Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

1.7-2.6 °L - Viking Malt - Viking Wheat Malt is produced from spring wheat. Wheat goes through all the same process steps as done with barley malting. Anyway, some special attention is needed during the germination because the shape of wheat kernels may promote very dense bed formation. Also the fact that the root let growth is modest keeps the wheat bed very tight. Due to this the temperature of the bed tries to rise easily. Especially during summer times there should be enough cooling capacity to perform controlled germination. Kilning end temperatures are in the area of 72-80C.
Viking Malt’s Wheat Malt is well modified malt giving easiness in the brewing process. There is enough “everything” and it works well in high percentages giving its own amylase activity into the brew. The Viking Malt Wheat malt gives good flavor with low coloring values. The extract content is high.
In 2016 Viking Malt and Danish Malting Group joined forces to better serve their customers. Now the new Viking Malt is the leading malting company in Northern Europe and supply raw materials and services to the global brewing, distilling and food industries. Viking Malt has 6 malthouses in areas where our distinctive Nordic barley is sourced: in Halmstad, Sweden; Vordingborg, Denmark; Lahti, Finland; Panevezys, Lithuania and in Sierpc and Strzegom, Poland. The annual malting capacity is close to 600 kilotons.

Eliminate Diacetyl: Prevents buttery off-flavors from forming by converting precursors into flavorless acetoin.
Faster Grain-to-Glass: Skip the diacetyl rest and safely shave up to two weeks off your lager maturation schedule.
Stop Hop-Creep: Neutralize frustrating secondary diacetyl spikes by dosing directly alongside your dry hops.
Nobody wants an accidental butterscotch bomb. Say goodbye to diacetyl off-flavors and drastically speed up your pipeline with White Labs Brewzyme-D. Formulated with the highly effective enzyme Alpha Acetolactate Decarboxylase (ALDC), this powerhouse additive is your ultimate insurance policy for brewing exceptionally clean beer.
Instead of waiting around for your yeast to naturally clean up diacetyl at the end of fermentation, Brewzyme-D stops it before it even starts. When added alongside your yeast pitch, the enzyme actively breaks down alpha acetolactate—the direct precursor to diacetyl—and converts it into flavorless acetoin. Because the precursor is removed, diacetyl literally never gets the chance to form.
Why Choose Brewzyme-D?
Banish Diacetyl Off-Flavors: Eliminate the risk of buttery notes in your glass and drastically improve the overall quality and crispness of your beer.
Stop Hop-Creep in Its Tracks: Heavily dry-hopped IPAs are notorious for secondary diacetyl spikes. Dosing Brewzyme-D during your dry-hop addition completely neutralizes this frustrating "hop-creep" effect.
Lightning-Fast Turnarounds: Save crucial time and money. By skipping the lengthy diacetyl rest, you can safely shave up to two full weeks off your lager maturation schedule, getting your beer from grain to glass faster than ever.
Specs:
Dosage: One 10 mL pitch treats 5 gallons
Activity Range: pH: 4.0-7.0
Temperature: 50-104°F (10-40°C)
Storage: Temperature: 32-50°F(0-10°C) Do not freeze.
Shelf Life: 18 months from manufacture date, when stored as recommended.
Frequently Asked Questions:
My pH and temperature are out of spec for the enzyme?
While not optimal, the enzyme will is still active within fermentation temperatures, and dosage rates have been accounted for that.
Will there be zero diacetyl in my beer?
Due to enzyme kinetics, the amount of diacetyl will rarely be zero but will be far below flavor and aroma thresholds when used properly.
How does it work?
Brewzyme-D converts diacetyl precursor(Alpha Acetolactate) to acetoin, a flavorless and odorless compound, and skips the diacetyl pathway.
When do I add it?
At yeast pitching and/or at dry hopping
Can I add it when the beer is cold?
The enzyme works within the range of 50-104°F (10-40°C)
Is it GMO?
No
Are there different dosage rates for ales vs lagers?
No, the dosage rate is developed to cover all types of fermentations.
Will I need a new dose if I'm reusing my yeast?
Yes, recommend a new dose for every batch of beer.
Can't I just double the dosage for fermentation and dry hop?
Potentially, but for best results, add once during initial fermentation and another for dry hopping as it will ensure the best enzyme performance.
What happens if my product wasn't stored warm?
Typically the product should still be active. It will likely lose some activity rate over a year. If you are worried about enzymatic activity, increasing the dosage rate can ensure adequate conversion.
Will I need to perform a diacetyl rest when using the enzyme?
With proper dosing, a diacetyl rest isn't required.
What is the difference between adding Brewzyme-D, an exogenous enzyme, versus using a GMO strain engineered to produce ALDC?
By adding the Brewzyme-D it can be dosed consistently rather than relying on the yeast to make the correct conversion rate.
Can I add this to finished beer to remove diacetyl?
No, Brewzyme-D does not work on free diacetyl.
An easy way to eliminate chill haze in your finished beer is to add one vial of Clarity Ferm to your fermenter prior to the onset of fermentation. Use 1 vial per 5 -7 gallon batch. For the beer geek (but still simplified!): Chill haze is caused in your fermenter during aging when polyphenols and polypetides bond together. Clarity ferm cleaves polypetides (a protein fraction) so they cannot bond with polyphenols (tannin). This product is also known as Brewer's Clarex. There are also discussions and testing being done with this product, finding that it reduces gluten levels in beer. Gluten is the protein that Gluten-Intolerant (Coeliac) folks need to avoid or greatly reduce consumption of. Always consult a Doctor first before use in this application. Features:
An enzyme that is effective at preventing chill haze Increases shelf-life and product consistency Does not alter beer flavor or aroma Has no effect on head retention Can produce gluten-reduced* beers made with barley (*The majority of beers test below 10ppm gluten when used in the correct dosage) Shelf life is 6 months. This highly concentrated form of White Labs Ultra Ferm is intended for professional breweries. The dosage rate is 2.5mL per 31 gallons.
Reduce saccharification time, break down starches in unmalted cereals, and increase attenuation with one simple product! Ultra-Ferm from White Labs is a highly concentrated liquid amyloglucosidase derived from a select strain of Aspergillus niger. Rather than acheiving 75 to 80% hydrolisis of present starches, as you would with traditional brewing methods, Ultra Ferm allows total hydrolisis of dextrins to fermentable glucose, from all types of starch.
UltraFerm WLN4100 makes for the perfect additive when brewing a Brut IPA or Champagne Beer by eliminating residual sugar, allowing you to acheive the dry flavor profile that is signature to the style. It can also be used for the production of low calorie and extra high-alcohol beers, as well as light or diatetic beers.
Add at the beginning of the mash-in. Ultra-Ferm optimal pH is between 3.5 and 5.5. Temperature should not exceed 140°F. Amyloglucosidase activity is completely destroyed when the wort is held at 185°F for 10 minutes.
We've experimented with adding this enzyme at different stages throughout the brewing process, and found that it isn't limited to the mash stage alone. When pitching Ultra Ferm alongside our yeast, we were able to achieve a final gravity of 1.000, with no negative effect on the finished beer. Great news for the extract brewers out there that want to produce an extra dry beer!
Store at 39-46°F. Stable for 12 months.

Healthy yeast is vital for a clean and complete fermentation, which will also help to prevent off-flavors in your homebrew. Contains diammonium phosphate, essential vitamins and co-factors, nitrogen (amino acids, proteins, and peptides) and minerals. The White Labs Yeast Nutrient provides an effective boost for first and/or late generation yeast slurry. If grist is not 100% malt, then yeast nutrient can help make up for lack of nutrients.
For commercial use, each package contains 1.0 oz, enough for 5bbls. For homebrew use, each 1/2 tsp. from the package is good for 5 gallons.

White Labs Coastal Haze is a blend of select New England-style IPA strains making this pitch a knock-out for producing beers with a hazy appearance and tropical, fruit-forward esters. Expect a dry, yet juicy beer, where the mango and pineapple characteristics will lend to added drinkability. **This strain has been genetically typed in White Labs' lab using polymerase chain reaction (PCR). Through this genetic testing, they have determined WLP067 Coastal Haze Ale Yeast Blend to contain the STA1 gene (glucoamylase), a potential indicator of Saccharomyces cerevisiae var. diastaticus. Brewers yeast are natural hybrids, which make it possible for certain strains to display elements of the STA1 gene. These strains have the ability to utilize some dextrins (unfermentable sugars), resulting in higher levels of attenuation than what is considered typical.
