A great all around German wheat beer strain!
A complex alternative to the standard German wheat strain profile. This strain produces apple, pear, and plum esters in addition to the dominant banana character. The esters are complemented nicely by clove and subtle vanilla phenolics. The balance can be manipulated towards ester production through increasing fermentation temperature, increasing the wort density, and decreasing the pitch rate. Over pitching can result in a near complete loss of banana character. Decreasing the ester level will allow a higher clove character to be perceived. Sulfur is commonly produced, but will dissipate with conditioning. This strain is very powdery and will remain in suspension for an extended amount of time following attenuation. This is true top cropping yeast and requires fermenter headspace of 33%.

White Labs Yeast has been producing high-quality brewer's yeast since 1995 and continues to raise the bar in the art of fermentation Don't need a full package? Put the lid back on and store in the refrigerator for your next batch! WLP023 Burton Ale is a famous English yeast strain from Burton-on-Trent. This strain is described as fruity, with hits of apple, clover honey, and pear. Perfect for Bitters, IPAs, ESBs, and pale ales. Over the years many home brewers have found WLP023 works exceptionally well in porters and stouts as well. Add a little British character to your next beer with this well round strain! PurePitch® Next Generation—now with more yeast, get a foolproof fermentation without a starter! Just twist the cap & pitch! Why PurePitch Next Gen versus other options? Typically yeast manufacturers use a range for how many yeast cells are going into each package. This can vary widely, especially from strain to strain. Next Gen offers a far more precise cell count across all strains allowing you to use the Whitelabs exclusive pitch calculator. Simply scan the barcode on the back of each package to be taken to their online calculator. Enter the volume, strength, and pitching temperature of the wort you are fermenting and the calculator tells you exactly how much yeast to pitch. You will be fermenting like a professional brewer, using the same concentration of yeast every time and enjoying more consistent results. Don't need a full package? Put the lid back on and store in the refrigerator for your next batch. Whitelabs has also increased the viability (the number of living cells in the package) over the shelf life of the yeast. Next Gen strains are grown in their unique, small-batch reactors to assure freshness and then packaged in a special film that allows for off-gassing, assuring that their viability is absolutely industry leading. Attenuation: 72-78% Flocculation: Medium Alcohol Tolerance: 5-10% ABV Optimum Fermentation Temp: 68-73°F Cell Count: 150 Billion For best results we always recommend ordering an ice pack with your liquid yeast. A new, advanced formulation of Go-Ferm Go-Ferm Protect is a natural yeast nutrient that is added to the yeast hydration water before adding your selected yeast strain. Its complex formula provides your yeast with the proper sterols, unsaturated fatty acids and micronutrients needed to begin fermentation in optimal shape. The great thing about Go-Ferm Protect is that the proper nutrients and vitamins are introduced BEFORE the yeast is added to the must. This way 100% of the nutrients are available to your selected yeast strain and won't be stolen away by any indigenous yeast or bacteria that may be present in the must before your yeast can become established. Go-Ferm Protect was created as a result of a multi-year study of problem fermentations by Lallemand and the National Agricultural Research Institute (INRA) in France. During this period, they looked at the adverse effects on the yeast from overripe fruit (>28 Brix), low nutrient levels, overclarification of the juice and poor fruit quality (Botrytis, rot, high bacteria count, insecticide and fungicide residue). Their research showed that musts deficient in sterols and unsaturated fatty acids made yeast more susceptible to ethanol toxicity (high alcohol), osmotic shock (high sugar), temperature and others stress factors. In response to this data they created the NATSTEP (NATural STErol Protection) process that incorporated sterols, unsaturated fatty acids, as well as vitamins and minerals into an advance yeast hydration nutrient: Go-Ferm Protect. Go-Ferm Protect provides a combination of protective and nutritional benefits that ensure your yeast begins your fermentation in peak form! The best part is that if your fruit is in great shape then Go-Ferm Protect will simply help your yeast out that much more! Go-Ferm Protect does not contain any DAP, as DAP is harmful to the yeast during the rehydration process. GO-Ferm is usually used in conjunction with our Fermaid K yeast nutrient; where Go-Ferm Protect is used at yeast hydration then Fermaid K is added at the first signs of fermentation and again after 1/3 sugar depletion. Use: Use at a rate of 1.25 g Go-Ferm Protect per 1 g of yeast. A rough approximate of weight is 1 tsp = 3.2 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates. Download the PDF Like Go Ferm Protect? Then you will love CellarScience® FermStart!
We've seen a lot of all-in-one systems over the years, but none are as feature-packed and affordable as the BrewZilla. While other units simply maintain your set temperature, the BrewZilla features a sophisticated digital controller which can be programmed with a full mash schedule, executing each step automatically. The built-in pump will continuously recirculate wort during the mash for more even heat distribution and higher efficiency, but thanks to the integrated camlock fitting, it has even more functionality. Add the optional whirlpool arm to make your late hop additions pop and speed up chilling time, or connect a camlock fitting and tubing to transfer wort to your fermenter. These are just a couple of reasons why MoreBeer! loves the BrewZilla, but there are so many More!
Our Top 10 Favorite Features:
Sophisticated digital controller capable of programmed mash steps, boil addition timers and delayed start
Built-in pump for constant recirculation during mash or whirlpooling and transferring with optional accessories
Full depth malt pipe for higher mash efficiency and capable of running small batches without a pricey adapter
Multiple power modes to cover each step of the brew day – low power to gently heat your mash up to full power for a rolling boil
Wort chiller included! Perfectly sized for this system and adds even more value to your purchase of the BrewZilla
High capacity brewhouse – with a volume of over 9 gallons, you can fit more grain and more wort to make MoreBeer!
Single wall design doesn't trap in heat – chill your wort quickly after the boil!
Super convenient bottom handle makes lifting/pouring a breeze
Rubber feet keep the boiler lifted off the ground and safely above any spills that may occur
Affordable! This is the best price for an all-in-one brewing system you'll find, period.
If you want to jump into all grain brewing right from your first batch, or as an upgrade from malt extract brewing, the BrewZilla is a complete turn key solution. The BrewZilla is an all-in-one electric brewery that has built-in elements for heating and boiling, programmable mash schedule and delayed start, a built-in pump for recirculation, an onboard water resistant control panel for setting and monitoring temperatures, a removable grain basket, and a built-in spigot for transferring. It is extremely portable and uses 110V power so it can be used nearly anywhere.
The V3.1.1 unit features an upgraded main circuit board that changes how the automatic step mashing functions. Now when moving from step to step, the timer for each step will not begin counting down until the programmed temperature is reached. This means more accurate mash schedules than ever before! The new board also introduces boil addition timers so you'll never miss the mark for hop additions.
To get the Wort Chiller Connection Kit for free, add the item to your cart along with the BrewZilla and use code ZILLAKIT at checkout.
New accessory! Check out the BrewZilla Whirlpool Arm, which uses the unit's internal pump to recirculate and spin the wort, improving hop extraction and chill times. No more stirring!
Automatic Step Mashing & Delayed Start!
One of the coolest features of the BrewZilla is the ability to program the unit with up to 6 individual temperatures and durations so you can step mash precisely how you desire. Simply press the "S1-S6" button to select the stage you want to adjust, and use the temp, time and +/- buttons to program the stage. If you have less than 6 stages in your mash schedule, program the stages you want to skip with 00:00 as the time and the controller will automatically move on to the next step. When all the stages are complete, the unit will sound an alarm and hold the last set temperature.
The programmable stages can also be used to set a delayed start of up to 23 hours in advance so that you can have your water hot and ready to go when you get home from work or wake up in the morning. In order to do this, fill the unit with strike water and program the controller with two steps. Step 1 should be programmed at a temperature lower than the unheated strike water (so the elements will remain off), and the duration should be programmed for however long you want the delay. Then program Step 2 with your desired strike water temperature and a duration of 1-2 hours, giving the BrewZilla ample time to heat up and giving you a margin of error in case you hit the snooze button the morning of brew day.
Recirculating Mash with Full Depth Malt Pipe
The built-in magnetic drive pump easily recirculates wort during the mash. We recommend getting some silicone tubing to go with the recirculation arm. This allows you more control over the recirculation and you can then use the pump to transfer your wort to your fermenter. As with any mash, be sure to stir your grain very thoroughly after mashing-in so you start out with an even temperature throughout the grain bed.
Some competing models advertise their perforated malt pipes as "high flow", but what they don't mention is how this affects efficiency. When recirculating the mash, wort will escape through the side perforations rather than passing through the grain at the bottom-most end of the malt pipe which can lead to lower efficiency. The BrewZilla's malt pipe is designed so that recirculating wort must pass through the entire grain bed before escaping through the false bottom and being pumped over the top of the grain bed again. If you're worried about the flow rate, simply add a pound or two of rice hulls to your grain bill. This is especially recommended when brewing with a high level of wheat, oat, or flaked grains.
Power & Heating Control
Dual heating elements run off of a single 110 volt plug and have individual switches allowing for more control over the heating process. One element is 1000 watts and the other is 500 for a combined 1500 watts! Use both when you need to ramp up the temperature quickly either at the start to get to your mash temp or to go from your mash temp to boiling. Use only one of the elements when you want to hold a temperature.
We highly recommend adding the optional BrewZilla Neoprene Jacket to help reduce heating times and maintain a more vigorous boil. The extra thick neoprene jacket is custom designed to insulate the entire kettle portion of the BrewZilla while staying out of the way of the ball valve and handles. The jacket can help you acheive up to 10% faster heat up times and cut heat loss from the boiler in half. And when it comes time to cool your wort after the boil, simply remove the jacket! While other units boast a double wall design for better heat retention, this actually becomes a disadvantage when it comes to chilling.
The digital control panel makes it easy to see the current temperature and set the temperature you want. The digital controller is also water resistant so don't worry about spills or some water dripping down the side. This controller is built for brewing!
The brewery also includes a stainless steel malt pipe with false bottom allowing you to easily shift from mash tun to boil kettle during your brew day. The malt pipe includes a handle to lift it out and tabs at the base so you can set the malt pipe over the kettle to let the wort drain out. It also has feet at its base to raise the malt pipe slightly off the base and help prevent clogging.
The included stainless steel wort chiller is shipped with bare ends so you can set it up for your situation. We list below the most common tubing and fittings to connect to a hose, hose bib, or faucet.
What MoreBeer! loves about this product: Homebrewing is trending in the direction of all-in-one, all-grain brewing systems and the BrewZilla is the ultimate value. The cost is half of the next comparable system with programmable mash steps and nearly the same as buying converted coolers and a kettle. We've brewed on all the systems and we can truly say the BrewZilla is the easiest to use. We feel confident that a lot of first time brewers could buy this and use it with ease. At the same time quite a few of our experienced, all-grain brewing staff are buying it to brew at home. The unit is extremely compact because the pump is built-in to the bottom of the unit. You can move it around with ease which makes it perfect for guys and gals that have space constraints. Someone on the team also mentioned how they like that you can drain it via gravity without having to use the pump. All in all a great buy and highly recommended. Please note you will need a few extra pieces of hardware to connect the wort chiller and at least 2' of silicone tubing for the sparge.
Use the Pump for More Than Just Recirculation!
One of the surprisingly handy features of the BrewZilla is that the recirculation pipe features a female camlock. This allows you to hook up other accessories and use the unit's pump for more than just recirculating wort. With a male camlock and silicone tubing, for example, you can use the internal pump to push wort through a plate chiller or counterflow chiller. Check out our selection of camlock fittings here.

Ferment, carbonate, and serve finished beer all in one vessel
Pressure ferment as high as 25 psi to reduce esters and produce clean lagers at ale fermentation temps
Extra-large draining sediment bottle allows you to drop out hop matter and yeast throughout your process
Avoid oxidation by skipping the kegging process entirely—simply hook up your draft system to the lid's ball lock posts!
So the first thing to understand is that this is a Unitank - you will be fermenting and serving from the same vessel. The lid has an adjustable pressure relief that you can set to different pressures. More on that later while we first talk about why we are so high on these...
The #1 reason we love the BrewKeg Unitanks is that they eliminate kegging day, which saves a bunch of time. The Brewkeg50 is perfect for a 10-gallon batch, with plenty of headspace for vigorous fermentations. When fermentation is done, crank down the temp, remove the yeast/trub collection ball and start immediately drinking because the beer is already carbonated. Since this is not the standard brewing process, stop and think that over - you don't need a separate night or hours on a weekend morning to clean and keg. You are going to save 2 or more hours with every batch! Plus, you are skipping the most oxidative step in brewing of going from your fermenter to your keg. Yes, the one down side is that your fermenter is tied up as a keg but to many of us who really love brewing our own beer but are time challenged – the sacrifice is totally worth it.
Another great time saving feature is that you can skip wort cooling and 'hot pack' these kegs, literally filling them after boil at around 190°F. Stick them in your refrigerator, let them cool overnight, and pitch yeast the next day. Hot packing is gaining a lot of traction and we suggest you google the term to learn more. It’s been a standard practice in Australian homebrewing for years.
We've been fermenting under pressure for years now with various pressurizable conicals, and if you want to make amazing lagers quickly you need to try it. Fermenting under pressure reduces esters and even beers fermented between 65-80°F have amazing German lager malt profiles. We've fermented a beer under pressure with WLP001 at room temp and all the tasters thought it was lager yeast. The pressure relief assembly, located in the center of the lid, is the slickest out there and adjusts from no pressure up to 25 psi. Leave it open for no pressure fermentations of ales and IPA's where you want the esters. Close it down to make amazing lagers under pressure, quickly.

Natural Acidification & Flavor: Converts sugar into lactic acid while imparting vibrant tropical fruit aromas, including grapefruit, pineapple, and mango.
Wine & Beer Versatility: Ideal for enhancing aroma and balance in red and white wines, as well as brewing naturally soured or fruit-forward beers without the need for bacteria.
Flexible Pitching: Can complete fermentation independently or be co-pitched (simultaneously or sequentially) with Saccharomyces cerevisiae to add complexity and subtly reduce final alcohol content.
Robust Performance: Features strong yeast flocculation, low nitrogen requirements, a wide fermentation temperature range (53-95°F), and alcohol tolerance up to 15% ABV.
CVE-7 is a pure culture of Lachancea thermotolerans, selected from natural fermentation of grape juice by Angel and China Agricultural University, and can convert part of the sugar into lactic acid. It has good physiological tolerance, outstanding ability to start fermentation, and shows smoothness and stableness during alcohol fermentation. The yeast can complete alcohol fermentation independently, and ferment with Saccharomyces cerevisiae combination is recommended, which achieves perfect complementarity in aroma and taste, and can reduce the alcohol content of high-sugar fermentation raw materials appropriately. It contains typical aroma of tropical fruits such as grapefruit, pineapple, and mango, and can be used in various red and white wines and other alcoholic beverages.

Inoculation
1. Simultaneous Inoculation
Simultaneous inoculation of CVE-7 and Saccharomyces cerevisiae in a 1:1 ratio for fermentation. Rehydrate the yeast using water at 10 times its weight, with a temperature range of 95°F to 104°F (35°C to 40°C). Gently stir the yeast to resuspend it, then allow it to stand for 20 minutes. Blend the rehydrated yeast with a bit of juice/must, gradually acclimating the yeast suspension temperature to within 5-10 degrees of the juice/must temperature. Inoculate into the must.
2. Sequential Inoculation
1st: INOCULATION: CVE-7
Inoculate at 15-40 g/hL: rehydrate the yeast using water at 10 times its weight, with a temperature range of 68°F to 86°F (20°C to 30°C). After 15 minutes, stir very gently. Blend the rehydrated yeast with a bit of juice/must, gradually acclimating the yeast suspension temperature to within 5-10 degrees of the juice/must temperature. Inoculate into the must. Total rehydration time should not exceed 45 minutes.
2nd: INOCULATION: Saccharomyces cerevisiae
After 24 hours to 48 hours, proceed to the 2nd inoculation of selected Saccharomyces cerevisiae yeast at 15-40 g/hL, using Nutri-Rehyd during the rehydration following recommended protocol.
Storage and Shelf Life
Store in original sealed packages, in a cool and dry environment. Shelf life at the recommended conditions is 42 months. After opening the yeast must be used as soon as possible. Avoiding long-term storage at temperature above 86°F (30°C).

Sorbistat K, Potassium Sorbate, ensures against renewed fermentation in wine when residual sugar is added post the initial ferment. Add at the rate of .5 to .75 grams per gallon (125-200ppm) in conjunction with .3 grams of meta-bisulphite (50ppm) per gallon. Use the higher end of the range (200 ppm) as the wine's pH approaches or exceeds 3.5 or when the alcohol conent of the wine is below 10%. Note: Will not stop an active fermentation. Potassium sorbate should not be used if the wine underwent an ML fermentation because sorbic acid (in the potassium sorbate) will react with lactic bacteria to produce a "geranium" smelling off-flavor.
A rough approximate of weight is 1 tsp = 2.3 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.

Designed for both novice and seasoned homebrewers, these innovative recipe kits allow you to simply mix the ingredients with water and add yeast for fermentation. This streamlined process not only saves you valuable time but also simplifies brewing without sacrificing flavor. Say hello to a faster, easier way to craft exceptional beer at home.
Typically, brewing requires you to boil your malt and hops for one hour, followed by another hour for cooling. Flash Brewing® eliminates the need to boil. Our Flash Brewing® malt recipes have been boiled and whirlpooled before they are dried. We then use a HopBite™ shot for bitterness combined with a mix of traditional hop pellets for flavor. Flash Yeast™ starts quickly and consistently produces clean beer that lets the malt and hops shine. The result is a high-quality beer that will absolutely surprise you.

For best results we always recommend ordering an ice pack with your liquid yeast.
Please Note: When choosing an ice pack option beware that the liquid yeast will not arrive cold even when shipped together. Ice packs and insulated mailing options are designed to keep the yeast colder for longer during shipment, but they will not ensure that your yeast arrives cold. We will not replace liquid yeast that arrives warm. During warmer months we strongly recommend you choose dry yeast.
Isolated, studied and selected from the prestigious Côte de Nuits terroir in Burgundy during a three-year research project by Laboratory Burgundia Oenologie in Beaune, France. The goal of this selection program was to find a dominant natural yeast strain from a traditional “cold soak” that would elaborate intense, complex and balanced Pinot Noir varietal character. The 3001 strain stood out from other strains. Wines made with it were noted for fruit and varietal characters that were both elegant and complex. This yeast has moderate nitrogen demands but will benefit from proper nutrition and aeration, these factors becoming increasingly important as your potential alcohol content rises above 13%. This strain is tolerant to standard SO2 additions and low temperatures (down to 12°C/54°F) for a steady and reliable alcoholic fermentation following cold soak. The 3001 yeast is specifically for high quality cold soak Pinot Noir destined for aging. Download the PDF Download the PDF

White Labs Yeast has been producing high-quality brewer's yeast since 1995 and continues to raise the bar in the art of fermentation Don't need a full package? Put the lid back on and store in the refrigerator for your next batch! WLP351 is a traditional Bavarian weizen yeast. This strain produces a classic German-style wheat beer, with moderately high, spicy, phenolic overtones reminiscent of cloves. A wonderful yeast strain for traditional hefeweizens, wheat beers, and roggenbiers. Pitching rate and temperature will dramatically affect the flavor and aroma of this strain. Traditional brewing techniques suggest underpitching to produce more classic characteristics of the style. WLP925 can ferment lager beers in only one week when used under pressure at room temperature Sulfur production is strong the first two days, then disappears by day five PurePitch® Next Generation offers a precise cell count across all strains so you can calculate the exact pitch rate you need for every batch Scan the barcode on the back of the package and enter your wort stats into the Pitch Rate Calculator
White Labs Yeast has been producing high-quality brewer's yeast since 1995 and continues to raise the bar in the art of fermentation Don't need a full package? Put the lid back on and store in the refrigerator for your next batch! WLP925 from White Labs is ideal for fermenting under pressure. When beer is fermented under pressure, it allows for the production of a clean flavor profile, even when fermenting a lager at room temperature. Fermenting under pressure is advantageous in that it reduces ester and fusel alcohol production, reduces or negates the possibility of oxidation, carbonates the beer during fermentation and allows you to ferment warmer than you would otherwise. Use to ferment lager beer in one week! Ferment at room temperature (62-68°F) under 1.0 bar (14.7 PSI) until final gravity is obtained, generally in one week. Lager the beer at 35°F, 15 PSI, for 3-5 days, to condition. Sulfur production is strong first 2 days, then disappears by day 5. Do not need to carbonate, since at 1 bar entire time. Produces ß-glucosidase to cleave terpenes Floral, Rose, Citrus flavors Will not produce volatile phenols Best choice for Muscat/Moscato & Gewurztraminer. Also great for Sauvignon Blanc, Riesling and Viognier Those floral, rose, citrus, and stone fruit aromatics are bound all up in terpense in your grape skins and you know, they would really like to get out. It's your job to free them, package them in a bottle, and eventually let them waft out of a wine glass and into the nasal cavity of someone who appreciates excellence. We can help you do this. If you are making a higly aromatic white such as Muscat, Gewürztraminer, Viognier, Sauvignon Blanc or Riesling this is the ideal yeast. BOUQUET is known for its production of the enzyme ß-glucosidase which liberates aromatic compounds by cleaving terpenes from the sugars that bind them and releasing their goodness. This yeast will turn these certain grape varietals from ordinary white wines to highly aromatic, very special white wines that smell and taste amazing. The type of wine where 'stuff' wafts out of the glass! Also interesting is that most yeasts have the potential to produce phenolic off flavors, which in high quantities produce a paint like aroma (yuck!), if the conditions are less than ideal. However, BOUQUET is POF (phenolic off flavors) negative and will synthesize phenolic off flavors, eliminating that risk. This is a great yeast to co-ferment with Luscious for added complexity. Additional Fermfed nutrient is recommended at the start of fermentation due to the short lag phase of this strain. Due to such a rapid period of growth, the yeast cells require higher levels of nutrients to ensure a healthy fermentation. If you have had your wine tested and know your Yeast Available Nitrogen (YAN) follow our CellarScience nutrient feeding schedule accordingly. If you don't know your YAN we recommend hydrating with Fermstart, feeding with FermFed at the onset of fermentation and feeding again with regular Fermfed after 1/3 sugar depletion. Normally the feeding at the onset of fermentation would be with Fermfed DAP free but in this case BOUQUET can use the extra DAP kick that Fermfed provides. Start Time: Fast Alcohol tolerance: 14% Nitrogen demand: Very High Yan Requirement @ 23 Brix: 340 ppm Production of Volatile Acidity: Low Production of SO2: Average Cap/Foaming: Average Ease to Ferment with MLF: Low Malic Acid Consumption: Average Killer Factor: Positive (though is able to coferment with Luscious) Yeast Type: Cerevisiae Optimal Fermentation Temp: 50–80°F Proper yeast hydration helps ensure a healthy fermentation. For every gram of yeast, mix .25 g of FermStart yeast nutrient with 25 ml of sterilized tap water between 104–106°F/40–41°C. When water reaches 104°F/40°C, sprinkle yeast into water and stir gently. Allow the slurry to stand undisturbed for 15 minutes and then stir again. For every gram of yeast used add 25 ml of clean must to the yeast slurry and let stand 15–20 minutes. If necessary, use additional must to adjust yeast slurry to within 18°F of must temp before pitching. For a complete nutrient schedule sufficient for most fermentations, add 1.5 g of FermFed DAP Free per gallon of must at the first sign of fermentation and 1 g of FermFed per gallon of must after 1/3 sugar depletion. This Yellow Koji is produced with 70% milling ration rice (30% is milled off as flour). Koji (Aspergillus oryzae) is a fungus that is grown on rice during the Sake making process. Koji is grown on rice which breaks down starch in the rice to a more fermentable sugar source. Yeast can then use these sugars during fermentation to produce sake. Yellow koji should be used for sake brewing at a koji to grain ratio of 1:5 (20%). Koji in Beverage Making Koji, a unique mold, is the heart of many beloved Japanese beverages, transforming starches into the sugars necessary for fermentation. While traditionally barley malting achieves this in whisky, innovative distillers are embracing koji, particularly yellow and white varieties, to unlock new flavor profiles. In shochu, white and black koji are favored for their citric acid production, ensuring a clean and stable fermentation, while yellow koji adds a touch of sake-like complexity. And of course, yellow koji reigns supreme in sake, orchestrating the intricate parallel fermentation that defines its character. This ancient ingredient, with its diverse strains, offers a remarkable tool for crafting distinctive spirits. Whether it's the bright acidity of white koji in shochu, the delicate sweetness of yellow koji in sake, or the novel depth it brings to whisky, koji's transformative power is undeniable. By harnessing the unique properties of different koji varieties, producers are pushing the boundaries of flavor, creating beverages that are both rooted in tradition and boldly innovative.

While the area of Slavonia has changed hands many times, being under Hungarian control in the past, what has always remained constant is the quality of the oak grown in the region. Slavonian oak is beloved in Italy where it is widely used in the traditional and classic Italian wines of the Veneto, Tuscany and Piedmont. It is known for having the utmost respect for the fruit which is why Italian producers extensively use this oak. This makes this oak extremely useful for home winemakers who, because of the small quantities being made, need to pay special attention to not over oaking their wine.

ProElif QA23 is a double encapsulated yeast product developed by Proenol for secondary fermentations. The yeast cells are double encapsulated in an alginate bead. The beads can be directly inoculated into the bottle (eliminating the need to prepare a starter culture). This helps ensure control of the number of cells per bottle. Upon fermentation completion, the beads have a greater density than the wine and will quickly drop to the neck of the bottle when inverted. The beads accumulate more tightly than traditional riddling, therefore less wine is lost during disgorging. Traditional freezing and disgorging methods are used to finish the process. The use of ProElif QA23 results in a fresh sparkling wine. If greater yeast character is desired, you may make changes to the base wine with this in mind. For example, ProElif QA23 has been used with Opti-WHITE treated base wine with good results.
The base wine must be stable to avoid agglomeration of the beads which could cause subsequent difficulty during disgorging. All of these parameters act in synergy with one another. It is critical to manage them together. If one parameter is over the limit, try to compensate with the others or ferment at a higher temperature.
Use at a rate of 2g/L. For full directions see the handout in the documents tab above.
