Craig has been perfecting his Travelin Man recipe over the years by brewing for competitions and for his own consumption at home. Travelin Man is at the high end of the pale ale guidelines, with a nice balance between the malt and hops. This is a great beer to let cold condition. Cold conditioning brings forward the malt flavors and makes it even easier drinking. Craig created this beer to take the edge off a long day of driving on the southern California freeway system and as his house ale. So whether you have been to the East or just feel like someone has given you the third degree, this fine ale will deliver what you are looking for. Craig recommends using White Labs California Ale Yeast.

Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.

A truly tranquil beer, the Glass Lake Pale Ale is our take on the Deschutes Brewery Mirror Pond Pale Ale. The grains included are pretty simple: base malt with a small amount of Carapils, Munich, and Crystal 10L, the lightest Crystal malt we offer. Cascade is the only hop varietal in this recipe, being used from bittering all the way to the dry hop addition!
The result is a very smooth and balanced beer, complete with the classic floral, citrus & grapefruit aromas and flavors that Cascade hops are so well known for.

Shall we brew a beer? Put down that can of Tab and boot up your brewing software, this Strata-forward double dry hopped pale ale isn't playing games. StrataGem perfectly interfaces Strata and Idaho Gem™ hops to execute a DDoS attack of tropical flavor with notes of pineapple, cherry, candied fruit, and a touch of chili-cannabis-funk. A clean malt bill of light malt extract, oat malt, and white wheat runs in the background as 7 oz of hop additions overwhelm your flavor sensors. This cyberpunk pale ale might not be powerful enough to trigger global thermonuclear war, but StrataGem may very well overwrite your brew schedule with viral copies of itself.

This recipe displays the malt, alcohol and hoppiness of an IPA but with the bitterness of a Pale Ale
Includes Willamette and Cascade hops
Estimated ABV: 5.8%
Estimated IBUs: 39-42
Makes 5 gallons of finished beer
The legendary Frank Ellis, Grandfather of our Signature Series Kits, brings you his over the top Pale Ale with an amazing 7 oz of hops and 9 lbs of malt extract. It has the malt, alcohol and hoppiness of an IPA but the bitterness of a Pale Ale. Frank started with our American Pale Ale II, KIT250 – but this wasn’t enough flavor for Frank. So he added one pound of malt extract, more finish hops, followed by... yet more finish hops! The resulting flavor is malty with plenty of hop flavor, courtesy of the copious amounts of Cascade and Willamette hops. One day while on the phone placing an order with us, Frank got tired of having to make these additions to our existing KIT250 so he asked why he couldn’t have his own kit to cut down on confusion. He was absolutely right! So the series was born! When you are drinking any of the Signature Series recipes, raise your glass and give a virtual cheers to fellow homebrewer Frank Ellis in Missouri for the good idea. Frank has brewed his own kit an amazing 62 times over the last decade! Frank recommends using White Labs California yeast, WLP001 or Wyeast American, WY1056.

English Pales are not that bitter. There is more emphasis on the malt which tends to have caramel and roasted notes. Traditionally these beers are poured from a cask, usually flat without any CO2. We would not have put 3 lbs of honey with 4.5 lbs of malt extract in a pale ale, but Jim had no fear and did just that. The result - a really nice mix of malt and honey flavors. There is enough honey to make it through into the flavor. Just a little Cascade hops in the beginning and finish keep the flavor emphasis on the honey. Reduce Staling & Improve Shelf Life — A null-lox malt bred without lipoxygenase enzymes, preventing the oxidative reactions that cause staling.
Reduced DMS — Contains up to 60% less S-methylmethionine (SMM), reducing DMS potential for cleaner flavor and enabling faster, more efficient boils.
Amazing Flavor — Clean, crisp, and balanced. In blind tastings, brewers consistently preferred it to other 2-row base malts.
Versatile — Highly modified for easy conversion and kilned like a pilsner malt for an extra-light 1.7–1.9 °L color, making it ideal for everything from lagers to hop-forward ales.
Experience the 3G Difference
Real innovation in base malt is rare. Viking 3G Xtra Pale represents a revolutionary step forward, engineered to give you a distinct advantage in quality, efficiency, and cost. This premium European malt uses naturally bred, null-LOX barley that actively prevents oxidative staling, keeping your beer fresher, longer. We’ve also engineered it with up to 60% less SMM (the precursor to DMS), ensuring a cleaner, purer flavor profile while enabling faster, more energy-efficient boils.
The result? A superior, brewer-preferred malt that delivers the performance of a premium import at the price of a domestic. Stand out without driving up costs.
1.9 °L - Viking Malt - Xtra Pale is a modern 2-row base malt designed for very light-colored ales. While it works great as the base malt for any ale, it is particularly perfect for today’s extra light colored pale ales and IPAs.
Xtra pale is germinated like a pale malt to have a high degree of modification for easy brew house conversion. However, it is then uniquely Kilned like a pilsner malt for a very light color in the 1.7 to 1.9 Lovibond range. The result is a malt that easily and quickly converts like a true pale ale malt, but is as light or lighter than most Pilsner malts.
Morebeer! Pro worked with Viking to design this malt based on numerous customer requests. Unique light-colored barley varietals were chosen and the germination and kilning processes were selected to get the best of both worlds. Compared to other 2-row base malts on the market that were originally designed for big breweries, and are neither true Pilsner or true Pale Malts, Xtra Pale was specifically designed for light, craft-brewed ales.

Phil created this recipe in an effort to stop his long, slow spiral into fruity, phenolic, sour beers that began to populate his fermenters and kegs back in 1998. Honestly, Phil seriously contemplated throwing gummy bears into his brew and realized it was time to step back, look around, sober up, and grab a classic West Coast pale ale.
This beer is dominated by the wonderful Amarillo® hop that is known for having a citrus/orange flavor. The Left Coast Pale has been brewed many times over as a house favorite during the Fermentation Frenzy shop era (Los Altos, CA circa 1997-2007). Try it, you'll like it. And, unfortunately, so will your friends.
Phil recommends for an even more pronounced hop nose and flavor you add an additional 1oz of Amarillo® hops to the fermenter as a dry hop addition (not included with kit).

Our Phantasm Powder hazy recipes are bursting with a tropical bouquet complimented by a choice selection of New Zealand and Pacific Northwest hops

If you're hearing ghostly tales whispered around your local homebrew shop, there's no need to pile your brew crew into the hippy van—this one is no mystery. Phantasm Powder has been causing quite a stir on the craft beer scene, and the buzz is well deserved. Adding this powder to your wort and fermenting it with a thiolized yeast strain is one of the easiest ways to boost tropical flavor and aroma in your finished beer. Derived from Marlborough Sauvignon Blanc Grapes, this powder will add a concentrated dose of thiol precursors. During fermentation, yeast will go to work on these aroma compounds and "free the thiol", boosting the tropical bouquet of your beer to supernatural levels. We're stoked to get this cutting-edge ingredient into the hands of homebrewers so we designed a series of Phantasm recipe kits that will set you up to take full advantage of brewing with Phantasm Powder.
Our Phantasm Hazy Pale Ale features a 50/50 split of New Zealand and Pacific Northwest aroma hop additions that lean into a tropical, citrusy character that will pair perfectly with Phantasm Powder. Since this kit series is all about the thiols, we start with whole cone Cascade in the mash to further increase the thiol precursors. Add the Phantasm Powder at flameout along with your whirlpool / hop stand additions. For maximum effect, we highly recommend choosing a thiolized yeast strain for fermentation which are specifically designed to boost thiol biotransformation.

This BrewMaster Series kit was scaled down to a homebrew batch size in collaboration with the brewmasters at Firestone Walker Brewing Company Light in body and color, but strong in hop flavor and aroma Includes Fuggles, Chinook, Cascade, and Centennial hops Estimated ABV: 4.5% Estimated IBUs: 13 Makes 5 gallons of finished beer Fact: Firestone Walker has been named "Mid-Size Brewery of the Year" four times. Another fact: Pale 31 has won 10 Gold Medals since 2003 (yeah, that's one a year!). The Pale 31 California Pale Ale is what some refer to as "The Perfect American Pale Ale". Light in body and color, but strong in hop flavor and aroma, this is one of those beers that most beer lovers will always want on tap. After having one, you'll most likely want another, and being under 5% ABV makes this a little more possible! The recipe consists of American 2-Row, Munich malt, and Carapils for added mouthfeel. The hops are a perfect blend of Fuggles, Chinook, Cascade and Centennial. Firestone Walker's head brewer Matt Brynildson had worked on his Pale Ale recipe for a long time before being perfectly satisfied. We know that once you taste this beer, you'll agree with us that his hard work has definitely paid off! Don't forget to purchase The Brewing Network's "The Perfect American Pale Ale" DVD too!

Shaun is known for creating beers that are well-balanced while doing some unique things, such as using watermelon juice in a wheat beer, or oyster shells in an oatmeal stout. His Assistant brewer Jesse created this beer, an easy-drinking pale ale with few bittering hops but giant fistfuls of flavor and aroma hops. This beer has low alcohol and a soft malt backbone with an incredible hop finish - your answer to the hop shortage! Jesse and Shaun recommend using WLP001.
Shaun O'Sullivan of the 21st Amendment, San Francisco, California
Shaun's brewing career started like most in the beer industry - homebrewing. While working at a Southern California law firm, Shaun was spending his time making beers at home. After about 2 years, he not only decided that he wanted to make beer for a living, but that he wanted to open his own place! Shaun moved up to the SF Bay Area to start working at a few local breweries, while taking several brewing courses at UC Davis. Shaun eventually teamed up with his business partner Nicco Freccia, and together, they founded the 21st Amendment Brewery and Restaurant. They are one of the few breweries in the country leading the craft beer canning revolution, canning their "Brew Free or Die" IPA, and their "Hell or High Watermelon", which is an American-style Wheat beer brewed with real watermelon juice. When in San Francisco, visit Shaun at the brewery (563 2nd Street), which is just two blocks from Giants park.

When we first got our hands on experimental hop HBC 438 (nicknamed Ron Mexico and now known as Sabro™) we couldn't wait to design a recipe around it

This delicious Pale Ale is based on new experimental hop, HBC438, that has the unofficial name of Ron Mexico due to its native US neomexicanus hop heritage. This hop has enticing aromas of stone and tropical fruit, orange, mint, and herbal characteristics. Vinnie from Russian River Brewing (of Pliny fame) used this hop in an experimental beer brewed for the National Homebrewers Conference and also recently raved about this hop in a talk we attended.
The story of this hop is really unique. Traditionally hop breeders finish the testing of experimental hops internally and then release to the commercial market. Now they are turning the tables and trying something new! HBC 438 is being released EXCLUSIVELY to the Homebrewing community first. Then in the future, as more is grown, they will release it to commercial brewers. So the tables are flipped - Pro brewers will be reading your reviews and seeing what you thought of the hottest new hop.
What is also cool is that all proceeds from the sales of these hops go to ALS.net and help fund the ALS Therapy Development Institute, the world's largest non-profit biotech focused entirely on ALS Research.
Our take on a Ron Mexico pale includes some malto dextrin for body, crystal 60 for color and richness, and our Ultralight malt extract for a great malty base.

Citra® Session Pale Ale is a low ABV banger with multiple rounds of Citra® hop additions. Get all of the outstanding hop character you'd expect from an IPA without the overwhelming buzz after you've kicked back a few.
Cali Mountain Pale Ale is modeled after the most iconic pale ale in the country. Despite the fairly straight-forward recipe, this brew packs a ton of complex characteristics. Enjoy the clean bitterness and fresh citrus and floral aromas.
I Heart IPA was inspired by Bell's Two Hearted Ale, a universally adored IPA that features front-to-back hop additions of Centennial. Malt character takes a back seat to the pungent quality of citrus and lemon notes.
Citra® Session Pale Ale:
One of our most refreshing ingredient kits available! Citra® Session Pale Ale is an easy drinking beer with a light color and low ABV. With a fairly basic malt bill and clean bitterness from Magnum hops, the flavor profile of Citra® is really able to shine through with all of its citrus and tropical fruity goodness. Cali Mountain Pale Ale:
Our Cali Mountain Pale Ale is inspired by one of the most iconic pale ales in the country: Sierra Nevada's Pale Ale. This pale ale is a fairly simple recipe, consisting of 2-Row malt, Crystal 60L, and four hop additions. This being said, don't be fooled. The flavors blend together perfectly, creating a complex yet easy to drink homebrew. The bittering hop additions are Magnum and Perle which provide a clean bitterness that balances the sweetness from the Crystal 60L malt perfectly. The aroma hop and dry hop additions are both Cascade, providing a citrus & floral aroma as fresh as the forests in California's mountains!

I Heart IPA:
An amazing IPA derived from one of our favorites, Bell's Two Hearted, the I Heart IPA is a true Centennial hop bomb! Using Centennial as the bittering, aroma, and dry hop additions gives you a true understanding of how incredible and universal this hop can be.
Light in color and body, the malt character hides a little, allowing the burst of Centennial flavor and aroma shine. Our Bell's Two Hearted clone recipe has a slightly lower original gravity than the original. Coming in at right around 6% ABV, this isn't one of those IPAs that will make you shy away from a second!

Pale Malt Extract is made from 2-row and Carapils for a more pronounced malt flavor than Ultralight
Added body and mouthfeel. Perfect for Pale Ales and IPAs
Can be used as 100% of your fermentable sugar in extract brewing
Add for color correction, boost gravity, or improve head retention in all grain brewing
A little darker than Ultralight, the Pale Malt Extract has a more pronounced malt flavor. Made with American 2-row with Carapils added for body and mouthfeel. Perfect for Pale Ales, IPA's and all darker style beers. If you are making a darker beer you simply steep darker specialty grains to obtain the flavor and color you are looking for.

We recommend customers store their extract in the refrigerator if they do not plan on using it within 8 weeks.
