The greatest examples of Sangiovese are remarkably complex, savory, and rustic. If you're deciding between the DigiMash and the BrewZilla, there are a couple of key differences worth noting. One of our favorite features of the BrewZilla is the programmable mash steps and delayed start, which the DigiMash does not have. You can still step mash by simply raising the temperature manually on the controller, but the automatic steps are a convenient feature if you want to set it and forget it. The other major difference between the two systems is that the BrewZilla features a built-in pump for recirculating the mash. Recirculation is a great way to improve mash efficiency, but it is far from required for a successful brew day. Using an external pump with the DigiMash is also an option, and one can be integrated for mash recirculation quite easily. Simply connect the ball valve to the inlet of your pump, and then connect the outlet of the pump to our Sparge Arm Assembly. This model comes with the 35L DigiBoil, which has two built-in heating elements that run off a 220V plug. One element is 1900w and the other is 500w for a combined 2400 watts! The elements can be individually controlled, allowing you to use a single element to gently hold temperatures, or engage both elements to quickly go from mash temp to boiling. Temperatures are set and automatically maintained through the digital control panel. Simply set your desired temperature and flip on the heating element(s). If you have access to 220V power, this is definitely the unit we recommend. Although 110V power is enough to get up to boil, 220V will get you there faster and provide a much more vigorous boil. Integrated stainless ball valve comes with a 13mm barb (approx. 1/2"). The barb can be removed to attach fittings with 1/2" FPT, such as our female threaded quick disconnect.     ICV-D80 was isolated by Dominique Delteil of the ICV in 1992 from the Cote Rotie area of the Rhone Valley. In addition to its' ability to enhance tannin structure, it's know for being able to ferment musts high in sugar and polyphenols. With proper nutrition, aeration and fermentation temperatures below 82 degrees F, ICV-D80 will ferment up to 16% alcohol. ICV-D80 brings high fore-mouth volume, big mid-palate mouthfeel and intense fine grain tannin to reds. It is one of the best strains for contributing big tannin volume in a blend. ICV-D80 is characterized by concentrated, dark fruit, smoke and a licorice finish. When blended with wines fermented with ICV-D254 or Syrah, wines fermented with ICV-D80 bring more tannin intensity to the blend. In short, this yeast is truly great for the structural support it can bring to a wine. However, if the winemaker is looking for highlighted fruit and ethereal top-notes as well, it often may not be the best choice when using a single strain in the vintage. Therefore, it may help to think of it as usually needing a companion strain to help bring everything to a finished wine. Renowned for its ability to enhance tannin structure.     20cm x 20cm filter pads made for 20x20 plate filters. 9-10 micron pads are considered to be a "very rough" filtration and are typically used to prepare the wine to be filtered by finer pads, usually either 5-7 micron; or also to pre-filter white musts prior to fermentation. Please note that all pad filters are rated 'nominal', meaning that about 90-95% of all particulate matter at the micron rating will be filtered out. There will always be a little bit of smaller material that is also filtered out, as well as some larger material that will make it through. The filters can be sterilized by in-line steam, auto-claving, dry heat, hot water or chemical methods. We choose to run Saniclean (CL27) solution through the pads followed by sterile water or a small amount of wine that is then discarded. After the solution is run through the pads, and the pads have softened, the filter will need to be re-tightened. Each pad has an entry side and an exit side, distinguishable by their different textures. The entry side is a billowy type texture, frequently called the "rough" side; and the exit side has a crosshatch pattern and is commonly called the "smooth" side.
