Finally - Accurate & Affordable Free SO2 Testing! In winemaking, Sulfur Dioxide (SO2) is one of the most important and effective tools in the winemaker's arsenal for protecting against the effects of oxidative or microbial spoilage. Unfortunately, over time any SO2 added to a wine will be consumed due to its interaction with the very things that it is protecting the wine from. The ability to accurately monitor the amount of SO2 remaining available in a wine to protect it - termed Free SO2 - is hugely important when it comes to ensuring that the wine makes it through the aging process safely. For years MoreWine! has offered a variety of methods for testing the level of Free SO2 in a wine. Until now, winemakers had to make a choice between inexpensive test kits which lacked accuracy and kits which are highly accurate but cost hundreds of dollars. Now MoreWine! has developed an inexpensive AND accurate test kit which we feel has a place in every home winery. Based on the exact same science as our original Aeration-Oxidation test kit, our new Economy Aeration-Oxidation kit offers a high degree of accuracy for a fraction of the price. Aeration-Oxidation is the exact same testing method used in thousands of commercial wineries and wine analysis laboratories around the world. It is time-tested and proven accurate and is simple to perform. Our kit includes: All the glassware and tubing needed to set up a 2-chamber test apparatus Pipettes to accurately measure your wine sample and chemicals An aspiration pump to drive the chemical reaction in the test method Enough chemical reagents to run 2-3 tests Clear and comprehensive instructions for setting up and running the system PLEASE NOTE: This kit ships with a small bottle of 25% phosphoric acid which is required for the test. At this strength phosphoric acid is considered a hazardous material and we are not certified to ship larger quantities. We recommend that you investigate the possibility of sourcing it locally, through a laboratory supply company. If this is not possible, you can purchase it through us; see part #s MT108DS & MT108BDS. The high cost of these bottles reflects the $20 surcharge which FedEx adds to handle a hazardous shipment. These bottles ship directly from our supplier's warehouse and will take a couple of extra days to arrive. Click here to download a copy of our instruction manual for this kit.

First produced by Sutter Home winery in California, White Zinfandel was made by quickly removing the zinfandel grape skins from the wine before too much color could be imparted. This resulted in a pink-colored white wine that quickly became more popular than traditional zinfandel wines. The grape itself is one of the oldest known varieties and produces a wide range of wines that can be hearty, rustic, deep reds to the light, sweet rosé style that is White Zinfandel.
The VineCo Original White Zinfandel is perky and light with notes of strawberry and raspberry. This light-medium bodied wine has no oak character. Off-dry and easily enjoyed with an alcohol content of 11.5% by volume.

Produces ß-glucosidase to cleave terpenes Floral, Rose, Citrus flavors Will not produce volatile phenols Best choice for Muscat/Moscato & Gewurztraminer. Also great for Sauvignon Blanc, Riesling and Viognier Those floral, rose, citrus, and stone fruit aromatics are bound all up in terpense in your grape skins and you know, they would really like to get out. It's your job to free them, package them in a bottle, and eventually let them waft out of a wine glass and into the nasal cavity of someone who appreciates excellence. We can help you do this. If you are making a higly aromatic white such as Muscat, Gewürztraminer, Viognier, Sauvignon Blanc or Riesling this is the ideal yeast. BOUQUET is known for its production of the enzyme ß-glucosidase which liberates aromatic compounds by cleaving terpenes from the sugars that bind them and releasing their goodness. This yeast will turn these certain grape varietals from ordinary white wines to highly aromatic, very special white wines that smell and taste amazing. The type of wine where 'stuff' wafts out of the glass! Also interesting is that most yeasts have the potential to produce phenolic off flavors, which in high quantities produce a paint like aroma (yuck!), if the conditions are less than ideal. However, BOUQUET is POF (phenolic off flavors) negative and will synthesize phenolic off flavors, eliminating that risk. This is a great yeast to co-ferment with Luscious for added complexity. Additional Fermfed nutrient is recommended at the start of fermentation due to the short lag phase of this strain. Due to such a rapid period of growth, the yeast cells require higher levels of nutrients to ensure a healthy fermentation. If you have had your wine tested and know your Yeast Available Nitrogen (YAN) follow our CellarScience nutrient feeding schedule accordingly. If you don't know your YAN we recommend hydrating with Fermstart, feeding with FermFed at the onset of fermentation and feeding again with regular Fermfed after 1/3 sugar depletion. Normally the feeding at the onset of fermentation would be with Fermfed DAP free but in this case BOUQUET can use the extra DAP kick that Fermfed provides. Allow the slurry to stand undisturbed for 15 minutes and then stir again. For every gram of yeast used add 25 ml of clean must to the yeast slurry and let stand 15–20 minutes. If necessary, use additional must to adjust yeast slurry to within 18°F of must temp before pitching. For a complete nutrient schedule sufficient for most fermentations, add 1.5 g of FermFed DAP Free per gallon of must at the first sign of fermentation and 1 g of FermFed per gallon of must after 1/3 sugar depletion. Lallzyme Cuvee Blanc – Enzyme for Aroma Release and Finesse in White and Sparkling Wines
Enhances aroma expression by unlocking bound terpene and thiol precursors
Improves clarification and filterability through efficient pectin breakdown
Increases finesse and texture by gently releasing polysaccharides
Ideal for varietal whites and sparkling base wines where delicacy is key
Balanced glycosidase activity preserves freshness without compromising stability
Lallzyme Cuvee Blanc is a highly specific enzyme developed by Lallemand for the production of elegant, aromatic white and sparkling wines. It offers a delicate balance of pectinase and glycosidase activity that breaks down grape cell walls to improve clarification while simultaneously releasing aroma precursors trapped in glycosidic form. This selective activity enhances varietal expression—especially in terpene- and thiol-rich varieties—without producing off-flavors or excessive bitterness. The result is a wine with lifted aromatics, better mouthfeel, and improved stability, ideal for styles requiring precision and finesse.
Protocol
Dilute Lallzyme Cuvee Blanc in 10 times its weight of chlorine-free water. Add to juice or wine at the preferred stage—either pre-fermentation for aroma release and settling, or post-fermentation for finishing and clarification. Ensure even distribution by mixing thoroughly. Optimal temperature range is 12–20°C. Avoid use below 10°C or in combination with bentonite or SO₂ during addition.
Usage Rates
Recommended dosage: 2–4 grams per hectoliter
= 0.02–0.04 grams per liter
= 0.076–0.151 grams per gallon
Use 2 g/hL for lighter aromatics or wines already showing good varietal character. Increase to 4 g/hL in more neutral juices or when maximizing aromatic potential is desired. Allow adequate contact time—typically 24 to 48 hours—depending on the winemaking stage and style.
Replacement siphon starter bulb for 3-spout and 5-spout bottle fillers. This is included in our WE602 and WE605 stainless steel bottle fillers, and can be purchased as an option upgrade for the WE604 painted filler. This siphon starter will save you a lot of hassle, and allow you to start a siphon in the fillers tubes while maintaining sanitary conditions.
The siphon starter features a food grade plastic bulb and tubing, and a black rubber "boot" that fits tightly around the end of the bottle filler tubes.
To use:
Connect your bottle filler to the wine source and allow the reservoir to fill.
Sanitize the siphon starter, inside and out
Squeeze the bulb to remove most of the air.
Fit the rubber "boot' or base around the end of the bottle filler tube. The hole in the boot must line up with the hole where the wine will come out.
Gently press down on the filler tube so that the gasket is not touching the inside wall.
Slowly let go of the pressure on the bulb. The bulb will suck the air out of the tube, and wine will follow. Stop when you can hear or feel wine going into the bulb siphon starter.
Repeat for each filler tube you would like to use.
Wash, sanitize, and dry the siphon starter bulb before storage

cottzyme KS – High-Power Enzyme for Complex Pectin Breakdown in Red, White, and Problem Wines
Breaks down complex, highly esterified pectins that standard pectinases cannot
Enhances clarification, settling, and filterability in challenging juices and wines
Boosts juice and wine yield by improving extraction from thick-skinned or high-pectin fruit
Ideal for problem fermentations or hazy wines that resist fining and filtration
Performs well at low temperatures and in a broad pH range
Scottzyme KS is a specialized pectolytic enzyme designed to break down complex pectin structures found in high-pectin varietals and difficult ferments. While standard enzymes like PEC5L target simple soluble pectins, KS is formulated with enhanced side-chain cleaving activity that attacks esterified pectins and heavily branched structures. This makes it particularly effective on cultivars like Pinot Gris, Riesling, Gewürztraminer, Muscat, and in juice or wine where haze persists despite prior enzymatic treatment. KS improves clarification, tightens lees, increases press and wine yields, and boosts filtration efficiency—especially in wines that defy typical settling protocols.
Comparison to Scottzyme PEC5L:
Scottzyme PEC5L is a fast-acting general-purpose pectinase for typical clarification tasks, such as settling and flotation of white and rosé juices. It’s ideal for clean juice production from standard grapes and most fruit wines. In contrast, KS is the go-to choice when PEC5L isn’t enough—it’s stronger on stubborn, esterified pectins and delivers better results with problematic varieties or ferments that remain hazy even after PEC5L. While PEC5L is excellent for fast juice prep, KS excels in the most difficult cases, including post-fermentation haze and challenging press fractions.
Protocol
Dilute Scottzyme KS in 10 times its volume of chlorine-free water or juice. Add to must, juice, or wine and mix well. Suitable for use before or after fermentation. Do not add simultaneously with bentonite or high SO₂. Works effectively at 10–20°C.
Usage Rates
Recommended dosage: 1.5–4.0 mL per 1000 lb of fruit or 0.075–0.2 mL per gallon
= approximately 0.02–0.05 mL per liter
Use lower rates for moderate haze and extended contact time. Use higher rates in cold settling, high-pectin juices, or persistent post-fermentation hazes. Allow 4–24 hours of contact time depending on application.

Autolyzing, quick release of polysaccarides such as mannoproteins
Top choice for sur lie aging
Ability to ferment cold for clean flavor with emphasis on mouthfeel and toastiness of sur lie aging
When fermented warmer exoctic tropical flavors shine
Frequently used to make luscious Chardonnays and similar white wines
Luscious Chardonnays with creamy mouthfeel and deep complexity... if that is your end point, LUSCIOUS is your starting point. LUSCIOUS can be fermented at different temps depending on your style preference. Ferment it cooler, it can handle it, and put the emphasis on the creaminess and the toasted champagne-like complexity of sur lie ageing. Or crank it up a bit warmer and add in some more tropical notes, your choice. However the magic of LUSCIOUS really happens after fermentation when this yeast goes naturally goes nuclear, implodes and breaks open its cell walls, during a process called autolysis. Polysaccharides such as mannoproteins are released into the wine... and man, it's all about those mannoproteins creating that rich, creamy mouthfeel that so many Chardonnay drinkers seek out. The silky richness is emphasized even futher by sur lie aging, aging on clean lees for a period of time, in either tank or barrel. Being a low producer of SO2 it is naturally great candiate for later malo-lactic fermentations. Now that we have painted a picture try putting this marketing wizardry on your next label "The 10-40w viscosity of this wine is due to it being loaded with mannoproteins from the guts of exploded yeast cells". Maybe leave us out of the wine marketing department but we do know a winning yeast when we taste it. #1 for this style of Chardonnay but also a top choice for Viognier and other whites.

Californian Merlot is a welcome pour whether it's at the dinner table or the picnic table Pair with a basket full of charcuterie fare or burgers hot off the grill Flavors of fruit, baking spices, floral, and chocolate Full-bodied and dry, 14% ABV Whip up a batch in 30 mins or less! Yields 6 gallons (2 cases) of finished wine in 6-8 weeks Premium kit includes grape skins for an authentic wine making experience Bottle labels included for a professional finish Merlot is extraordinary in its flexibility, able to be paired with many different grapes to create magnificent blends, but easily stands on its own in varietal wines. Sometimes mistaken for Cabernet Sauvignon in blind tastings, the two grapes are both descendents of Cabernet Franc and can display similar flavors and textures, although Merlot is known for being softer and less tannic. Aromas and flavors include blackberry, cassis, baked cherries, dark chocolate and mocha, among others. Merlot ranks as the second most-widely grown grape in the world, but reigns supreme in the Médoc district of Bordeaux. California-grown Merlot grapes produce what is known as “Warm-Climate Merlot”, which is the category that Merlot grown in Australia and Argentina also fall under. These grapes tend to be heavier on the fruit notes and lighter in body. Due to the lower tannin levels and softer finish, some vitners employ a longer oak-aging process to give the wine more structure. Our California Merlot is a full-bodied red with big fruit flavors with hints of rich baking spices and purple floral notes. On the higher end in regards to alcohol content at 14%, this wine has a dry chocolate finish with a moderate oak character. The Signature Series™ Merlot is one of the most satisfying kits to make thanks to the inclusion of grape skins. You’ll mirror the professional vintner process of “punching the cap”, which makes your winemaking adventure even more hands on. VineCo’s jammy skin packs are much more expressive than dried grape skins, imparting more character from the grapes and boosting tannin structure in the finished wine. High quality American oak cubes are used in the final aging process of the California Merlot kit. One of the reasons oak has always been used to age wine is the slow release of delicious, complex compounds that complement the wines flavor. Oak cubes have more depth of flavor than chips or powder and slowly release compounds like furfural (sweet, caramel like), lignins (vanillin, spice, smoke), and lactones (classic oak flavor). American oak in particular is known to deliver aromatic sweetness, vanillin, and classic oak flavor. The VineCo Signature Merlot is not to be sequestered to the dinner table. This is a wine you want to pack up and take with you on a picnic. Enjoy with the sun overhead, a light breeze at your back, and a charcuterie board within arm’s reach. Vit End – Lallemand Yeast Nutrient for Securing Fermentation Completion
Supports yeast vitality during the final stages of alcoholic fermentation
Provides essential vitamins, minerals, and survival factors to avoid sluggish finishes
Reduces the risk of stuck fermentation by reactivating stressed or nutrient-starved yeast
Enhances sugar-to-ethanol conversion efficiency for cleaner fermentation ends
More targeted than general nutrients due to its late-fermentation formulation
Vit End is a specialized nutrient developed by Lallemand for use at the end of alcoholic fermentation, when yeast cells are most vulnerable to nutrient depletion, ethanol toxicity, and osmotic stress. Unlike standard yeast nutrients formulated for the growth phase, Vit End is designed to support cell survival, membrane integrity, and residual sugar metabolism. It contains inactivated yeast rich in survival factors, specific vitamins, minerals, and sterols that help re-energize exhausted yeast populations, allowing them to finish fermentation smoothly. Wines showing signs of slowing kinetics, high residual sugar, or difficult fermentation conditions benefit from the targeted support Vit End provides.
Protocol
Suspend Vit End in ten times its weight of clean must or wine at 20–25°C. Stir thoroughly to dissolve. Add when fermentation is slowing (often near 0–5°Brix) or when signs of yeast stress appear. Mix well to ensure even distribution. Do not add simultaneously with bentonite or sulfites.
Usage Rates
Recommended dosage: 20–40 grams per hectoliter
= 0.2–0.4 grams per liter
= 0.76–1.5 grams per gallon
Use 20 g/hL in moderate stress conditions. Increase to 40 g/hL in fermentations that are near-stuck, have high residual sugar, or show signs of yeast stress. Vit End can also be used proactively in fermentations known to be high-risk due to low YAN, high sugar, or challenging varietals.

Californian Zinfandel will never be found out of place; enjoy its tasteful flexibility that can adapt to any scenario Whether with a cheese board or a thick cut of ribeye, this wine is the perfect companion Flavors of strawberry jam, ripe berries, allspice, and mocha Full-bodied and dry, 14% ABV Whip up a batch in 30 mins or less! Yields 6 gallons (2 cases) of finished wine in 6-8 weeks Premium kit includes grape skins for an authentic wine making experience Bottle labels included for a professional finish There may be no grape in the world that goes by as many different names. Tribidrag in the Dalmatia region of Croatia. Primitivo in the heel of Italy’s boot, Apulia. Or simply, Zinfandel, as it is known in California where you will find most of the world’s plantings. And as befitting for a grape with so many known aliases, Zinfandel is something of a shapeshifter, employed to make wines ranging from hearty, rustic red wines to light, sweet rosés and countless variations in between. Known as one of the “founder varieties”, it can be traced as far back as 6000 BCE where it was first domesticated in the Caucasus region between the Black Sea and the Caspian Sea. Today, it is the second most widely grown grape in California, where Zinfandel vines can be found that are well over a hundred years old and still thriving. These grapes produce a soft textured, dry red wine that is packed with flavors and aromas of jammy fruit and berry. Our California Zinfandel is smooth and full bodied with a light oak character. Aromatic with flavors of strawberry jam and ripe berries, with notes of allspice and mocha on the finish. A dry red wine with a robust alcohol content of 14% by volume. The Signature Series™ Zinfandel is one of the most satisfying kits to make thanks to the inclusion of grape skins. You’ll mirror the professional vintner process of “punching the cap”, which makes your winemaking adventure even more hands on. VineCo’s jammy skin packs are much more expressive than dried grape skins, imparting more character from the grapes and boosting tannin structure in the finished wine. High quality American oak cubes are used in the production of the California Zinfandel kit. American oak in particular is known to deliver aromatic sweetness, vanillin, and the classic oak flavor that can be found in many California Zins. The VineCo Signature Zinfandel is as much of a chameleon as the grape itself, appropriately poured alongside a variety of dishes and suitable for countless social situations. It may be the first bottle you open with an appetizer of assorted rich cheeses. Or it may be just the thing to compliment a rack of lamb or char broiled ribeye. Nobody puts Zinfandel in a corner. The counter pressure bottle filler that sets the standard for filling beer bottles at home. With a unique one way valve and adjustable pressure relief you will be bottling sediment free homebrew with ease.
If you currently carbonate and store your homebrew in kegs, you can use a counter pressure filler to bottle beer directly from your kegs. One huge advantage of this method is that since you are bottling already carbonated, clear beer, there will be no sediment at the bottom of your bottles.
Counter pressure bottle filling is how a brewery bottles beer. The bottle is under pressure while the carbonated beer flows in. Because the interior of the bottle is pressurized there is minimal loss of the CO2 in solution. The opposite of filling under pressure is when you pour a beer into a pint glass where CO2 erupts out of solution creating all that foam. Great in your glass but not good when you are trying to bottle carbonated beer. Our counter pressure filler mimics a single filling head on a professional bottling line, a concept that we all know works very, very well.
Made by Fermentap, the design has two unique features. Number 1 it is the only model made entirely from stainless steel. Number 2 you flush and fill from the bottom of the bottle.
Beer barb is 3/16". Gas barb is 5/16".
Features While some models flush the bottle from the top and fill from the bottom, our unit features a special valve that allows CO2 and beer to flow down the same stainless tube, directly to the bottom of the bottle. First CO2 flows down into the bottom of the bottle to flush from the bottom up. Next you switch the valve position and beer flows down the same tube, filling from the bottom up. The result is a more effective purging of oxygen and no foam during the filling process - not to mention that the whole thing takes one-hand to operate! Why hope that you flushed your bottle properly using a type of beer gun, when you can know for sure that you have created the best environment for your beer to be stored at by using a Counter Pressure Bottle Filler?
More Details
The unit is inserted into the bottle in the off position. The valve is then turned to CO2 to flush the bottle and then to beer for filling. The adjustable pressure relief on the side of the unit allows you control the speed of fill by adjusting the pressure in the bottle. The valve is positioned in such a way that it is easy to use with one hand, while the other holds the bottle. This model is designed for 12oz bottles but can easily be extended to accommodate larger bottles, such as 22oz, with a small piece of 1/4" tubing.
Setting Your PSI Pressure
Before you counter pressure fill a bottle make sure you are satisfied with the carbonation level and flavor. The goal for counter pressure bottle filling is to store your beer in the most sanitary and clean environment possible so when you get ready to share your homebrew its presentation is perfect when you go to pour.
An ideal set point to set your PSI level on your regulator is 10-14 psi. This range is dependent upon the temperature of your beer and the carbonation level. We recommend you start at a lower pressure around 10psi for the first 2-3 bottles to make sure you get everything dialed in before committing to filling a whole case.
Make sure your keg is always kept cold. If your keg warms up you will have foaming issues.
