Liquid Gold! So smooth for a beer with an alcohol by weight of 7%! This recipe includes quality sugar, plus an immense amount of both dried and liquid Light Malt Extract, hops and uses the Trappist yeast strain. It leaves lots of classic phenolic flavor, but produces a very soft body without a high alcohol bite. Not that bitter, this golden beer is about a strong and complex malt body. It may take a goblet or two to grow on you, but once you acquire the taste.... some would say "beervana." The malt extract for this kit is made entirely from German Pilsner Malt, giving it that classic European flavor.

Chocolate and Black Patent malts are the backbone of this style. Our all-grain version of Porter features munich malt for a little maltiness and carapils for better mouthfeel and head retention. The Northern Brewer hops impart a nice, but not overpowering bitterness. Good first dark beer. However, for many people, this is their favorite style. Just ask Regan who is a Porter nut. All of our Porter recipes are descendants of his designs which date back to the 1980s. You will not find any Roasted Barley in our Porter recipes as we believe this is the defining difference between Stout and Porter. If you would like to see the difference for yourself try making our B3 Stout (in extract) or our Silk Stout in all grain form and then one of our Porters. It is fun to have them on tap at the same time and show people the difference in dark beers.

Their flagship, Arrogant Bastard Ale, challenged us to pick up a bottle and drink it, kicking off a cult-like following of the beer and the brewery. For their 12th Anniversary, Head Brewer Mitch Steele and the Stone Brew Crew worked with homebrew recipes from Brewhouse Supervisor Jeremy Moynier and Distribution Supervisor Jake Ratzke to create this huge oatmeal stout, but instead of relying on just hops for the bitterness he added some cacao to the boil kettle. Contrary to its name, Ugly Fish IPA is actually one of the most beautiful beers we have to offer! Designed as a clone of the highly sought-after Ballast Point Sculpin® IPA, the Ugly Fish IPA is a hop masterpiece. This beer starts with a very clean bitterness from Warrior® hops, and finishes with a beautiful blend of Cascade, Simcoe®, and Chinook late additions. With almost 10 ounces of hops, the Ugly Fish IPA is definitely a hop forward beer, but does have a solid malt profile that stands up to those hops and helps to keep it reasonably balanced.

Jim was looking for a dark, smooth, creamy mouth feel stout just like an Australian stout he had tasted years ago. Over the years, Jim found a clone that was close but needed some small changes. After many trials and test batches, he came up with this recipe that is very drinkable when it is fresh. It will get smoother with a couple months of aging and creaminess added by the lactose makes this a very good winter warming stout. Jim hopes you enjoy this beer as much as he has. Jim recommends WLP004 Irish ale yeast.

We took our American Pale Ale recipe and upped the malt, threw a ton of hops in the finish for flavor, but kept the bitterness the same. We think toning down the perceived bitterness is one reason we consistently get great reviews from brewers sharing this with friends.
Keeping it real: Part of the success of this kit is blending a lot of Willamette and Cascade hops in the finish. This isn't a wild, new or crazy idea... this is old school. Cascade and Willamette were the hops that helped put craft brewing on the map in the 1980's. The reason they are still so popular... they make a damn good beer.

Kiwi Kiss is our ode to the many delicious hop varietals that hail from New Zealand. Hops were first planted on the north and south islands by British settlers in the mid-1800s, but it wasn't until the early 21st-century that NZ-grown hops really exploded in popularity. As beer drinkers began flocking to more tropical, citrus-forward interpretations of IPA, brewers began to recognize the potential for the hops exporting from kiwi country. Today, New Zealand hops are widely sought after for their highly aromatic quality and delicious array of fresh flavors. Kiwi Kiss is a clean, lightly-colored, Hazy IPA with a moderate alcohol level. MoreBeer! is proud to release this Black IPA recipe designed by our local homebrew Club D.O.Z.E.
After winning the AHA Homebrew Club Of The Year in 2010, the Diablo Order Of Zymiracle Enthusiasts (DOZE) put their minds together to collectively craft a beer they felt representative of the club and its brewers. The initiative was taken on as an all club project that spanned 5 months. In the end, over 50 members contributed ideas to this recipe and nearly 40 individual batches brewed by 23 DOZE members were tasted and refined to a single recipe. This beer is inspired by the style many refer to as Cascadian Dark Ale or Black IPA, however it is not intended to fit the mold of any particular guideline. Mostly it is big, dark, hoppy, and delicious.
The recipe was coined 'Diablo Dark Ale' in honor of our near by Mt. Diablo. Members of the Diablo Order of Zymurical Enthusiasts live in various cities located at the base of this great mountain. Also the location where many of us from MoreBeer! go mountain biking when we get the chance.

An extremely malty beer that really emphasizes malt over hops. Most styles are more balanced, which means the bitterness of the hops is proportional to the sweetness of the malt. Not true with our Scotch ale where the deep malt flavor is king. Scotch Ale yeast strains typically ferment well in the low-to-mid 60's and leave behind very few esters or fruity flavors, which further emphasizes the malt. This recipe has over 11 lbs of malt extract and only one ounce of hops!

Flashing Lights is a delicious IPA that is bittered with Chinook and heavily dosed with Citra®, Mosaic® and Cascade. Beautifully aromatic and very easy drinking, this is a definite crowd pleaser! Flashing Lights is one of the many innovative rotating beers brewed by Cloudburst Brewing.
Cloudburst Brewing in Seattle Washington is one of our favorite craft breweries. We met Steve Luke (owner and head brewer) up at the Yakima Fresh Hop Ale Festival and were thoroughly impressed with his beer. After tasting every beer at the festival, there was no question that the Cloudburst Wet Hop IPA was best in show.

StrataGem perfectly interfaces Strata and Idaho Gem™ hops to execute a DDoS attack of tropical flavor with notes of pineapple, cherry, candied fruit, and a touch of chili-cannabis-funk. A clean malt bill of 2-row, oat malt, and white wheat runs in the background as 7 oz of hop additions overwhelm your flavor sensors. Charlie Essers (AKA Push Eject) has been a longtime friend of MoreBeer, The Brewing Network, and homebrewers in general. Dubbed "one of the nicest guys in homebrewing" by those who know him, Push wanted us to have this recipe that he brews whenever his father-in-law comes for a visit. Push says: "My family has been supportive of all the brewing gadgets and scattered projects including my "dark-beer-phobic" father-in-law. This recipe is an Americanized pilsner that I have evolved for him over the years. Sweeter than a standard pilsner, but still crisp and refreshing, I can't keep this around long in the Summer months." Push began brewing in 1999 after buying a starter homebrew kit as a bad joke for a friend who earned a DUI and getting one for himself as well on impulse at the register. After going all grain in 2002, it was clear that automation was a necessity in his process, and his love of brewing gadgets was born. His first stand was designed and built in 2003 and his first Wort-O-Matic control panel in 2006. These led to the launch of wortomatic.com and a close relationship with MoreBeer! and The Brewing Network. This light ale recipe is the most basic gluten free kit we offer. An ideal first low gluten brew so you can get an idea of what malt flavors sorghum contributes to beer. This recipe is light and easy drinking.
Gluten-Free beers are a different world when it comes to finding a suitable replacement for the base extract. Celiacs are allergic to the hordein protein found in the base malts such as 2-Row and Pilsner malt. They are also allergic to the gliadin protein found in wheat which is the biggest offender of the two proteins. As a homebrewer your goal is to find a suitable fermentable that can emulate the maltiness in beer.
Our Gluten Free recipes use Sorghum extract for the base fermentables. Hops aggressively cut through the maltiness from sorghum easily. Hop additions in gluten free beers tend to be 40-50% less than normal.
All our gluten-free kits include dry yeast due to the small traces of the gliadin protein found in liquid yeast. (Although lab research has found the yeast metabolize the gliadin protein after fermentation and significantly reduce the ppm present.)

This cadre of Pacific Northwest hops give the beer a resounding citrus character backstopped by tropical, grapefruit and floral notes. With a giant 15-pound grain bill, boosted by 12 oz of honey, this beer is strong enough to challenge Andre himself!

Jonathan Plise has been making beer since the year 2000. He then spent the next few years researching and developing his recipes, fermentation regimen, and sanitation - Jonathan's most dramatic improvements came when he learned about oxygen and yeast starters. Jonathan became a famous homebrewer starting in 2005 when he recieved 33 awards for his beers, including several at the National Homebrewers Competition. He has also won California Homebrewer of the Year.
Jonathan's Munich Helles is rich and complex. The malt is upfront and smooth, while being anchored by the low hop additions. He has won 9 awards with this recipe, including one Best of Show and a Gold at the NHC in 2005. Jonathan recommends White Labs WLP833 German Bock Yeast

Matt Brynildson of Firestone Walker Brewing Co., Paso Robles, California. It seems to some that Matt has almost been bred to brew beer. After getting a degree in chemistry in 1993, Matt went to work in Michigan doing research and development on hops for the brewing industry. In 1995, Matt went to the famous Seibel Institute of Brewing Technology to further his education. After brewing for Goose Island in Chicago and then moving to California to work for SLO Brewing, Matt was appointed Small Brewmaster of the Year in 2001. Later that year, he was asked to join the crew at Firestone Walker. Two years later Matt was dubbed Mid-Sized Brewer of the Year at the Great American Beer Fest AND at the World Cup of Beer, for a total of 12 medals in just three years! Since then, Firestone Walker has been gaining a large following in California due in part to it's flagship beer, Double Barrel Ale, which is produced in a Burton Union system that has the beer fermenting in barrels. Firestone Walker Brewing Company is the only brewery in the U.S. to ferment in barrels and one of only two in the world. Don't let the name fool you, this beer is easy on the oak, having been created so that all ingredients blend perfectly with one another, even the oak. In fact, the oak really takes a back seat to the wonderful malt characteristics that this beer presents, which may be hard to imagine once you realize there are 2 ounces of oak in this one! A blend of American and English base malts provide the foundation for this beer. A little Munich, some crystal, and that's it - simple, yet flavorful. Just how we like it. One can easily spend all night drinking this smooth amber ale ... in fact, many of us at MoreBeer! have done just that! Liquid Malt Extract (LME) vs. Dried Malt Extract (DME)
MoreBeer! recipe kits are offered in both Liquid Malt Extract and Dry Malt Extract so that our customers can choose the format that best suits their needs and brewing style. LME is a viscous liquid, similar in consistency to maple syrup. In addition to being the more affordable option, many brewers find LME easier to handle than dry extract. DME is more condensed and comes in a powder format that is similar to baking flour. Although it’s a little more costly, DME is naturally lighter in color and stays fresher for longer. We highly recommend DME when brewing light colored beers.
