IREKS Sour Malt, also known as acidulated malt or saurmaltz, with its natural lactic acid content of up to 4.5% is an excellent solution for precisely adjusting mash pH. Compared to typical sour malts, IREKS contains roughly double the lactic acid, allowing you to use as little as half the amount to achieve the same results. This optimization directly supports enhanced enzyme activity, leading to a higher brewhouse yield.
The ideal addition rate of IREKS Sour Malt will vary for each brewery. Factors such as brewing water quality, mashing schedule, and grist composition all influence the precise amount needed for optimal results.
Comparable to Weyermann Acidulated Malt, but IREKS Sour Malt has a much higher lactic acid content of up to 4.5% rather than the 1-2% of the Weyermann. IREKS Sour Malt is able to achieve the same pH adjustment with less usage in the overall grain bill.

If you're ready to step up to all grain brewing, this converted insulated cooler works wonders as a mash tun! The 14-gallon size can hold upwards of 25 lbs of grain, so there's plenty of room for even the strongest 5-gallon beer recipes and is perfect for most 10 gallon batches up to 1.070 SG. Comes pre-assembled with stainless steel perforated false bottom, high temperature silicone tubing, and 1/2" female threaded ball valve. Protocol
Suspend the recommended dose in 10× its weight of clean must or water. Stir thoroughly to ensure full dispersion, then add at one of these points:

• Toward the end of fermentation to smooth out persistent harshness without affecting initial extraction.

The Brew Bucket was the first product and the origin of Ss Brewtech, and for many brewers, the Brew Bucket was their first chance to ferment in stainless steel. Nearly a decade later, Ss challenged their engineering team to pair some of the newest technologies with the original design.
Brew Bucket Pure Flow Valve
The star of the Brew Bucket 2.0 is the new Brew Bucket Pure Flow Valve. This valve uses Pure Flow technology, originally developed for the Ss line of professional brewhouses. The removable silicone membrane of the valve provides a sanitary environment where beer makes contact with nothing except silicone. Additionally, they have molded the racking arm geometry into the valve’s silicone diaphragm to provide a seamless flow path for beer when transferring from the Brew Bucket 2.0.
Sanitary Connection
The valve attaches to the Brew Bucket using a welded external garden hose thread fitting that allows for a compact, easy-to-use connection without the need to fumble with additional clamps and gaskets. The threads are located externally and sealed by the gaskets built into the Pure Flow silicone, keeping them clean and sanitary. With the new valve design, the brewer can fully rotate the racking arm 360 degrees for maximum control while racking a finished beer.
Conical Base
The Brew Bucket 2.0 continues what made the original a great solution for home brewers. The pro-inspired conical base helps minimize trub interaction with fermented beer, thus limiting any concerns of off flavors produced during maturation. The Zahm SS-60 Volume Meter was developed to determine average CO² levels of gas in tank stored beverages. Its improved design over the older Zahm-Hartung Volume Meter (Series 2000) greatly improves accuracy and time required to run a test. A precise piston release mechanism eliminates bleeding off of the sample and the potential for human error. Samples undergo repeatable, precise volumetric expansion test after test for more accurate measurements. The lightweight design reduces operator fatigue while the stainless steel construction increases strength and resists corrosion. The thermometer may also be replaced in the field without the need to return it to the factory for replacement. The parts list and line drawing should be used when ordering replacement parts or operating the instrument.
Smart brewers know that a yeast starter is the best way to ensure proper cell count and yeast viability prior to pitching. If you want a reliable starter for your batch of beer, you need to feed the yeast. Adding a yeast nutrient to the starter will give the yeast an added boost! Fermaid K is a yeast nutrient that works for starters and main fermentation. Here’s how it works: Fermaid K is a complex formula that provides DAP, free amino acids, yeast hulls, unsaturated fatty acids, sterols; and micronutrients such as magnesium sulfate, thiamin, folic acid, biotin, calcium pantothenate, and other vitamins and minerals. Yeast use Nitrogen for protein synthesis and to maintain cellular growth. Nitrogen from the alpha amino acids contained in Fermaid K is utilized much more efficiently than from the ammonia salts like DAP. The unsaturated fatty acids and sterols available in Fermaid K are important survival factors needed to maintain alcohol resistance. They also help keep volatile acidity levels low. The cell wall fractions, available through the included yeast hulls, absorb medium chain fatty acids that are toxic to the yeast. They also provide nucleation sites to help keep the yeast in suspension. You do not need to add any additional fertilizers or DAP when adding Fermaid K. Use approximately 1 gram per gallon. Rehydrate in distilled water. A rough approximate of weight is 1 tsp = 4.7 grams. We highly recommend using a scale to weigh the product for an accurate dose. Servomyces is a naturally enriched single-strain brewing yeast that is used as a biological yeast nutrient. The propagation and drying process of Servomyces has been specifically designed to accumulate a range of trace minerals and elements that are essential or limiting during alcoholic fermentation.
Minerals, when incorporated into some sort of living tissue, are more efficacious than when presented as a salt. Servomyces presents better bio-availability of zinc, which is a very important factor in yeast nutrition. Servomyces can decrease fermentation time significantly and improve yeast sedimentation. It stimulates the uptake of maltose and maltotriose, depending on the brewing strain, which results in higher alcohol yields. Also stimulates protein synthesis and yeast growth, which leads to higher biomass production during propagation. Servomyces eliminates harsh sulphur notes and produces a smoother more balanced beer.

A new, advanced formulation of Go-Ferm Go-Ferm Protect is a natural yeast nutrient that is added to the yeast hydration water before adding your selected yeast strain. Its complex formula provides your yeast with the proper sterols, unsaturated fatty acids and micronutrients needed to begin fermentation in optimal shape. The great thing about Go-Ferm Protect is that the proper nutrients and vitamins are introduced BEFORE the yeast is added to the must. This way 100% of the nutrients are available to your selected yeast strain and won't be stolen away by any indigenous yeast or bacteria that may be present in the must before your yeast can become established. Go-Ferm Protect was created as a result of a multi-year study of problem fermentations by Lallemand and the National Agricultural Research Institute (INRA) in France. During this period, they looked at the adverse effects on the yeast from overripe fruit (>28 Brix), low nutrient levels, overclarification of the juice and poor fruit quality (Botrytis, rot, high bacteria count, insecticide and fungicide residue). Their research showed that musts deficient in sterols and unsaturated fatty acids made yeast more susceptible to ethanol toxicity (high alcohol), osmotic shock (high sugar), temperature and others stress factors. In response to this data they created the NATSTEP (NATural STErol Protection) process that incorporated sterols, unsaturated fatty acids, as well as vitamins and minerals into an advance yeast hydration nutrient: Go-Ferm Protect. Go-Ferm Protect provides a combination of protective and nutritional benefits that ensure your yeast begins your fermentation in peak form! The best part is that if your fruit is in great shape then Go-Ferm Protect will simply help your yeast out that much more! Safely store small volumes of product in these beautiful tanks. The legs make accessing the ports easy and the convenient top hatch makes cleaning a dream when combined with the 2R interior finish. Heavy-duty sealing mechanism and gasket form a seal on top with a stainless steel lid equipped with a T.C. port for adding accessories or an airlock. The inside is finished to Speidel quality standards with flawless welds and a 2R finish.
The tanks will support a few PSI of pressure, however, they are not pressure-rated or designed to be used under pressure.
Tank Ports
Tanks feature 1.5" T.C. outlets (1 on bottom for complete drainage, one in middle for racking arm, one on top for blowoff/airlock), and also two welded DIN fittings. One DIN port is equipped with an included sample valve and the other has an included thermometer and thermowell combination. The cooling jackets have two 1” NPT ports.

Note About Freezer Installations:
If you plan to mount on a freezer you need to see where the coolant lines are located insite the wall so you don't damage during installation. Plug the unit in with the lid open and you will see the lines form condensation on the inside. (... drill a hold where there are no lines!)

Stop boil overs in the kettle and limit foaming in your fermenter with CellarScience Foam Axe. This uniquely formulated anti-foaming agent reduces surface tension so bubbles are Axed before they can form. Foam Axe actually increases head formation in the finished beer by retaining foam forming proteins that would have normally blown off during fermentation. Use it in your boil kettle to prevent boil-overs for a cleaner, safer process. Then add Foam Axe to your fermenter to reduce Krausen, save beer, and increase the volume capacity of your fermenter.
In the Kettle:
Nobody likes a boil over as they are messy and take considerable time to clean up. Save time, beer, your burner or stove, (and possibly your relationship) by adding 1 drop per gallon of Foam Axe into your kettle and eliminate boil overs from your brew day!
In the Fermenter:
Foam Axe works like magic in the fermenter. Just 2 drops per gallon at the start of fermentation will keep your airlock and blowoff clean. We recommend adding before pitching yeast and rousing well while you aerate your wort. Many commercial breweries use Foam Axe to increase fermenter capacity and homebrewers can do the same.
Additional Notes:
Foam Axe is made from food-grade silicone and works by breaking up foam particles and dispersing surface tension. Foam Axe settles out of beer prior to bottling or kegging. Store cool and in an environment below 90°F. Do not freeze.
The recommended shelf life is 6 months from the date the package is opened.

Anchovy Hops (formerly experimental variety 24B-05) are a recently developed hop from Segal Ranches in the Yakima Valley. This dual-purpose hop provides distinct aroma and flavor that include sweet watermelon candy, raspberry, and pine. With an average alpha acid content of around 12.6%, Anchovy Hops are suitable for bittering additions but are particularly effective when utilized for aroma and flavor contributions in later additions, whirlpool, or dry hopping.
Recommended for use in IPAs, Pale Ales, and other hop-forward beer styles where a unique fruit and resin profile is desired.
