinement depending on wine style.

Reskue – Yeast Derivative Nutrient for Detoxifying and Restarting Stuck Fermentations

Reskue is a specific inactivated yeast derivative developed by Lallemand to help winemakers recover from sluggish or stuck fermentations. Unlike generic yeast hulls, which offer general detoxification support, Reskue is produced using a proprietary process that dramatically enhances its surface area and binding capacity for fermentation-inhibiting compounds—especially short- and medium-chain fatty acids. These compounds are produced by stressed yeast and can block sugar transport, stalling fermentation. Reskue removes them more efficiently than standard hulls, helping yeast and bacteria resume healthy metabolic activity. This makes Reskue particularly valuable not only in stuck alcoholic fermentations but also in challenging malolactic fermentations where similar toxins can block bacterial performance.
Protocol
Suspend Reskue in 10 times its weight of clean water at 30–37°C (86–98°F). Stir thoroughly and let sit for 20 minutes before adding to the fermentation. Mix evenly into the tank. In stuck alcoholic fermentations, allow Reskue to settle for 48 hours, then rack off before initiating the restart protocol.

Styrian Cardinal is one of the newest Slovenian hop varieties available. Originally developed and released by the Slovenian Institute of Hop Research and Brewing, Cardinal was bred from European and American germplasm. This aroma hop is known for its citrus, gooseberry and pineapple character.

Speidel was the original manufacturer of the bladder press. While similar to the Italian models in operation, Speidel offers a few quality upgrades. To obtain a better press Speidel uses a slotted screen, similar to what is offered on large commercial presses, instead of a screen with circular perforations. Speidel presses also offer superior hardware, a recessed valve assembly (to reduce accidental breakage) and a stainless frame on the 180L model. Compared to other presses, the Speidel hydro press has a higher juice yield (~65-70%) and works completely without electricity and with minimal effort.
This press can be used with any domestic water supply the provides at least 2.5 bar (36 psi) of pressure. Pressing pressure and pressing time is simply regulated by the water flow. These units are extremely easy to care for and can be cleaned quickly by simply spraying it down with a hose after use. You will find the quality you'd expect from a product that is 100% German-made

FAQ:
Can the press be operated with air pressure?
No. These are hydraulic presses that may only be operated with water. When operating with compressed air, there is a risk of explosion and a very high risk of injury if the membrane bursts due to excess pressure or damage.
Is a minimum water pressure required?
In order to ensure the function and the best possible yield, there should be a minimum water pressure of 2-2.5 bar on the press.
What if the water supply delivers more than 3 bar?
In principle, this is not a problem, as if the water pressure inside the press exceeds 3 bar, the pressure relief valve opens and there is no pressure-related damage.
How many apples make how much juice?
On average, 50kg (110 lbs) of apples produce around 30-35L (8-9 gal) of juice, depending on the variety and quality of the apples.

Variable Capacity tanks, also called Variable Volume tanks, made in Italy by Marchisio. This style of tank features a ‘floating’ lid with an inflatable gasket that can be positioned at any height in the tank. Use the included air pump to inflate the lid gasket. Whether you position the lid directly on the liquid, just above, or at the top of the tank is up to you. They are used as affordable stainless production tanks for applications ranging from winemaking to pickled foods and Kombucha.
Considerations for Winemaking
When used in winemaking we recommend these tanks for fermentation and short-term storage. If you are considering storing wine in a variable volume tank for longer than a month, we suggest you consider our German-made Speidel Variable Volume Tanks. In addition to other quality features like a mirror polish inside, thicker stainless, and robotically welded seams, Speidel tanks feature a proprietary lid gasket that only fits their tanks. This gasket is made from a very high quality, thick, white, food-grade, material that makes a true seal and resists oxygen transfer. All variable volume tanks other than those from Speidel, including these tanks from Marchisio, feature a standard clear gasket that is sufficient for many applications, but we do not recommend them for long term wine storage.

Use your existing glycol system to cool your cellar Eliminates the need to purchase an entirely separate refrigeration system MR series fan units offer quieter operation compared to the SD-S units Sized for well-insulated rooms up to 8,750 ft³ Made in Germany by Kreyer Cool your cellar using your existing glycol system. Save energy and money! These units work under the same principles as standard refrigeration but use cooled glycol instead of cooled refrigerant gas, eliminating the need to have a separate refrigeration system. It is a fantastic use of your glycol system for a majority of the year when typically glycol systems are on but are being sporadically called upon. Glycol systems do need to be sized to accommodate both these fan units and peak duty during the crush to be able to accommodate all tasks at once. Glycol from your main glycol chiller is recirculated through these fan units. Aluminum fins act as heat exchangers drawing heat out of your room as the fins are cooled by the glycol. If you have a Kreyer chiller/heater you can even heat a space in cold weather environments. The heat exchangers inside the units are made from corrugated aluminum fins and internally grooved copper tubes. The white ABS casing looks great. Because of its rounded corners it has no water retaining areas favorable to germ development. Units are outfitted with stainless steel screws and show no sharp, cutting edges. Fan Unit Temp Control Upgrades: 1/2 in. Solenoid Valve - Allows or blocks flow of glycol through the fan unit. Needs to be connected to a Controller to function. A filter is recommended to protect the solenoid. 1/2 in. Solenoid Filter- protects the solenoid valve from any particulate or sediment. Glycol Fan Control Unit - Set a specific temperature on this controller and it will open and close the solenoid valve. Solenoid Connection Cable - This 2 meter long cable is required to connect the Solenoid Valve & Control unit. It is equipped with a powerful pump, which can be controlled from the touch-screen. The wort is circulated up through the center-pipe and the pump is fitted using Tri-Clamps making it very easy to remove, even when the tank is full. The malt pipe has latches that folds out when you lift it, so you can use both your hands for lifting. Sparging is done without tubes or pipes outside the tank. A sparge tube installed on the outside of the centerpipe follows the malt pipe when lifted also lifting the wort spreading device. This makes it very easy to sparge from a separate tank without making a mess. After brewing with the B80pro, you never have to turn it upside down for cleaning. The centerpipe is removed easily, and you can easily clean the unit, and all the trub will be drained directly to a bucket or the drains. Use the included circulation device as a CIP solution to save time and cleaning chemicals. The system has two digital temperature sensors - one in the bottom of the tank and one before the pump. The maxium static offset is ±0,5°C. The sensors can be individually calibrated for maximum accuracy. They have an accuracy of 0.1°C. It's also possible to connect a third sensor (accessory) to monitor the temperature of the wort returning from the counterflow cooler, so you can pump directly to the fermenter when the temperature is right. Barrel Oxyfresh is great for cleaning out oak barrels or breaking in new barrels. It is much safer and easier to work with than soda ash. Formulated especially for commercial and home wineries.
Directions: Fill barrel halfway with cold water and dissolve 0.2 - 0.6 oz. per gallon of barrel capacity. Agitate to dissolve the product, then top with cold water and loosely bung barrel. Allow barrel to soak for 24 hours prior to draining and rinsing.

Perhaps your wort was too hot when you transferred from the kettle, or while cleaning you dropped the FermZilla against something sharp that punched a hole, or maybe it's just time to replace the tank after acquiring too many scratches from normal wear-and-tear. Whatever the reason, no need to go buy a whole new FermZilla! Just pick up one of these fresh replacement tanks and your conical fermenter will be good as new! Pressure Stress If you use the FermZilla to ferment under pressure, or you use CO2 to pressure transfer or force carbonate your finished beer, it is very important that you conduct semi-annual inspections of your tank. Even with perfect care, the FermZilla tank may show signs of wear from pressure stress over time. We recommend visually inspecting your tank for stress creases or other signs of wear once or twice a year. A hydro test should be conducted every two years, even if no signs of wear are found. The process is simple: Fill the tank to the brim with water Replace the Red PRV with a Green PRV rated to 4.5 BAR or higher Pressurize the tank to 4 BAR (58 psi) Check for leaks, then replace the Red PRV when finished If leaks or potential points of failure are found, replace the tank before you continue using pressure with your FermZilla. General Care Taking good care of your FermZilla begins with cleaning and sanitizing the unit before and after use. The tank is made from food-grade PET, which is beautifully clear, but can be sensitive to long soaks in cleaners and acid-based sanitizers. In general, we do not recommend leaving products like PBW or StarSan soaking in the tank for more than an hour. Extended soaks have the potential to degrade the PET material and shorten the lifespan of the tank. KegLand Part Number: KL15219 NOTE: FermZilla tanks are marked with a manufacturer’s “expiry date”. This does not indicate that the tank is bad after this date; it simply indicates that a hydro test may be in order. 2 years after production and every 2 years after first use, it is recommended that the tank be hydro tested to ensure the tank is holding pressure. Hydro test instructions are available here. You will also need the D1072 Green PRV to perform the test. If you do not plan to pressurize the fermenter, the test is not necessary.
This 50' x 3/8" coil, manufactured in the MoreBeer! metal shop, is perfect for the enterprising homebrewer who wants to build or upgrade a jockey box. When compared with 5/16" coils that are usually used to make draft boxes, the 3/8" coil holds more beer and offers more surface area for faster cooling. And, because there is less resistance from the larger diameter tubing, the beer can be pushed through the lines with less CO2 pressure. Considerations for Winemaking
When used in winemaking we recommend these tanks for fermentation and short-term storage. If you are considering storing wine in a variable volume tank for longer than a month, we suggest you consider our German-made Speidel Variable Volume Tanks. In addition to other quality features like a mirror polish inside, thicker stainless, and robotically welded seams, Speidel tanks feature a proprietary lid gasket that only fits their tanks. This gasket is made from a very high quality, thick, white, food-grade, material that makes a true seal and resists oxygen transfer. The BevBright 30" Sterile-Grade has a Polyethersulfone (PES) membrane. Sterile PES membranes have individual .45 holes that do not allow particulates larger than .45 micron to pass. PES Cartridges provide the ultimate biological barrier and should be used as the final sterile filtration as your beverage is in route to your final packaging.
A Polyethersulfone layer looks like white film with .45 holes that you cannot see. This film is then supported with a 100+ micron layer of PE on both sides to stability. This outer layer is what you see when you look at a filter. Our PES filters will not hold very much particulate, often called dirt in the filtering world, and will clog very quickly unless your wine is exceptionally clean.
For white wine, a very common usage, it is best to fine and/or filter the wine beforehand as applicable. On bottling day filter first with a pleated BevBright 1 micron filter and then this .45 Sterile PES Filter en route to the bottle.

Speidel was the original manufacturer of the bladder press. While similar to the Italian models in operation, Speidel offers a few quality upgrades. To obtain a better press Speidel uses a slotted screen, similar to what is offered on large commercial presses, instead of a screen with circular perforations. Speidel presses also offer superior hardware and a recessed valve assembly (to reduce accidental breakage). Compared to other presses, the Speidel hydro press has a higher juice yield (~65-70%) and works completely without electricity and with minimal effort.
This press can be used with any domestic water supply the provides at least 2.5 bar (36 psi) of pressure. Pressing pressure and pressing time is simply regulated by the water flow. These units are extremely easy to care for and can be cleaned quickly by simply spraying it down with a hose after use. You will find the quality you'd expect from a product that is 100% German-made.
Speidel has been shifting their bladder presses from painted to all stainless, and we're pretty excited about it. Although the orange painted versions have their own aesthetic appeal, nothing beats the performance and practicality of stainless steel. Stainless is much easier to clean and much more resistant to rust. The painted versions are likely to chip over time through normal wear and tear, creating small crevasses for bacteria to call home. No such worries when working this beautiful, brushed stainless press.

FAQ:
Can the press be operated with air pressure?
No. These are hydraulic presses that may only be operated with water. When operating with compressed air, there is a risk of explosion and a very high risk of injury if the membrane bursts due to excess pressure or damage.
Is a minimum water pressure required?
In order to ensure the function and the best possible yield, there should be a minimum water pressure of 2-2.5 bar on the press.
What if the water supply delivers more than 3 bar?
In principle, this is not a problem, as if the water pressure inside the press exceeds 3 bar, the pressure relief valve opens and there is no pressure-related damage.
How many apples make how much juice?
On average, 50kg (110 lbs) of apples produce around 30-35L (8-9 gal) of juice, depending on the variety and quality of the apples.
For use with the 65L BrewZilla Boiler Extension Kit. It does not come with an extra Wire Malt Pipe Support Ring. If you're using the extended malt pipe with the 65L DigiBoil, you will need to purchase the ring separately. If you're using the malt pipe with the 65L BrewZilla you can either move your ring up to the boiler extension, or buy an additional ring so you can remove the malt pipe in two steps.

The HI9146 is a rugged, portable dissolved oxygen (DO) meter designed to provide laboratory precision and accuracy under harsh environmental and industrial conditions. This meter offers many features including automatic calibration, auto-endpoint detection, and compensation for temperature, salinity and altitude. The HI9146 is supplied complete with polarographic probe, PTFE membrane caps, electrolyte fill solution, and rugged carrying case.

Application Note
During the aging process, wine can range from 6-9mg/L and when bottled most wines should be below 1.25mg/L for Red and 0.6mg/L for white. Based on specifications, the HI9146W is well suited for use during the fermentation/aging process in both beer and wine, however it is not recommended for use during the bottling process.

Polarographic Measuring System
The meter and probe use polarographic sensor technology based on the Ross and Clark polarographic measurement method. The probe is comprised of a platinum cathode and silver anode in an electrolyte solution held in place over the surfaces of the electrodes by a polymer membrane. An external voltage applied across the system establishes a current proportional to the concentration of dissolved oxygen.
Replaceable Membrane Caps
The pretensioned thin polytetrafluoroethylene (PTFE) membranes employ a screw cap design that can be changed quickly by simply filling with the HI7041 electrolyte fill solution and screw on the DO probe.
Automatic Calibration - Calibration can be performed at one or two points to 100% and/or 0% saturation. The 100% saturation is done in air while the 0% is done with the HI7040 bicomponent zero oxygen solution.
Good Laboratory Practice (GLP)
The Good Laboratory Practice feature allows the user to recall calibration information including date, time and calibrations points.
Automatic Temperature Compensation - All readings are automatically compensated for temperature variations with a high accuracy, built in linearized thermistor temperature sensor behind a stainless steel cover.
Altitude Compensation
The HI9146 allows for altitude compensation for up to 4000 meters with a 100 meter resolution.
Salinity Compensation
Salinity compensation is adjustable from 0 to 80 g/L (ppt) with a 1 g/L resolution for the measurement of DO is brackish and seawater.
Auto End Point
The HI9146 features an auto endpoint mode in which when selected the reading will frozen on the display once a stable measurement is obtained. The auto-end feature allows for consistency among various users by ensuring that stability has been achieved before recording a measurement.
Backlit LCD
The HI9146 has a display with a backlight for easy viewing of readings in poor lighting conditions.
Battery Error Prevention System (BEPS)
The Battery Error Prevention System detects when the batteries become too weak to ensure reliable measurements. The backlight feature is automatically disabled when batteries are getting low and a clear indication is displayed to warn the user of this condition.
Thin Polarographic Dissolved Oxygen Probe for Wine
The HI76408 is a thinner Clark-type polarographic dissolved oxygen probe for Hanna’s benchtop and portable dissolved oxygen meters. The probe is constructed of durable ABS plastic and contains an integrated temperature sensor for temperature compensated measurements. It is compatible with our HI76407A/P PTFE membrane caps. Each membrane separates the probe’s platinum cathode and silver anode from the water sample being measured. Oxygen diffuses across the membrane and interacts with the polarographic system to produce a current proportional to oxygen concentration. Each cap is easily filled with HI7041 electrolyte and screwed on to the probe. The probe’s thin design makes it ideal for wine packaging measurements.

How These Work: Grapes are loaded into the top bin where the powered screw feed continually pushes grapes towards the rollers. Grapes are gently crushed by the rubber rollers and then fall into the destemming chamber. The destemming chamber features a removable basket with a bunch of circular holes in it and rotating destemming shaft. Grapes fall through the holes into your bucket. Stems get rotated through the basket by the destemming shaft until they exit at the end of the machine where they fall onto the ground or an awaiting bucket. Start with the inner most shank hole on either side and work your way outward. We recommend installing each shank and attaching the draft tubing before moving on to the next shank hole. The top section of the tower is 5" in diameter, so most people should be able to reach inside to install the shanks by hand or with the help of a draft wrench. When all the shanks have been mounted, reinsert the foam insulation. The tower may come with more insulation than needed and may need to be cut thinner before reinserting.
