But don't let the good looks catch you off guard. This is a powerful beer with a bitter, yet balanced bite. The recipe includes 12 lbs of malt extract with Caravienne and Caramunich malts for steeping. Huge flavor with a good balance between malt and hops. This will age gracefully for years. Not for everyone, but those who like Barley Wines love this recipe.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

Performs reliably across a wide temperature range and tolerates up to 15% ABV and 12 PSI of pressure
Designed to be sprinkled directly onto the surface of your wort with no pre-oxygenation before pitching required
Ferment between 65-90°F
JUNGLE is a high performance ale yeast strain that specializes in massive fruity esters. It produces a distinct guava, passion fruit and mango aroma. This strain excels at biotransformation, enhancing hop character when paired with big dry-hop additions—select a fruity hop variety to maximize its potential. JUNGLE thrives in a wide fermentation temperature range, ensuring minimal risk of off-flavors even at high temperatures or with temperature fluctuations. It’s also extremely robust, capable of tolerating alcohol levels up to 15% ABV and fermenting under pressure up to 12 PSI. With accelerated maturation, JUNGLE delivers a drinkable beer in just days, making it an ideal choice for both pros and homebrewers alike.
Biotransformation Powerhouse: Maximizes hop aroma and flavor

Like all CellarScience yeasts, JUNGLE offers professional-grade performance for both homebrewers and craft brewers, delivering exceptional quality at an unbeatable value.
Traditional Dark has an intense, sweet and malty flavor perfect for Brown Ales, Porters, Stouts, and other malt-forward styles
DME can be used as 100% of your fermentable sugar in extract brewing
Add for color correction, boost gravity, or improve head retention in all grain brewing
Briess Malt & Ingredients has had a focus on quality and innovation for more than 140 years, with all of their products being made in the U.S.A.
Dried Malt Extract (DME) is the primary sugar source in extract brewing and can be used in partial-mash or all grain brewing to adjust flavor, color and gravity of brews. DME can also be used to increase head retention and body. Many brewers choose nutrient rich DME as the sugar source for making yeast starters as well. Briess dried malt extracts are made from 100% malt and water.
Traditional Dark DME: 100% pure malt barley extract made from a blend of 100% malts and water.
Traditional Dark is an excellent dark malt extract . With an intense, sweet and malty flavor, it can be used in the production of many beer styles, either as a base, to boost gravity or for color and flavor enhancement. Contributes strong flavors to darker beer styles such as: Red ales, Brown ales, Amber ales, Oktoberfests, Bocks/Doppelbocks and can be used for color adjustments in lighter beer styles.

Let’s be honest: no one actually enjoys bottling day. Washing, sanitizing, and capping 50-plus bottles is the tax we pay for great beer—but it’s a tax you can officially stop paying. A Ball Lock Keg is the ultimate upgrade for any homebrewer looking to streamline their process, improve their carbonation control, and finally reclaim their Saturday afternoons.
Why Ball Lock?
In the world of homebrewing, Ball Lock is the undisputed king. Most kegging hardware, disconnects, and draft systems are designed around this standard, making it easy to find parts and swap lines. If you’re looking for a setup that grows with your hobby, this is the foundation you want.

Because JP tends to get really good boilovers when he brews he usually makes high gravity beers whether he intends to or not. It may have something to do with consumption while brewing, not that any of us know anything about that. The result is always a starting gravity that is higher than anticipated. We put the beer on tap in the shop and it got rave reviews. It was both outstanding and unique. Sometimes things do happen for a reason! The beer can easily be described as a Porter on steroids.

Hefeweizen Ale I is a classic German wheat strain. It's a cloudy, big top cropper with the archetypical banana and clove character you expect in a hefe yeast. Ester notes turn up with increased fermentation temp, wort density and decreased pitch rate. Ferment at the lower end of its range to mute the ester expression and highlight notes of cloves. Over-pitching can lessen the banana, so plan accordingly. If you get a little too much sulfur, let the beer age longer and to condition out. See also Belgian Ale A (OYL-024) for an alternate complexity.

Please Note: For best results we Always recommend ordering an Ice Pack with your liquid yeast. Ice Packs can be found below in the "You might Also Need" section.
Please Note: When choosing an ice pack option beware that the liquid yeast will not arrive cold even when shipped together. Ice packs and insulated mailing options are designed to keep the yeast colder for longer during shipment, but they will not ensure that your yeast arrives cold. We will not replace liquid yeast that arrives warm. During warmer months we strongly recommend you choose dry yeast.

Jamil brews more, consistently high-quality beer than any hombrewer we know. He won California Homebrewer of the Year in 2002, after winning over 150 total awards at brewing competitions, 55 of them being First Place. Of all the beers that he brews, the Chocolate Hazlenut Porter (CHP, as Jamil says) is the cult favorite and the recipe he is asked for the most. It also won Best of Show 2002, several First Place ribbons, and countless other awards. It comes complete with 25 ml of Hazlenut extract and 4 oz of Cacao Nibs. 20 °L - Viking Malt - Viking Caramel 50, which is a 20 Lovibund colored malt, is a perfect choice for adding a light maltiness to lighter colored ales and lagers. 50 will help with flavor stability, foam quality and head retention.
Viking Caramel Malts are made from green malt . A high degree of caramelization is characteristic of this malt. The amylolytic activity of Caramel Malts is zero. Maillard products formed in the process can act as antioxidants and contribute to flavor stability. Caramel Malts usually improve foam quality and head retention.

Simcoe® Strike West Coast Pilsner Flash Brewing® Kit
Simcoe® Strike is a West Coast Pilsner-style beer with a crisp lager-like base, bold Simcoe® hop character, clean bitterness, and a white, frothy head that laces beautifully on the glass. Its malt blend delivers a smooth, clean foundation with a subtle sweetness that supports the bright hop profile and refreshing finish.
Simcoe® Cryo Hops® contribute notes of citrus peel, grapefruit, light resin, and subtle pine, giving this beer a distinctly West Coast hop character while still keeping the crisp, drinkable nature of a Pilsner. Flash Yeast™ ensures a clean fermentation that lets the malt and hops shine. With Flash Yeast doing the work, this Pilsner can be fermented at a wide temperature range of 65°F to 85°F.
For the best clarity and smoothness, lagering is recommended at 40°F. Fermenting at around 70°F, this recipe finishes fermentation more quickly than a standard lager. This bright, hoppy, and refreshing beer can be ready to enjoy in just a few days. For the best clarity and smoothness, storing cold (lagering) for a couple of weeks is recommended. Flash Brewing® offers a streamlined process that not only saves you valuable time but also simplifies brewing without sacrificing flavor. Flash Yeast™ starts quickly and consistently produces clean beer that lets the malt and hops shine. The result is a high-quality beer that will absolutely surprise you.

"Ever since the first alt bier hit my lips I've been hooked on this style! Germany has alot more to offer than just their lagers and this is a great example!" Ryan recommends a step mash. He likes to dough-in at 130F for a 15 minute Protein Rest, and then raise to sacharification rest of 154F for 60 minutes before mashing out at 168F. He likes a 45-60 minute sparge with 170F liquor. Ryan also recommends a 90 minute boil for this style, so hold off on those hops until you are 30 minutes into boil. You may need to collect more wort than you normally would to compensate for the additional boil-off. Ferment at 62-64 for 2 weeks in primary, and lager or 4-8 weeks at 40F if you can keep your hands off it for that long. Prost!

Premium, Fire-Toasted Oak Cubes from Stavin
Medium + Toast French Oak will impart flavors of vanilla, cinnamon and chocolate with notes of coffee and campfire.
These fire-toasted oak cubes are as close as you can come to the full range of flavors you would get from aging your beer in a full sized barrel, unlike convection-toased cubes.
The difference is that convection toasted cubes are made by cutting the stave to size, then passing the small cubes through a toasting chamber. Stavin fire-toasts their staves whole, just like they would when making a barrel, and then cuts them down to size. The result is a gradation of toasting from the surface through to the center of the cube, where each different toast level represents a different flavor set that the oak will give your beer. The result is a much more complex and natural profile; by comparison convection toasted cubes taste one dimensional.
Oak cubes also release their flavor into your beer more slowly than chips, giving you more control over the final degree of impact in your beer. You should plan on an extended aging period of 1-6 months when using cubes. This longer contact time again promotes flavor complexity by allowing all the flavors of the oak and your beer to marry.
Recommended Dosage is 2 oz per 5 gallons for impact equivalent to aging in a brand new oak barrel.

Puttin' on the Spritz! There's a new style on the scene that has everyone tapping their toes, and we're excited to bring you a beer from the man who started the tune. In our latest addition to the BrewMaster Series lineup we have one of the original Brut IPA's - Puttin' on the Spritz! This hybrid IPA is the brainchild of Kim Sturdavant of Social Kitchen & Brewery in San Francisco, California. We first met Kim on our journey to brew with and understand the amyglucosidase enzyme (the signature ingredient responsible for a Brut's dry character). Kim, being the stand-up fella that he is, was kind enough to not only share his knowledge of the AMG enzyme, but also the very recipe that shook up the brew scene and inspired countless iterations of the style. Despite its dry character, Puttin' on the Spritz is sneaky drinkable with a thirst-quenching profile. El Dorado and Mosaic® hops impart tart citrus and tropical fruit notes, while a malt bill primarily featuring pilsner DME and flaked corn makes for an ultra-clean finish with almost no caramel or overt malty flavors. Crisp, dry, clean, crushable. Curious about Brut IPA's? Check out There and Back Again, A Brut IPA Tale! In this article, our own Vito Delucchi takes us along on his quest to unlock the mysteries of the amyloglucosidase enzyme and discover the best methods for brewing Brut IPA's. Commercial quality beer bottle caps to keep your brew safe and sound from bottling day until you're ready to enjoy it. You will get a good firm seal that will last through transport, gift giving, and storage with these gold bottle caps. These bottle caps crimp down onto the beer bottle and make a firm seal. They don’t rust or leak and they contain an Oxygen absorbing agent in the liner, which means you won’t get any unwanted oxidation. A good value for a great product.
26 mm diameter caps fit American bottles. Some imported bottles and some sparkling wine bottles use a 29 mm cap instead. We recommend test fitting prior to filling if you're re-using an imported bottle.
Important to note: It is recommended that you only sanitize as many caps as you'll require at the time of bottling. The oxygen-absorbing agent is activated when the cap gets wet. If wetted caps are saved for later use, they'll still function as a normal cap, but the oxygen absorbing agent may be depleted.

Oktoberfest Festbier Flash Brewing® Kit
Oktoberfest Festbier is built around the smooth, malt-forward character of the classic beers traditionally brewed in spring and enjoyed during the fall harvest season. Munich malt provides a toasty, bready core, while Caravienne and Caramunich add a deep copper color with notes of biscuit, light caramel, and subtle toffee.
Hallertau Mittelfrüh is the single hop in this recipe, bringing gentle bitterness and a classic noble hop aroma of light spice and floral herb. The hop character stays restrained and traditional, keeping the focus on the rich German malt profile and easy-drinking balance.
Fermented with Flash Yeast™, this Festbier finishes clean even when fermented warm. The result is a smooth, malt-focused beer that is ready fast—without waiting months for a traditional lager fermentation. For added clarity and depth, a short period of cold conditioning at 40°F is recommended.

Elevated protein content contributes to a fuller-bodied beer and enhances head formation and retention
Use as up to 50% of your grain bill
Rahr White Wheat, crafted from North American soft winter white wheat, imparts a distinct sweet, malty flavor with a subtle fruity note. Its elevated protein content contributes to a fuller-bodied beer and can significantly enhance head formation and retention, depending on the overall grain bill. This particular white wheat malt is also favored for its ease of milling compared to red wheat, and its ability to promote the desirable haze often found in Belgian white beers. It's an excellent choice for brewers aiming to produce any wheat-style beer.

Temperature Rating:
When not under pressure, do not expose to liquids above 131°F
When under pressure, do not expose to any temperatures above 95°F*
*Please note that the temperature rating for the FermZilla tank is lower when using it under pressure. When not under pressure, it is perfectly safe to transfer wort into the tank below 131°F or to use hot liquids below this temp for cleaning. When under pressure, make sure to keep your fermentation temperature below 95°F and keep the fermenter in an environment that is below 95°F ambient. This is especially important when fermenting with kveik yeast. These strains are known to ferment hot if no temperature control is being used. Exceeding the temperature rating may compromise the tank, leading to a shorter life span or sudden failure to maintain pressure. Even with proper use, we recommend replacing the tank every two years.

NOTE: FermZilla tanks are marked with a manufacturer’s “expiry date”. This does not indicate that the tank is bad after this date; it simply indicates that a hydro test may be in order. 2 years after production and every 2 years after first use, it is recommended that the tank be hydro tested to ensure the tank is holding pressure. Hydro test instructions are available below. You will also need the D1072 Green PRV to perform the test. If you do not plan to pressurize the fermenter, the test is not necessary.

Derived from T-90 Mosaic® pellet hops to perfectly replicate the aroma profile while omitting undesirable compounds found in hop vegetal matter
Flavor/Aroma: Citrus, Pine, Floral
The perfect hop: Using 100% hop-derived terpenes, Abstrax builds exact profiles to match the flavor and aroma of an exemplary lot of Mosaic® hops
Consistent results every time. Eliminates the variance of using hops that may differ by age, crop year, storage conditions, growing region, processing method or farm
Replace pellet hops: 5mL is equal to roughly 5.5 oz of pellet hops, while 1 oz of Quantum is equal to 2 lbs of pellet hops
Mosaic® Quantum Brite
Sharing its parentage with SIM and Nugget, Mosaic® could be considered to be the second most successful hop in the world behind Citra®. Mosaic® is a robust blend of funky grapefruit and pine with light floral notes.
Optimized Hop Extracts
Compared to other hop-extracts, the Quantum Series tastes better, performs better, and is easier to use. It works with everything from Pils to Porters with no special handling required. Easily flowable at cool, ambient, and warm temperatures. Gone are the days of warming up your extract or scrubbing the sticky gunk out of your equipment.
Compared to hops and pellets, the Quantum Series offers a 100% utilization rate and can be used at any stage of the brewing process. It cuts down on shipping and storage costs by an order of magnitude, not to mention the labor savings from not having to lug boxes around.
Quantum Tastes Better
The Quantum Series is an evolutionary leap forward in aroma and brewing technology. When you get down to it, nobody wants to use an extract product that makes their beer taste worse off. Extracts have taken a bad rap because they can often add more problems than they solve and, frankly, they don’t always taste the greatest. Abstrax gets it. That’s why, above all else, flavor and aroma come first with Quantum.
Dosage
Consider 1mL of Quantum Brite the flavor/aroma equivalent of 1 oz of T-90 pellet hops. Add after fermentation is complete, ideally at the coldest and latest point in your process, in your fermenter, keg, or bottling bucket. Or even add a drop or two to spike your finished beer in the glass.
Features:
100% efficient flavor/aroma transfer
Consistent from batch to batch
No yield loss from absorption
Quantum will not affect IBU test results and cannot cause lightstruck off-flavors
Zero Undesirable Plant Compounds
No Lipids
No Chlorophyll
Recommended storage: 40-90°F. Do not freeze.

For best results we always recommend ordering an ice pack with your liquid yeast.
WLP029 is a fitting choice for German ales such as kölsch and altbier Known for accentuating hop flavor and bitterness while creating crisp, clean lager like characters Ideal for high gravity ales, American and English hoppy beers, as well as malty ambers, porters, and brown ales PurePitch® Next Generation offers a precise cell count across all strains so you can calculate the exact pitch rate you need for every batch Scan the barcode on the back of the package and enter your wort stats into the Pitch Rate Calculator
White Labs Yeast has been producing high-quality brewer's yeast since 1995 and continues to raise the bar in the art of fermentation Don't need a full package? Put the lid back on and store in the refrigerator for your next batch! Sourced from a small brewpub in Cologne, Germany, this strain is fitting for German ales such as kölsch and altbier. Known for accentuating hop flavor and bitterness while creating crisp, clean lager like characters. It performs exceptionally well at temperatures ranging from 65 to 69°F (18-20°C) and does not ferment well below 62°F (17°C) after peak fermentation. Typically has low flocculation characteristics after the first generation. PurePitch® Next Generation—now with more yeast, get a foolproof fermentation without a starter! Just twist the cap & pitch! Why PurePitch Next Gen versus other options?
Typically yeast manufacturers use a range for how many yeast cells are going into each package. This can vary widely, especially from strain to strain. Next Gen offers a far more precise cell count across all strains allowing you to use the Whitelabs exclusive pitch calculator. Simply scan the barcode on the back of each package to be taken to their online calculator. Enter the volume, strength, and pitching temperature of the wort you are fermenting and the calculator tells you exactly how much yeast to pitch. You will be fermenting like a professional brewer, using the same concentration of yeast every time and enjoying more consistent results. Don't need a full package? Put the lid back on and store in the refrigerator for your next batch. Whitelabs has also increased the viability (the number of living cells in the package) over the shelf life of the yeast. Next Gen strains are grown in their unique, small-batch reactors to assure freshness and then packaged in a special film that allows for off-gassing, assuring that their viability is absolutely industry leading. Non-Alcoholic Specialization: Specifically selected for the production of low-alcohol and non-alcoholic beers with a focus on flavor integrity.
Maltose-Negative Strain: Does not ferment maltose or maltotriose, leaving a high-quality residual sweetness and full body without the alcohol.
Authentic Flavor Profile: Provides a clean, subtle ester profile that mimics traditional brewing results without the need for dealcoholization.
SafBrew™ LA-01 is a specialized Saccharomyces cerevisiae var. chevallieri strain developed specifically for the craft of low-alcohol and non-alcoholic beers (up to 0.5% ABV). Unlike standard brewer’s yeast, this "maltose-negative" strain only ferments simple sugars (glucose, fructose, and sucrose), leaving the more complex malt sugars untouched. This results in a brew that retains the natural mouthfeel, body, and sweetness of the grain, making it an essential tool for brewers looking to achieve professional results in the non-alcoholic space.
Maltose-Negative: Only consumes simple sugars, naturally limiting alcohol production while maintaining high residual extract for body.
Flavor Preservation: Produces a clean, neutral aromatic profile with very subtle fruity notes, allowing the hops and malt to define the beer.
POF Negative: Lacks the phenolic off-flavor (POF) gene, ensuring no unwanted clove or medicinal aromas in the final product.
Superior Body: Because it leaves maltose unfermented, the resulting beer has a rich, full-bodied mouthfeel that is often missing in low-alcohol beverages.
Controlled Kinetics: Ferments steadily until the simple sugars are depleted, providing a predictable and stable outcome.
Applications:
Non-Alcoholic Beers: The industry standard for creating beers at <0.5% ABV without the need for expensive vacuum distillation equipment.
Low-Alcohol Ales: Excellent for "Small Beers" or ultra-light ales where flavor density is required despite low gravity.
Alcohol-Free IPAs: Provides the necessary body and sweetness to balance high hopping rates in non-alcoholic hop-forward styles.
Malt Beverages: Ideal for creating non-fermented or lightly fermented malt drinks with a sophisticated, beer-like palate.
Flavor Profile:
Clean & Neutral: A very low ester profile that serves as a perfect canvas for specialized malts and late-addition hops.
Malty Sweetness: High residual maltose levels provide a natural, cereal-like sweetness and a rounder palate.
Crisp & Refreshing: Despite the residual sweetness, it finishes clean without cloying heavy esters.
Balanced Body: Successfully mimics the texture of a 4-5% ABV beer in a <0.5% ABV environment.
Usage:
Rehydration: Sprinkle the yeast in at least 10 times its weight of sterile water or hopped wort at 77°F–84°F (25°C–29°C). Let rest for 15 to 30 minutes, stir gently, and pitch the cream into the fermentation vessel.
Pitching Rate: Standard dosage is 50 to 80 g/hL (approximately 1.9 to 3 grams per gallon) to ensure a healthy population.
Pasteurization Requirement: Mandatory. Because the beer contains high levels of residual fermentable sugars (maltose), it must be pasteurized after packaging to prevent spoilage or secondary fermentation.
Fermentation Temperature: Performs optimally between 50°F and 77°F (10°C–25°C).
Gravity Management: Monitor initial sugar levels (simple sugars vs. maltose) carefully to ensure the final ABV remains within the desired 0.5% limit.
*See the technical data sheet below for more information on rehydration, usage and storage.
Safbrew™ LA-01 vs. Safbrew™ LA-02
While both Fermentis LA-01 and LA-02 are maltose-negative yeasts designed for brewing no- and low-alcohol beers, their genetic makeup yields distinct flavor profiles. SafBrew™ LA-01 (Saccharomyces cerevisiae) is a POF+ strain that naturally produces spicy, clove-like phenols, making it ideal for Belgian styles unless its expression is carefully suppressed during the mash. Conversely, SafBrew™ LA-02 is a non-Saccharomyces (Torulaspora) species that is naturally POF-negative, offering a completely clean, sweeter finish with malt and honey notes perfect for standard ales and lagers. Crucially, because both strains leave large amounts of unfermented complex sugars behind, beers brewed with either yeast require strict pasteurization to prevent unwanted refermentation and package bursting.
