What is a Foeder? Basically, it is a large barrel or oak vessel used to age wine and, as of late, many breweries have begun to use them as well. Breweries like New Belgium Brewing, Epic Brewing Company, Crooked Stave and Deschutes are using them for sour beer production and beyond. Although most popular for sour beers, you can add a matured oak character to any beer, such as porters, stouts, English ales, lagers and pilsners. Pilsners?! Yes, Pilsners. We have tasted a few excellent pilsners matured in foeders recently. We were so impressed, we decided to bring them in for our amazing customers to play with. Don't delay, get your foeder today! The slow process of micro oxygenation rounds the wine while various compounds in the wood such hemicellulose, lipids, and lignins are slowly integrated. As most barrel makers know, the best source of wood for wine barrels is the oak grown in the territory of old-time Hungary, known as Slavonian oak. This rare, high-quality oak can be found in the Zemplén Mountains and in the Tokaj oak woods. The specific type of oak in those territories, and what is used in Balazs barrels, is the Quercus Petrea. This oak is characterised by a dense, hard structure combined with extra flavor. Forestry workers look after these forests with considerable expertise, and the forest density ratio in Hungary is 20–24%, with selective logging taking place between November and April. Duotight Flow Control Ball Lock Quick Disconnect (QD) | Beverage Out | Adjustable Flow Rate | 8 mm Duotight
If you want an easy way to balance your beer lines, this is the way to do it. One of the benefits of Flow Control disconnects is you don't need to rely on the small ID or line length to apply flow resistance. Rather than adjusting your line length or size, simply apply additional restriction directly on the Quick Disconnect (QD). This is perfect for people who want to serve a large range of beverages with differing carbonation levels without having to customize each line. Now with the added benefit of Duotight fittings built in. Please be aware that even in the fully open position these FC disconnects do have some inherent flow resistance so you should use either shorter line or larger ID line that you would when compared with traditional ball lock disconnects. Flow Control QD vs. Flow Control Faucet One of the only drawbacks of flow control devices is that they inherently create a small amount of turbulence and therefore can cause foaming. In the past, flow control faucets have been the only common option. Flow control faucets are very popular but due to the fact that they are placed at the very end of the beer line they have no head pressure. As a result, any turbulence created can cause foaming and carbonation to come out of solution. Flow control ball lock disconnects like these on the other hand have the ability to restrict the flow before the beer enters the beer line so the head pressure created by the beer line keeps the carbonation in solution. Even in the instance that high turbulence is created the beer will be far more resistant to foaming issues. For this reason, flow control ball lock disconnects like these have significantly better performance allowing you the flexibility to adjust line resistance easily but without the introduction of turbulence that creates foaming. Potassium Sorbate (Sorbistat K)
Sorbistat K, Potassium Sorbate, ensures against renewed fermentation in wine when residual sugar is added post the initial ferment. Add at the rate of .5 to .75 grams per gallon (125-200ppm) in conjunction with .3 grams of meta-bisulphite (50ppm) per gallon. Use the higher end of the range (200 ppm) as the wine's pH approaches or exceeds 3.5 or when the alcohol conent of the wine is below 10%. Note: Will not stop an active fermentation. Potassium sorbate should not be used if the wine underwent an ML fermentation because sorbic acid (in the potassium sorbate) will react with lactic bacteria to produce a "geranium" smelling off-flavor. A rough approximate of weight is 1 tsp = 2.3 grams. We highly recommend using a scale to weigh the product for an accurate dose. We do not recommend relying on these rough conversions for accurate dosage rates.
