California Common is a unique beer style dating back to the days of the California Gold Rush, when brewers on the west coast incorporated caramel malts and additional hop character into their lager beers, helping mask the effects of warmer fermentation owing to a lack of available refrigeration. The resulting beer was a jack-of-all-trades: malty and full-bodied enough for a winter evening, but also hoppy and dry enough for the hottest California afternoon.
Here at MoreBeer! we love the classics, and Cal Common is no exception. But we’re a long way from 1849 and it’s time to give this classic, nearly forgotten beer style a chance to step into the modern age. To do that, we’ve combined the Northern Brewer hops that typify California Common with the Simcoe® hops that are so prevalent in today’s California IPAs, creating our first ever hop blend, “Norcoe.” The resulting beer is still a delicious jack-of-all-trades, but with a hop profile that’s at the same time common, and not Common at all!

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

The Pop Cultures Food Fermentation Screen keeps fermenting vegetables submerged in brine to eliminate the mold that happens when they float to the top and become exposed to air. It was designed to fit in the neck of our 1-gallon glass glass jars. Fill the jar to the top with brine to keep the jar full and veggies submerged. Depending on the length of your fermentation you may top up with a little additional water or brine as required. This custom slow-release fertilizer blend is great for first year hop plants. This is the exact formula used on The Hop Yard's large commercial hop fields. The world’s superlative winemaking grape, Cabernet Sauvignon is capable of producing the most complex, well-balanced, and lasting red wines you’ll ever come across. As one of the most tannic grapes used in winemaking, Cabernet Sauvignon has long been misunderstood as a wine that required ageing in order for it to develop and soften. But after decades of research, growers have learned to identify when the grapes are ready to be harvested based on the tannic ripeness, rather than sugar content alone. Although these wines are ideal candidates for ageing—and will develop beautifully when laid down—it is well within reach for winemakers to produce excellent, structured Cabernet Sauvignons that are well-enjoyed while they’re still young. Descended from Cabernet Franc and Sauvignon Blanc, this relatively young grape is believed to have sprouted up from a chance crossing in the 17th century. Regardless, Cabernet Sauvignon is now the most widely planted wine grape in the world. This is the grape that put Chilean winemaking on the map. Cabernet Sauvignon vines were first brought over from France in the 1800s and it didn’t take long for growers to recognize that the terroir was perfect for this and many other Bordeaux region grape varieties. Lallzyme C-MAX™ is a micro-granulated pectolytic enzyme derived from Aspergillus niger, formulated for use in white and rosé wine production where settling conditions may be difficult. With high activities of pectin lyase, pectin methyl esterase, and polygalacturonase, it provides fast, efficient breakdown of pectin, even at low temperatures (as low as 8 °C / 46 °F) or low pH. Its action reduces must viscosity, speeds up clarification, and generates compact, easy-to-rack lees. Because it contains no cinnamyl esterase, Lallzyme C-MAX™ also limits the formation of ethylphenol precursors, contributing to cleaner, more varietally expressive wines.
Protocol for Use:
Add after pressing or directly into the settling tank. Dilute the enzyme in 10 times its weight in water or juice before use. Mix thoroughly for uniform distribution. Do not add bentonite during enzyme treatment. Clarification typically completes within 24 hours depending on temperature and juice conditions.

Standard conditions (>12 °C / 54 °F): 0.5–1.0 g/hL = 0.005–0.01 g/L = 0.019–0.038 g/gal

Craig has been perfecting his Travelin Man recipe over the years by brewing for competitions and for his own consumption at home. Travelin Man is at the high end of the pale ale guidelines, with a nice balance between the malt and hops. This is a great beer to let cold condition. Cold conditioning brings forward the malt flavors and makes it even easier drinking. Craig created this beer to take the edge off a long day of driving on the southern California freeway system and as his house ale. So whether you have been to the East or just feel like someone has given you the third degree, this fine ale will deliver what you are looking for. Craig recommends using White Labs California Ale Yeast.

When beer is fermented under pressure, it allows for the production of a clean flavor profile, even when fermenting a lager at room temperature. Fermenting under pressure is advantageous in that it reduces ester and fusel alcohol production, reduces or negates the possibility of oxidation, carbonates the beer during fermentation and allows you to ferment warmer than you would otherwise. Use to ferment lager beer in one week! Ferment at room temperature (62-68°F) under 1.0 bar (14.7 PSI) until final gravity is obtained, generally in one week. Lager the beer at 35°F, 15 PSI, for 3-5 days, to condition. Sulfur production is strong first 2 days, then disappears by day 5. Do not need to carbonate, since at 1 bar entire time. This is a massive Imperial Porter that starts with 15 lbs of base malt and a laundry list of specialty malts. This recipe hails from the Project Extreme Brewing book. It was originally created by Dogfish Head coworkers where it won an internal small batch brewing competition on the basis of its amazing, unique flavors. Big and black with caramel, wheat, black, and chocolate malts to give it a dark, roasty flavor. You provide the Sanka instant coffee, cinnamon, and nutmeg. Named after the coffee drinking, pioneer science teach Mr. Hector Vargus from the 80's movie Fast Times at Ridgemont High. This is one of those rare beers that can age gracefully for years.
